Spring Pea Soup with Roasted Radishes and Sweet and Salty Cashews / Sopa de Ervilhas com Rabanetes assados e Cajus agri-doces.


Around Christmas time, Kyle Books threw a "Advent Cookbook Quiz" on Instagram and I was the lucky winner.
I had to choose 3, from 7 available books and one of the books I chose was Rita Serano's "Vegan in 7".
A delightful book, full of delicious vegan recipes and very straightforward and unpretentious.
Recipes using only 7 or less ingredients, beautiful gorgeous photos and simple, but delightful, recipe introductions.
You all know I'm not vegan or even vegetarian, but you all also know that I love to have and make vegan and vegetarian meals whenever I want and that's one of the reasons I chose this book as one of the 3 books I had to choose from.
Honestly, I have a handful of vegan and vegetarian books but this one, is truly adorable and my favourite so far!
If you want to know more and win one copy of this gorgeous book, have a look at Kimberly's, The Little Plantation blog as, she is not just offering a copy of the book but, she's also sharing another delightful recipe from the book.
I've marked down several recipes to cook and share from the book but, as a soup lover, this soup had to be the first recipe to cook and share.

Note: Rita suggests to serve the soup with an optional swirl of Cashew Cream, but I opted for a scatter of the sweet and salty cashews, for crunchiness.

Spanish Garlic Soup / Sopa de Alho Espanhola.


This month, Deborah chose Christopher Kimball's "Milk Street - The New Home Cooking" as the book of the month for the online #rainydaybitescookbookclub!

This cookbook features 125 recipes from all around the world where the focus is maximizing flavour using simple recipes where flavours are layered.
The recipes don't require long lists of ingredients, unusual appliances, or spending all day standing over the stove. The recipes are interesting, varied, and simple to make.
Kimball states that, "cooking and sharing food is central to the human condition" and he also dedicates this book "... to the notion that cooking is the universal language of the human spirit".
How inspiring are these sentences?
Last week, as the first recipe challenge of the month, we cooked this absolutely divine Cuban Style Pork Shoulder with Mojo Sauce, which was to die for and I'll post the recipe here, sometime soon.
I have lots of recipes marked down to be tried from the book but, this one (soup... you know I love soups right?), had to be the first one to be shared.
A soup that is super simple to make, calls for very humble ingredients and that is packed full of flavour.
According to the recipe book caption, this is an " 'end of month' recipe - the sort of meal to make quickly with whatever is on hand and when money is tight" and it is indeed!!

Congee with Chicken, Ginger and Poached Egg / Congee com Frango, Gengibre e Ovo Escalfado.


Congee is the Chinese name for rice porridge but it is also known as okayu in Japan, juk in Korea, and jok in Thailand. They all and each have their own unique variations but, it always begin with rice and a liquid (usually water) and sometimes, a little salt.
From this basic start, flavors and textures can be added after, such as kimchi and salted fish (Korea), or pork with fried garlic and scallions (Philippines).
Congee can even be sweetened with sugar and served with fruit, such as pears or apples.
Another variation is to make congee with chicken and ginger.
More than a bowl of good food for the body, Congee also nourishes the soul!!
This recipe is another delicious one from Shu Han Lee "Chicken and Rice" cook book.
It is so, so delicious and comforting that you just want to eat the whole pot by yourself.

Teriyaki Salmon and Avocado Poke / Poke de Teriyaki de Salmão e Pêra abacate.


Poke is a popular Hawaiian snack of raw fish seasoned with soy sauce and sesame oil.
In the Islands, poke is available everywhere, from food trucks to local Chefs restaurants.
Martha Cheng "The Poke" cookbook is all about this fresh way of eating fish and it's a delightful little book that I intend to use a lot, as I'm a lover of this kind of food.

Kale and Quinoa with Savoury Granola / Kale e Quinoa com Granola Salgada.


Breakfast food that you know, for me is a perfect lunch!
As I promised here, today I'm sharing this super delicious savoury granola.
Actually, I made this recipe a while ago and if you're following my instagram, you can see it here, as I shared it the day I made it. Although I'm only sharing it today, this was the very first recipe that I made from Nina Olsson gorgeous "Bowls of Goodness" cook book. A book that I truly adore and from which I talked about in this same post.
This savoury granola is perfect, not just for this recipe but also to sprinkle over salads, soups, or whatever you fancy.

Asparagus and goat cheese frittata with a crispy rice crust / Frittata de espargos e queijo de cabra, com crosta crocante de arroz.


I told you here, when I got Emilie Raffa cookbook "The Clever Cookbook", that I marked down, almost every single recipe to be tested and tried, right?
That same day, I published the Asian turkey lettuce wraps, and, since then, I made the Anytime berry crumble, the Spring tortellini minestrone, the Creamy orzo with asparagus, and the Cauliflower bolognese.
Today, I'm leaving you another of Emilie's delicious recipes. This fabulous frittata that it's a meal on itself.
Like all the previous recipes, this one, is just another fabulous one and that's why I'm never tired of telling you, how much I love this book and how much I love to cook from it: A LOT!!


ingredients (serves 4):
6 extra large eggs
100g plain Greek yoghurt
134g asparagus, sliced on a diagonal about 1.3cm thick, tips reserved
sea salt and freshly ground black pepper
1 tbsp olive oil
1 tbsp butter
320g cooked basmati rice, at room temperature
25g spring onions, thinly sliced, white and light green parts only
136g goat cheese, crumbled
method:
Preheat the oven to 220ºC.
Whisk the eggs and yoghurt in a large bowl.
Add the sliced asparagus and season with salt and pepper.
In a large, 25cm cast iron skillet, warm the olive oil and butter over a low heat.
Add the rice and stir well to coat the grains (about 30 seconds). Season lightly with salt and pepper.
Using the back of a wooden spoon, spread out the grains on the bottom of the skillet.
Sprinkle the spring onions over the top.
Pour the egg mixture into the skillet, tilting the pan to spread the filling all the way around.
Decorate with the reserved asparagus tips and the crumbled goat cheese.
Bake for 30 minutes, or until the filling is set and the top is golden brown.
Cool for 5 minutes before slicing.

Se bem se lembram, disse-vos aqui, aquando da publicação da primeira receita do livro da Emilie Raffa, o "The Clever Cookbook", que adorava tanto o livro, que tinha marcado quase todas as receitas para testar certo?
Pois bem, nesse mesmo dia, publiquei os Wraps de alface com peru em molho asiático, depois, este Crumble de frutos vermelhos, depois foi a vez do Minestrone primaveril com tortellini, tendo-se seguido este Orzo cremoso com espargos e depois, esta Bolonhesa de couve flor.
Este resumo serve só para reforçar o que já escrevi antes em todos os posts que contemplam este livro, ou seja, o quanto, de facto e de verdade, ADORO o livro.
As receitas são todas tão deliciosas e tão fáceis de preparar, que não me canso de cozinhar e de continuar a publicar receitas desta pequena maravilha de 208 páginas.
Assim sendo, aqui fica mais uma fabulosa sugestão. Esta frittata deliciosa!


ingredientes (para 4 pessoas):
6 ovos extra largos (XL)
100g iogurte grego natural
134g espargos, cortados em rodelas de 1.3cm, na diagonal, pontas reservadas para a decoração.
sal e pimenta preta moída na altura
1 colher sopa de azeite
1 colher sopa de manteiga
320g arroz Basmati cozido, à temperatura ambiente (podem usar sobras)
25g spring onions, parte branca e verde clara, cortada em rodelas finas
136g queijo de cabra fresco, esfarelado


preparação:
Aquecer o forno a 220ºC.
Numa taça, bater os ovos com o iogurte, até a mistura estar cremosa e homogénea.
Adicionar os espargos e temperar de sal e pimenta.
Numa skillet ou outro tipo de frigideira que possa ir ao forno (com cerca de 25cm de diâmetro), aquecer o azeite e a manteiga, sobre lume brando.
Adicionar o arroz e mexer, por cerca de 30 segundos, por forma a que os grãos de arroz fiquem embebidos na mistura do azeite e da manteiga. Temperar com uma pitada de sal e pimenta.
Com as costas de uma colher de pau, espalhar bem o arroz na base da frigideira (a fim de criar como que uma base que, no final, será a tal base crocante).
Polvilhar o arroz com as spring onions e sobre estas, deitar a mistura de espargos, ovos e iogurte, distribuindo bem a mistura pela superfície do arroz.
Decorar com as pontas dos espargos reservadas e polvilhar com o queijo de cabra.
Levar ao forno por cerca de 30 minutos, ou até o recheio estar firme ao toque e o topo estar bem douradinho.
Deixar arrefecer por 5 minutos antes de servir.

Pad Thai.


Pad Thai is a very loved street food dish from Thailand.
I have to admit that I've always been very curious about this famous dish and now, having (again) a sneak peek at this fabulously gorgeous book, I "noticed" the recipe for this Pad Thai and I decided to make it straightaway.
That's one of the delights of going through books that, apparently, are forgotten in your book shelves...
You always find something new and to fall in love with...!
It was the first time I made or tasted Pad Thai and I have to tell you that it is a real treat!! Here at home, we all LOVED IT, including the kids!!
ingredients (serves 4):
300g wide dried rice noodles
200g pork fillet
150g peeled raw prawns
150g bean sprouts
4 spring onions
3 garlic cloves
3 to 4 tbsp vegetable oil
2 to 3 tbsp fish sauce
1 to 2 tsp grated palm sugar
1 tsp chilli flakes
2 tbsp lime juice
2 eggs
100g toasted peanuts, chopped
chopped fresh coriander leaves, to serve
Thai sweet chilli sauce (optional), to serve
method:
Soak he noodles according to the packet instructions. Drain and set aside.
Cut the pork into very thin slices, peel the prawns, trim the bean sprouts, slice the spring onions on the diagonal and finely chop the garlic.
Gently heat the oil in a wok.
Quickly stir fry the garlic, then add the pork and stir fry for a few more minutes until the meat is nicely browned.
Add the prawns, spring onions, fish sauce, sugar, chilli and lime juice, and stir fry for another 1 minute.
Crack the eggs into the wok and stir until they start to cook.
Add the bean sprouts and noodles and stir fry a bit more.
Serve straight away, scattered with the peanuts, coriander and the Thai sweet chilli if using.


Note: I served my Pad Thai in these gorgeous bowls that, 2 days ago, were just cheap, plain white bowls from IKEA.
Following Adrianna Adarme "The year of Cozy" book instructions, I marbled my own bowls and now, they are full of life and colour.
This book is gorgeous and packed full of delicious food recipes and gorgeous craft and decoration ideas.

Pad Thai é um prato muito típico e amado na Tailândia e que é, maioritariamente, servido e considerado como "street food".
Confesso que já andava curiosa com este prato há bastante tempo, especialmente por tanto o ver ser confeccionado no Masterchef Austrália.
Nunca o tendo experimentado, provado ou confeccionado, andava eu de volta deste livro lindo que estava "esquecido" nas minhas prateleiras, quando dei de caras com esta receita de Pad Thai. Pensei logo para comigo, "pois nem é cedo nem é tarde, é já!".
Só vos posso dizer que todos cá em casa, incluindo os miúdos, ADORÁMOS!!!
Estes são alguns dos deleites de, de vez em quando, fazer incursões por livros que já fazem parte da "mobília da casa" há anos e que são lindos de morrer :))!
ingredientes (para 4 pessoas):
300g massa de arroz larga
200g lombelo de porco
150g camarões descascados
150g rebentos de soja
4 spring onions
3 dentes de alho
3 a 4 colheres sopa de óleo vegetal
2 a 3 colheres sopa de fish sauce
1 a 2 colheres chá de açúcar de cana ralado (eu usei demerara)
1 colher chá de flocos de malagueta
2 colheres sopa de sumo de lima
2 ovos
100g amendoins torrados, picados
folhas de coentros, picados, para servir
sweet chilli sauce tailandês, para servir (opcional)
preparação:
Demolhar a massa de arroz em água a ferver, de acordo com as instruções do pacote. Escorrer e reservar.
Cortar o lombelo de porco em fatias muito fininhas.
Descascar os camarões.
Arranjar os rebentos de soja, cortar as spring onions em rodelas diagonais e picar o alho muito picadinho.
Sobre lume médio a baixo, aquecer o óleo na wok.
Aumentar o lume e saltear o alho. Adicionar a carne de porco e fritar, mexendo sempre, até a carne estar bem selada e douradinha.
Adicionar os camarões, as spring onions, a fish sauce, o açúcar, os flocos de malagueta e o sumo da lima e, mexendo sempre, fritar por mais 1 minuto.
Adicionar os ovos e, mexendo sempre, fritar até estes começarem a estar cozinhados.
Adicionar os rebentos de soja e os noodles e fritar por mais uns segundos, envolvendo tudo muito bem.
Servir de imediato, polvilhado com os amendoins tostados e picados, os coentros e, caso usem, o sweet chilli sauce.


Nota: Eu servi o meu Pad Thai nestas tigelas lindas que, até há dois dias atrás, eram só umas daquelas tigelas brancas e baratas do IKEA!

Salmon burgers / Hamburgueres de salmão.


Healthy and homemade burgers are being a hit here at home this Summer.
All, kids and grown ups love them and these ones are absolutely delicious and easy to prepare.
The recipe is here and if you like fish burgers, these ones really are worthy to be tried.

Hamburgers caseiros, sejam de peixe, vegetarianos ou de carne, têm sido muito apreciados por todos cá em casa este Verão.
Esta receita é absolutamente deliciosa e facílima de preparar e se gostam de hamburgueres de peixe, aqui fica a sugestão, pois vale mesmo a pena!!
A receita é para 2 pessoas, que eu dupliquei para dar para 4.


ingredientes (para 2 pessoas):
160 a 200g de salmão fresco
1 spring onion
1 punhado de alcaparras
1 colher chá de mostarda de Dijon
1 ovo
3 colheres sopa de pão ralado panko
1 punhado de salsa
1 punhado de manjericão
azeite
sal e pimenta preta moída na altura
3 colheres sopa de maionese
raspa de 1 limão e sumo de meio limão
para servir:
pães de hamburguer
folhas de alface
1 pêra abacate, em rodelas
1 tomate, em rodelas
6 rodelas de pepino
anéis de 1cebola vermelha (não usei)
preparação:
Picar o salmão grosseiramente.
Picar as spring onions e as alcaparras e juntá-las ao salmão.
Adicionar a mostarda, sal e pimenta.
Adicionar o ovo e o pão ralado e misturar tudo muito bem.
Picar a salsa e o manjericão e adicioná-los à mistura anterior.
Moldar a mistura em dois hamburgueres e levá-los ao frigorífico por cerca de 30 minutos ou podem deixar de um dia para o outro que foi o que eu fiz.
Misturar a maionese com o sumo e a raspa do limão. Temperar com pimenta preta e reservar.
Cortar o pão dos hamburgueres ao meio e torrá-lo.
Pincelar ambos os lados dos hamburgueres com azeite e fritá-los numa frigideira aquecida, por cerca de 3 minutos de cada lado.
Barrar as metades de baixo do pão com a maionese de limão e por cima, colocar a alface e a pêra abacate.
Colocar 1 hamburguer em cima de cada uma das metades de pão preparadas, cobrir com o tomate, o pepino e a cebola (caso utilizem) e temperar com pimenta.
Barrar as partes de cima do pão com mais maionese e com elas cobrir os hamburgueres.
Servir imediatamente.

Falafel with hummus and tabbouleh.


A total and delightful vegetarian meal that is full of flavour.
As everybody knows by now, chickpeas are very healthy because they don't contain any cholesterol or saturated fats and they are also very rich in protein.
Since I bought the "Hummus Bros." cook book that I always make my hummus from scratch and with dried chickpeas instead of the canned cooked chickpeas and the difference in terms of texture, flavour and quality is absolutely gigantic.
Try it and you'll be amazed!
According to the book, hummus can be, not just part of a mezze dish, but part of a complete meal and the suggestions given are fabulous and absolutely delicious.
This recipe makes a large quantity of hummus so, fell free to make just half the recipe or less. I made the whole recipe as I wanted to try other recipes and combinations from the book.
ingredients for the hummus:
500g dried chickpeas
1.2l cold water
2 tsp bicarbonate of soda
300g tahini
juice of 2 lemons
sea salt, to taste
method:
Put the chickpeas into a bowl and cover with plenty of cold water. Cover and leave to soak for 12 hours, or overnight.
Drain the chickpeas and put them in a saucepan. Pour in the fresh measured cold water so that the water only covers the chickpeas by about 2cm. Stir in the bicarbonate of soda, then bring the water to the boil. Don't add salt at this stage as it can make the chickpeas tough.
Skim off scum, if liked, with a slotted spoon. Cook over a medium heat for 1 to 1 1/2 hours until the chickpeas are very soft.
If the water level seems to be going down too quickly, partially cover the pan with a lid to help reduce evaporation, but don't cover the top completely or the pan will boil over. Keep an eye on the water level and top up with a little extra boiling water if needed.
Stir from time to time, stirring more towards the end of cooking as the chickpeas take on a soupy texture as there is less water in the pan.
Once cooked, drain the chickpeas, reserving the cooking liquid.
Spread the chickpeas over a tray and leave to cool.
Purée the chickpeas with any liquid from the roasting tin in a food processor.
Add the tahini, lemon juice and salt to taste and process until you have a creamy velvety smooth consistency. Adjust the consistency with some of the reserved cooking liquid or water.
Transfer the hummus to a plastic container, spread it level and cover with a well fitting lid.
Refrigerate until needed.
for the falafel:
1tsp cumin seeds
1tsp coriander seeds
400g can chickpeas, drained
400g can butter beans, drained
juice 1/2 lemon
small bunch coriander, including stalks
1/4 red chilli, deseeded, and chopped
1 garlic clove, crushed
1 egg yolk, beaten
small bunch parsley
4tbsp wholemeal flour
method:
Heat oven to 180ºC and put a non-stick baking tray inside.
For the falafels, heat a large non-stick frying pan, add the cumin and coriander seeds and fry for 1 to 2 minutes or until fragrant, stirring occasionally to prevent burning. Remove from the pan.
Put the seeds, the remaining falafel ingredients and some seasoning into a food processor and blitz until you have a chunky paste. If it seems too dry, add 1tsp water and blitz again until you have the consistency of damp sand. Using your hands, divide the mixture into 12 falafel balls and chill for 30 minutes.
Heat a non-stick frying pan. When hot, add the falafel balls, pressing down into the pan to make patties.
Leave to cook, without turning, for 2 to 3 minutes, then check to make sure they’re brown and crisp.
Turn and cook on the other side for 2 minutes more.
Remove from the pan, transfer to the baking tray in the oven and cook for a further 10 minutes.
for the tabbouleh:
50g bulgur wheat
1tbsp extra virgin olive oil
juice 1 lemon
small bunch parsley, finely chopped
small bunch mint, finely chopped
small bunch coriander, finely chopped
2 spring onions, white parts only, finely sliced
1/2 cucumber, deseeded and cut into small pieces
3 tomatoes, quartered, deseeded and cut into small pieces
method:
Mix the olive oil, lemon juice and some black pepper in a small bowl.
Prepare the bulgur wheat according to the packet directions.
In a larger bowl, combine the rest of the tabbouleh ingredients, along with the prepared bulgur.
Add the dressing and mix very well.

Uma refeição completamente vegetariana é o que vos proponho hoje. Não uma mas três fantásticas receitas, super saudáveis e ideais para uma segunda feira sem carne e para todos os outros dias da semana, claro.
Como é do conhecimento geral, o grão é uma leguminosa super saudável, pois não contem nenhum tipo de colesterol nem gorduras saturadas, além de que é rico em proteínas.
Desde que comprei o livro dos "Hummus Bros." que deixei de fazer o meu hummus com grão cozido e enlatado.
Fazer o hummus a partir de grão seco, demolhado e cozido na altura, faz uma diferença abismal no resultado final do hummus quer em termos de cor e textura, quer em termos de sabor.
Experimentem, comparem e verão que nunca mais recorrerão ao grão de bico enlatado para fazer o vosso hummus.
De acordo com os autores do livro, o hummus, pode e deve ser consumido como parte integrante de uma refeição e não apenas como um dip, parte de uma "mezze" ou algo para barrar no pão. As sugestões que apresentam no livro são magníficas e eu já testei algumas (que aqui publicarei brevemente) e por isso, a receita que vos deixo faz uma quantidade enorme de hummus mas como eu queria experimentar outras receitas do livro, fi-la por inteiro.
Caso queiram fazer só metade um 1/4 da receita, fiquem à vontade para o fazer.


ingredientes para o hummus:
500g grão de bico seco
1.2l água fria
2 colheres chá de bicarbonato de sódio
300g tahini
sumo de 2 limões
sal, a gosto
preparação:
Na véspera de fazer o hummus, colocar o grão em água fria, tapar e deixar de molho por 12 horas, ou durante a noite.
Escorrer a água do grão, colocá-lo num tacho e adicionar a quantidade de água fria mencionada na lista de ingredientes. A água deverá ficar cerca de 2cm acima do nível do grão.
Adicionar o bicarbonato de sódio e levar ao lume até levantar fervura. Atenção, não adicionar sal ou o grão ficará encruado.
Com a ajuda da escumadeira, retirar a espuma que se forma na superfície.
Cozer o grão em lume médio, por cerca de 1 hora a 1 hora e meia, até o grão estar macio.
Caso a água esteja a desaparecer muito rapidamente, tapar parcialmente o tacho, mas não tapar completamente.
Caso ache que a água não chega para cozer o grão pelo tempo necessário, adicionar água a ferver.
Mexer de vez em quando, especialmente no período final de cozedura, pois é quando há pouca água no tacho e é preciso ter mais atenção.
Quando cozido, escorrer o grão e reservar o líquido de cozedura existente.
Espalhar o grão sobre um tabuleiro e deixar arrefecer.
Quando frio, colocar o conteúdo do tabuleiro no copo do robot de cozinha e processar.
Adicionar o tahini, o sumo do limão e sal a gosto e processar até obter um puré macio, aveludado e cremoso.
Caso ache que está muito espesso e para ajustar o hummus ao gosto pessoal, adicionar o líquido de cozedura reservado ou água, até obter a consistência desejada.
Colocar o hummus num contentor de plástico, alisar a superfície e fechar o contentor com uma tampa hermética, de forma a que fique bem acondicionado.
Guardar o hummus no frigorífico até ser necessária a sua utilização.
para as falafel:
1 colher chá de sementes de cominhos
1colher chá de sementes de coentros
1 lata de 400g de grão cozido, escorrido
1 lata de 400g de feijão manteiga, escorrido
sumo de 1/2 limão
um ramo pequeno de coentros, incluindo os talos
1/4 malagueta vermelha, sem sementes e picada
1 dente de alho, esmagado
1 gema de ovo, batida
1 ramo pequeno de salsa
4 colheres sopa de farinha de trigo integral
preparação:
Aquecer o forno a 180ºC e colocar lá dentro 1 tabuleiro anti aderente.
Entretanto, aquecer uma frigideira e tostar as sementes de cominhos e de coentros, até estas libertarem a sua fragrância, tendo cuidado para não queimar as especiarias.
Colocar as sementes tostadas, os restantes ingredientes das falafel e sal a gosto, no copo do robot de cozinha e processar até obter uma pasta grosseira. Caso a mistura pareça muito seca, adicionar 1 colher chá de água e processar novamente, até obter uma consistência de areia molhada.
Com as mãos, dividir a mistura em 12 partes iguais e moldar 12 bolas. Refrigerar por, no mínimo, 30 minutos.
Aquecer uma frigideira anti aderente e quando quente, colocar as falafel na frigideira, pressionando um pouco a fim de espalmá-las ligeiramente.
Deixar cozinhar, sem mexer, por cerca de 2 a 3 minutos, quando bem douradinhas, virar e cozinhar por mais 2 minutos.
Quando bem douradinhas de ambos os lados, transferir as falafel para o tabuleiro que está no forno e levar ao forno por mais 10 minutos, a fim de terminar o processo de cozedura.


para o tabbouleh:
50g bulgur
1colher sopa de azeite extra virgem
sumo de 1 limão
1 ramo pequeno de salsa, picada
1 ramo pequeno de hortelã, picada
1 ramo pequeno de coentros, picados
parte branca de 2 spring onions, picadas muito finamente
1/2 pepino, sementes raspadas e cortado em cubos pequenos
3 tomates, cortados em quartos, sementes retiradas e cortados em pequenos cubos
preparação:
Numa tacinha, misturar o azeite, o sumo do limão e pimenta preta a gosto.
Preparar o bulgur de acordo com as instruções do pacote.
Numa taça larga, colocar o bulgur preparado, assim como todos os restantes ingredientes  especificados.
Adicionar o molho preparado anteriormente e envolver tudo muito bem.

Greens and beans burgers with avocado cream / Hamburgueres de espinafres e feijão com creme de pêra abacate.


Fabulous burgers that can easily be transformed in vegetarian burgers by omitting the bacon.
The avocado cream not only works as a topping for the burgers, but it can also be used as a dip for chips or vegetables.
ingredients for the burgers (serves 4 to 6):
2 slices thick cut bacon
170g fresh spinach
2 garlic cloves, minced
3 cups canned cannellini beans, rinsed and drained
1/4 cup all-purpose or whole wheat flour (I used 1/3 cup of oatmeal)
2 large eggs, lightly beaten
2 tbsp freshly grated Parmesan cheese
2 spring onions, sliced
1/4 tsp salt
1/4 tsp freshly ground black pepper
2 tbsp extra-virgin olive oil
method:
Heat a large frying pan over medium to low heat.
Add the bacon and cook until crispy. Remove the bacon from the pan with a slotted spoon and let it drain over kitchen towel.
To the same skillet, add the spinach and garlic and cook until the spinach is wilted. Turn off the heat.
Add the spinach and garlic to the bowl of a food processor.
Add the beans, bacon, flour, eggs, cheese, spring onions, salt and pepper and pulse until the mixture is coarsely chopped but not fully pureed.
Put the mixture inside a bowl. Use your hands to form 6 to 8 patties out of the bean mixture, depending on the size of your buns.
Heat the same skillet over medium heat and add the olive oil.
Cook the burgers for 4 to 5 minutes on each side, or until golden on both sides.


for the avocado cream:
2/3 cup plain full-fat or low-fat Greek yogurt
1 avocado, pitted, peeled, and chopped
1/4 tsp salt
1/4 tsp freshly ground black pepper
method:
Put the yoghurt, avocado, salt, and pepper in the bowl of the food processor and puree until smooth.
to serve:
6 to 8 whole-grain buns (or other kind of buns), toasted
to finish:
Serve the burgers on the toasted buns, topped with the avocado cream.

Uns hamburgers maravilhosos que, omitindo o bacon (algo impossível para mim), podem transformar-se numa refeição vegetariana.
ingredientes para os hamburgueres (para 4 a 6 pessoas):
2 fatias grossas de bacon
170g folhas de espinafres frescos
2 dentes de alho, esmagados
3 chávenas de feijão branco de lata, escorrido e lavado
1/4 chávena de farinha de trigo branca ou integral (eu usei 1/3 chávena de farelo de aveia)
2 ovos grandes, ligeiramente batidos
2 colheres sopa queijo parmesão ralado
2 spring onions, picadas
1/4 colher chá de sal
1/4 colher chá de pimenta preta moída na altura
2 colheres sopa de azeite extra virgem
preparação:
Sobre lume médio a brando, aquecer uma frigideira larga ou skillet.
Adicionar o bacon e cozinhar até o bacon estar estaladiço.
Com uma escumadeira, remover o bacon para um prato e escorrer sobre papel absorvente de cozinha.
Na mesma frigideira, colocar os espinafres e os alhos e cozinhar até os espinafres murcharem. Desligar o lume.
No copo de um robot de cozinha, colocar a mistura dos espinafres, o feijão, o bacon, a farinha, os ovos, o queijo, as spring onions, sal e pimenta e processar, pulsando, até a mistura estar bem incorporada, mas não em puré fino. Convém que fique um puré grosseiro.
Transferir a mistura para uma taça e, com as mãos, moldar 6 a 8 hamburgueres, dependendo do tamanho do pão que vão usar.
Sobre lume médio, aquecer a mesma frigideira onde fritou o bacon e os espinafres e adicionar o azeite.
Fritar os hamburgueres por cerca de 4 a 5 minutos de cada lado, ou até estarem douradinhos em ambos os lados.


para o creme de pêra abacate:
2/3 chávena de iogurte grego
1 pêra abacate, sem caroço, sem casca e picada
1/4 colher chá de sal
1/4 colher chá de pimenta preta moída na altura
preparação:
Colocar todos os ingredientes no copo do robot de cozinha e processar até obter um puré macio.
para servir:
6 ou 8 pães de hamburguer (variedade à escolha), torrados
para terminar:
Servir os hamburgueres e o creme de abacate, sobre o pão torrado.
