Polenta, vegetables and feta savoury bundt cake / Bundt cake salgado de polenta, recheado om legumes e feta.


As I wrote here, I loved Susana's savoury bundt cake so much, that the day after she published it, I had to give it a go.
I followed Susana's directions for the cake, but I adapted the filling in order to finish some bits and bobs that were wondering in the fridge and also because I wanted to use the fantastic feta cheese that I bought at the Edinburgh foodies festival.
ingredients for the cake (8 to 10 slices):
2 eggs
260ml milk
150ml sunflower oil
160g polenta
120g plain flour
1 tsp baking powder
1 tsp fine sea salt


ingredients for the filling:
2 tbsp olive oil
3 garlic cloves, peeled and thinly sliced
150g curly kale, very thinly sliced
150g roasted red peppers, from a jar is fine
60g sundried tomatoes, drained and chopped
3 tbsp salsa verde (I used this one)
120g feta cheese, cubed


method:
Preheat the oven to 180ºC. Grease a bundt cake tin with butter and dust with polenta or use a flour based baking spray to coat the tin very well.
To make the cake, start by separating the eggs and reserve the egg whites for later.
In a bowl, beat the egg yolks with all the remaining ingredients.
Put the bowl in the fridge and allow the batter to rest for 30 minutes.
To make the filling, heat the olive oil and garlic slices in a pan and as soon as the garlic starts sizzling, stir in the kale. Cook until the kale is tender, stirring from time to time.
Turn off the heat and stir in the peppers, tomatoes and salsa verde.
Drain the mixture over a colander in order to get rid of the excess moisture and gently fold in the cubed feta cheese.
Take the batter out of the fridge.
Whisk the egg whites into soft peaks and gently fold them into the rested batter.
Pour half of the batter into the prepared tin and spread over 2/3 of the filling.
Cover with the remaining batter and scatter the remaining filling over the top.
Bake the cake for 30 to 35 minutes or until golden brown and a skewer inserted in the middle of the cake comes out clean.
Allow the cake to rest in its tin for 30 minutes before turning it onto a wire rack.

Tal como escrevi aqui, fiquei tão encantada com o bundt salgado da Susana, que o reproduzi logo no dia a seguir a ela o ter publicado no blogue.
Segui a receita da Susana para a massa do bolo e montagem e adaptei o recheio de acordo com ingredientes que tinha no frigorifico e queria gastar e também porque queria utilizar o fantástico queijo feta que comprei no foodies festival em Edimburgo.
Assim sendo, para o meu recheio fiz assim:
Comecei por fritar 3 dentes de alho laminados em 2 colheres sopa de azeite.
Assim que o alho começou a ficar com um bocadinho de cor, adicionei 150g de couve frisada finamente picada e salteei até a couve estar macia.
Quando a couve estiver macia, apagar o lume e juntar 150g de pimentos vermelhos assados (de frasco), 60g de tomates secos, escorridos e picados e 3 colheres sopa de molho verde (usei deste).
Mexer tudo muito bem e escorrer a mistura em cima de um escorredor, a fim de eliminar o excesso de líquido.
A esta mistura adicionar 120g de queijo feta cortado em cubos e envolver delicadamente.

Savoury Brioche Bundt cake filled with finocchiona, basil, cheese and chorizo / Bundt cake de brioche salgado, recheado com finocchiona, manjericão, queijo e chourição.


As we all know, for this month Bundtmania, the theme is savoury Bundts.
Savoury Bundts that can be enjoyed outdoors, picnicking with family and friends, eaten with pleasure and accompanied by a glass of fresh lemonade or other refreshing drink while laying on the grass or on the beach. 
After lots of indecisions and different ideas, I decided to transform this Paul Hollywood's savoury brioche couronne into a bundt cake and the result, either in terms of presentation and texture or in flavour, were absolutely fabulous.


ingredients:
500g strong white flour, plus extra for dusting
10g salt
10g fast action dried yeast
170ml tepid full fat milk
4 medium eggs
250g unsalted butter, in small pieces, at room temperature
10 to 15 slices of finocchiona, thinly sliced
10 to 15 slices of spicy chorizo, thinly sliced
125g sliced cheese (I used Edam cheese)
large handful basil leaves
1 medium egg, beaten


method:
Put the flour into a food mixer fitted with a dough hook.
Add the salt to one side of the bowl and the yeast to the other.
Add the milk and eggs and mix until throughly combined.
Add the butter, bit by bit, as you mix for a further 5 minutes.
Tip the dough into an oiled large bowl and cover with oiled cling film.
Leave to rise for 1 hour, or until doubled in size. You can also leave it to rise overnight in the fridge.
Tip the dough onto a lightly floured surface and roll it out to a rectangle, just under 1.5cm thick.
Lay the finocchiona slices over the dough and scatter with half of the basil leaves.
Top with the sliced cheese and sprinkle with the remaining basil leaves.
Finish with the chorizo slices.
Roll up the dough to enclose the filling.
Roll it into a sausage, coil the dough into a circle and press the ends firmly together.
Place the ring inside an oiled bundt tin. Cover the tin with clingfilm and leave to prove for 1 1/2 hours until doubled in size.
Heat the oven to 200ºC.
Brush the top of the ring with the beaten egg and bake for 25 minutes or until golden brown.
Leave to cool slightly before serving warm or cold.

Como sabem, o tema desta edição do Bundtmania é Bundts salgados.
Bundts salgados para serem degustados em família ou com amigos, na praia, ou sentados na relva em modo de piquenique.
Bundts salgados para serem devorados e saboreados acompanhados por uma limonada, ou outra bebida refrescante.
Depois de várias ideias e hesitações, decidi transformar esta coroa de brioche salgado do Paul Hollywood num Bundt cake e resultou lindamente, tanto em termos de apresentação, como em termos de textura e sabor.
ingredientes:
500g farinha para pão + extra para a bancada
10g sal
10g fermento biológico seco
170ml leite gordo morno
4 ovos médios
250g manteiga sem sal, à temperatura ambiente e cortada em pedacinhos
10 a 15 fatias fininhas de finocchiona (salame italiano perfumado com sementes de funcho)
10 a 15 fatias fininhas de chourição picante
125g de queijo fatiado (eu usei o holandês Edam)
um bom punhado de folhas de manjericão
1 ovo médio, batido


preparação:
Colocar a farinha na taça de uma batedeira eléctrica, equipada com o gancho para massas.
Colocar o sal de um lado da taça e o fermento do outro. Adicionar o leite e os ovos e bater até tudo estar muito bem combinado.
Adicionar a manteiga, um pedacinho de cada vez, enquanto se vai batendo por mais uns 5 minutos.
Colocar a massa numa tigela untada com óleo, tapar com película aderente também untada e reservar, por cerca de 1 hora, ou até a massa ter duplicado de tamanho.
Também se pode deixar a levedar no frigorífico de um dia para o outro.
Colocar a massa em cima de uma bancada ligeiramente enfarinhada e esticá-la em forma de rectângulo, com cerca de menos de 1.5cm de espessura.
Distribuir as fatias de finocchiona por cima da massa esticada e cobrir com metade das folhas de manjericão.
Distribuir as fatias de queijo sobre as camadas anteriores, cobrir com o restante manjericão e terminar com a camada de chourição.
Enrolar a massa como se fosse uma torta, apertando bem para que o recheio fique bem enclausurado.
Enrolar a torta em forma de coroa e unir bem as extremidades.
Colocar a coroa numa forma de bundt untada com óleo e deixar repousar por cerca de 1 1/2 hora ou até duplicar de tamanho.
Aquecer o forno a 200ºC.
Pincelar a superfície da coroa com o ovo batido e levar ao forno por 25 minutos, ou até estar cozido e douradinho.
Deixar arrefecer ligeiramente antes de servir.
