Fig & Rose Millefeuille / Mil Folhas de Figos e Rosas.


You all know I love a good millefeuilles right?
To me, Millefeuilles are like Pavlovas! Can't see one new recipe of either of them, and you'll spot me running into the kitchen to make it straightaway!
In this post, you can see the list of all the homemade millefeuilles I've already made until today and, this one, with all these exotic and Persian flavours, couldn't go unnoticed and not being part of my millefeuilles list, right?
This is another great recipe from Sabrina Ghayour beautifully gorgeous "Feasts" book and it was so, so delicious that I had to share it with you all.

Passionfruit curd Pavlova with Elderflower cream / Pavlova com curd de Maracujá e Natas com Xarope de Flor de Sabugueiro.


Traditions are traditions because we keep on doing the same over and over again right?
I have this tradition (my own, that I created and maintain) that the last and first desserts of the year have to be white!
They have to be white, usually pavlovas and usually from a Donna Hay magazine.
This year is no exception and here it is:

The topping this time is passionfruit.
Ideal for every special moment and a fruit that, in a curd form and in its natural form, makes this pavlova even more special and much more delightful.
Last year, I baked this gorgeous smashed pavlova that had the honour to be featured in one of the Donna Hay magazines and this year I decided that this one, with passionfruit and elderflower cream, would be the chosen one.

Dark chocolate, coconut and passion fruit mousse cake / Bolo de chocolate preto, coco e mousse de maracujá.


A few weeks ago was my husbands birthday and as soon as I saw this cake, I decided straightaway that it would be his birthday cake.
As chocolate and passion fruit are his favourite flavours, the decision was easy to make and this recipe ticked all the boxes.
The cake itself is named the "best ever chocolate sponge" and it truly is indeed the best chocolate sponge I ever made or tried.
The combination with the passion fruit mousse and the hint of the coconut, just turns it into an heaven cake.
ingredients for the cakes:
150ml vegetable oil, plus extra for greasing
200g plain flour
8 tbsp cocoa powder
2 tsp baking powder
1 tsp bicarbonate of soda
280g light brown soft sugar
200ml buttermilk
100ml strong coffee or espresso
2 tsp vanilla extract
2 large eggs
method:
Heat oven to 180ºC. Grease and line 2 x 20cm cake tins with baking paper.
Put the flour, cocoa powder, baking powder, bicarbonate of soda, sugar and 1/2 tsp of salt in a bowl and mix well.
Measure the buttermilk, coffee, oil and vanilla in a jug. Add the eggs and whisk until smooth.
Pour the wet ingredients into the dry and whisk until well combined.
Divide the cake mixture between the 2 tins, and bake for 25 to 30 minutes or until risen and a skewer inserted into the centre comes out clean.
Cool in the tins for 10 minutes, then turn out onto a wire rack, peel off the baking paper and leave to cool.


for the passion fruit and coconut mousse:
6 gelatine leaves
6 ripe passion fruits
160g can coconut cream
85g golden caster sugar
2 tbsp coconut rum liqueur (Malibu)
300ml double cream
method:
Put the gelatine leaves in a bowl of cold water, one at a time, so they don't stick together. Set aside for 5 mins to soften.
Scoop the pulp and seeds from the passion fruit into a sieve suspended over a bowl, and push through the juice (you should have about 100ml).
Put 1 tbsp of the seeds in a small bowl and set aside. Save 2 small empty passion fruit halves and discard the rest.
Pour the coconut cream, passion fruit juice and sugar into a saucepan and bring to a gentle simmer.
Remove from the heat and stir in the coconut rum liqueur.
Add the gelatine to the hot liquid, a leaf at a time, squeezing out the water before you add them. Stir until the gelatine has dissolved.
Fill each reserved passion fruit half with some of the mixture, place in a small dish and chill until needed.
Leave the remaining mixture to cool to room temperature.
Pour the double cream into a large bowl and whip until it's holding its shape. Add half the passion fruit mixture, fold together, then add the remaining mixture and fold through again.
Line a deep 20cm cake tin with a double layer of cling film.


for the chocolate ganache:
200g dark chocolate, around 70% of cocoa solids, finely chopped
300ml double cream
method:
Put the chocolate and cream in a pan and gently heat, stirring now and then, to make a runny chocolate sauce. Leave to firm up at room temperature until it reaches a spreadable consistency.
to assemble de cake:
4 tbsp coconut rum liqueur (Malibu)
toasted coconut flakes or shavings


to finish:
Slice each sponge in half through the middle and drizzle each layer with 1 tbsp of the coconut rum liqueur.
Place one of the layers into the tin, flat-side down, and spread with 1/3 of the passion fruit mousse.
Layer the remaining sponges and mousse on top, finishing with a layer of cake.
Cover the top of the cake with cling film and chill for at least 4 hours, or preferably overnight.
When the cake has chilled and the mousse is set turn out onto a cake stand (I used my new cake stand, made by Patricia, a very talented Pastry "Chef" and a truly artist. Just check her blog if you want to be truly impressed).
Remove the clingfilm and using a palette knife, scrape any passion fruit mousse off the edges of the cake, to give it a smooth surface.
Place the cake back in the fridge while you prepare the ganache.
Remove the cake from the fridge.
Spread the ganache over the top and sides of the cake with a palette knife until completely covered.
Decorate the top of the cake with a ring of toasted coconut shavings.
Remove the filled passion fruit shells from the fridge, top them with the reserved passion fruit seeds and place these on top of the cake.
Chill until ready to serve, but bring out of the fridge 1 hour before slicing.

Há umas semanas atrás o meu marido fez anos e assim que vi este bolo na revista de Julho da Good Food, não hesitei nem pensei mais em que bolo fazer-lhe, pois chocolate e maracujá são os seus sabores preferidos e como tal, este bolo preenchia todos os requisitos para ser o bolo perfeito para o dia.
Do coco ele não é muito (ou nada) fã mas como a quantidade de licor de coco utilizada no bolo em si, acaba por não se notar muito no resultado final do bolo e o coco utilizado para a decoração, ele o pôs de lado na altura de comer o bolo, acabou por não refilar muito...
O título do bolo de chocolate é "O melhor bolo de chocolate de sempre" e acreditem que é mesmo verdade, pois é, de facto, o melhor bolo de chocolate que já fiz, ou comi e eu, como sabem, nem sou nada fã de de chocolate.
A mousse de maracujá e os restantes componentes do bolo, acabam por transformar, o que, por si só, já é "o melhor bolo de chocolate do mundo", num verdadeiro momento de prazer e deleite.
A receita tem algumas etapas, mas não se deixem intimidar, pois qualquer um dos componentes é de facílima realização.


ingredientes para os bolos:
150ml óleo vegetal + extra para untar
200g farinha de trigo branca
8 colheres sopa de cacau em pó
2 colheres chá de fermento em pó
1 colher chá de bicarbonato de sódio
280g açúcar amarelo
200ml buttermilk
100ml café forte ou espresso
2 colheres chá de extracto de baunilha
2 ovos grandes (L)
preparação:
Aquecer o forno a 180ºC. Untar e forrar com papel vegetal, 2 formas de 20cm de diâmetro.
Numa taça, colocar a farinha, o cacau, o fermento, o bicarbonato, o açúcar e 1/2 colher chá de sal. Misturar tudo muito bem.
Num jarro, misturar o buttermilk, o café, o óleo e a baunilha. Adicionar os ovos e bater tudo até obter uma mistura macia.
Deitar a mistura líquida sobre a mistura dos ingredientes sólidos e mexer, por forma a incorporar tudo muito bem.
Dividir a mistura pelas duas formas e levar ao forno por cerca de 25 a 30 minutos, ou até os bolos estarem crescidos e um palito inserido no centro de cada bolo, saia limpo.
Deixar os bolos arrefecer nas próprias formas por cerca de 10 minutos e depois desenformá-los sobre uma grelha, retirando-lhes o papel vegetal, para completo arrefecimento.
para a mousse de maracujá e coco:
6 folhas de gelatina
6 maracujás bem maduros
160g creme de coco (parte sólida que se forma no topo das latas do leite de coco)
85g açúcar refinado amarelo
2 colheres sopa rum de coco (Malibu)
300ml natas para bater
preparação:
Colocar as folhas de gelatina, uma de cada vez, dentro de água fria e reservar por cerca de 5 minutos.
Colocar um coador sobre uma taça. Cortar os maracujás ao meio e retirar-lhes a polpa e as sementes. Passar tudo pelo coador, espremendo bem, por forma a extrair o máximo de sumo dos maracujás. São necessários cerca de 100ml de sumo de maracujá e deverá ser essa a quantidade obtida.
Reservar duas metades das cascas dos maracujás e 1 colher sopa de sementes e descartar todas as restantes sementes e cascas.
Num tacho, colocar o creme de coco, o sumo dos maracujás e o açúcar. Aquecer, mexendo, até o açúcar estar dissolvido e a mistura começar a querer levantar fervura.
Retirar o tacho do lume e adicionar o Malibu.
Retirar a gelatina da água, espremer bem o excesso de água e adicioná-la à mistura de maracujá, uma folha de cada vez, mexendo bem até que esteja bem dissolvida.
Encher as duas metades das cascas do maracujá reservadas com esta mistura, colocar sobre uma chávena ou algo que as mantenha direitas e refrigerar.
Deixar a restante mistura arrefecer até ficar à temperatura ambiente.
Bater as natas até estas estarem firmes mas sem bater em demasia.
Adicionar metade da mistura de maracujá ás natas e envolver bem até estar tudo bem incorporado.
Adicionar a mistura de maracujá restante e voltar a envolver bem.
Forrar uma forma funda, com 20cm de diâmetro com duas camadas de película aderente, pois é dentro desta forma que se irá montar o bolo.


para o ganache de chocolate:
200g chocolate preto (70%  cacau), picado finamente
300ml natas para culinária
preparação:
Colocar as natas e o chocolate num tacho e aquecer em lume brando, mexendo de vez em quando, até o chocolate estar derretido e a mistura estar macia.
Retirar o chocolate do lume e deixar arrefecer à temperatura ambiente, até atingir uma consistência que se possa ser barrado.
para montar o bolo:
4 colheres sopa rum de coco (Malibu)
flocos de coco tostados


montagem do bolo:
Cortar cada bolo ao meio, por forma a obter 4 discos.
Regar cada um dos discos com 1 colher sopa de Malibu.
Colocar um disco do bolo (parte plana virada para baixo) na forma forrada com a película aderente.
Barrar com 1/3 da mousse de maracujá.
Repetir com os restantes discos e a restante mousse, terminando com 1 disco de bolo.
Cobrir o bolo com película aderente e levar ao frigorífico por 4 horas, ou de preferência, de um dia para o outro.
Virar o bolo sobre um prato de serviço ou cake stand (eu usei este cake stand lindo da talentosa Patrícia do bolog Coco e Baunilha que é, não só uma verdadeira "Chef" de pastelaria mas também uma grande artista).
Retirar a película aderente do bolo e com a ajuda de uma espátula, alisar os lados, a fim de aplanar alguma mousse de maracujá que tenha escorrido para as laterais do bolo.
Se ainda não tiver preparado o ganache, colocar o bolo no frigorífico até o ganache estar pronto a barrar, caso contrário, barrar as laterais e topo do bolo com o ganache.
Espalhar os flocos de coco tostados à volta da extremidade do bolo, em forma de anel.
Espalhar as sementes de maracujá reservadas sobre a mousse de maracujá que foi colocada nas cascas e decorar o centro do topo do bolo com as mesmas.
Refrigerar o bolo até ao momento de servir, retirando-o do frigorífico cerca de 1 hora antes de o cortar.

Passion fruit and pomegranate pavlova / Pavlova de maracujá e romã.


Nothing better to end up 2014 and start 2015 than a fantastic pavlova right?
This pavlova is gorgeous and combines flavours that I truly adore.
It looks absolutely divine on every table and specially to celebrate special occasions!!
Although I can't show you the interior of this masterpiece as it had to go to the hogmanay party table, I can assure you that this one is the most perfect and delicious pavlova I ever made and It was devoured on a blink of an eye.
With this pavlova I wish you all a very fantastic and happy 2015!!
ingredients (serves 12 to 16):
10 medium egg whites
525g caster sugar
for the topping and filling:
4 passion fruit, scooped out and sieved, seeds discarded
3 tbsp caster sugar
750ml double cream
2 tbsp Cointreau (I used limoncello)
3 tbsp lemon curd (I didn't use)
3 tbsp orange curd (I used a homemade one)
zest of 2 limes, thinly pared
seed of 2 pomegranates
runny honey, for drizzling


method:
Preheat the oven to 110ºC and line 3 baking sheets with baking paper. Draw a 27cm circle on one sheet, a 22cm circle on the other sheet and a 18cm on the last sheet.
Place the egg whites in the bowl of an electric mixer and whisk on high speed until they form stiff peaks.
Add the caster sugar, 1 tbsp at a time, incorporating well before adding the next one. Whisk until the mixture is glossy.
Divide the mixture between the 3 baking sheets and spread the meringue out to fit each circle.
Bake for 5 hours. Turn off the heat and leave in the oven to cool completely.
Just before serving, stir the passion fruit juice and sugar into the double cream - the mixture will thicken with the acid from the juice.
Stir in the Cointreau and curds to make a thick cream.
If the mixture is not thick enough whisk a little and if it's to thick, add a splash more cream.
Put the largest meringue circle on a serving plate and spoon over 1/3 of the cream. Scatter with some pomegranate seeds and lime zest.
Top with the second largest meringue and spoon over another third of the cream and more seeds and zest.
Top with the smallest meringue circle and spoon over the rest of the cream, seeds and zest.
Drizzle all over with honey and serve.

Nada como uma pavlova para animar uma mesa e esta foi a sobremesa escolhida para terminar 2014 e dar início a 2015.
Assim que vi a receita, soube imediatamente que tinha de a reproduzir, ou não fosse eu "The" Pavlova Queen :))) !!.
Não só combina sabores que adoro, como fica linda em qualquer mesa e em especial, para comemorações especiais.
Se há coisa que detesto, é não mostrar o interior dos cozinhados que aqui publico, mas esta pavlova, infelizmente, não durou tempo suficiente para poder fotografar uma fatia para vos mostrar. No entanto, posso assegurar-vos que, tanto em termos de consistência, como em termos de sabor, foi A MELHOR e mais PERFEITA pavlova que já fiz!!
Esta é a pavlova que vos deixo, juntamente com os meus votos de que tenham um muito feliz 2015, cheio de Paz, Saúde, Alegria e... muitas pavlovas ao longo do ano, pois será sinal de que tiveram muitos motivos para comemorar.


ingredientes (para 12 a 16 pessoas):
10 claras de ovo médias
525g açúcar refinado branco
for the topping and filling:
polpa de 4 maracujás, passada por um coador e sementes descartadas
3 colheres sopa de açúcar refinado branco
750ml natas para bater
2 colheres sopa de Cointreau (eu usei limoncello)
3 colheres sopa de curd de limão (não usei)
3 colheres sopa de curd de laranja (usei caseiro que tinha feito)
casca de 2 limas, cortada em tirinhas muito finas, ou zestada
sementes de 2 romãs
mel líquido, para regar
preparação:
Aquecer o forno a 110ºC.
Forrar 3 tabuleiros com papel vegetal e numa das folhas, desenhar um círculo de 27cm de diâmetro, na outra,  um círculo de 22cm de diâmetro e na terceira, um círculo de 18cm de diâmetro. Virar as folhas ao contrário, para que o suspiro não fique em contacto com o lápis ou caneta.
Colocar as claras na taça de uma batedeira eléctrica e bater em velocidade máxima, até estarem em castelo firme.
Adicionar, o açúcar, uma colher de cada vez, batendo bem entre cada adição, até todo o açúcar estar incorporado e obter uma mistura espessa e brilhante.
Distribuir as claras pelos 3 círculos, forçando-as a preencher os círculos por completo.
Levar ao forno por 5 horas (sim, são mesmo 5 horas). Passado esse tempo, desligar o forno e deixar que os suspiros arrefeçam por completo dentro do forno.
Antes de servir, misturar as natas com o sumo dos maracujás e o açúcar e mexer. A mistura irá engrossar devido à acidez do maracujá.
Adicionar o Cointreau, os curds e mexer bem. Se a mistura não estiver suficientemente espessa, bater um bocadinho e caso esteja espessa demais, adicionar mais um bocadinho de natas.
Colocar o círculo maior de suspiro num prato de serviço e por cima deste espalhar 1/3 das natas. Cobrir com 1/3 das sementes de romã e da lima zestada.
Repetir o processo com o disco de 22cm e terminar com o disco de 18cm, cobrindo-o com as restantes natas, sementes de romã e lima zestada.
Regar com o mel e servir!

Lemon and passionfruit cake / Bolo de limão e maracujá.


My husband is totally mad about passionfruit and as this was his birthday cake, of course I had to make it with passionfruit.
The cake was adapted from the Three Sisters Bake, lemon and blueberry cake.
ingredients (serves 8 to 10):
180g unsalted butter, at room temperature
225g self raising flour, sifted
180g caster sugar
3 large eggs, at room temperature
1 tsp baking powder
1 tsp vanilla extract
60ml crème fraîche
zest of 2 organic lemons
method:
Preheat the oven to 160ºC and line a 20cm cake tin with baking paper.
Place the butter, flour, sugar, eggs, baking powder and vanilla extract in a large bowl and beat for a few minutes until light and fluffy.
Add the crème fraîche and lemon zest and beat for another 30 seconds.
Pour the mixture into the prepared tin and bake for 40 to 50 minutes or until golden and cooked through. Insert a skewer in the middle of the cake and if it comes out clean the cake is cooked.
When cooked, remove the cake from the oven and allow to cool a bit in the tin.
Turn the cake onto a wire rack to cool completely.
for the icing:
250g light cream cheese
80g icing sugar
zest and juice of 1 organic lemon
method:
Beat the cream cheese and icing sugar together until smooth.
Add the lemon juice and zest and stir to combine.
Refrigerate until needed.
to finish:
pulp from 4 to 6 passionfruit
to assemble:
Once the cake has cooled, spread the icing on top and spoon the passionfruit pulp on top of the icing.

O meu marido é completamente apaixonado por maracujá e tendo este sido o bolo que fiz para o aniversário dele, claro que teria de ser feito usando maracujá!
Este bolo foi adaptado do bolo de limão e mirtilos do livro Three Sisters Bake.
ingredientes (para 8 a 10 pessoas):
180g manteiga sem sal, à temperatura ambiente
225g farinha de trigo com fermento, peneirada
180g açúcar refinado branco
3 ovos grandes (L), à temperatura ambiente
1 colher chá de fermento em pó
1 colher chá de extracto de baunilha
60ml crème fraîche
raspa de 2 limões biológicos
preparação:
Aquecer o forno a 160ºC e forrar com papel vegetal, uma forma de 20cm de diâmetro.
Numa taça grande, colocar a manteiga, a farinha, o açúcar, os ovos, o fermento e a baunilha.
Bater tudo muito bem, até obter uma mistura leve e fofa.
Adicionar o crème fraîche e a raspa do limão e bater por mais 30 segundos.
Colocar a mistura na forma e levar ao forno por 40 a 50 minutos, ou até o bolo estar cozido e douradinho.
Inserir um pau de espetada no meio do bolo e se este sair limpo, então o bolo está cozido.
Quando pronto, retirar o bolo do forno e deixá-lo arrefecer uns minutos na forma, antes de o desenformar em cima de uma grelha, para completo arrefecimento.
ingredientes para a cobertura:
250g queijo creme (tipo Philadelphia) light
80g açúcar em pó
sumo e raspa de 1 limão biológico
preparação:
Bater o queijo e o açúcar em pó, até obter uma mistura macia.
Adicionar o sumo e raspa do limão e combinar bem.
Guardar no frigorífico até necessitar.
para finalizar o bolo:
polpa de 4 a 6 maracujás
para montar o bolo:
Quando o bolo estiver completamente frio, espalhar a cobertura de queijo creme por cima e cobrir com a polpa do maracujá.

White chocolate and passion fruit cheesecake / Cheesecake de chocolate branco e maracujá.


Ma João wants to celebrate her blog 1st anniversary with lots of chocolate and she challenged us to bring chocolate recipes to the party.
Saying that, here is my contribution to the big day and to Maria's party.
ingredients (serves 6):
100g digestive biscuits, crushed
50g unsalted butter, melted, plus extra for greasing
125g white chocolate, chopped
125ml single cream
225g cream cheese, softened
225g mascarpone cheese
4 tbsp golden caster sugar
2 tsp vanilla extract
4 egg yolks
2 egg whites
125ml passion fruit pulp, sieved to remove the pips
passion fruit, to decorate
method:
Preheat the oven to 180ºC.
Grease a 20cm springform cake tin.
Put the crushed biscuits and melted butter into a bowl and mix well.
Tip the mixture into the prepared tin and press down with the back of a spoon.
Bake for 10 minutes or until golden. Set aside to cool.
Reduce the oven temperature to 150ºC.
Put the chocolate into a bowl.
Put the cream into a small pan and heat until steaming hot, but don't boil it.
Pour the cream over the chocolate and stir until smooth. Put to one side.
In a separate bowl, beat the cream cheese and the mascarpone cheese until smooth.
Add the sugar, vanilla and egg yolks.
Stir in the white chocolate mixture and the passion fruit pulp.
In another bowl whisk the egg whites to soft peaks.
Fold a big spoonful of the egg whites into the chocolate batter very vigorously and then, gently fold in the remaining egg whites.
Spoon the mixture over the cooled biscuit base and bake for 50 to 60 minutes or until set but with a slight wobble in the centre.
Turn off the oven and leave the cheesecake to cool inside for 2 hours, with the door open.
Chill in the refrigerator overnight.
When ready to serve, remove from the tin and decorate with fresh passion fruit.

A Ma João quer festejar o aniversário do blogue com receitas de chocolate.
Ora como não podia faltar à festa de tão simpática amiga virtual, aqui fica a minha contribuição para a festa do Ponto de Rebuçado Receitas e espero que a Ma João goste desta sugestão que, de acordo com os gulosos cá de casa, é de comer e chorar por mais.
ingredientes (para 6 pessoas):

100g bolachas digestivas ou Maria, em migalhas

50g manteiga sem sal, derretida + extra para untar a forma
125g chocolate branco, picado
125ml natas líquidas
225g queijo tipo Philadelphia, à temperatura ambiente
225g queijo mascarpone
4 colheres sopa de açúcar refinado amarelo
2 colheres chá de extracto de baunilha
4 gemas
2 claras
125ml polpa de maracujá, coada e sem sementes
maracujá fresco, para decorar
preparação:
Aquecer o forno a 180ºC e untar uma forma de fundo amovível com cerca de 20cm de diâmetro.
Misturar as bolachas esmigalhadas com a manteiga derretida e com esta mistura, forrar o fundo da forma.
Alisar bem com as costas de uma colher, por forma a ficar uniformemente nivelado.
Levar ao forno por 10 minutos, ou até a base de bolachas estar douradinha.
Retirar do forno e arrefecer.
Reduzir a temperatura do forno para os 150ºC.
Colocar o chocolate numa taça.
Num tacho pequenino, levar as natas ao lume e aquecer só até ao ponto de ebulição.
Verter as natas sobre o chocolate e mexer até obter uma mistura sedosa. Reservar.
Numa taça à parte, bater o queijo Philadelphia com o mascarpone até obter uma mistura macia.
Adicionar o açúcar, a baunilha e as gemas de ovo e voltar a bater.
Adicionar-lhe a mistura de chocolate e a polpa do maracujá e incorporar tudo muito bem.
À parte, bater as 2 caras em castelo ligeiro.
Adicionar uma colherada de claras à mistura do chocolate e bater energicamente.
Este passo serve para aligeirar a mistura.
Adicionar as restants claras à mistura anterior e envolver delicadamente.
Verter esta mistura sobre a base de bolacha arrefecida e alisar bem a superfície.
Levar ao forno e cozer por cerca de 50 a 60 minutos, ou até a mistura estar firme, mas ainda estar um pouco mole no centro, quando se abana a forma.
Desligar o forno e deixar o cheesecake lá dentro por cerca de 2 horas (com a porta do forno aberta), até estar completamente frio.
Refrigerar o cheesecake de um dia para o outro e antes de servir, desenformar e decorar com quartos de maracujá fresco.

Recipe / Receita:
