Vanilla cheesecake with blood oranges, caramel and a Hobnob and hazelnut crust / Cheesecake de baunilha com laranjas sanguíneas, caramelo e uma crosta de bolachas Hobnob e avelãs.


Cheesecake!!
Who doesn't love cheesecake?
The last of my blood oranges were used in this amazing cheesecake that pleased everyone that tried it.
The crust is absolutely divine and the filling, well, sublime!!
Although the recipe calls for 8 to 10 oranges for the topping, I only had 5 of them left and to tell you the truth, they were enough.
The recipe is from Delicious magazine and, although I only made half of the recipe, I'm leaving you the complete version.


ingredients (12 to 16):
vegetable oil, for greasing
200g Hobnob biscuits
50g roasted chopped hazelnuts
110g unsalted butter, melted
for the filling:
360g full-fat cream cheese
250g mascarpone
175g soured cream
1 tsp vanilla bean paste
175g caster sugar
3 large free-range eggs
50g plain flour
for the topping:
8 to 10 blood oranges, peeled and segmented, juices reserved
100g caster sugar
30g unsalted butter
splash rum, Cointreau or brandy (I didn't use)
pinch sea salt flakes
75ml double cream


method:
Lightly oil a 20cm loose-bottomed deep cake tin.
Whizz the biscuits and hazelnuts in a food processor until very finely ground.
With the motor running, pour in the melted butter and a pinch of salt, then whizz until the mixture looks like wet sand.
Tip the mixture into the tin and using your fingers and a metal spoon, flatten the mixture onto the base. Then start to build up the sides, working it up the tin to form thin walls.
Chill the tase in the fridge.
Heat the oven to 160ºC.
To make the filling, put the cream cheese, mascarpone, soured cream, vanilla and sugar in a mixing bowl and whisk with an electric mixer until smooth and runny.
Whisk in the eggs, then sift over the plain flour and whisk that in.
Pour the mixture into the chilled biscuit case, then transfer to the oven, on a baking sheet, and bake for 50 to 60 minutes, until set around the edges with a good wobble in the middle.
Remove from the oven, cool and chill overnight.
For the topping, put the sugar in a heavy based pan and heat very gently until the sugar has dissolved (don't stir it).
Once the sugar's melted, turn up the heat slightly and cook to a rich golden/red caramel.
Remove from the heat and stir in the butter and liqueur (if using). It will spit, so be careful.
Add the salt, then stir in the cream.
Transfer the caramel to a bowl, add 3 tbsp of the reserved orange juice and then leave to cool. Add more orange juice if the caramel sets to firmly.
Tip the orange wedges onto a few layers at kitchen paper, then pat gently with more kitchen paper to dry them slightly.
Remove the cheesecake from the fridge 30 minutes before serving and transfer it to a serving plate.
Pile the orange segments on top and drizzle with the caramel.

Quem não gosta de cheesecake? Nós por cá adoramos e devo dizer-vos que este é especialmente delicioso!!
Decidi publicá-lo agora, numa semana que já vai sendo muito doce aqui pelo blogue, mas achei que seria uma sobremesa fantástica para o almoço de Domingo de Páscoa.
Fica a sugestão...
Volto a repetir, caso não encontrem laranjas sanguíneas, façam-no com laranjas normais, pois o resultado será o mesmo, ou seja, MARAVILHOSO!!
Esta crosta, feita com bolachas Hobnob e avelãs, é a melhor de sempre e o recheio, bom..., recheio típico de cheesecake, calórico, nada saudável nem aconselhável a quem aderiu à "moda" do saudável.
As laranjas dão-lhe a frescura necessária e são a parte saudável desta sobremesa. O molho de caramelo..., é o golpe de misericórdia para arruinar com a dieta...
A receita pede 8 a 10 laranjas, mas eu já só tinha 5 e foi as que utilizei e para vos ser sincera, não achei que precisasse de mais.
A receita é da Delicious magazine e embora eu só tenha feito metade da receita, deixo-vos a versão original e completa, que poderão adaptar caso queiram experimentar este exemplar típico do pecado da gula.


ingredientes (para 12 a 16 fatias):
óleo vegetal, para untar a forma
200g bolachas Hobnob
50g avelãs, tostadas e picadas
110g manteiga sem sal, derretida
para o recheio:
360g queijo creme, tipo Philadelphia
250g mascarpone
175g soured cream ou natas azedas
1 colher chá de pasta ou extracto de baunilha
175g açúcar refinado branco
3 ovos grandes (L), de preferência biológicos
50g farinha de trigo branca
para o topping:
8 a 10 laranjas sanguíneas, descascadas e segmentadas, sumo reservado
100g açúcar refinado branco
30g manteiga sem sal
um bocadinho de rum, Cointreau ou brandy (eu não usei)
uma pitada de lâminas ou flor de sal
75ml natas para culinária


preparação:
Untar com o óleo, uma forma de 20cm de diâmetro profunda e com fundo amovível.
No copo do robot de cozinha, reduzir as bolachas e as avelãs a migalhas finas.
Com o motor do robot ligado, adicionar a manteiga derretida e uma pitada de sal e processar até obter uma mistura tipo areia molhada.
Despejar a mistura na forma e com as mãos e uma colher metálica, forrar bem a forma com esta mistura, começando pelo fundo, erguendo depois paredes finas da mistura, em toda a volta da forma.
Colocar a forma no frigorífico e aquecer o forno a 160ºC.
Para fazer o recheio, colcoar o queijo creme, o mascarpone, as natas azedas, o açúcar e a baunilha, na taça da batedeira eléctrica e bater até a mistura estar bem cremosa e macia.
Adicionar os ovos e voltar a bater até tudo estar bem incorporado.
Peneirar a farinha sobre a mistura anterior e envolver ou bater, tudo muito bem.
Deitar a mistura sobre a base de bolacha, colocar a forma sobre um tabuleiro e levar ao forno por 50 a 60 minutos, ou até o recheio estar firme a toda a volta, mas mole no centro quando se abana a forma.
Retirar o cheesecake do forno, deixar arrefecer e depois colocá-lo no frigorífico de um dia para o outro.
Para o topping, colocar o açúcar num tacho e aquecer sobre lume brando, sem mexer, até o açúcar derreter.
Quando o açúcar estiver derretido, aumentar o lume e deixar cozer até o açúcar atingir um caramelo castanho/avermelhado.
Retirar do lume e misturar a manteiga e o licor (caso usem), mexendo rapidamente. Atenção para não se queimarem, pois a mistura vai ferver.
Adicionar as natas e o sal e mexer tudo muito bem.
Transferir o caramelo para uma taça, adicionar-lhe 3 colheres sopa do sumo de laranja reservado e deixar arrefecer.
Caso o caramelo comece a solidificar muito enquanto arrefece, adicionar mais sumo de laranja, até obterem a consistência desejada.
Entretanto, colocar os segmentos da laranja entre folhas de papel absorvente de cozinha, a fim de secá-las bem, para que depois não escorram sumo em cima do cheesecake.
Retirar o cheesecake do frigorífico cerca de 30 minutos antes de servir.
Desenformar o cheesecake sobre um prato de serviço, decorá-lo com os segmentos da laranja e regá-lo com o caramelo.

Nutella filled pancakes with caramelised banana, toasted hazelnuts and maple syrup / Panquecas recheadas com Nutella, servidas com banana caramelisada, avelãs tostadas e maple syrup.


Today is Nutella World Day and therefore, we are celebrating it with these absolutely amazing pancakes that are filled with Nutella and topped with delicious caramelised banana, toasted hazelnuts and a drizzle of maple syrup.
The recipe is from BBC GoodFood magazine and it is delicious!
ingredients (serves 4):
200g self raising flour
1 1/2 tsp baking powder
3 tbsp golden caster sugar
3 large eggs
25g melted butter, plus extra for cooking
200ml milk
drizzle of vegetable or sunflower oil
200g Nutella
2 large bananas, peeled and thickly sliced on an angle
4 tbsp toasted chopped hazelnuts
maple syrup
method:
To make the pancake batter, mix the flour, baking powder,1 tbsp of the golden caster sugar and a pinch of salt in a large bowl with a whisk.
Make a well in the centre. crack in me eggs and add the metted butter and milk.
Whisk the wet ingredients in the centre until combined, then gradually incorporate the dry ingredients until you have a thick, smooth batter. Transfer the mixture to a jug.
Heat the oven to its lowest setting and put a couple of baking trays in to keep the pancakes warm as you cook them.
Heat a knob of butter and a drizzle of oil in a large, non stick frying pan over a medium heat.
when the butter is foaming, pour rounds of batter into the pan, about 8cm wide. Leave space between them as they will expand as they cook.
Scoop teaspoons of Nutella from the jar and pop one in the centre of each pancake, then use a tiny bit more batter to just cover the chocolate spread.
Continue cooking for 1 to 2 minutes until the underside is golden brown, then carefully flip the pancakes and cook for 1 minute more on the other side.
When golden, transfer to a baking tray and keep warm in the oven while you cook the next batch.
When the pancakes are all cooked, caramelise the bananas.
Wipe the frying pan clean with kitchen paper and scatter in the remaining 2 tbsp of the sugar.
Heat the sugar until it melts and starts to bubble to a deep amber colour.
Toss in the bananas and coat them in the caramel.
If the sugar hardens, drizzle in a little maple syrup or water, then bubble for 30 seconds until syrupy.
Serve the pancakes stacked with the caramelised banana pieces between the layers and more piled on top.
Scatter over the hazelnuts and drizzle with maple syrup.

Aparentemente hoje é o Dia Mundial da Nutella e assim sendo, cá em casa comemora-se com estas panquecas magníficas, recheadas com Nutella, e servidas com banana caramelisada e avelãs tostadas.
A receita é da revista BBC GoodFood e claro que as panquecas foram apressadíssimas e nem o interior deu para mostrar, mas não faz mal, pois acho que vocês conseguirão imaginar a decadência do seu interior...


ingredientes (para 4 pessoas):
200g farinha de trigo branca com fermento
1 1/2 colheres chá de fermento em pó
3 colheres sopa de açúcar refinado amarelo
3 ovos grandes (L)
25g manteiga derretida + extra para a frigideira
200ml leite
um bocadinho de óleo vegetal ou de girassol
200g Nutella
2 bananas grandes, descascadas e cortadas em ângulo, em rodelas grossas
4 colheres sopa de avelãs sem pele e tostadas
maple syrup
preparação:
Numa taça grande, colocar a farinha, o fermento, 1 colher de sopa do açúcar e uma pitada de sal e mexer tudo muito bem com o batedor de varas.
Fazer um buraco no centro, adicionar os ovos, a manteiga derretida e o leite.
Mexer bem os ingredientes líquidos no centro da taça e gradualmente, começar a misturá-los com a mistura da farinha, batendo bem, até obter uma mistura espessa, macia e cremosa. Transferir a mistura para um jarro.
Aquecer o forno na temperatura mínima e colocar lá dentro um ou dois tabuleiros, a fim de ir mantendo as panquecas cozinhadas quentes, enquanto cozinha as restantes.
Numa frigideira anti aderente larga e sobre lume médio, colocar umas gotas de óleo e um bocadinho de manteiga.
Quando a manteiga estiver derretida e quente, verter a massa para a frigideira, por forma a obter rodelas de mais ou menos 8cm de diâmetro e deixando espaço entre elas, pois irão expandir.
Colocar uma colher de chá de Nutella no centro de cada panqueca e cobrir com mais um bocadinho de massa, a fim de tapar a Nutella.
Cozinhar as panquecas por 1 ou 2 minutos e quando o lado de baixo estiver douradinho, virá-las, cozinhando por mais 1 minuto do outro lado.
Quando douradinhas de ambos os lados, transferi-las para os tabuleiros aquecidos, enquanto continua a cozinhar as restantes.
Quando as panquecas estiverem todas cozinhadas, limpar a frigideira com papel absorvente de cozinha e voltar a colocá-la sobre o lume médio.
Espalhar as restantes 2 colheres de sopa de açúcar na frigideira e aquecer, até o açúcar derreter e começar a caramelizar.
Quando o caramelo estiver bem douradinho, adicionar as bananas e envolvê-las no mesmo.
caso o caramelo solidifique quando adicionar as bananas, regar com um bocadinho de maple syrup ou de água e deixar ferver por 30 segundos.
Servir as panquecas empilhadas com as rodelas de banana caramelizadas entre as camadas, reservando algumas rodelas para colocar no topo.
Polvilhar com as avelãs tostadas e regar com maple syrup.

Asparagus and prosciutto bundles with goat's cheese & hazelnut dip / Espargos enrolados em presunto, com dip de queijo de cabra e avelãs.


A fabulous suggestion for a starter or light lunch to be eaten at home, or to be put inside a sealable container to be transported in a picnic basket and enjoyed outdoors.
The combination of ingredients is one of my favourite ones, as it combines some of my beloved mediterranean flavours.
ingredients (makes 6):
18 asparagus spears, woody ends removed
olive oil, for drizzling
6 slices prosciutto
handful of rocket leaves
12 semi dried tomatoes
method:
Heat a griddle pan.
Drizzle the asparagus with a little olive oil and season with salt and freshly ground black pepper.
Cook for 3 to 4 minutes, rolling around the pan until just tender. Leave to cool.
Lay a slice of prosciutto on your chopping board. Put 3 asparagus spears on top, with the tips pocking out the end.
Top with a few rocket leaves and 2 semi dried tomatoes.
Roll up the prosciutto tightly to enclose the filling.
Repeat as above to make another 5 bundles.


for the dip:
100g cream cheese
100g soft goat's cheese, rindless
1 tbsp milk
6 to 8 hazelnuts, chopped
method:
Mash the cream cheese ands goat's cheese together in a bowl with a fork.
Season and add enough milk in order to have a smooth, dipping consistency.
Spoon the mixture into a jar or serving bowl and sprinkle over the hazelnuts.

Hoje deixo-vos com esta sugestão deliciosa que, tanto pode ser servida em casa, como entrada ou para um almoço ligeiro, como pode ser posta num recipiente de fecho hermético e transportada num cesto de piquenique e ser degustada à sombra, ou ao sol, sentados numa manta ou não, simplesmente desfrutando do bom tempo e temperaturas convidativas.
A combinação de ingredientes é, para mim, das mais apelativas, pois combina alguns dos sabores mediterrâneos que mais aprecio.
ingredientes (para 6 molhos):
18 espargos, arranjados e base do talo rija, descartada
azeite
6 fatias de presunto
um punhado de folhas de rúcula
12 tomates secos em azeite, escorridos
preparação:
Aquecer um grelhador.
Regar os espargos com um fio de azeite e temperar com sal e pimenta preta moída na altura.
Grelhar os espargos por 3 ou 4 minutos, ou até estarem macios mas al dente, rolando-os no grelhador. Deixar os espargos arrefecer.
Colocar uma fatia de presunto sobre uma tábua de cozinha. Colocar 3 espargos em cima do presunto, por forma a que as pontas dos espargos fiquem um bocadinho saídas.
Em cima dos espargos colocar folhas de rúcula a gosto e cobrir com 2 tomates secos.
Enrolar o presunto à volta desta combinação e repetir o processo até ter enrolado os 6 molhos de espargos.
Colocar num contentor de fecho hermético para levar para um piquenique, ou dividir por pratos e servir com o dip.


para o dip:
100g queijo creme (tipo Philadelphia)
100g queijo de cabra fresco, sem casca
1 colher sopa de leite
6 a 8 avelãs, picadas
preparação:
Numa taça e com a ajuda de um garfo, esmagar o queijo creme, juntamente com o queijo de cabra.
Temperar com sal e pimenta preta moída na altura e adicionar leite suficiente, por forma a obter uma mistura cremosa e com consistência de dip.
Colocar a mistura num frasco de fecho hermético, ou numa taça e polvilhar com as avelãs picadas.

Hazelnuts, lemon and blueberry cake for the WBD 2015 / Bolo de avelãs, limão e mirtilos para o WBD 2015.


Today we're celebrating World Baking Day 2015 and this cake, one of my favourite cakes from one of my favourite authors, is the cake that I baked to participate on the event.
A fabulous and delicious cake, to share with all of you, family and friends.
I just realised that last year I participated in the World Baking Day with another of Amber Rose recipes which, I think, is a good sign of how much I love her recipes.

ingredients for the cake:
115g hazelnuts, toasted in the oven and skins rubbed off
260g unsalted butter, softened
225g white spelt flour, sifted
2 tsp baking powder, sifted
4 large eggs
130g honey or golden caster sugar
130g maple syrup
zest of 1 large lemon
for the filling and decoration:
350ml double cream
2 to 3 tbsp honey
2 to 3 tbsp blueberry jam (preferably sugar free)
200g fresh blueberries
edible flowers (optional)
icing sugar


method:
Preheat the oven to 180ºC. Grease and flour 2 x 20cm loose bottomed sandwich tins.
Whizz the hazelnuts in a food processor into a fine meal.
Put all the ingredients for the cake in a bowl and beat with an electric mixer until just incorporated. Don't over mix.
Divide the batter between the 2 prepared tins and smooth the tops.
Bake for 25 to 30 minutes or until the cakes are cooked through and a skewer inserted in the centre of each cake comes out clean.
Remove the cakes from the oven and allow to cool for 5 minutes in their tins, before turning them on a wire rack.
When the cakes are completely cool, lightly whip the cream until very soft peaks form.
Add the honey and whisk until incorporated.
Add the jam, one tablespoon at a time, and carefully marble it through the cream.
Transfer one of the cakes to a serving plate, spoon over 2/3 of the cream and place the second cake on top.
Spread the remaining cream over the second cake, top with the blueberries and flowers and dust with icing sugar.

Comemora-se hoje o World Baking Day 2015 e como tal, aqui vos deixo este bolinho para comemorar o evento e marcar o dia.
Fazer bolos é algo que adoro e como tal, este dia é só uma desculpa para fazer mais um bolinho e partilhá-lo convosco e com a família e amigos.
Optei por este bolo de avelãs, limão e mirtilos, por ser um dos meus bolos preferidos e por ser também (como todos já sabem), de uma das minhas autoras favoritas.
Curiosamente, e enquanto escrevia este post e procurava o link para o WBD de 2014, percebi que já o ano passado havia participado neste dia com uma receita da Amber Rose, o que, suponho, corrobora o facto de adorar esta autora e os seus livros e receitas.


ingredientes para o bolo:
115g avelãs, tostadas no forno e pele esfregada e retirada
260g manteiga sem sal, à temperatura ambiente
225g farinha de espelta branca, peneirada
2 colheres chá de fermento em pó, peneirado
4 ovos grandes (L)
130g mel ou açúcar refinado amarelo
130g maple syrup
raspa de 1 limão grande
para o recheio e decoração:
350ml natas para bater
2 a 3 colheres sopa de mel
2 a 3 colheres sopa de doce de mirtilo (de preferência sem açúcar)
200g mirtilos frescos
flores comestíveis (opcional), para decorar
açúcar em pó, para polvilhar


preparação:
Aquecer o forno a 180ºC e untar e enfarinhar duas formas de fundo amovível, com cerca de 20cm de diâmetro cada.
Processar as avelãs num robot de cozinha, até obter uma farinha fina.
Colocar todos os ingredientes do bolo na taça de uma batedeira eléctrica e bater até tudo estar bem incorporado, tendo o cuidado de não bater em demasia, a fim de obter um bolo fofo no final.
Dividir a massa pelas duas formas e alisar os topos.
Levar as formas ao forno e cozer os bolos por cerca de 25 a 30 minutos, ou até que um palito inserido no centro de cada bolo, saia limpo.
Retirar os bolos do forno e deixar arrefecer por cerca de 5 minutos nas próprias formas, antes de os desenformar sobre uma grelha de arrefecimento.
Quando os bolos estiverem completamente frios, bater as natas num Chantilly ligeiro.
Adicionar o mel e bater de novo para incorporar.
Adicionar o doce de mirtilo, uma colher de sopa de cada vez, mexendo cuidadosamente  a fim de obter um efeito marmoreado.
Colocar um dos bolos sobre um prato de serviço e cobri-lo com 2/3 das natas.
Colocar o segundo bolo em cima do primeiro e decorar com as natas restantes, os mirtilos frescos e as flores e polvilhar com açúcar em pó.

Raspberry and cream meringues / Suspiros com framboesas e natas.


Unless there's a special reason or occasion, I don't normally post on the blog during the weekend but today is one of those special occasions as it is my lovely niece birthday.
My niece was the first big love of my life. She was born when I didn't even know or thought that I would have my own kids and the love I feel for her since the day she was born, can't be put in words as it is so big and strong that it is unbelievable.
She is 17 today and she's the most pretty, delicate and gorgeous girl I ever met.
She is perfect!! And don't get me wrong because when I say that she is perfect that doesn't mean that she is just as pretty as she is. She is perfect outside, but most importantly, she is perfect inside. Her sense of justice, fairness and honour is something rare for such a young girl and she makes me the most proud of all aunts in the world.
This post is for her, my lovely niece, and these meringues are for her too, as she is a meringue lover girl.
Love you a lot Mariana and hope you enjoy this treat that is far away from you but was made for you with all my heart!!


ingredients for the meringues (serves 6):
4 egg whites
1/4 tsp cream of tartar
225g caster sugar
50g hazelnuts, chopped
for the filling and decoration:
300ml double cream
450g raspberries
40g hazelnuts, toasted and chopped
zest of 2 limes
method:
Preheat the oven to 150ºC.
Line a baking tray with a silicone sheet or baking paper.
Whisk the egg whites until soft peaks.
Whisk in the cream of tartar and then, gradually, whisk in the caster sugar, one tablespoon at a time, until all the sugar has been added and you have a stiff, shiny meringue.
Gently fold in the hazelnuts using a large metal spoon.
Spoon the meringue mixture onto the paper or silicone mate in order to make 12 even sized mounds. Smooth the tops.
Bake the meringues in the oven for 1 hour and then leave to cool completely.
Whip the cream until holding its shape and spread ir over the tops of the meringues. Arrange the raspberries over the cream and scatter over the hazelnuts.
Sandwich the meringues in pairs and sprinkle the grated lime zest on the top of each stack.

ingredientes (para 6 pessoas):
4 claras
225g açúcar refinado branco
1/4 colher chá de cremor tártaro
50g avelãs, picadas
para o recheio e decoração:
300ml natas para bater
450g framboesas
40g avelãs, tostadas e picadas
raspa de 2 limas
preparação:
Aquecer o forno a 150ºC.
Forrar um tabuleiro com papel vegetal ou com um tapete de silicone.
Colocar as claras na taça de uma batedeira eléctrica e bater em velocidade máxima, até estarem em castelo.
Adicionar o cremor tártaro e bater para incorporar.
Adicionar o açúcar gradualmente, uma colher de sopa de cada vez, batendo bem entre cada adição, até o açúcar terminar e a mistura estar espessa e brilhante.
Com a ajuda de uma colher de metal, envolver as avelãs na mistura das claras.
Com uma colher, dividir a mistura em 12 montinhos que colocam sobre o papel vegetal, alisando os topos.
