Thyme and lemon bundt cake / Bundt cake de tomilho e limão.



Lemon and thyme, Thyme and lemon...!
What a great combination for a Bundt cake right?
Well, believe me that this is one of the best lemon cakes I ever had and you know me and my love for citrus and specially for lemon!
The recipe is from Goddess Nigella Lawson "Simply Nigella" cookbook and while my kids first choice were these Nutella brownies, mine and the one that immediately caught my attention, was this cake.
A cake that is moist and delicious and that, well wrapped, keeps moist and even more delicious for 4 or 5 days.



ingredients:
450g plain flour
3/4 tsp baking powder
3/4 tsp bicarbonate of soda
200g soft unsalted butter
2 unwaxed lemons
small bunch of fresh thyme
250g caster sugar
3 large eggs
250ml buttermilk
120g icing sugar
method:
Put a baking sheet inside the oven and preheat the oven to 170ºC. Grease a (2.5l capacity) bundt tin and set aside.
Sift the flour, baking powder and bicarbonate of soda together.
Put the butter inside a bowl of an electric mixer. Grate in the zest of the two lemons and beat until creamy.
Strip 4 tablespoons of thyme leaves from the springs, and add along with the caster sugar, and beat again until you have a light fluffy mixture.
Add the eggs, one by one, beating well between each addition.
Reduce the mixer speed to low and add 1/3 of the flour mixture followed by 1/3 of the buttermilk. Repeat until all the flour mixture and buttermilk are used up.
Beat in the juice of 1 lemon.
Transfer the mixture to the prepared tin.
Place the tin on the baking sheet in the oven and bake for  1 1/4 hours. Start checking if the cake is cooked after 1 hour. The cake is cooked when a skewer inserted in the centre of the cake comes out clean.
Transfer the cake tin to a cooling rack and cool for 15 minutes before turning it onto the rack to cool completely.
Sieve the icing sugar into a bowl and beat in the juice of the other lemon. Mix until you have a thin glaze.
Pour the glaze over the cake and scatter with thyme leaves to taste.

Limão e tomilho, Tomilho e limão...
Conseguem imaginar a combinação fantástica destes dois ingredientes, num bolo que é (para mim que sou uma verdadeira "lemon lover"), um dos melhores bolos de limão de sempre?
Acreditem que é mesmo!!
A receita, é do novo livro da Deusa Nigella Lawson, o Simply Nigella e para vos ser franca, enquanto os meus filhos escolheram logo estes Brownies de Nutella, eu - que como sabem, gosto, mas não morro de amores por chocolate - seleccionei logo este Bundt, pois captou a minha atenção logo no primeiro "scan" que fiz pelo livro.
Um bolo com um interior húmido e delicioso e que, bem acondicionado, se mantém húmido e ainda mais delicioso por 4 ou 5 dias.


ingredientes:
450g farinha de trigo branca
3/4 colher chá de fermento em pó
3/4 colher chá de bicarbonato de sódio
200g manteiga sem sal amolecida
2 limões biológicos
um raminho pequeno de tomilho (4 colheres sopa de folhas para a massa do bolo e folhas extra para decorar).
250g açúcar refinado branco
3 ovos grandes (L)
250ml buttermilk
120g açúcar em pó


preparação:
Colocar um tabuleiro no forno e, com o tabuleiro lá dentro, aquecer o forno a 170ºC. Untar muito bem uma forma para bundt com capacidade para 2.5l e reservar.
Peneirar a farinha, o fermento e o bicarbonato de sódio e reservar.
Colocar a manteiga na taça da batedeira eléctrica e adicionar a raspa dos dois limões. Bater, até obter uma mistura cremosa.
Adicionar as 4 colheres de sopa de folhas de tomilho e o açúcar e voltar a bater, até obter uma mistura leve e cremosa.
Adicionar os ovos, um de cada vez, batendo bem entre cada adição.
Reduzir a velocidade da batedeira, adicionar 1/3 da mistura da farinha, seguida de 1/3 do buttermilk.
Repetir até ter incorporado toda a farinha e buttermilk.
Espremer o sumo de 1 dos limões e adicioná-lo ao preparado anterior, batendo até este estar bem incorporado.
Deitar a mistura na forma e levar a forma ao forno, colocando-a sobre o tabuleiro que foi colocado no forno anteriormente.
Cozer o bolo por 1 hora, a 1 hora e 15 minutos. Ao fim da primeira hora, começar a testar se o bolo já está cozido.
O bolo está cozido quando um palito inserido no meio sair limpo.
Quando o bolo estiver cozido, retirar a forma do forno e colocá-la sobre uma grelha de arrefecimento por 15 minutos.
Findo esse período, desenformar o bolo sobre a grelha, a fim de que arrefeça completamente.
Entretanto, peneirar o açúcar em pó para uma taça.
Adicionar-lhe o sumo do segundo limão e bater bem, até obter um glaze fino.
Verter o glaze por cima do bolo e, imediatamente, decorá-lo com folhas de tomilho a gosto.
O glaze servirá de cola para que as folhas de tomilho fiquem agarradas ao bolo.

Greek squid and orzo / Lulas com orzo à grega.


Squid and Orzo!
Although I love both, I never thought of putting them together, specially with such a great amount of dill but, saying that, we all were delighted and positively surprised with the amount of flavour in this one pot, slow cooked dish.
Easy to prepare, this recipe from Nigella's new cook book "Simply Nigella" got lots of compliments and was truly appreciated around the table.


ingredients (serves 4 to 6):
1 small red onion, peeled and cut into chunky half moons
1/2 bulb fennel, sliced, core discarded, fronds reserved
2 cloves garlic, peeled and crushed
1/4 cup extra virgin olive oil
600g small squid (cleaned weight), kept whole and tentacles reserved
300g orzo pasta
400g can of chopped tomatoes
1 tbsp tomato purée
2 tbsp Ouzo or Vermouth
100g fresh dill, finely chopped
250ml boiling water
salt and freshly ground black pepper, to taste
method:
Preheat the oven to 160ºC.
Put the olive oil in a large ovenproof shallow casserole over a low heat.
Add the onion, fennel, garlic, squid and squid tentacles and cook for 10 minutes, stirring from time to time.
Stir in the orzo pasta and the chopped tomatoes.
Add the tomato purée to the empty tomato tin, then fill with cold water and give it a good stir, before pouring this into the pan.
Pour in the Ouzo and give everything another stir.
Turn up the heat, and once it comes to a bubble, clamp on the lid and transfer the pan to the oven.
Cook for 1 hour and 20 minutes.
After that time, take the pan of the oven, remove the lid, add the boiling water and stir well to scrape up any bits stuck to the bottom of the pan.
Add salt and pepper to taste and most of the chopped dill.
Stir and put the pan back in the oven, without the lid, for 10 minutes.
Remove the pan from the oven, sprinkle with the remaining dill and serve.

Lulas e orzo!!
Embora ame ambos de paixão, nunca me lembraria de os juntar no mesmo tacho, mas o certo é que a combinação resulta na perfeição e ambos, em conjunto com a enorme quantidade de aneto que leva, fizeram de um almoço de Sábado, uma refeição memorável e a repetir!
A receita é do novo livro da Nigella "Simply Nigella" e embora não me tenha chamado a atenção quando folheei o livro, captou-a de facto e de imediato, quando vi a Nigella cozinhar este prato no programa de apresentação do livro.


ingredientes (para 4 a 6 pessoas):
1 cebola roxa pequena, descascada e cortada em meias luas
1/2 bolbo de funcho, cortado ao meio, coração retirado e descartado e fatiado grosseiramente
2 dentes de alho, descascados e esmagados com a faca
1/4 chávena (cup) de azeite extra virgem
600g lulas pequenas (peso depois de limpas), inteiras e tentáculos reservados
300g massa orzo 
1 lata de 400g tomate picado
1 colher sopa de concentrado de tomate
2 colheres sopa de Ouzo, caso não encontrem, podem usar Vermute
100g aneto fresco, picado finamente
250ml água a ferver
sal e pimenta preta moída na altura, a gosto
preparação:
Aquecer o forno a 160ºC.
Colocar o azeite num tacho baixo mas grande o suficiente para lá caberem todos os ingredientes e que tenha tampa e possa ser usado tanto no fogão, como no forno.
Adicionar a cebola, os alhos, as lulas e seus tentáculos e o funcho e cozinhar por cerca de 10 minutos, sobre lume baixo, mexendo de vez em quando.
Adicionar a massa e o tomate picado e mexer tudo muito bem.
Colocar o concentrado de tomate na lata vazia, encher a lata de água fria, mexer bem e despejar o seu conteúdo para dentro do tacho.
Adicioanr o Ouzo ou Vermute e voltar a mexer.
Aumentar o lume e quando a mistura levantar fervura, tapar o tacho e colocá-lo no forno pré aquecido.
Cozer por cerca de 1 hora e 20 minutos.
Passado esse tempo, retirar o tacho do forno, juntar a água a ferver e mexer bem, raspando todos os bocadinhos que estejam agarrados ao fundo do tacho.
Temperar de sal e pimenta a gosto e adicionar a maior parte do aneto picado, mexendo tudo muito bem.
Voltar a colocar o tacho no forno, desta vez sem tampa e cozinhar por cerca de 10 minutos.
Passado esse tempo, retirar o tacho do forno, polvilhar com o aneto restante e servir.

Nutella brownies / Brownies de Nutella.


First recipe from the "Diva" Nigella Lawson new cookbook, a recipe chosen by my kids of course, and a treat for the Nutella lovers.
I love Nigella Lawson style of cooking and enjoying food and she was one of the cooks/chefs "responsible" for my obsession and passion for food and cooking.
Simply Nigella is Nigella's new cookbook and like all her books, packed full of fabulous and inspiring recipes.
The recipes in this book are more in the "light and healthy mood" lets say, but, saying that, still very colourful and very appetising to make me go to the kitchen to try them.
These brownies are so easy to make and so delicious that you'll find yourself making them more often than you would like to...
ingredients (makes 16 squares):
4 large eggs
pinch fine sea salt
250ml Nutella
1/2 tsp icing sugar
method:
Preheat the oven to 180ºC and line the base and sides of a 20cm square tin with baking paper.
Using a freestanding mixer, beat the eggs with the salt for 5 minutes, or until they are pale and have more than doubled in size.
Put the Nutella into a jug and microwave for 1 minute at 750 watt or until warm and slightly runny.
Stir the Nutella, then pour it in a continuous thin stream onto the eggs, whisking all the time, until the Nutella is fully combined with the eggs.
Pour the mixture into your prepared tin and bake for 17 to 20 minutes, or until a skewer inserted in the middle comes out clean.
Leave to cool completely in the tin and once cool, cut into 16 squares and dust with icing sugar.

Deixo-vos hoje a primeira receita (escolhida pelas crianças da casa, claro...) testada e aprovada do novo livro da "Diva" Nigella Lawson.
Uma cozinheira que amo de paixão e que foi uma das responsáveis por esta minha paixão pela cozinha e pela culinária.
Simply Nigella é o nome do livro. Um livro um pouco diferente dos habituais livros da Nigella, já que é um bocadinho mais orientado para a cozinha mais saudável, mas não menos deliciosa e inspiradora.
Estes brownies são facílimos de fazer, levam ingredientes que geralmente temos sempre por casa e são tão bons que, caso os testem, difícil será não os repetir vezes sem conta...


ingredientes (para 16 quadrados):
4 ovos grandes (L)
uma pitada de sal fino
250ml Nutella
1/2 colher chá de açúcar em pó
preparação:
Aquecer o forno a 180ºC e forrar com papel vegetal uma forma quadrada com cerca de 20cm.
Na taça da batedeira eléctrica, colocar os ovos e o sal e bater durante 5 minutos, ou até os ovos estarem com uma cor pálida e terem quase triplicado de volume.
Entretanto, aquecer a Nutella por 1 minuto no microondas (potência máxima), ou até esta estar quante e com uma consistência macia.
Batendo sempre, adicionar a Nutella aos ovos, em fio contínuo e consistente, até ambos estarem completamente incorporados.
Deitar a mistura na forma e levar ao forno por 17 a 20 minutos, ou até que um palito inserido no meio saia completamente limpo (atenção para não deixar cozer demais).
Deixar o brownie arrefecer completamente dentro da forma e, depois de frio, cortar em quadrados e polvilhar com o açúcar em pó.
