Rocky Road.


Rocky Road is a very easy gluttony to make and assemble and something that all kids, of course, fall in love with.
This rocky road was a last week's request from my teenager son and some of his friends. As they are studying hard in order to achieve their A levels, I thought that a little (lot) of extra chocolaty energy would be a booster for their studies.
I don't need to tell you how much they appreciated it and how many compliments and smiley faces I got right?
The recipe s from Mima Sinclair little fantastic book "Rainbow Bakes". As you might guess by the name of the book, it's all about rainbow(y) gorgeous showstoppers and delicious bakes.
I love Mima Sinclair's books and you can find a whole lot of my favourite gingerbread recipes (from Mima's Gingerbread Wonderland book), under the label "Mima Sinclair", including this gorgeous gingerbread and chocolate bird's house that was a huge success last Christmas.
As for this rocky road, I think we don't need many words to describe it right...?
The sweets specified are the ones specified in the original recipe but, as you might know, there's no rules for Rocky Road so, use whatever sweets you have at home or go wild and use your own imagination.

Rocky Road.


My son wanted Rocky Road and of course, I had to make him Rocky Road!
I decided to make in a loaf tin and instead of cutting it in squares like usual, this is a sliceable Rocky Road.
The results, either in taste and presentation are, I think, pretty amazing!
ingredients:
130g butter
300g dark chocolate (70%), roughly chopped
3 tbsp golden syrup
1 x 154g packet golden Oreo biscuits, roughly chopped or broken
150g marshmallows
2 x 30g Cadbury Crunchie bars, roughly chopped
method:
Lightly grease a loaf tin with vegetable oil and line with clingfilm.
Melt the butter, chocolate and golden syrup in a saucepan.
Once melted and smooth, take the pan off the heat and add the remaining ingredients.
Stir everything together until well combined and coated with the melted chocolate mixture.
Pour the mixture in the prepared tin and smooth the top with a spatula.
Cover with clingfilm and refrigerate overnight.
Turn the Rocky Road out of the tin, peel off the clingfilm and cut into slices.

O meu filho andava há dias a pedir para lhe fazer Rocky Road e eu, como excelente mãe que sou :)))..., claro..., tive de lhe fazer Rocky Road!
Decidi fazer uma Rocky Road diferente, ou seja, em vez de a fazer como habitualmente, num tabuleiro e depois cortar em quadrados ou palitos, decidi fazê-la numa forma de pão e depois cortá-la em fatias.
No recheio, decidi também inventar um bocadinho e posso garantir-vos que em termos de sabor, esta Rocky Road ficou maravilhosa.
O resultado, no que ao aspecto diz respeito, sou suspeita, mas acho que ficou girissimo!


ingredientes:
130g manteiga
300g chocolate preto (70%), picado grosseiramente
3 colheres sopa de golden syrup
1 pacote de 154g de bolachas Oreo (eu usei uma edição limitada de Oreo douradas), partidas em pedaços grosseiros.
150g marshmallows
2 barras de 30g (cada) de Chocolate Crunchie da Cadbury, partidas em pedaços grosseiros.
preparação:
Untar ligeiramente uma forma de pão com óleo vegetal e forrá-la com película aderente.
Num tacho, derreter a manteiga, o chocolate e o golden syrup.
Retirar o tacho do lume, adicionar os ingredientes restantes e envolver tudo muito bem.
Deitar a mistura na forma preparada e, com uma espátula, alisar a superfície o melhor possível.
Tapar com película aderente e refrigerar de um dia para o outro.
Desenformar a Rocky Road, descartar a película aderente e cortar em fatias.

Strawberry marshmallows / Marshmallows de morango.


Twigg Studios is a blog that I truly adore as it is always full with beautiful pictures, great ideas and fantastic recipes. Her owner, Aimee Twigger is such a kind and helpful person. She always has something nice and kind to say and always, always, gives you an answer when you ask her a question.
As soon as I saw that she was publishing a new book, I didn't hesitate and pre ordered it straightaway as, I knew, it would be a great book and I was right!
Just like the blog, the book - Love, Aimee x - is gorgeous and it's full of delicacies and delicious sweet treats and these marshmallows, made with real strawberries, were the first recipe that I tried from Aimee Twigger's book.
This was my second attempt on making marshmallows and, like the first one (here), they were a success!
ingredients (makes 16 large squares):
350g strawberries, chopped
1 1/2 tbsp lemon juice
370g caster sugar
6 sheets of leaf gelatine
2 egg whites
1/2 tsp salt
Icing sugar and cornflour, for dusting and coating
method:
Put the fruit, lemon juice and 1 tbsp of caster sugar into a saucepan and bring to a boil over a low heat until the fruit breaks down.
Purée in a food processor and then press through a sieve.
Heat for another 10 minutes, or until the purée has a "jammy" consistency. Set aside.
Put the gelatine leaves into a bowl. Cover with water and set aside.
Put the egg whites, salt and 1tbsp of caster sugar into the bowl of the standmixer fitted with the balloon whisk attachment, but don't turn on the machine yet.
Heat the remaining caster sugar and 3 tbsp of water in a heavy based saucepan, stirring until the sugar has dissolved. Use a pastry brush dipped in cold water to wash any sugar crystals from the side of the pan down into the syrup.
Attach a sugar thermometer to the pan and when the syrup reaches 120°C, turn on the mixer and whisk the egg whites until stiff peaks start to form.
At the same time, reheat the fruit purée.
Squeeze out the leaf gelatine, add it to the syrup and stir.
The syrup will bubble up, so be careful not to burn yourself.
When the syrup reaches 130°C, pour it into the egg whites in a slow stream while whisking at high speed.
Continue for 3 minutes until the mixture is thick and glossy, then add the fruit purée and mix for another 5 to 8 minutes. Lightly grease a 20 x 30cm baking tin.
Mix equal quantities of icing sugar and cornflour together and sift over the tin. Tip out any excess.
Pour the marshmallow mixture into the tin, spread it out and sift more icing sugar/cornflour over the top.
Leave for 4 hours, then slice and roll the pieces in more icing sugar/cornflour.
The marshmallows will keep in an airtight container for up to 4 days.


Note: When adding the fruit purée, I just swirled it through the marshmallow mixture instead of mixing it in as specified.

Não só porque é um blogue lindo, cheio de criatividade, receitas fabulosas e ideias fantásticas, mas também porque a Aimee Twigger, autora do blogue, é uma pessoa super querida.
Apesar de ter um blogue de sucesso, não é nada "vedeta", antes pelo contrário, super simples e humilde, tem sempre uma palavra de carinho e uma resposta a uma questão ou dúvida, que lhe sejam colocadas.
Assim que soube que ia publicar um livro, imaginei que seria um livro à imagem do blogue e não hesitei em encomendá-lo, mesmo antes dele ser publicado.
Tal como o blogue, o livro - Love, Aimee x - é recheado de sugestões doces e lindas e estes marshmallows foram a primeira receita a ser recriada na minha cozinha.
Esta foi a segunda vez que fiz marshmallows e, tal como da primeira vez (aqui), correu lindamente e os marshmallows, feitos com morangos naturais, estavam uma delícia.
Eu não gosto de marshmallows de compra, pois acho que são esponjas secas e sem graça, mas acreditem que marshmallows feitos em casa, não têm nada a ver com os de compra. São uma experiência completamente diferente!


ingredientes (para 16 quadrados grandes):
350g morangos, lavados, sem pé e cortados em pedaços
1 1/2 colheres sopa de sumo de limão
370g açúcar refinado branco
6 folhas de gelatina
2 claras de ovo
1/2 colher chá de sal fino
açúcar em pó e Maizena, para polvilhar e envolver
preparação:
Num tachinho, colocar os morangos, o sumo do limão e 1 colher de sopa do açúcar.
Levar ao lume e deixar levantar fervura sobre lume brando, até os morangos estarem macios.
Com a varinha mágica, ou no copo do robot de cozinha, reduzir os morangos a puré e passar a mistura por um coador.
Voltar a levar a mistura ao lume, por cerca de 10 minutos, ou até a mesma estar com uma consistência de doce de morango. Reservar.
Colocar as folhas de gelatina numa tigela, cobrir com água fria e reservar.
Na taça da batedeira eléctrica equipada com o balão, colocar as claras de ovo, o sal e 1 colher de sopa do açúcar. Não ligar ainda a batedeira.
Para fazer o xarope de açúcar, colocar o açúcar restante e 3 colheres de sopa de água fria num tachinho.
Levar ao lume, mexendo até que o açúcar esteja dissolvido.
Usar um pincel de cozinha molhado com água fria para dissolver e empurrar os cristais de açúcar que se formam nas laterais do tacho.
Colocar um termómetro de açúcar no tacho e quando o mesmo atingir os 120ºC, ligar então a batedeira e bater as claras até estas começarem a ficar em castelo firme.
Entretanto, aquecer o puré de morangos.
Retirar as folhas de gelatina da água, espremê-las bem e adicioná-las ao xarope de açúcar, mexendo bem para dissolver a gelatina. Atenção que o xarope vai ferver, portanto tenham cuidado para não se queimarem.
Assim que o termómetro atingir os 130ºC, retirar o xarope do lume e, sempre com a batedeira ligada na velocidade máxima, adicioná-lo em fio ás claras em castelo.
Continuar a bater por cerca de 3 minutos, ou até que a mistura esteja espessa e brilhante.
Adicionar o puré dos morangos e bater por mais 5 a 8 minutos.
Entretanto, untar ligeiramente uma forma rectangular com cerca de 20 x 30cm.
Numa tigela, misturar iguais quantidades de açúcar em pó e Maizena.
Peneirar a mistura sobre a forma, tendo o cuidado de cobrir bem o fundo e lados da forma com a mistura. Sacudir o excesso.
Colocar a mistura de marshmallow dentro da forma, alisar bem e peneirar toda a superfície com mais mistura de açúcar em pó e Maizena.
Deixar repousar por cerca de 4 horas, desenformar, cortar em quadrados e envolver os quadrados em mais mistura de açúcar em pó e Maizena.
Os marshmallows conservam-se por cerca de 4 dias, guardados num recipiente de fecho hermético.


Nota: Na parte onde se junta o puré de morangos à mistura de marshmallow, eu não segui as instruções acima especificadas e simplesmente envolvi o puré na mistura sem bater, pois quis dar um efeito marmoreado aos marshmallows.

Caramel swirl marshmallows / Marshmallows com swirl de caramelo.



This is my very attempt on making marshmallows at home and I can tell that they turned out pretty well and they are totally scrumptious.
They are so easy to make, that I can't believe that I never tried making them before.
Caramel, you all know by now that is one of my sweet guilty pleasures and therefore, when I saw these marshmallows in the last issue of Donna Hay magazine I couldn't resist them.
ingredients:
125ml warm water
2 tbsp powdered gelatin
330g caster sugar
230g liquid glucose
125ml water, extra
150g thick dulce de leche
160g icing sugar, sifted
method:
Lightly grease a 20cm x 30cm slice tin and line with baking paper.
Place the warm water in an electric mixer, sprinkle over the gelatine and stir to combine. Set aside.
Place the caster sugar, glucose and extra water in a medium saucepan over low heat and cook, stirring, until the sugar is dissolved.
Increase the heat to high and bring to the boil.
Cook, without stirring for 6 to 7 minutes or until the temperature reaches 115ºC on a sugar thermometer.
With the mixer on high speed, gradually add the hot syrup to the gelatine mixture, in a thin steady stream, and beat for 3 minutes or untll thick and glossy.
Working quickly, gently fold through the caramel.
Carefully spoon the mixture into the tin.
Using a piece of baking paper, carefully smooth the marshmallow into an even layer.
Place in the fridge for 1 to 2 hours or until set.
Lift the marshmallow onto a board, dust a large knife with icing sugar and cut the marshmallow into squares.
Serve or pack them in paper bags, dusted with icing sugar.
The marshmallows will keep in the fridge for up to 1 week.

Esta é a minha primeira experiência no que diz respeito a marshmallows caseiros.
Nunca tinha feito e agora que fiz, não percebo porque resisti tanto tempo, pois são facílimos de fazer e não dão trabalho nenhum.
Quando vi estes, com caramelo, na última edição da revista da Donna Hay, pensei... "pronto... está o caldo entornado. Desta vez não me escapam"!
Já todos sabem que sou mais de salgados que de doces, mas no que toca a doces, caramelo é o meu maior "guilty pleasure" e com isto está tudo dito, pois com os motes "caramelo" e a "vontade que tinha há muito de fazer os marshmallows caseiros", estavam reunidas as condições necessárias à execução dos mesmos.
Só vos posso dizer que são magníficos e tão deliciosos que os escondi (de mim, claro...) para não me desgraçar ainda mais...



ingredientes:
125ml água quente
2 colheres sopa de gelatina em pó incolor
330g açúcar refinado branco
230g glucose líquida
125ml água fria
150g leite condensado cozido
160g açúcar em pó, peneirado
method:
Untar ligeiramente um tabuleiro (tipo brownie) de 20cm x 30cm e forrá-lo com papel vegetal.
Colocar a água quente na taça da batedeira eléctrica e juntar-lhe a gelatina em pó. Mexer para combinar e reservar.
Num tacho sobre lume brando, colocar o açúcar refinado, a glucose e os 125ml de água fria.
Aquecer, mexendo sempre, até o açúcar estar dissolvido.
Aumentar o lume e deixar a mistura levantar fervura.
Cozinhar, sem mexer, por cerca de 6 a 7 minutos, ou até a mistura atingir 115ºC num termómetro de açúcar.
Ligar a batedeira e em velocidade máxima, adicionar esta mistura, devagar e em fio, à mistura da gelatina.
Bater por cerca de 3 minutos, ou até a mistura estar espessa e brilhante (tipo suspiro).
Com movimentos rápidos mas delicados, envolver o leite condensado cozido na mistura de marshmallow, tendo o cuidado de não envolver em demasia, por forma a criar o efeito marmoreado.
Delicadamente, deitar a mistura no tabuleiro preparado e alisar a superfície com a ajuda de uma folha de papel vegetal.
Levar o tabuleiro ao frigorífico por cerca de 1 a 2 horas, ou até o marshmallow estar firme.
Desenformar o marshmallow sobre a bancada da cozinha, ou sobre uma tábua de serviço.
Polvilhar uma faca grande com açúcar em pó e cortar o marshmallow em quadrados ou rectângulos, do tamanho desejado.
Polvilhar os marshmallows com bastante açúcar em pó e servir, ou guardar em sacos de papel.
Os marshmallows manter-se-ão por cerca de 1 semana no frigorífico.
