Orange and Clove roast Chicken with Pears and Butternut Squash / Frango assado no forno, com Laranja, Cravinho, Pêras e Abóbora (butternut).


This recipe is an aromatic combination of flavours and textures.
A one pan meal that it's super easy to prepare but when you bring it to the table, your family or guests will think you spent hours in the kitchen.

The recipe is from Marte Marie Forsberg and her truly, truly amazing debut cook book "The Cottage Kitchen".

Of course I don't feel the need to introduce Marte Marie as, every blogger and/or foodie raves about her work. Both, as a passionate cook, a blogger and a very talented photographer.
The book is divided by "seasons" and every chapter features recipes with the best seasonal ingredients of course. All the recipes, descriptions and, of course, photos are incredibly mouthwatering and you just want to be in the kitchen and cook everything from the book. Well, at least, that's how I feel about it...!!
I have lots of recipes marked down in the book to be tried and I've already made two of Marte Marie's no knead breads and this chicken recipe that I'm posting today.
I chose to share this recipe first, because it features orange and oranges are Marta's ingredient of the month.
I've made this recipe before Marta announced the ingredient of the month so, good thing that I didn't post it here before, because now, it can go straight to Marta's January table.
Hope you try it and enjoy it because it's so aromatic, full of flavour and delicious that you'll only be able to describe it if you taste it!

Harissa Chicken with Leeks, Potatoes and Yogurt / Frango assado com Harissa, Alho francês, Batatas e Iogurte.


Second and last recipe challenge of the month and also a "Cook the Cover" challenge for May's Rainydaybites Cook Book Club.
Deborah asked us to cook this fabulous one sheet meal and I'm glad she did because, not just I love all the ingredients in this recipe, I also love the fact that there's almost no washing up after.
The combination of ingredients, as you might guessed by the title, is absolutely incredible and the textures and flavour are, both, absolutely fabulous.
Another great hit from Melissa Clark "Dinner: Changing the Game" book which, by all means, I'm loving to bits!

Pork Shoulder with Fried Potatoes and Pickles / A minha versão da Carne de Porco à Portuguesa.


I recently received an invitation from Specially Selected Pork to create a recipe featuring the best quality pork meat you can find in Scotland.
We rarely eat pork meat at home but when we do, I must make sure that the meat is specially selected and that’s why I only buy my pork meat at farmer’s markets or specialist selected butchers.
The recipe I created was inspired in a very well known Portuguese dish called "Carne de Porco à Portuguesa" and you can find the recipe here.
Being able to create a recipe with such fantastic Quality Pork was a real pleasure and I loved every step of it. If you like pork meat, give this recipe a try because I'm sure you'll love it.

Sausage, kale and potato bake / Gratinado de salsicha fresca, couve kale e batata.


Perfect Plates in 5 ingredients is the title of John Whaite new book and, as you can guess by the title, is a fabulous book, full of recipes using only 5 ingredients.
As all the recipes look delightful and easy to make, specially when in a hurry, I have lots of recipes marked down to try but for now, my first choice was this delicious bake from the "morning" section.
As I wrote somewhere before, I love breakfast food for lunch or dinner and always, each time I'm flicking through a new book, the "breakfast" or "morning" chapters, are always my favourite ones.
ingredients (serves 4 to 6):
500g sausages, meat squeezed and casing discarded
150g kale, finely chopped and thicker stalks discarded
400g floury potatoes, peeled and coarsely grated
250g strong Cheddar cheese or Emmental, grated
9 large eggs
sea salt flakes and freshly cracked black pepper
olive oil, for frying


method:
Preheat the oven to 200ºC.
Heat 1 tsp olive oil in a frying pan over a medium high heat.
Add the sausage meat and chopped kale and fry until the meat is cooked and slightly browned.
Transfer to a mixing bowl.
Place the grated potatoes onto a clean, dry tea towel and sprinkle with 1 tsp of sea salt. Tightly squeeze the potatoes to remove every last drop of moisture.
Add the potatoes to the frying pan with another teaspoon of oil and stir fry until soft.
Add the cooked potatoes to the bowl with the kale and meat.
Add the cheese and season with 1 tsp of grated black pepper and a little more salt. Toss everything together.
Beat the eggs in another bowl, then add them to the potato mixture and stir everything together.
Tip into a pie dish and bake for 40 to 50 minutes or until golden brown and set.
Remove from the oven and allow to cool for 10 minutes before serving.

Como podem deduzir pelo título, é um livro recheado de receitas lindas, apetitosas e, todas elas, usando apenas 5 ingredientes.
Embora o livro tenha um capítulo dedicado ao "slow cooking", quase todas as receitas neste livro são magníficas, fáceis e rápidas de fazer, especialmente para aqueles dias em que o tempo é curto.
Como já escrevi algures, não sou de grandes pequenos almoços, mas adoro comida de pequeno almoço ao almoço ou ao jantar e como tal, os capítulos dos livros que sempre me cativam mais e de imediato, são os capítulos de "pequeno almoço".
Esta receita, a primeira testada, de entre muitas marcadas, saiu precisamente do capítulo da comida das "manhãs" e foi muito apreciada aqui em casa, mas ao jantar.


ingredientes (para 4 a 6 pessoas):
500g salsichas frescas de boa qualidade, carne espremida e pele (exterior) descartada(o)
150g couve kale, picada finamente e talos mais grossos descartados
400g batatas, descascadas e raladas grosseiramente
250g queijo Cheddar maduro ou queijo Emmental, ralado
9 ovos grandes (L)
flocos de sal e pimenta preta moída na altura
azeite, para fritar


preparação:
Aquecer o forno a 200ºC.
Numa frigideira sobre lume médio a alto, aquecer uma colher de chá de azeite.
Adicionar a carne das salsichas e a couve e fritar, mexendo, até a carne estar macia e corada.
Transferir a mistura para uma taça.
Entretanto, colocar as batatas raladas num pano de cozinha limpo, adicionar uma colher de chá de sal e espremer bem o pano, a fim de eliminar todo o líquido proveniente das batatas.
Aquecer mais 1 colher de chá de azeite na frigideira, adicionar as batatas raladas e bem espremidas e fritar, mexendo, até estas estarem macias.
Transferir as batatas para a taça onde colocou a couve e as salsichas.
Adicionar o queijo ralado, pimenta e sal a gosto e misturar tudo muito bem.
Bater os ovos numa taça à parte e de seguida, adicioná-los à mistura anterior, envolvendo tudo muito bem.
Colocar a mistura num tabuleiro ou recipiente refractário e levar ao forno por 40 a 50 minutos, ou até estar douradinho e firme ao toque.
Retirar do forno e, antes de servir, deixar arrefecer por 10 minutos.

Creamy jerusalem artichoke soup with parmesan skins / Sopa cremosa de girasol batateiro, com cascas crocantes e parmesão.


The first and mainly thing that caught my attention in this recipe, was the using of not just the interior of the artichokes, but also the skins.
As I had a big batch of jerusalem artichokes at home, I made this salad, the soup that I'm leaving you today and with a few remaining artichokes left, I also made a batch of jerusalem artichoke crisps that I'll be publishing soon.
ingredients (serves 4):
juice of 1/2 lemon
500g jerusalem artichokes, washed and scrubbed
2 tsp vegetable oil
25g butter
1 onion, roughly chopped
1 floury potato (140g), roughly chopped
600ml vegetable stock
3 tbsp double cream, plus a little extra to serve
1 to 2 tbsp finely grated parmesan cheese
leaves of 1 rosemary spring, finely chopped
method:
Half fill a large bowl with water and add the lemon juice.
Peel the artichokes, then toss the peelings with the vegetable oil in a bowl and set aside.
Chop the artichokes into rough chunks and put them in the lemony water.
Melt the butter in a large saucepan, add the onion, potato and seasoning.
Drain the artichokes and stir them in.
Cover the pan and sweat gently for 15 minutes, stirring from time to time.
Pour in the stock, cover and simmer for 10 to 15 minutes, or until the vegetables are tender.
Whizz the soup until very smooth. Add the cream and season to taste.
Preheat the oven to 220ºC.
Line a baking tray with baking paper.
Scatter the skins over and roast for 10 minutes.
Turn them over, scatter with the parmesan and rosemary and roast for another 5 minutes, or until they are crisp and dry.
Season with salt and freshly ground black pepper.
Serve the soup with a swirl of cream and a scatter of the crispy skins.

Como podem ver nos arquivos do blogue, já fiz várias sopas com girassol batateiro.
Embora tivesse uma boa quantidade de girassol batateiro em casa (que utilizei nesta salada, na sopa que hoje vos trago e numas crisps magníficas que publicarei depois), não estava a pensar utilizá-lo noutra sopa.
Até que, ao ler esta receita, me chamou e cativou a atenção e interesse, o facto de, não só ser utilizado o interior do girassol batateiro, mas também as cascas.
Claro que a curiosidade falou mais alto e lá saiu mais uma sopa.
Magnífica, tenho de confessar...


ingredientes (para 4 pessoas):
sumo de 1/2 limão
500g girassol batateiro, bem lavado e esfregado
2 colheres chá de óleo vegetal
25g manteiga
1 cebola, picada grosseiramente
140g de batata, cortada em pedaços
600ml caldo de legumes
3 colheres sopa de natas para bater + extra para decorar a sopa
1 a 2 colheres sopa de queijo parmesão ralado
folhas de uma haste de alecrim, finamente picadas
preparação:
Colocar água numa taça e juntar-lhe o sumo do limão.
Descascar o girassol batateiro e colocar as cascas numa taça, misturando-as bem com o óleo vegetal.
Cortar o girassol batateiro em pedaços e colocá-los de imediato na água com o limão (para que não oxidem).
Derreter a manteiga num tacho ou panela.
Adicionar a cebola e a batata e temperar de sal e pimenta.
Escorrer o girassol batateiro e juntá-lo ao preparado anterior.
Tapar o tacho e cozinhar os legumes em lume brando por cerca de 15 minutos, mexendo de vez em quando.
Adicionar o caldo de legumes, voltar a tapar o tacho e deixar cozinhar por mais 10 ou 15 minutos, ou até os vegetais estarem macios.
Com a varinha mágica, ou no liquidificador, reduzir a sopa a um puré macio.
Adicionar as natas e temperar de sal e pimenta preta moída na altura, a gosto.
Entretanto, aquecer o forno a 220ºC e forrar um tabuleiro com papel vegetal.
Polvilhar as cascas sobre o papel vegetal e levar ao forno por 10 minutos.
Virá-las, adicionar o parmesão ralado e o alecrim picado e levar ao forno por mais 5 minutos, ou até as cascas estarem crocantes e sequinhas.
Temperar as cascas com sal e pimenta preta moída na altura, a gosto.
Servir a sopa decorada com um bocadinho de natas e polvilhada com as cascas crocantes.

Cream of spinach soup with flaked salmon / Creme de espinafres com lascas de salmão.


My suggestion today is this creamy and fabulous soup.
The recipe is from a very well known Portuguese Chef - Henrique Sá Pessoa - and it's the first recipe that I made from his last and amazing book called "A viagem do Salmão" - The salmon journey.
I got this book as a gift at Christmas time and I'm totally delighted and in love with it.
It is one of those books that you don't choose one, two or three recipes to test. You choose ALL of them. Truly incredible book!
ingredients (Serves 4):
200g salmon, cooked and flaked (skinless and boneless)
100g onion, chopped
150g leek, thinly sliced
250g baby spinach leaves
20ml olive oil
120g potatoes, cut into small cubes
4 tbsp crème fraîche
salt flakes and freshly ground black pepper, to taste
fresh watercress leaves drizzled with with oil, to serve
method:
Heat the oil in a pan over medium heat.
Add the onion and leek and cook for about 4 to 5 minutes, or until soft.
Add the potato, salt and pepper to taste and cover with water (just enough water, in order to come up to about 2 fingers over the vegetables).
Allow it to boil, reduce the heat and cook for 8 to 10 minutes, or until the potato is soft.
Add the spinach and cook for 1 minute.
Take the soup off the heat, blend until smooth and check the seasoning.
Serve the soup warm, topped with the salmon flakes, a few dollops of crème fraîche and watercress leaves.

A minha sugestão de hoje e para começar bem a semana, é esta sopa maravilhosa e cremosa do Chef Henrique Sá Pessoa.
A receita vem no seu último livro "A viagem do salmão".
Um livro absolutamente magnífico e pelo qual estou completamente in love!
Recebi-o de prenda no Natal e confesso que é daqueles livros que me surpreendeu e muito e só pela positiva.
Sabem aqueles livros que compramos e dos quais acabamos por escolher 2 ou 3 receitas para fazer?
Pois não é o caso deste!! Para vos ser sincera, não há uma única receita neste livro que eu não tenha marcado para fazer. Bom, talvez haja uma...
... pois de resto, estão todas marcadas!
Salmão é um peixe que amo de paixão e as sugestões apresentadas no livro são TODAS elas absolutamente magníficas e não consegui ficar indiferente.
Assim sendo, vamos lá à primeira receita testada. Esta sopa dos céus!!
ingredientes (para 4 pessoas):
200g salmão, cozido e desfeito em lascas (sem pele nem espinhas)
100g cebola, picada
150g alho francês, em juliana
250g espinafres bebé
20ml azeite
120g batata, cortada em cubos pequenos
4 colheres sopa de crème fraîche
flor de sal e pimenta preta moída na altura, a gosto
folhas de agrião, temperadas com azeite, para decorar
preparação:
Aquecer o azeite num tacho.
Adicionar a cebola e o alho francês e cozinhar por 4 a 5 minutos, ou até ambos estarem macios.
Adicionar a batata, sal e pimenta a gosto e cobrir com água (até dois dedos de altura acima dos vegetais).
Deixar levantar fervura, abrandar o lume e cozinhar por cerca de 8 a 10 minutos, ou até a batata estar macia.
Adicionar os espinafres e cozinhar por mais 1 minuto.
Reduzir a sopa a puré com a varinha mágica, ou no liquidificador e rectificar os temperos.
Servir a sopa quente, decorada com as lascas do salmão, o crème fraîche e as folhas de agrião temperadas.

Roasted cauliflower soup / Sopa de couve flor assada.



Actually, I was meant to make roasted cauliflower soup a few weeks ago, but because of this or that, it didn't happened so, I blended the cauliflower that I had in the fridge into cauliflower couscous and I made a beautiful salad with it.
As I'm a soup lover, as soon I saw this roasted cauliflower soup, I thought that it would be some kind of a delicious soup and it reinforced that feeling that I had before, which was: Making roasted cauliflower soup!!
The original recipe is here but, Mª João, inspired by this roasted cauliflower soup, decided to substitute the potatoes for courgettes.
I saw Mª João soup recipe and I saw the original soup recipe and, as the day I decided to make this soup I have bought some beautiful Pink Lady apples that were red, bright and gorgeous, instead of adding all the amount of the potatoes that were suggested in the original recipe, I decided to had half of the potato weight and 3 of my beautiful Pink Lady apples to the roasting tin.
The result couldn't be more delightful and, in case you decide to make this fabulous soup, you have now 3 options: The original one, Mª João option with the addition of the courgettes and my option with the addition of the apples.
ingredients for the soup:
1 medium cauliflower, trimmed and chopped into florets
250g potatoes, scrubbed and cut into small dice
3 Pink Lady apples, cored and diced
2 large onions, peeled and diced
1 sprig of fresh rosemary leaves, finely chopped
2 tbsp oil
salt and pepper
2 tsp of freshly squeezed lemon juice
5 to 6 cups of vegetable stock
toppings (optional):
flavourful oil (truffle, extra virgin olive, walnut etc)
croutons
nuts, toasted and chopped
herbs, chopped
balsamic reduction
squeezes of lemon
sea salt flakes and/or freshly ground black pepper
method:
Preheat the oven to 200ºC.
Put the cauliflower florets, potatoes, onion and apple in a large roasting tin.
Add the chopped rosemary leaves, the olive oil and season with salt and freshly ground black pepper and toss everything together until evenly coated.
Roast the vegetables in the oven for about 1 hour, tossing and flipping them with a spatula, from time to time.
When the vegetables are tender, add the lemon juice and toss well.
Transfer the roasted vegetables into a large saucepan, add the stock and blend everything until you have a smooth purée.
Bring the soup to a boil and add more stock or water in order to thin the soup out if necessary.
Taste the soup and adjust the seasoning.
Serve hot with the chosen garnishes.


Note: For my toppings I used croutons, salad cress, a fabulous white truffle infused balsamic reduction that was a gift from a very kind blogger and a sprinkle of crispy bacon crumbs.

Para ser honesta, andava há semanas para fazer sopa de couve flor assada e até tinha comprado uma couve flor que, não tendo feito a sopa, acabei por transformer em couscous e utilizei numa belíssima salada.
Ora, quando vi esta sopa no blogue da Mª João, claro que a minha vontade de fazer a tal sopa de couve flor assada redobrou e lá fui comprar mais couve flor.
A Mª João viu a receita original aqui, neste blogue e fez-lhe uma alteração, pois em vez das batatas sugeridas na receita original, usou courgettes.
No dia que decidi fazer esta sopa, tinha comprado umas maçãs Pink Lady lindas, vermelhinhas e apetitosas e então pensei substituir metade do peso das batatas sugeridas na receita original, por 3 maçãs Pink Lady.
O resultado não podia ser mais delicioso e para ser honesta, são estas coisas que acho fantásticas na blogosfera, ou seja, uma sopa de couve flor assada que começou aqui, foi alterada aqui com a substituição das batatas por courgette e foi agora, por mim, novamente alterada, com a adição das maçãs e a isto eu chamo inspiração e partilha!
Caso queiram experimentar esta sopa que, entusiasticamente recomendo, têm agora 3 opções: A sopa original com batatas, a da Mª João com a substituição das batatas por courgettes e a minha, com a substituição de metade do peso das batatas por maçãs.


ingredientes para a sopa:
1 couve flor média, arranjada e raminhos separados
250g batatas, lavadas, limpas e cortadas em cubos pequenos
3 maçãs Pink Lady, sem caroço e cortadas em cubos
2 cebolas grandes, descascadas e picadas grosseiramente
folhas de 1 haste grande de alecrim, bem picadinhas
2 colheres sopa de azeite
sal e pimenta preta moída na altura
2 colheres chá de sumo de limão
5 a 6 chávenas de caldo de legumes
toppings (opcionais):
azeite ou óleo de trufa, óleo de noz ou outro
croutons
frutos secos, tostados e picados
ervas aromáticas (a gosto), picadas
redução balsâmica
sumo de limão
flocos ou flor de sal e/ou pimenta preta moída na altura
preparação:
Aquecer o forno a 200ºC.
Colocar a couve flor, as batatas, as maçãs e as cebolas num tabuleiro de ir ao forno.
Adicionar as folhas de alecrim picadas, o azeite, sal e pimenta e misturar tudo muito bem, por forma a que todos os legumes fiquem embebidos no azeite.
Levar o tabuleiro ao forno e assar os legumes por cerca de 1 hora, mexendo de vez em quando, ou até estarem macios.
Quando os legumes estiverem assados e macios, adicionar o sumo do limão e misturar tudo muito bem.
Transferir os legumes para uma panela, adicionar o caldo de legumes e reduzir a sopa a puré.
Levar a sopa ao lume até levantar fervura e adicionar mais caldo de legumes ou água, até obter a consistência desejada.
Provar a sopa e rectificar os temperos.
Servir a sopa quente, decorada com os toppings escolhidos.


Nota: Eu decorei a minha sopa com croutons, micro ervas e pedaçinhos de bacon crocante e reguei com uma redução balsâmica de trufa branca maravilhosa, que me foi oferecida por uma blogger super simpática.

Massaman roast chicken / Frango assado com caril Massaman.


Massaman Curry (gaeng matsaman - แกงมัสมั่น) is a Southern Thai curry which has a lot of Indian influences.
Massaman is an old way of saying “Muslim” as many of the dry spices were carried to Thailand by early Muslim traders.
Like Indian curries, this curry is heavy on dry spices and very aromatic. Chicken is the most popular meat in this curry in the West but beef, lamb or even mutton is more common in Thailand. This curry is considered to be rather mild as the heat of the chilies are mellowed with the addition of the dried spices, coconut milk, onions, potatoes and peanuts.
ingredients (serves 4):
1.5kg whole chicken
2 tbsp grated ginger
2 kaffir lime leaves, finely shredded
2 stalks lemongrass, 1 grated, 1 cut into thirds
2 limes, 1 halved, 1 juiced
70g Massaman curry paste
1 tbsp sunflower oil
500g small chat potatoes, boiled for 10 minutes, drained
250ml chicken stock
400ml coconut milk
2 tsp tamarind paste
1 tbsp fish sauce
1 tsp grated palm sugar or brown sugar
2 tbsp chopped unsalted peanuts
coriander sprigs, to serve
method:
Preheat the oven to 200°C.
Place the chicken in an oiled roasting pan.
Combine half the ginger, half of the kaffir lime leaves and the grated lemongrass in a small bowl. Place in the chicken cavity with the halved lime and remaining 3 pieces of the lemongrass. Tie the chicken legs with kitchen string.
Combine 1 tbsp of the curry paste with the oil. Rub all over the chicken and season.
Cover loosely with foil, then roast for 40 minutes.
Remove the foil, add the potatoes to the pan and baste with the pan juices.
Roast for a further 40 minutes or until the potatoes are tender and the chicken is cooked through.
Transfer the chicken and potatoes to a serving dish, loosely cover with foil and set aside to rest.
Place the roasting pan on the stovetop. Add the remaining ginger and curry paste and stir over a low heat for 1 minute, or until fragrant.
Add the stock and simmer for 3 to 4 minutes or until reduced by half.
Add the coconut milk and simmer until reduced and thickened.
Add the tamarind paste, fish sauce, lime juice and sugar and stir to combine.
Pour the sauce around the chicken in the serving dish or into a jug.
Carve the chicken and serve scattered with peanuts, coriander and remaining kaffir lime leaves and the Massaman gravy.

Caril Massaman (gaeng matsaman - แกงมัสมั่น) é um tipo de caril da zona Sul da Tailândia com influências indianas.
"Massaman" é a palavra antiga para "Muçulmano", já que as especiarias secas foram introduzidas na Tailândia pelos primeiros viajantes muçulmanos.
Tal como em todos os tipos de caril indiano, este caril (a composição da pasta) é composto pelas mais diversas e aromáticas especiarias secas.
Enquanto no Oeste, frango é a carne mais utilizada para cozinhar este prato, na região da Tailândia as carnes mais utilizadas são a vaca, o borrego e até mesmo o carneiro.
Este é um tipo de caril que, não sendo picante, é bastante aromático e super delicioso.


ingredientes (para 4 pessoas):
1 frango com cerca de 1.5kg
2 colheres sopa de gengibre fresco ralado
2 folhas de lima kaffir, cortadas em tiras fininhas
2 talos de lemongrass, 1 ralado e 1 cortado em 3 pedaços
2 limas, 1 cortada ao meio e 1 espremida
70g de pasta de caril Massaman
1 colher sopa de óleo de girassol
500g batatas pequenas novas, cozidas por 10 minutos e escorridas
250ml caldo de galinha
1 lata de 400ml de leite de coco
2 colheres chá de pasta de tamarindo
1 colher sopa de fish sauce
1 colher chá de açúcar de cana ou açúcar mascavado
2 colheres sopa de amendoins sem sal
folhas de coentros, para servir
preparação:
Aquecer o forno a 200°C.
Colocar o frango num tabuleiro ligeiramente untado com óleo.
Numa taça pequena, combinar metade do gengibre, metade das folhas de lima e o lemongrass ralado.
Colocar esta mistura na cavidade do frango, assim como as duas metades da lima e os restantes 3 pedaços de lemongrass.
Apertar as duas pernas do frango com fio de cozinha.
Numa outra taça, combinar 1 colher sopa da pasta de caril Massaman com o óleo. Esfregar todo o exterior do frango com esta mistura e temperar de sal e pimenta.
Tapar o frango com folha de alumínio (sem apertar) e levar ao forno por 40 minutos.
Findo esse tempo, retirar a folha de alumínio, colocar as batatas no tabuleiro juntamente com o frango e regar com o molho do tabuleiro.
Levar ao forno por mais 40 minutos, ou até as batatas e o frango estarem completamente cozidos.
Colocar o frango e as batatas num prato de serviço, cobrir com a folha de alumínio e deixar repousar.
Entretanto, colocar o tabuleiro sobre lume brando.
Ao molho que está no tabuleiro, adicionar o restante gengibre ralado e a restante pasta de caril Massaman e mexer por cerca de 1 minuto, ou até a mistura estar aromática.
Adicionar o caldo de galinha e cozinhar por 3 a 4 minutos, ou até que a mistura tenha reduzido para metade.
Adicionar o leite de coco e cozinhar até a mistura reduzir um pouco e ficar espessa.
Adicionar a pasta de tamarindo, a fish sauce, o sumo da lima e o açúcar e combinar tudo muito bem.
Polvilhar o frango com os amendoins, os coentros e as restantes folhas de lima kaffir e servir o molho à volta do frango, ou num jarro à parte.

Watercress soup / Sopa de agrião.


Here is another delicious soup from the fabulous "Magic Soup" book.
In the book, the soup is served with crab patê on seed crackers but as I had a beautiful lobster patê at home, I served the crackers with it and the combination was to die for!
ingredients (serves 4):
1 tbsp unsalted butter
1 onion, chopped
1 medium potato, diced
850ml chicken stock
400g watercress, rinsed
a little water, if needed
flaky sea salt and freshly ground black pepper
crab patê (or lobster patê) and pumpkin seed crackers, to serve


method:
Melt the butter in a saucepan, add the onion and cook gently for a few minutes, stirring, until the onion is soft.
Add the potato and cook for a few minutes more, then add the stock.
Bring to the boil, reduce the heat to a simmer and cook for around 15 minutes, or until the potato is cooked.
Meanwhile, pick the watercress leaves from the stalks and set aside. Add the stalks to the pan 5 minutes before the potatoes have finished cooking, so that they just wilt.
Take the soup off the heat and add the watercress leaves.
Process the soup to a smooth consistency in a blender. Season with salt and pepper to taste.
Add a little water if needed, to loosen it to your desired consistency.
Spread the crackers with the patê and serve with the soup.

No livro a sopa é servida acompanhada de crackers de sementes barradas com patê de sapateira, mas como eu tinha em casa um patê maravilhoso de lagosta, resolvi barrar as crackers com ele e bom..., a combinação das crackers barradas com o patê a acompanhar a sopa, é algo de divino e de comer e chorar por mais!


ingredientes (para 4 pessoas):
1 colher sopa de manteiga sem sal
1 cebola, picada
1 batata média, cortada em cubos
850ml caldo de galinha
400g agrião, lavado
um bocadinho de água, caso seja necessário
sal e pimenta preta moída na altura, a gosto
patê de sapateira ou de lagosta e crackers de sementes, para servir


preparação:
Num tacho, derreter a manteiga.
Adicionar a cebola e cozinhar por uns minutos, mexendo, até a cebola estar macia.
Adicionar a batata e cozinhar por mais uns minutos.
Adicionar o caldo de galinha e quando este levantar fervura, baixar o lume e cozinhar por cerca de 15 minutos, ou até a batata estar cozida.
Entretanto, separar os talos de agrião das folhas e reservar ambos.
Cerca de 5 minutos antes da batata estar cozida, adicionar os talos do agrião.
Retirar o tacho do lume e adicionar as folhas do agrião.
Com a ajuda do robot de cozinha ou da varinha mágica, reduzir a sopa a puré.
Temperar de sal e pimenta a gosto e, caso necessário e ache que a sopa está muito espessa, adicionar um bocadinho de água, até atingir a consistência desejada.
Barrar as crackers com o patê e servir com a sopa.
