Chocolate and Chilli Bread / Pão com Chocolate e Malagueta.


As soon as I read the theme, I knew straightaway the bread I was going to bake and it's this one that I'm leaving you today!
I was dying to try this Lakeland Magazine chocolate and chilli bread since the day I got the magazine but, for one reason or the other, it never happened so, this time was the time! I had no doubts whatsoever, that this would be the bread to bake this month.
I had to adapt the recipe because the original one is for a bread maker machine. Although I have a bread maker which I use sometimes for more hard work kneading processes, I don't like to make bread in the bread maker so, the method I writing down is the one I used. Saying that, if you want to use a bread maker, go ahead and just follow the machine manufacturer's instructions.
Here it is, for Ana and for this monthly challenge that I truly adore, a Chocolate and Chilli Bread!

Thai style Mussels / Mexilhão à Tailandesa.


Who likes mussels?
I know a bunch of people that doesn't like mussels but I certainly love them!
This recipe, another successful one from Melissa Clark "Dinner: Changing the Game" cookbook, is another winner, specially for those who love Thai flavours.
This is also my last contribution (out of date) for this month's Rainydaybites online Cook Book Club and I couldn't have chosen a better recipe to end May and the Melissa Clark cook off. Although, I must say, there's still lots of recipes marked down to be tried and tested so, you'll see more of this gorgeous book recipes around here soon.

Warm Squid salad with Cucumber, Mint and Aioli / Salada quente de Lulas, Pepino, Menta e Aioli.


This month we are cooking from the absolutely gorgeous Melissa Clark book "Dinner", for the Rainydaybites online Cook Book Club.
I already told you about this book in this post, when I posted this fabulous chicken recipe and, today, I'm leaving you this super delicious salad. A warm salad, with ingredients that I love.
A fabulous combination and explosion of flavours and textures that tantalizes your taste buds.

Melted Cheese Pizza / Pizza com Queijo derretido.


Another recipe for the super fantastic Deborah - Rainydaybites Cook Book Club.
A recipe from the book of the month, which is the fabulous Yvette van Boven "Home Baked" book (I told you about it in this post).
This time it's a savoury recipe. Pizza!
Who doesn't like pizza? I don't know anyone that don't like it!
Although this pizza is slightly different from the conventional pizza, it is, in all ways, as good as..., I mean...
BETTER!!

Spicy Pumpkin Soup with Croutons / Sopa de Abóbora com especiarias e Croutons.


Being myself a huge soup lover, I couldn't let October to come to an end, without preparing a pumpkin soup for Marta and her "ingredient of the month" which is the Pumpkin.
I'm so into Fika and Hygge (concepts that I wrote about in this post) and Scandinavian cooking that, as soon as I saw this soup in Trine Hahnemann fabulous "Scandinavian Comfort Food" book, I couldn't help it but make it straightaway.
Of course I don't need books or recipes to make soups because all of us can make soup right?
The thing is, I love different combinations and different flavours because, although I love soups, I hate boring and bland soups. Something that this soup is not at all. Neither boring nor bland.
Actually, it's a fabulous super flavoursome and tasteful soup and that's why I decided to share it with you all and publish it in time for Marta's "October - Pumpkin - Ingredient of the month".

Coconut and turmeric chicken curry with roasted pumpkin / Caril de frango, com coco, açafrão das índias e abóbora assada.


This curry was marked down to be tried since the day I bought Simmone Logue fabulous "In the Kitchen" book, from which I already made this fabulous cake and this delicious salad.
As the super talented Maria Midões challenged us to work together with asian recipes this month, I couldn't waste the opportunity to present this recipe to Maria and, maybe (who knows), be lucky enough to see the recipe reproduced and styled by Maria herself.
I love this kind of fragrant asian food and this curry exceeded all my expectations, as the combination of flavours, textures and aromas, is just incredible and utterly delicious!


ingredients for the curry paste (serves 6):
1 tsp ground turmeric
1 thumb sized piece of fresh ginger
1 lemongrass stem, pale part only
2 garlic cloves, peeled
1 large red chilli
2 red asian shallots, peeled
method:
Place all the ingredients in a food processor and blend until you have a paste.
for the chicken curry:
500g pumpkin (jap or kent - I used butternut squash), peeled and cut into large chunks
6 tbsp vegetable oil
270ml coconut milk
270ml coconut cream
6 kaffir lime leaves
800g skinless free range chicken breast fillets, sliced into strips
1 tbsp fish sauce
1 tbsp light brown sugar
1/2 tsp sea salt
juice of 1 lime, plus extra lime wedges, to serve
250g cherry tomatoes, cut in half
6 kale stalks, leaves roughly chopped
3 tbsp fried shallots (shop bought or deep fry it yourself)
45g fresh coriander, roughly chopped
method:
Preheat the oven to 180ºC. Line a baking tray with baking paper.
Place the pumpkin on the baking tray and drizzle with 2 tbsp of the vegetable oil.
Season with salt and freshly ground black pepper and bake for 20 minutes or until the pumpkin is soft.
In a large heavy based saucepan, heat the remaining vegetable oil over medium high heat.
Add the curry paste and cook, stirring, for 5 minutes, until the oil has split out of the paste.
Turn the heat down to medium, add the coconut milk, coconut cream and lime leves and cook gently for a further 5 minutes.
Add the chicken strips to the pan, mixing the sauce through, then cook with the lid on for 8 minutes. It is very important at this point that the sauce is just thinking over very slowly as you want the chicken to poach gently so it is lovely and tender.
Stir in the fish sauce, sugar, salt and lime juice and check the seasoning.
Add the pumpkin, tomatoes and kale and cook for 5 minutes.
Serve the curry sprinkled with the fried shallots and coriander, with lime wedges and steamed rice on the side.

Este caril estava marcado para ser reproduzido e testado, desde o dia que comprei este livro lindo da Simmone Logue, o "In the Kitchen". Deste livro, se bem se lembram, já fiz este bolo maravilhoso e esta salada divina.
A receita foi sendo adiada e outras lhe passaram à frente, mas assim que vi este desafio da nossa super talentosa Maria Midões, pensei logo que seria esta a receita que iria preparar para o desafio de receitas asiáticas da querida Maria Midões.
Caso tenha a sorte de a Maria seleccionar esta receita, cozinhá-la e fazer o styling da mesma, à boa maneira e com o extremo bom gosto a que a Maria já nos habituou, ficarei super feliz da vida e muito vaidosa.
Caso isso não aconteça, aconselho-vos a reproduzir esta maravilha, pois é absolutamente delicioso, aromático, picante, mas ao mesmo tempo, fresco e, sobretudo, completamente viciante.
Todos os ingredientes são facilmente encontrados numa boa loja de produtos asiáticos.


ingredientes para a pasta do caril (serves 6):
1 colher chá de açafrão das índias (curcuma)
1 pedaço de gengibre fresco (tamanho de um pulgar)
1 talo de lemongrass, parte clara
2 dentes de alho, descascados
1 malagueta vermelha (red chilli)
2 chalotas asiáticas, descascadas
preparação:
Colocar todos os ingredientes no copo do robot de cozinha e processar até obter uma pasta.


para o caril de frango:
500g abóbora (jap ou kent - eu usei squash), descascada e cortada em pedaços grandes
6 colheres sopa de óleo vegetal
270ml leite de coco
270ml creme de coco
6 folhas de lima kaffir
800g peitos de frango (do campo ou frango caseiro), sem pele e cortados em tiras
1 colher sopa de fish sauce
1 colher sopa de açúcar mascavado claro
1/2 colher chá de sal
sumo de 1 lima, mais gomos ou quartos de lima extra, para servir
250g tomate cherry, cortados ao meio
6 folhas de couve kale, picadas grosseiramente
3 colheres sopa de chalotas crocantes (caso não queiram comprar, cortem chalotas em rodelas super finas, fritem na fritadeira e escorram sobre papel absorvente, foi o que eu fiz).
45g coentros frescos, picados grosseiramente


preparação:
Aquecer o forno a 180ºC. Forrar com papel vegetal um tabuleiro de ir ao forno.
Colocar a abóbora no tabuleiro, regar com 2 das colheres de sopa do óleo e temperar de sal e pimenta.
Entretanto, num tacho de fundo espesso, sobre lume médio a alto, aquecer o óleo restante.
Adicionar a pasta de caril e cozinhar, mexendo sempre, por cerca de 5 minutos, ou até o óleo se separar e o molho ficar com aspecto de que talhou.
Baixar o lume para médio e adicionar o leite, o creme de coco e as folhas de lima. Cozinhar delicadamente, por cerca de 5 minutos.
Adicionar o frango, mexer tudo muito bem e cozinhar, tapando o tacho com a tampa, por cerca de 8 minutos. Atenção que este passo tem de ser delicado, pois o molho tem de cozinhar delicadamente e sem ferver, por forma a que o frango fique cozido, mas macio e suculento.
Adicionar o fish sauce, o açúcar, o sal e o sumo da lima. Mexer bem e rectificar os temperos, se necessário.
Adicionar a abóbora assada, os tomates e a couve e cozinhar por mais 5 minutos.
Servir o caril polvilhado com as chalotas crocantes e os coentros picados e acompanhado dos quartos de lima e de arroz cozido.

Chilli jam / Doce de malagueta.


Before you start thinking that chilli jam it's a weird thing, just give it a try and you'll be amazed!
My husband is totally addicted to this jam and he simply devours jars of it. I can't allow it to finish before making another batch, as he gets very annoyed with me.
I'm making this jam for years now and I've converted even people that claimed not being "chilli people". Once they tried it, they simply adore it!!
So you know, people that came to my house and to which I served it, are totally in love with it now and I even had to take jars of this jam to Portugal, because some of the people that tried it here (in my house), asked me for a jar of this red, sweet and spicy gold.
The recipe is from Nigella Lawson "Nigella Christmas" cookbook and it's a winner.
According to Nigella and myself, this jam goes very well with cold meats and cheese platers.
ingredients (makes 6 x 250ml jars):
150gr long fresh red chilli peppers, deseeded and cut into 4 pieces
150gr red peppers, cored, deseeded and cut into rough chunks
1kg jam sugar 
600ml cider vinegar 
method:
Sterilize your jars and leave to cool.
Put the chillies into a food processor and pulse until they are finely chopped.
Add the chunks of red pepper and pulse again until you have a red-flecked mixture.
Dissolve the sugar in the vinegar in a wide, medium sized pan over a low heat without stirring.
Scrape the chilli and pepper mixture out of the bowl of the food processor and add to the pan.
Bring the pan to the boil, then leave it at a rollicking boil for 10 minutes.
Take the pan off the heat and allow it cool.
After about 40 minutes, ladle into your jars and seal tightly.


Nigella advices:
Make the jam up to 1 month before using or giving and store in a cool, dark place for up to 1 year.
Once opened, store in the fridge and use within 1 month.

Antes que comecem a torcer o nariz e a pensar ou dizer "eeuuukkkk!! Doce de malagueta?", deixem que vos diga que, faço este doce há anos e é uma verdadeira maravilha!!
O meu marido é completamente viciado neste doce e se o deixo acabar antes de fazer uma nova remessa, fica todo amuado (o que aconteceu desta vez, pois não o fiz a tempo e já levei com os seus amuos...).
Mesmo pessoas que proclamaram não serem amigas de picante, provaram este doce e ficaram fãs e pediram a receita!
Até vos posso dizer que, pessoas que o provaram cá em casa, cépticas e torcendo o nariz a princípio (incluindo a minha mãe), já me pediram para lhes levar frascos dele para Portugal, pois adoraram mesmo.
A receita é do livro "Nigella Christmas" da Nigella Lawson e segundo ela e todos os que já o  provaram,  este doce é fabuloso para acompanhar com carnes frias (curadas ou assadas) e pratos de queijos.
Experimentem e digam se não tenho razão!!


ingredientes (para 6  frascos de 250ml):
150gr malaguetas vermelhas, sem sementes e cortadas em 4 pedaços
150gr de pimento vermelho, sem sementes e cortado em pedaços grosseiros
1kg de açúcar para doce (açúcar com pectina)
600ml de vinagre de cidra
preparação:
Esterilizar os frascos e deixar arrefecer.
Eu ponho os frascos lavados e molhados (bocal para cima) em cima de um tabuleiro, coloco o tabuleiro no forno pré aquecido a 180ºC e deixo lá os frascos por cerca de 20 minutos. As tampas, lavo só com água a ferver e depois uso discos de papel encerado (próprio para doces) para proteger a superfície dos doces.
No copo de um robot de cozinha, colocar as malaguetas e pulsar até estar estarem finamente picadas.
Adicionar o pimento e pulsar até obter uma mistura fina.
Num tacho largo, colocar o açúcar e o vinagre.
Sem nunca mexer, aquecer em lume brando, até o açúcar estar completamente dissolvido.
Quando o açúcar estiver dissolvido, adicionar a mistura de malagueta e pimento.
Quando a mistura levantar fervura e ainda, sem nunca mexer, deixar ferver ferozmente por cerca de 10 minutos.
Findo esse tempo, retirar o tacho do lume e deixar arrefecer e repousar por 40 minutos.
Deitar a mistura nos frascos esterilizados e fechar bem.



Conselhos da Nigella:
  • Fazer o doce 1 mês antes de o utilizar ou oferecer.
  • Guardar num local fresco e escuro por cerca de 1 ano.
  • Depois de aberto, guardar no frigorífico e usar em 1 mês.

Mackerel ceviche / Ceviche de cavala.


Here at home, salads and fish meals are the choice for this time of the year. With the weather getting a bit warmer, these are the most wanted and appreciated kind of meals.
We all, kids and adults, love all sorts of fish. Cooked, raw, cured or smoked, it is always welcomed and enjoyed with lots of pleasure.
This ceviche, not being a traditional one, is a very delicious and easy one.
ingredients (serves 4):
4 mackerel fillets (100g each), deboned
grated zest and juice of 1 orange, 1 lemon and 1 lime
2 medium red chillies, thinly sliced
100g mixed salad leaves
a small bunch of fresh coriander, finely chopped
lemon and lime wedges, for serving
method:
Put the mackerel in a large dish.
Put the lemon, lime and orange zest and juice over the mackerel and add the chillies.
Spread the ingredients over the fish, cover and set in the fridge for at least 30 minutes or up to 2 hours.
To prepare the salad, mix the salad leaves with the coriander.
Divide the salad between 4 serving plates. Remove the mackerel from the liquor and place on top of the salad.
Serve with the lime and lemon wedges.

Nesta altura do ano, as refeições cá em casa têm sido à base de peixe e saladas. São as escolhidas e as mais apreciadas por todos.
Todos cá em casa, adultos e crianças, adoramos peixe. Seja ele cru, cozinhado, curado ou fumado, todos o adoram e em todas as formas especificadas.
Esta ceviche, não sendo uma ceviche tradicional, é facílima de preparar e super deliciosa, além de que, o peixe escolhido, é um dos mais ricos em propriedades benéficas à saúde.


ingredientes (para 4 pessoas):
4 filetes de cavala (cerca de 100g cada), sem espinhas
raspa e sumo de 1 laranja, 1 limão e 1 lima
2 malaguetas vermelhas, em rodelas muito fininhas
100g mistura de folhas de salada
um molho pequeno de coentros, picados muito finamente
gomos de limão e lima, para servir
preparação:
Colocar a cavala num tabuleiro.
Colocar a raspa e o sumo dos citrinos sobre o peixe e adicionar as rodelas de malagueta.
Misturar muito bem todos os ingredientes, cobrir o tabuleiro com película aderente e refrigerar por 30 minutos a 2 horas.
Entretanto, misturar a salada com os coentros picados e dividir por 4 pratos.
Retirar o peixe do líquido da cura, colocá-lo em cima da salada e servir com gomos de lima e limão.

Sticky chicken with Malaysian salad / Frango caramelizado e salada Malasiana.


Another recipe from Rachel Khoo's new cook book and again, a fabulous dinner for all the family.
The recipe is very easy to make and very quick and the flavours and textures go so well together and complement each other in such an harmonious way that you have a mouthful of pleasure on each fork.
ingredients (serves 4):
1kg chicken drumsticks and thighs
1 tbsp sesame seeds, toasted
for the glaze:
3 cloves of garlic, peeled
3cm ginger, peeled and roughly chopped
100g runny honey
80ml light soy sauce or tamari
1 red chilli, with seeds
2 tbsp sesame oil
2 tbsp fish sauce
for the Malaysian salad:
1 cucumber, washed
1/2 a small pineapple
1 small red onion
juice of 1 lime
sea salt


method:
Preheat the oven to 200ºC.
In a food processor, blend all the ingredients for the glaze until fairly smooth.
Place the chicken pieces in a large roasting tin and toss in the glaze.
Bake for 45 minutes, remove from the oven and sprinkle with the sesame seeds.
To make the salad, cut the cucumber in half lengthways, then deseed with a teaspoon and discard the seeds.
Cut in half again, then slice across on the diagonal and put it in a large bowl.
Peel the pineapple, cut into small cubes and add to the bowl.
Peel and thinly slice the onion and add it to the bowl too.
Add the lime juice.
Taste the salad and season with salt just before serving.

Mais uma receita do novo e fabuloso livro da Rachel Khoo que fez as delícias de todos cá em casa.
Uma receita fácil e rápida de fazer e cuja combinação de sabores e texturas é de tal forma fantástica e harmoniosa, que é uma verdadeira explosão de sabores a cada garfada.
ingredientes (para 4 pessoas):
1kg pernas e sobrecoxas de frango
1 colher sopa de sementes de sésamo, tostadas
para o glaze:
3 dentes de alho, descascados
3cm gengibre fresco, descascado e picado grosseiramente
100g mel líquido
80ml molho de soja light ou tamari
1 malagueta vermelha, com sementes
2 colheres sopa de óleo de sésamo
2 colheres sopa de molho de peixe (fish sauce)
para a salada Malasiana:
1 pepino, lavado
1/2 ananás, descascado e cortado em cubos
1 cebola roxa pequena, descascada e cortada em meias luas finas
sumo de 1 lima
flor ou flocos de sal
preparação:
Aquecer o forno a 200ºC.
Colocar todos os ingredientes do glaze no copo do robot de cozinha e processar até obter uma mistura fina.
Colocar o frango num tabuleiro de ir ao forno e adicionar o glaze, envolvendo bem o frango no molho, a fim de que fique bem impregnado.
Levar ao forno por 45 minutos.
Findo esse tempo, retirar o frango do forno e polvilhar com as sementes de sésamo tostadas.
Entretanto, fazer a salada, cortando o pepino ao meio no sentido do comprimento.
Com a ajuda de uma colher de chá, raspar as sementes do interior do pepino e descartá-las.
Cortar as metades ao meio novamente e cortar cada metade em meias luas, no sentido diagonal.
Colocar o pepino numa taça grande, adicionar os cubos do ananás e as rodelas da cebola.
Temperar com o sumo da lima.
No momento de servir, provar a salada e temperar com flor ou flocos de sal.

Poached eggs, cauliflower toasts, kale and dukkah / Ovos escalfados com tostas de couve flor, couve e dukkah.


My friend Rogério keeps on bringing me foodie goodies each time he comes to visit.
One of the delights he brought me, along with some gorgeous yellow courgettes, were these gorgeous colourful cauliflowers.
They are so beautiful that I decided to use them on this specific recipe in order to make them shine.
ingredients ( serves 2):
1 whole cauliflower, cut across into 4 slices, 2cm thick
3 tbsp olive oil
2 tbsp dukkah
2 tbsp olive oil
1 tbsp butter
2 garlic cloves, thinly sliced
1/2 medium red chilli, finely sliced (optional)
6 to 8 large kale or cavolo nero leaves, centre stalks removed and chopped
4 organic eggs
salt
to serve:
olive oil
juice of 1/2 lemon
a few twists of pepper


method:
Preheat the oven to 200ºC and line a baking tray with baking paper.
Put the cauliflower slices on the tray, drizzle with some olive oil and sprinkle with the dukkah.
Place the tray in the oven and bake for 30 minutes, or until they start to turn golden.
Melt the oil and butter in a pan over a medium heat.
Add the garlic and chilli and stir for 30 seconds.
Add the kale, a few spoons of water and a pinch of salt. Cover the pan with the lid and braise for 10 minutes, stirring occasionally and checking if it has enough liquid.
Put a wide casserole over a high heat and fill it with boiling water. Bring the water into a light simmer and add a pinch of salt.
Crack the eggs into the water and cook them to your liking (2 minutes for soft and 4 minutes for soft to firm).
When everything is ready, divide the cauliflower slices between 2 plates, top with the eggs and place the kale alongside.
Sprinkle over a little extra dukkah and drizzle the kale with olive oil, lemon juice and a few twists of pepper.

O meu amigo Rogério passa a vida a trazer-me presentes de foodie, pois sabe à partida, que vou adorar e dar gritinhos de felicidade.
Uma das últimas vezes que cá veio, trouxe-me umas lindas courgettes amarelas (que vão aparecer numa outra receita) e estas lindas couves flor (verde e amarelas).
Esta foi a receita que escolhi para a utilização das couves flor, até porque queria que brilhassem e não queria dar-lhes uma utilização menos... graciosa!!
ingredientes ( para 2 pessoas):
1 couve flor inteira, cortada em 4 fatias verticais, com cerca de 2cm de espessura cada
3 colheres sopa de azeite
2 colheres sopa de dukkah
2 colheres sopa de azeite
1 colher sopa de manteiga
2 dentes de alho, finamente fatiados
1/2 malagueta vermelha, finamente fatiada (opcional)
6 a 8 folhas grandes de couve portuguesa ou frisada, ou cavolo nero (uma couve italiana e que foi a que usei nesta receita, talos removidos e folhas picadas grosseiramente.
4 ovos, de preferência biológicos
sal
para servir:
azeite
sumo de meio limão
pimenta preta moída na altura


preparação:
Aquecer o forno a 200ºC e forrar um tabuleiro de ir ao forno com papel vegetal.
Colocar as fatias de couve flor no tabuleiro, regar com azeite e salpicar com a dukkah.
Levar o tabuleiro ao forno durante 30 minutos, ou até a couve flor estar macia e douradinha.
Entretanto, derreter a manteiga e o azeite num tacho.
Adicionar o alho e a malagueta e cozinhar por 30 segundos.
Adicionar a couve, umas colheres de sopa de água e uma pitada de sal, cobrir o tacho com a tampa e cozinhar por 10 minutos, mexendo de vez em quando e verificando se tem líquido suficiente.
Colocar um tacho largo ao lume com água a ferver e uma pitada de sal. Baixar o lume para que a água não esteja em ebulição e partir os ovos para dentro da água.
Escalfar os ovos de acordo com o gosto pessoal (2 minutos para mal cozidos e 4 minutos para médio a bem cozidos).
Quando tudo estiver pronto, dividir as fatias de couve flor por 2 pratos. Colocar um ou dois ovos escalfados em cada prato e salpicar com mais uma pitada de dukkah. Colocar a couve no prato, ao lado da couve flor.
Regar a couve com azeite, o sumo do limão e salpicar com uma pitada de pimenta preta.
