Chermoula aubergine with bulgur and yoghurt / Beringelas com chermoula, bulgur e iogurte.


Each time I look into this book I fall more and more in love with it and last Sunday I decided to make these delicious aubergines.
Really! Give it a try as they are absolutely yummy and delicious and the combination of flavours is totally amazing!
ingredients (serves 4):
2 garlic cloves, crushed
2 tsp ground cumin
2 tsp ground coriander
1 tsp chilli flakes
1 tsp sweet paprika
2 tbsp finely chopped preserved lemon skin
140ml olive oil, plus extra to drizzle
2 medium aubergines
150g bulgur
50g sultanas
10g fresh coriander, chopped + extra to sprinkle
10g fresh mint, chopped
50g pitted green olives, chopped
30g flaked almonds, toasted
3 spring onions, chopped
1 1/2 tbsp lemon juice
120g Greek yoghurt

method:
Preheat the oven to 200ºC.
To make the chermoula, mix together the garlic, cumin, coriander, chilli, paprika, preserved lemons, 2/3 of the olive oil and 1/2 tsp salt.
Cut the aubergines in half lengthways and score the flesh of each half with deep, diagonal criss cross scores. Make sure to not pierce the skin.
Spoon the chermoula over each aubergine half, spreading it evenly and place them, cut side up, on a baking tray.
Bake for 40 minutes or until the aubergines are completely soft.
Meanwhile, place the bulgur in a bowl and cover with 140ml of boiling water.
Soak the sultanas in 50ml of warm water and after 10 minutes, drain them and add them to the bulgur, along with the remaining olive oil. Add the herbs, olives, almonds, spring onions, lemon juice and a pinch of salt. Stir to combine and taste for seasoning.
Serve the aubergines warm or at room temperature, with the bulgur spooned on top of each half.
Spoon some yoghurt over the bulgur. Sprinkle with chopped coriander and drizzle with olive oil.

Cada vez que folheio este livro, fico cada vez mais apaixonada por ele. É um livro verdadeiramente fabuloso!!
No Domingo passado, ao folheá-lo e tendo beringelas no frigorífico, decidi fazer esta receita que é algo de absolutamente fenomenal. O contraste de sabores é uma verdadeira surpresa e uma explosão para qualquer paladar mais sofisticado.
Muito sinceramente, experimentem, pois vão ver que tenho razão!!
ingredientes (para 4 pessoas):
2 dentes de alho, esmagados
2 colheres chá de cominhos em pó
2 colheres chá de coentros em pó
1 colher chá de flocos de malagueta
1 colher chá de paprika ou pimentão doce
2 colheres sopa de casca de limão de conserva, bem picadinha
140ml azeite + extra para regar
2 beringelas médias
150g bulgur
50g sultanas
10g coentros frescos, picados + extra para polvilhar
10g menta fresca, picada
50g azeitonas verdes sem caroço, picadas
30g amêndoas laminadas, tostadas
3 spring onions, picadas
1 1/2 colheres sopa de sumo de limão
120g iogurte grego
sal
preparação:
Aquecer o forno a 200ºC.
Para fazer a chermoula, misturar os alhos, com os cominhos, os coentros em pó, os flocos de malagueta, a paprika, os limões de conserva, 2/3 do azeite e 1/2 colher chá de sal.
Cortar as beringelas ao meio, no sentido do comprimento e com uma faca afiada, fazer cortes diagonais e em cruz, em toda a superfície da polpa, tendo o cuidado de não furar a pele.
Espalhar a chermoula uniformemente sobre a polpa cortada das beringelas e colocá-las num tabuleiro, com a parte cortada virada para cima.
Levar o tabuleiro ao forno e cozinhar por 40 minutos, ou até as beringelas estarem completamente macias.
Entretanto, numa taça, colocar o bulgur e cobri-lo com 140ml de água a ferver.
Colocar as sultanas numa taça e cobri-las com 50ml de água quente.
Passados 10 minutos, escorrer a água das sultanas e adicioná-las ao bulgur, juntamente com o restante azeite, as ervas picadas, as azeitonas, as amêndoas, as spring onions, o sumo do limão e uma pitada de sal.
Mexer tudo muito bem para combinar e, se necessário, adicionar mais sal.
Distribuir o bulgur por sobre as beringelas e servir as beringelas quentes ou à temperatura ambiente.
Colocar o iogurte grego sobre o bulgur e salpicar com coentros frescos picados e regar com um fio de azeite.

Chicken, olives and lemon tagine / Tagine de frango com azeitonas e limão.


Tagine is a Moroccan stew and shares it's name with the terra cotta pot where it is traditionally cooked. You can read more about it here.
If there's ingredients that I really love, spices is one of them and I can tell that I love everything about them. Their fragrance, their flavour and all the exotic senses that they awake.
This tagine is everything I love as it combines chicken and perfumed and tasty spices. The olives and preserved lemons just gives it the needed freshness and are a fabulous complement to the whole dish.
I served it with giant couscous and flatbread to mop up the juices but it can be served with rice.


ingredients (serves 6):
3 tbsp olive oil
6 whole chicken legs
salt and black pepper, to taste
2 large onions, sliced
2 tbsp ground coriander
2 tsp ground white pepper
2 tsp ground ginger
1 tsp. ground turmeric
1/2 tsp crushed saffron threads
1 1/2 cups chicken stock
1 1/4 cups green olives, cracked
2 tbsp unsalted butter
1 tbsp parsley, finely chopped
2 tsp coriander, finely chopped
2 preserved lemons, cut into slices


method:
Heat the oven to 180ºC.
Heat the oil in a large tagine or a cast iron pot over medium heat.
Season the chicken with salt and freshly ground black pepper and add to the pot. Cook, turning, until browned. This can take between 12 to 15 minutes. Transfer the chicken to a plate.
Add the onions to the pot and cook for 10 to 12 minutes, or until golden.
Add the spices and cook for 2 minutes.
Return the chicken to the pot, add the stock and bring to the boil.
Bake the chicken, covered, for 35 to 40 minutes or until tender.
Stir in the olives, butter, parsley, coriander and sliced lemons and cook for a further 6 minutes.

Tagine é um guisado com origem marroquina e o prato partilha o nome com a panela especial em que é cozinhado. Aqui, podem ler mais sobre o assunto.
Se há ingredientes que adoro, especiarias é um deles, pois adoro tudo sobre especiarias, desde o perfume e fragrância, ás cores apelativas e sabor que conferem aos pratos em que são utilizadas.
Esta tagine é tudo isso e é um verdadeiro despertar dos sentidos, tanto em termos de aroma, como em termos de cor e sabor.
As azeitonas e os limões de conserva, são ingredientes indispensáveis para lhe darem a frescura necessária e elevarem este prato a uma segunda dimensão.
Eu servi esta tagine com couscous gigantes e pão, mas podem servi-la com arroz.


ingredientes (para 6 pessoas):
3 colheres sopa de azeite
6 pernas de frango inteiras
sal e pimenta preta do moínho, a gosto
2 cebolas grandes, fatiadas
2 colheres sopa de coentros em pó
2 colheres chá de pimenta branca em pó
2 colheres chá de gengibre em pó
1 tsp colher chá de açafrão das índias ou cúrcuma
1/2 colher chá de filamentos de açafrão, esmagados
1 1/2 chávenas de caldo de galinha
1 1/4 chávenas de azeitonas verdes, esmagadas
2 colheres sopa de manteiga sem sal
1 colher sopa de salsa, picada finamente
2 colheres chá de coentros, picados finamente
2 limões de conserva, cortados em fatias finas
preparação:
Aquecer o forno 180ºC.
Sobre lume médio, aquecer o azeite na base de uma tagine ou num tacho de ferro.
Temperar o frango com sal e pimenta preta moída na altura e colocar o frango no azeite quente.
Cozinhar, virando de vez em quando, até estar bem douradinho. Este processo pode demorar entre 12 a 15 minutos.
Colocar o frango num prato e reservar.
No tacho ou base de tagine onde se selou o frango, colocar a cebola e cozinhar por 10 a 12 minutos, ou até estar douradinha.
Adicionar as especiarias e cozinhar por 2 minutos, mexendo sempre.
Voltar a colocar o frango no tacho e adicionar o caldo de galinha.
Quando levantar fervura, tapar o tacho ou tagine com a tampa e colocar no forno por cerca de 35 a 40 minutos, ou até o frango estar tenrinho.
Adicionar as azeitonas, a manteiga, os coentros, a salsa e os limões fatiados, mexer, tapar e cozinhar por mais 6 minutos.
