After a wee Summer break, the Sweet World challenge is back for its 32nd edition and the theme for this edition is my most beloved Pavlova!

Pavlova, as you know, is something that I truly adore and if you look under the "Pavlova label", you'll find 14 Pavlova recipes for this dessert so, you're spoiled for choices...

Fig & Rose Millefeuille / Mil Folhas de Figos e Rosas.


You all know I love a good millefeuilles right?
To me, Millefeuilles are like Pavlovas! Can't see one new recipe of either of them, and you'll spot me running into the kitchen to make it straightaway!
In this post, you can see the list of all the homemade millefeuilles I've already made until today and, this one, with all these exotic and Persian flavours, couldn't go unnoticed and not being part of my millefeuilles list, right?
This is another great recipe from Sabrina Ghayour beautifully gorgeous "Feasts" book and it was so, so delicious that I had to share it with you all.
Try it and thank me later because you will be delighted :))).

Burrata with burnt Oranges, Pistachios, Mint and Pomegranate / Burrata com Laranjas queimadas, Menta e Romã.


Delicious little sharing "salad" type plate, from Sabrina Ghayour new book "Feasts" and one that fits perfectly into this month's "Marta's ingredient of the month" which is, pomegranate!!
I truly adore Sabrina's books and this last one, "Feasts" is a real delight.
Full of colorful and delightful recipes and the type of book that makes you go to the kitchen and cook the book off!
This salad was the first recipe I prepared form the book. Not just because I'm mad about Burrata, but also because all the ingredients and colours combination was screaming "PREPARE ME"!!
This plate is not, just easy and quick to prepare, but it's also a great combination of flavours and textures.
As soon as I saw that Marta chose pomegranate as the ingredient of the month, I knew that this gorgeous plate would be a winner at her monthly table and here it is!

You know I'm a "Pavlova Queen" right?
Not just I love making Pavlovas, they're also my absolute favourite dessert in the world.
Under the "Pavlova" label, you can already find 10 pavlova recipes here on the blog and although I loved every and each one of them, I have to tell you that this one, that I'm leaving you today, is the BEST PAVLOVA EVER!!! Absolutely divine!
The recipe is from Lorraine Pascale amazing new books "Bake" and as you might remember, I already made these delicious millefeuilles from it.

Sweet World Challenge and the Battenberg Cake / Bolo Battenberg e o Sweet World.


It's Sweet World Day and this month, for our 14th edition, we decided (Susana and myself of course...), to ask you to make a Battenberg cake!
Is it a difficult cake to make?
Honestly? No! 
Is it good? Depends on which recipe you follow. This one was to die for. Sensational!! 
But... What is a Battenberg? 
According to my researches, the most common story is that it was an English creation to celebrate Queen Victoria’s granddaughter’s marriage. 
In 1884 Princess Victoria married Prince Louis of Battenburg and this cake represents the uniting of England and Germany. 
Marzipan is a favourite in Germany and the Battenberg cake is named after a town in Hesse. 
It encases light sponges, which suit British palettes and it is thought to be a fusion of the particular tastes of the two countries. 
Because marzipan was fairly expensive at the time, encasing the cake in it elevated the treat to a level of indulgence, while at the same time, a slice of it went very well with one of Britain’s favourite pleasures, a cup of tea. 
However, this is an unconfirmed theory and nobody knows the exact way the Battenberg was made. Similar cakes to the Battenberg also exist, such as the domino cake, church window cake and Neapolitan roll. 
There is also dispute over how many squares of cake make up a Battenberg. Some cakes call for nine squares in the checkerboard, others call for four. 
Some say the four sections represent the Prince’s of Battenberg. Louis, as mentioned above, along with his brothers Alexander, Franz-Joseph and Henry. 
This theory falls apart as some traditional Battenberg cakes have more sections but the thing is, no matter the amount of sections, it is indeed a very delicious cake that I'd never made until now and that was a real delight. At least, this Luis Troyano version which has a Persian twist. 
As you might be guessing by now, the Battenberg Cake recipe I'm leaving you today is from Luis Troyano "Bake it Great" gorgeous cook book and I'm very pleased with the final result! 
In case you don't know, Luis Troyano was one of the 2014 Great British Bake Off finalists and I'm a Great British Bake Off addicted...

Forest Moss Cake / Bolo Forest Moss.


Apparently the Forest Moss Cake is a Polish cake. Although I never heard of it, I found it while flicking (for the second time), through Paul Hollywood new cookbook, "The Weekend Baker".
In the book, Paul says he found it in a café and loved it so, he had to share the recipe.
I confess that, the first time I was flicking through the book, this cake didn't catch my eye but the second time, when I read the recipe properly and noticed the secret "healthy" ingredient, I got very excited about it.
SPINACH!
Yes! Spinach is the secret ingredient and, because Marta invited us to cook with spinach this month and... just in time for Marta's round up (because she kindly allowed), I invite Marta to take this cake and share it at her table because it really is divine!

Sage, speck and roasted garlic pull apart bread / Pão "pull apart" de salva, toucinho fumado e alho assado.


Another delicious Donna Hay magazine suggestion, this time a savoury pull apart bread.
This bread is a fabulous suggestion for the Christmas table.
A tear and share bread, filled with delicious flavours, textures and contrasts.
Give it a go and enjoy. The only thing I can't promise you, is that you will only have one or two pieces!


ingredients (serves 6 to 8):
250ml milk
50g unsalted butter, chopped
1 tbsp caster sugar
2 tsp dry yeast
485g plain flour, plus extra for dusting
1/2 tsp sea salt flakes
2 eggs
250g speck, rind removed and chopped
12 garlic cloves, skin on
1 bunch sage, leaves picked, plus 1/2 cup extra leaves
125ml extra virgin olive oil
150g grated fontina cheese
65g dried cranberries
70g pistachios, chopped
method:
Place 125ml of the milk in a small saucepan over high heat and bring to a simmer.
Remove from the heat, add the butter and sugar and stir until the butter has melted.
Add the remaining milk and set aside for 5 minutes.
Add the yeast and stir to combine. Set aside for 5 minutes or until the surface is foamy.
Place the flour, salt, eggs and the yeast mixture into the bowl of an electric mixer with the dough hook attached and beat for 5 minutes or until the dough is smooth.
Transfer the dough to a lightly greased bowl, cover with plastic wrap and set aside for 30 minutes or until doubled in size.
Preheat the oven to 200ºC.
Place the speck and garlic cloves on a oven tray and cook for 10 to 12 minutes or until the speck is crisp.
Set the speck aside and allow the garlic to cool slightly.
Squeeze the garlic from their skins and place in a small food processor.
Add the sage and 80ml of the olive oil and process until well combined. Set aside.
Place the dough on a lightly floured surface and roll out to a 32cm x 35cm rectangle.
Spread the dough with the sage mixture, top evenly with the speck, cheese, cranberries and pistachios.
Cut the dough in half lengthways and starting from the longest edge, roll each half to enclose the filling.
Cut each roll into 16 rounds and arrange the rounds in a lightly greased 24cm round or oval ovenproof dish.
Cover with plastic wrap  and set aside for 30 minutes or until doubled in size.
Remove the plastic wrap, top with the remaining olive oil and cook for 20 to 22 minutes or until golden brown and cooked through.
Add the extra sage leaves and cook for a further 5 minutes or until the sage leaves are crisp.

Desta vez uma receita salgada. Um pão enrolado de forma a ser "puxado" e partilhado e que é uma sugestão, não só linda, como super deliciosa para a época natalícia.
Um pão recheado de contrastes e texturas e com aromas e sabores de Natal.
Atrevam-se a fazê-lo e deliciem-se. Só não vos posso prometer uma coisa: É que só vão comer um ou dois pedaços!


ingredientes (para 6 a 8 pessoas):
250ml leite
50g manteiga sem sal, em cubos
1 colher sopa de açúcar refinado branco
2 colheres chá de fermento biológico seco
485g farinha de trigo branca + extra para a bancada
1/2 colher chá de flocos ou flor de sal
2 ovos
250g speck ou toucinho fumado, sem courato e cortado em lardons
12 dentes de alho, com casca
folhas de 1 ramo de salva + 1/2 chávena (cup) de folhas extra
125ml azeite extra virgem
150g queijo fontina ralado (ou usem outro a gosto)
65g arandos secos
70g pistachios, picados
preparação:
Colocar 125ml do leite num tacho e levar ao lume até começar a querer levantar fervura.
Retirar o tacho do lume e adicionar a manteiga e o açúcar, mexendo até a manteiga estar derretida.
Adicionar o leite restante e deixar repousar por 5 minutos.
Adicionar o fermento e mexer. Reservar por mais 5 minutos, ou até a mistura formar uma espuma na superfície.
Colocar a farinha, o sal, os ovos e a mistura do fermento na taça de uma batedeira eléctrica equipada com o gancho e bater tudo por 5 minutos, ou até obter uma massa macia.
Transferir a massa para uma taça untada ligeiramente, tapar com película aderente e deixar repousar por 30 minutos, ou até a massa ter duplicado de tamanho.
Aquecer o forno a 200ºC.
Colocar o toucinho fumado e os dentes de alho num tabuleiro e levar ao forno por cerca de 10 a 12 minutos, ou até o toucinho estar douradinho e crocante.
Reservar o toucinho, deixar os alhos arrefecer até poderem ser manuseados e de seguida, descascá-los e colocá-los no copo de um robot de cozinha.
Aos alhos, adicionar as folhas de salva e 80ml do azeite e processar tudo. Reservar.
Colocar a massa sobre uma bancada ligeiramente enfarinhada e estendê-la até obter um rectângulo de cerca de 32cm x 35cm.
Barrar a massa com a mistura da salva e polvilhar com o toucinho, o queijo, os arandos e os pistachios.
Cortar a massa em 2, no sentido do comprimento e, começando por um dos lados mais compridos, enrolar cada metade, por forma a obter dois rolos recheados.
Cortar cada um dos rolos em 16 rodelas.
Untar ligeiramente um recipiente redondo ou oval que possa ir ao forno, com cerca de 24cm.
Colocar as rodelas no tabuleiro preparado, com o lado do corte virado para cima, tapar com película aderente e deixar repousar por mais 30 minutos, ou até ter duplicado novamente de volume.
Retirar a película aderente, regar com o azeite restante e levar ao forno (200ºC), por cerca de 20 a 22 minutos, ou até o pão estar douradinho e cozido.
Polvilhar com as folhas de salva extra e levar ao forno por mais 5 minutos, ou até as folhas de salva estarem crocantes.

Pistachio and yoghurt chicken curry with Naan bread / Caril de frango com iogurte e pistachios e pão Naan.


Cold and rainy days, call for a cozy and warm blanket and a comforting bowl of food and this rich and creamy curry couldn't be more comforting and delicious.
The Naan bread, is the most delicious one I ever tried and it is so easy to make and the perfect accompaniment for the creamy sauce of the curry.
ingredients (serves 4):
100g unsalted pistachios, plus extra to serve
5cm ginger, peeled and roughly chopped
4 cloves of garlic, roughly chopped
3 tbsp rapeseed oil (I used olive oil)
2 large onions, sliced into fine rings
2 large ripe tomatoes, roughly chopped
1/4 tsp ground black pepper
1 tsp garam masala
1/2 tsp chilli powder
1 tbsp coriander seeds, crushed
1/2 tsp ground cardamom
4cm cinnamon stick or 1 tsp ground cinnamon
1 tsp salt or to taste
800g skinless, boneless chicken thighs, chopped into 2cm cubes
250ml hot chicken stock
4 tbsp Greek yoghurt, plus extra to serve
juice of 1/2 a lemon
method:
In a food processor or spice grinder, grind the pistachios to a fine powder and set aside.
Bash up the ginger and garlic in a pestle and mortar to a coarse paste and set aside.
Put the oil in a wide-bottomed, lidded frying pan on a medium heat and, when it's hot, add the onions.
Fry the onions until they are caramelised, which should take around 20 minutes.
Add the garlic and ginger paste and stir fry for 3 to 4 minutes, before adding the tomatoes.
Put the lid on the pan and leave to cook for around 5 minutes, or until the tomatoes start to break down.
Add the black pepper, garam masala, chilli powder, coriander, cardamom, cinnamon and salt.
Stir everything together and then add the chicken. Turn the chicken so that it seals on all sides.
Add the ground pistachios and stir fry for 1 minute and then pour in the chicken stock.
Stir the yoghurt with a fork and then add it into the pan, string everything together.
Pop the lid on the pan and leave to cook for around 15 minutes.
Taste the curry and adjust the seasoning if needed.
If you want, you can add a little water in order to achieve a more saucy consistency.
Serve the curry with the Naan bread and/or Basmati rice and top it with a dollop of yoghurt, a scatter of chopped pistachios and a squeeze of the lemon juice.


ingredients for the Naan bread (makes 12):
500g plain flour + extra to dust the dough
rapeseed oil (I used olive oil)
4 tbsp whole-milk yoghurt
7g dried yeast
2 tsp sugar
2 tsp salt
1 level tsp baking powder
275ml whole milk, hand hot
method:
Put the flour into a large mixing bowl. Make a well in the middle and add 2 tbsp of oil, the yoghurt, yeast, sugar, salt and baking powder.
Mix through with your fingers until the ingredients resemble breadcrumbs. Add the warm milk, little by little, and mix again until it comes into a dough.
Put the dough on to a clean and well floured surface and knead for about 5 minutes.
Transfer the dough to a bowl, cover and leave it in a warm place for at least 1 hour, or until doubled in size.
When the dough has doubled in size, divide it into 12 pieces.
Take one piece, roll it into a ball and flatten it between your palms. Coat it in fresh flour and roll it out to around 12cm x 20cm.
Put a frying pan on a medium heat and, when hot, place the naan in it.
When the naan starts to bubble (that can take about 20 to 30 seconds), flip it over, using a spatula, and cook on the other side, for the same amount of time. Be careful to not burn it.
Flip over again and quickly press it gently all over with a spatula, for 10 to 15 seconds.
Turn the naan over again for another 10 to 15 seconds and if cooked perfectly (without uncooked doughy bits), take it off the pan.
Cook the remaining naans in the same way, keeping the cooked ones warm by stacking them on top of each other and wrapping them in foil.

Dias frios e chuvosos só pedem comidinha de conforto e acreditem, eu sei que aqui é a terra da chuva, mas estas duas últimas semanas tem sido demais.
Já me questiono onde é que há tanta água para deitar abaixo..., e isto para não falar nos ventos fortíssimos e nas temperaturas baixas que acompanham as tempestades de chuva que têm caído incessantemente.
Enfim, lamúrias à parte, pois eu não sou de me lamentar e sim de aceitar o que a vida e a Natureza têm para me oferecer, deixo-vos hoje com este caril de frango maravilhoso e com o que, acreditem, é o melhor pão Naan que já comi até hoje (e isto não quer dizer que seja o melhor do mundo, pois muitos haverá para experimentar...).
Comidinha de conforto que nestes dias é o que sabe melhor, pois aquece o corpo e a alma.


ingredientes (para 4 pessoas):
100g pistachios sem sal + extra para servir
5cm gengibre fresco, descascado e picado grosseiramente
4 dentes de alho, descascados e picados grosseiramente
3 colheres sopa de óleo de colza ou canola (eu usei azeite, pois não gosto do óleo de canola)
2 cebolas grandes, cortadas em rodelas finas
2 tomates grandes e maduros, picados grosseiramente
1/4 colher chá de pimenta preta moída na altura
1 colher chá de garam masala
1/2 colher chá de malagueta em pó
1 colher sopa de sementes de coentros, esmagadas
1/2 colher chá de cardamomo em pó
1 pau de 4cm de canela, ou 1 colher chá de canela em pó
1 colher chá de sal, ou a gosto
800g sobre coxas de frango, sem pele e sem osso e cortadas em cubos de cerca de 2cm
250ml caldo de galinha quente
4 colheres sopa de iogurte grego + extra para servir
sumo de 1/2 limão
preparação:
No copo do robot de cozinha ou num moinho de especiarias, reduzir os pistachios a farinha e reservar. 
No almofariz, esmagar os alhos e o gengibre, até obter uma pasta grosseira. Reservar.
Colocar o óleo numa frigideira de fundo largo que tenha tampa e aquecer sobre lume médio.
Quando o óleo estiver quente, adicionar as cebolas e fritar até estas estarem caramelizadas, o que poderá demorar cerca de 20 minutos.
Adicionar a pasta de alho e gengibre e fritar, mexendo sempre, por cerca de 3 a 4 minutos.
Adicionar os tomates, tapar a frigideira e cozinhar por cerca de 5 minutos, ou até os tomates começarem a desfazer.
Adicionar a pimenta preta, a garam masala, a malagueta em pó, as sementes de coentros, o cardamomo, a canela e o sal e mexer tudo muito bem.
Adicionar o frango e mexer, por forma a selar todos os lados do mesmo.
Adicionar os pistachios em pó e mexer por cerca de 1 minuto, antes de adicionar o caldo de galinha.
Mexer bem o iogurte com um garfo e adicioná-lo à mistura anterior, mexendo tudo muito bem.
Tapara a frigideira e deixar cozinhar por cerca de 15 minutos.
Provar o caril e rectificar os temperos a gosto.
Caso queiram e achem necessário, podem adicionar um bocadinho de água, por forma a obter um molho mais cremoso.
Servir o caril decorado com uma colherada de iogurte, pistachios picados e regar com um bocadinho do sumo de limão.
Acompanhar com/ou arroz Basmati e o pão Naan.


ingredientes para o pão Naan (para 12):
500g farinha de trigo branca + extra para polvilhar a bancada e o pão
óleo de canola ou colza (eu usei azeite)
4 colheres sopa de iogurte natural gordo
7g fermento biológico seco
2 colheres chá de açúcar
2 colheres chá de sal fino
1 colher chá (nivelada) de fermento em pó
275ml leite gordo, morno


preparação:
Colocar a farinha numa taça larga. Fazer um buraco no meio e adicionar 2 colheres de sopa do óleo ou azeite, o iogurte, o açúcar, o fermento de padeiro seco, o sal e o fermento em pó.
Misturar tudo muito bem com as pontas dos dedos, até obter uma mistura areada.
Adicionar o leite morno, um bocadinho de cada vez, até a mistura formar uma massa.
Colocar a massa sobre uma superfície limpa e bem enfarinhada e amassar por cerca de 5 minutos.
Transferir a massa para uma taça, cobrir com película aderente e deixar levedar em local aquecido, por cerca de 1 hora, ou até ter duplicado de tamanho.
Quando a massa tiver duplicado de tamanho, dividi-la em 12 pedaços iguais. Formar uma bola com um pedaço da massa e depois, espalmá-la entre as palmas das mãos.
Polvilhar a massa com farinha e estender com o rolo, por forma a obter um rectângulo com cerca de 12 x 20cm. Repetir para os restantes pedaços de massa.
Colocar uma frigideira sobre lume médio e, quando bem quente, colocar um naan na frigideira.
Quando a parte de cima do pão formar bolhas, o que demorará cerca de 20 a 30 segundos, virá-lo com a ajuda de uma espátula e cozinhar do outro lado por mais 20 a 30 segundos, tendo cuidado para não deixar queimar.
Voltar a virar o pão e, com a ajuda da espátula, pressionar delicadamente, a superfície do mesmo por cerca de 10 a 15 segundos.
Voltar a virar e cozinhar por mais 10 a 15 segundos, verificando se não há bocados de massa crua.
Retirar o pão da frigideira e repetir o processo para os restantes pães.
Enquanto se cozinham os pães restantes, manter os que já estão cozinhados quentes, simplesmente colocando-os uns em cima dos outros e embrulhando-os em folha de alumínio.

Peach and mozzarella salad with pistachio pesto / Salada de Pêssegos e mozzarella, com pesto de pistachios.


As I wrote here, I can't stop trying recipes from this amazing book and therefore, here is another one.
A very colourful and delicious salad, full of contrasting flavours and a delight for all senses.
ingredients for the salad (serves 4):
4 ripe peaches, washed, dried and cut into wedges
1/2 cucumber, thinly sliced
6 tomatoes, preferably mixed colours, sliced
a good handful of wild rocket
250g mozzarella
method:
Divide all the salad ingredients between 4 serving plates.
for the pistachio pesto:
50g shelled pistachio nuts, unsalted and lightly toasted
1 garlic clove, peeled
30g flat leaf parsley
a dash of lemon juice
100ml extra virgin olive oil
salt and freshly ground black pepper
method:
Put the pistachio nut in a food processor and whizz until finely chopped.
Add the garlic and parsley and whizz again to combine.
Add the lemon juice and half of the olive oil, season well with salt and freshly ground pepper and blend until almost smooth.
Add the remaining oil and whizz once more. Set aside for 30 minutes for the flavours to mingle.
Taste the pesto and add more salt and pepper if needed.


to finish:
a handful of purple basil (I used Greek basil)
3 tbsp aged balsamic vinegar
3 tbsp extra virgin olive oil
freshly ground black pepper
to serve:
Spoon the pesto over the salad, scatter with the basil and drizzle with the balsamic vinegar, olive oil and a grind of the black pepper.

Tal como vos disse aqui, não é possível parar de experimentar receitas deste livro lindo e como tal, esta é mais uma das receitas testadas e aprovadas.
A combinação de sabores e texturas é fabulosa e é uma salada que aconselho vivamente a experimentarem.


ingredientes para a salada (para 4 pessoas):
4 pêssegos maduros, lavados, secos e cortados em fatias
1/2 pepino, cortado em rodelas finas
6 tomates, de preferência de diferentes cores, cortados ás rodelas
um bom punhado de rúcula
250g queijo mozzarella
preparação:
Dividir todos os ingredientes por 4 pratos.
para o pesto de pistachio:
50g pistachios sem sal, tostados
1 dente de alho, descascado
30g salsa
umas gotas de sumo de limão
100ml azeite extra virgem
sal e pimenta preta moída na altura
preparação:
Colocar os pistachios no copo do robot de cozinha e processar até estarem picados.
Adicionar o alho e a salsa e processar novamente até tudo estar bem combinado.
Adicionar sumo do limão a gosto, metade do azeite, sal e pimenta preta moída na altura e processar até obter uma mistura macia.
Adicionar o azeite restante e processar uma vez mais.
Deixar o pesto repousar por cerca de 30 minutos, a fim de que os sabores apurem. Após esse tempo, provar e, caso ache necessário, adicionar mais sal e pimenta. 
para finalizar:
um punhado de manjericão roxo (eu não tinha e usei manjericão grego)
3 colheres sopa de um bom vinagre balsâmico
3 colheres sopa de azeite extra virgem
pimenta preta moída na altura
para servir:
Servir a salada com o pesto, polvilhar com o manjericão roxo, regar com o vinagre balsâmico e o azeite e uma pitada de pimenta preta.

Brie, pistachio and dried figs savoury cake / Bolo salgado de queijo Brie, pistachios e figos secos.


Last week, while I was taking with my sister on the phone, she was watching a Rachel's Khoo programme on TV and she started telling me about the fabulous savoury cake that Rachel was making and how delicious it would be.
I had a look at my Little Paris Kitchen cookbook and there it was. A fabulous savoury cake that couldn't wait longer to be tried. 
I love savoury cakes and so I decided to make it for Sunday lunch with a nice leaf salad.
The version that Rachel was making on TV was with goat's cheese and the version that is in the book is with cured sausage, pistachio and prunes but as she wrote in the book, you can follow the basic batter recipe and get creative with the fillings and thats what I did. I followed the basic batter recipe and for the filling I used what I had at home, which was, a fabulous Scottish Brie from the Highlands, pistachios and dried figs and the end result was absolutely delicious.
ingredients (serves 4 to 6):
250g plain flour
15g baking powder
150g Brie (or whatever you fancy), chopped
80g pistachios, roughly chopped
100g dried figs (or prunes), roughly chopped
4 eggs
100ml milk
150ml olive oil
50g plain yoghurt
1 tsp salt
black pepper


method:
Preheat the oven to 180ºC.
Line a 500g loaf tin with baking paper.
In a bowl, mix together the flour, baking powder, cheese, pistachios and figs.
In a separate bowl, whisk the eggs until thick and pale.
Gradually, whisk in the milk, oil and yoghurt.
Add the salt and pepper and fold in the flour mixture being careful to not over beat.
Pour the mixture into the prepared tin and bake for 30 to 40 minutes or until a skewer inserted in the middle of the cake comes out clean.
Leave to cool in the tin.

A semana passada, enquanto falava com a minha irmã ao telefone, ela comentou sobre o bolo salgado que a Rachel Khoo estava a preparar num programa televisivo e que parecia ser magnífico.
Dei uma espreitadela ao livro Little Paris Kitchen e lá estava o dito bolo.
No livro, a Rachel apresenta uma versão feita com pistachios, ameixas secas e salsicha ou salame e na televisão estava a fazer uma versão com queijo de cabra, mas este bolo, é mesmo como a própria Rachel escreve no livro, faz-se a base do bolo e recheia-se com mais ou menos tudo o que nos apetecer ou tivermos à mão e foi o que fiz.
Decidi fazer o dito bolo para o almoço de Domingo, acompanhado por uma salada e utilizei o que tinha cá em casa, ou seja, figos secos, um Brie escocês maravilhoso das Highlands e pistachios.
O resultado final não podia ser mais saboroso e o contraste de sabores é mesmo TOP!!!


ingredientes (para 4 a 6 pessoas):
250g farinha de trigo branca
15g fermento para bolos
150g Brie (ou o que quiserem utilizar), picado
80g pistachios, picados grosseiramente
100g figos secos (ou ameixas secas ou o que quiserem), picados grosseiramente
4 ovos grandes
100ml leite
150ml azeite
50g iogurte natural
1 colher chá de sal
pimenta preta, moída na altura
preparação:
Aquecer o forno a 180ºC.
Forrar com papel vegetal uma forma tipo bolo inglês, com capacidade para 500g.
Numa taça, misturar a farinha, o fermento, o queijo, os pistachios e os figos.
Numa taça à parte, bater os ovos até estes estarem espessos e com uma cor pálida. Gradualmente, adicionar o leite, o azeite, o iogurte, o sal e pimenta a gosto e misturar tudo muito bem.
Juntar os ingredientes sólidos aos líquidos, tendo o cuidado de incorporar, mas sem mexer em demasia.
Deitar a mistura na forma e levar ao forno por 30 a 40 minutos, ou até um palito inserido no meio do bolo sair limpo.
Deixar o bolo arrefecer na própria forma.

Spinach and pistachio pesto / Pesto de espinafres e pistácios.


Although I own quite a substantial quantity of books, I also like to test recipes from other blogs, magazines, internet, wherever..., and last week I spent a few days testing recipes from some of my favourite blogs and the result was stunning and this spinach and pistachio pesto was one of them.
I can not say that this pesto is the best pesto in the world but I can say for sure, that this pesto is the BEST PESTO I had until now.
We had it just with al dente boiled pasta and it was a stunner meal!


ingredients:
200g spinach
75g extra virgin olive oil
2 garlic cloves
1 tsp sea salt
2 tbsp pistachio nuts
25g grated parmesan cheese
method:
Put all the ingredients into a food processor and whizz until smooth, then season to taste.
Serve straight away or store in a sealed jar and keep in the fridge.

Embora (e muito felizmente) seja detentora de uma fabulosa colecção de livros de culinária, também gosto de testar receitas dos meus blogues favoritos e foi isso que fiz a semana passada, pois testei algumas receitas que me ficaram debaixo de olho, desde o dia em que as proprietárias dos respectivos blogues as publicaram e este pesto de espinafres e pistácios da Clavel foi uma dessas receitas.
Não posso dizer que seja o melhor pesto do mundo, mas posso afirmar com segurança que é, sem dúvida, o MELHOR PESTO que comi até hoje!
A receita está aqui e não deixem de a experimentar, pois vão ficar bastante surpreendidos.
