Focaccia with Burrata, Prosciutto and Rocket / Focaccia com queijo Burrata, Presunto e Rúcula.


Beautiful and absolutely delicious Focaccia for Deborah's and her Rainydaybites Cook Book Club.
The chosen book for September is, as I wrote here, Brian Hart Hoffman "Bake from Scratch" and apart from the monthly recipe challenges, I honestly can't decide what to bake because everything looks so good, that I just want to cook my way throughout the book...
One thing is for sure, this Focaccia was the first recipe I marked down to try as soon as I had a flick through the book and my instinct was right because it's the most delicious Focaccia I made until today.
Easy peasy to make, crispy on the outside, fluffy and perfectly structured on the inside and a superb array of ingredients on top...
Just Perfect!!

My Vegetarian stuffed Focaccia / A minha Focaccia Vegetariana recheada.



I make this stuffed focaccia very often and it is so delicious that, this time I took the time to share the recipe with you all.
It is a meal on itself and perfect for picnics, lazy summer lunches or even to eat while you're at the beach.
The filling combinations are endless and although I always make this vegetarian combination, you can use cured meats combined with grilled or roasted veggies or whatever you fancy. The filling quantities are also variable. You can use as much or as less filling as you want.

Tomato and basil oil focaccia / Focaccia com tomates e azeite de manjericão.


When I saw this recipe I thought that it wouldn't work as the tomatoes would make the bred soggy but I was totally wrong and it was a delight for the palate and a fabulous combination of ingredients.
ingredients:
225g strong white flour
1/2 tsp salt
1 tsp caster sugar
1 tsp dried yeast
1 tbsp olive oil, plus extra for greasing
140ml lukewarm water
400g cherry tomatoes, attached to their stalks
large handful basil leaves
100ml extra virgin olive oil, plus extra for shaping
large pinch sea salt flakes


method:
Reserve 5 basil leaves and put the remaining ones in the food processor with the 100ml of olive oil. Process until you have a rough paste and reserve.
To make the focaccia, place the flour, salt, sugar and yeast in a large bowl.
Add 1 tbsp of olive oil and the water and mix in order to form a soft dough.
Turn out the dough and knead for 10 minutes until smooth and elastic.
Put the dough in an lightly oiled bowl, cover with oiled clingfilm and leave to rise for 15 minutes or until doubled in size.
Lightly grease a rectangular tin with olive oil and with oiled hands, gently pull the dough into a rectangle to fit the size of the tin.
Press the dough down to the base of the tin in order to create dimples all over.
Push the cherry tomatoes into some of the holes, cover with clingfilm and leave to rise for 30 minutes.
Heat the oven to 200ºC, strain the basil oil and pour it over the surface of the dough, allowing it to pool in the dimples.
Scatter with the reserved basil leaves, turning them in the oil.
Sprinkle with salt and bake for 20 to 25 minutes or until golden and risen.
Leave to cool for 10 minutes.

Quando vi esta receita, pensei que não iria resultar, pois achava que os tomates iriam rebentar e encharcar o pão e que seria um completo desastre.
Pois bem, estava erradíssima, pois funcionou na perfeição e tanto o sabor, como a textura e a combinação de sabores, são absolutamente fabulosas!
ingredientes:
225g farinha branca para pão
1/2 colher chá de sal
1 colher chá de açúcar branco refinado
1 colher chá de fermento biológico seco
1 colher sopa de azeite + extra para untar
140ml água morna
400g tomates cereja, de preferência no pé
um bom punhado de folhas de manjericão
100ml azeite extra virgem + extra para as mãos
uma boa pitada de flor ou flocos de sal
preparação:
Reservar 5 folhas de manjericão e colocar as restantes no copo do robot de cozinha, juntamente com os 100ml de azeite. Processar bem e reservar.
Para fazer a focaccia, colocar a farinha, o sal, o açúcar e o fermento numa taça larga e misturar tudo muito bem.
Adicionar 1 colher de sopa de azeite e a água e mexer até obter uma massa mole.
Colocar a massa em cima da bancada e amassar por 10 minutos, ou até que a mesma esteja macia e elástica.
Colocar a massa na taça ligeiramente untada com azeite, cobrir com película aderente untada com azeite e deixar levedar por 15 minutos, ou até duplicar de tamanho.
Untar ligeiramente com azeite, uma forma rectangular com lados altos (tipo tabuleiro de brownie).
Esticar a massa com as mãos, até ter um rectângulo do tamanho da forma.
Com os dedos, pressionar a masa no fundo da forma, por forma a formar poças na massa.
Colocar os tomates em cima da massa, enterrando-os ligeiramente nas poças, cobrir a forma com a película aderente untada e deixar levedar por mais 30 minutos.
Aquecer o forno a 200ºC, coar o azeite de manjericão e espalhá-lo por cima da focaccia, deixando que forme "piscinas" nas irregularidades da superfície da massa.
Polvilhar com as folhas de manjericão reservadas, envolvendo-as no azeite e polvilhar com os flocos ou flor de sal.
Levar ao forno por 20 a 25 minutos, ou até a focaccia ter crescido e estar douradinha.
Deixar arrefecer por 10 minutos.

Anchovy, olive, onion and rosemary focaccia / Focaccia de anchovas, azeitonas, cebola e alecrim.




























There are books that, as soon I touch them, I just want to get into the kitchen and test all the recipes and this, brand new Lorraine Pascale book, is certainly one of them.
All the recipes are magnificent and of course, the first ones chosen to be tried were... bread!!!
This focaccia was the first tried, tested and approved recipe and it is absolutely stunning and the topping combination of flavours, even if not to everybody's taste, is amazing and so surprisingly delicious!
ingredients:
300g strong white bread flour
100g strong wholemeal bread flour
1 tsp salt
7g dried yeast
250ml warm water
1 tbsp olive oil
spray oil
1 large red onion, halved, thinly sliced and fried for 15 minutes in a little olive oil, until just golden.
125g pitted black olives, halved
2 springs fresh rosemary, destalked
25g anchovies, drained



























method:
Line a baking tray or sheet with baking paper.
Mix the flours, salt and yeast together in a large bowl.
Make a well in the centre. Add the olive oil and water and mix  to form a dough.
Knead by hand on a floured surface for 10 minutes or, if using a mixer fitted with the dough hook, knead for 5 minutes.
Place the kneaded dough on the baking sheet and roll it into a 25cm round or shape it to your liking.
Spray the top with some oil, cover with clingfilm and leave to rise in a warm place for  about 45 minutes or until doubled in size.
Preheat the oven to 200ºC.
When the dough has had its rising time, prod your fingers all over it to make the traditional focaccia dents.
Stick an olive half and rosemary spring out of each hole.
Spread the fried onions all over the top and scatter with the remaining olive halves and rosemary.
Lay the anchovies on top.
Bake the bread for 20 to 25 minutes or until cooked through and sounds hollow when tapped underneath.
Remove  from the oven and allow it to cool enough to handle.
Serve warm or cold.

Há livros que assim que me vêm parar as mãos, a vontade que tenho é de ir logo para a cozinha experimentar as receitas todas e este livro novo da Lorraine Pascale, recheado de maravilhosas receitas, é o mais recente exemplo do que escrevo.
Claro que as primeiras receitas seleccionadas para serem testadas, foram as de pão e de entre elas, esta focaccia divina que, embora não seja para todos os palatos, é uma deliciosa e explosiva combinação de sabores. 
ingredientes:
300g farinha de trigo para pão
100g farinha de trigo integral para pão
1 colher chá de sal
7g fermento biológico seco
250ml água morna
1 colher sopa de azeite
azeite ou óleo em spray, para borrifar (eu usei azeite em garrafa normal e pincelei)
1 cebola vermelha grande, cortada ao meio e depois em fatias fininhas e frita por 15 minutos num bocadinho de azeite, até estar ligeiramente corada.
125g azeitonas pretas sem caroço, cortadas ao meio
2 hastes de alecrim, separadas em folhas ou raminhos
25g anchovas, escorridas



























preparação:
Forrar um tabuleiro de ir ao forno com papel vegetal.
Numa taça, misturar as farinhas, o sal e o fermento.
Fazer um buraco no centro e adicionar o azeite e a água.
Misturar até obter uma massa.
Amassar à mão por cerca de 10 minutos, sobre uma superfície enfarinhada, até obter uma bola de massa macia e elástica, ou amassar na batedeira eléctrica, equipada com o gancho para massas, por cerca de 5 minutos.
Colocar a massa no tabuleiro e estendê-la num círculo de 25cm de diâmetro, ou na forma desejada.
Borrifar a superfície da massa com o azeite ou óleo em spray ou pincelar com o azeite normal.
Cobrir o tabuleiro com película aderente e deixar repousar até duplicar de tamanho, por cerca de 45 minutos em local aquecido.
Aquecer o forno a 200ºC.
Findo o tempo de repouso, espetar os dedos na superfície da massa, por forma a criar as indentações próprias da focaccia.
Colocar um raminho de alecrim e uma metade de azeitona em cada buraco.
Distribuir a cebola frita por toda a superfície da focaccia e cobrir com as restantes metades de azeitona e alecrim.
Dispôr as anchovas no topo da focaccia e levar ao forno por cerca de 20 a 25 minutos, ou até a focaccia estar cozida e soar oca quando tapeada na base.
Retirar a focaccia do forno e deixar arrefecer o suficiente.
Pode ser comida quente/morna ou fria.
