Melted Cheese Pizza / Pizza com Queijo derretido.

Another recipe for the super fantastic Deborah - Rainydaybites Cook Book Club.
A recipe from the book of the month, which is the fabulous Yvette van Boven "Home Baked" book (I told you about it in this post).
This time it's a savoury recipe. Pizza!
Who doesn't like pizza? I don't know anyone that don't like it!
Although this pizza is slightly different from the conventional pizza, it is, in all ways, as good as..., I mean...
BETTER!!

Cheat's pizza with mozzarella, chargrilled nectarine and prosciutto / Pizza fingida com mozzarella, nectarina grelhada e presunto.

The idea to make these "pizzas" was, not just because I had all the ingredients laying around here at home, but also because I wanted to prepare another suggestion for Marta.
As I told you here and here, Marta chose Peaches and/or Nectarines as the ingredient of JulyTherefore, here is my last suggestion. A savoury and sweet suggestion for Marta, that is very easy to prepare and makes an absolutely delicious Summer lunch.

Fig, nectarine, mozzarella and prosciutto salad with honey dressing / Salada de figos, nectarinas, mozzarella e presunto, com molho de mel.

Although the weather is not very Springy/Summery this week, I leave you with this fabulous, vibrant, refreshing and colourful salad to start the week in a good and positive mood.
The recipe is from Katie & Giancarlo Caldesi "Around the World in Salads" book.
Simplicity at its best, thats how I describe this salad.
ingredients (serves 6):
6 ripe figs, halved or quartered, depending on the size
2 nectarines, thinly sliced
6 x 125g whole mozzarella or burrata
12 slices prosciutto
200g cherry tomatoes, halved (I used heirloom)
12 large basil leaves
for the dressing:
1 tbsp raw mild honey
2 tbsp extra virgin olive oil
salt and freshly ground black pepper
method:
Mix all the ingredients for the dressing together in a small bowl and season to taste.
Arrange the salad ingredients on a serving platter and pour the dressing over the salad.

Peach and mozzarella salad with pistachio pesto / Salada de Pêssegos e mozzarella, com pesto de pistachios.

As I wrote here, I can't stop trying recipes from this amazing book and therefore, here is another one.
A very colourful and delicious salad, full of contrasting flavours and a delight for all senses.
ingredients for the salad (serves 4):
4 ripe peaches, washed, dried and cut into wedges
1/2 cucumber, thinly sliced
6 tomatoes, preferably mixed colours, sliced
a good handful of wild rocket
250g mozzarella
method:
Divide all the salad ingredients between 4 serving plates.
for the pistachio pesto:
50g shelled pistachio nuts, unsalted and lightly toasted
1 garlic clove, peeled
30g flat leaf parsley
a dash of lemon juice
100ml extra virgin olive oil
salt and freshly ground black pepper
method:
Put the pistachio nut in a food processor and whizz until finely chopped.
Add the garlic and parsley and whizz again to combine.
Add the lemon juice and half of the olive oil, season well with salt and freshly ground pepper and blend until almost smooth.
Add the remaining oil and whizz once more. Set aside for 30 minutes for the flavours to mingle.
Taste the pesto and add more salt and pepper if needed.

to finish:
a handful of purple basil (I used Greek basil)
3 tbsp aged balsamic vinegar
3 tbsp extra virgin olive oil
freshly ground black pepper
to serve:
Spoon the pesto over the salad, scatter with the basil and drizzle with the balsamic vinegar, olive oil and a grind of the black pepper.
