Mango parfaits with macerated berries / Parfaits de manga, com frutos vermelhos macerados.



This dessert is a Gordon Ramsay's very nice and easy take on parfaits, as it is made with yoghurt, it is so light, that you can have all the pleasure of the pudding without the guilty of the calories!

ingredients (serves 4):
1 ripe mango, peeled and de stoned
500ml natural yoghurt (I used vanilla yoghurt)
for the macerated berries:
200g mixed berries, hulled and quartered or halved
zest and juice of 1 small orange
1 tbsp icing sugar
small handful of basil leaves, finely shredded
method:
Place the berries, orange juice and zest, sugar and shredded basil in a bowl and mix well.
Cover with clingfilm and set aside for 1 to 2 hours.
Purée the mango in a blender until smooth.
Layer the mango purée and yoghurt in 4 serving glasses and chill until needed.
When ready to serve, top each glass with the macerated berries.

Este sobremesa do Gordon Ramsay é tão deliciosa e fácil de fazer que, para além de linda, ainda pode ser saboreada sem culpas, pois em vez das habituais natas e ovos que compõem um parfait, é feita com iogurte, o que a torna muito mais leve e super agradável e fresca.
ingredientes (para 4 pessoas):
1 manga madura, descascada e descaroçada
500ml de iogurte natural (eu usei iogurte grego com mel)
para a fruta macerada:
200g mistura de frutos vermelhos (naturais), arranjados e cortados em quartos ou metades, consoante o tamanho.
sumo e raspa de 1 laranja pequena
1 colher sopa de açúcar em pó
um punhado pequeno de folhas de manjericão, cortadas em juliana fininha
preparação:
Para preparar a fruta macerada, colocar todos os ingredientes numa taça, mexer bem e cobrir com película aderente. Reservar por cerca de 1 a 2 horas.
Colocar a manga num liquidificador ou no copo de um robot de cozinha e reduzi-la a puré.
Distribuir o puré de manga por 4 copos de vidro, cobrir o puré com o iogurte e refrigerar.
Na altura de servir, cobrir os parfaits com a fruta macerada.

Lemon and vanilla crème brûlée with fresh mango / Crème brûlée de limão e baunilha, com manga fresca.








































This fantastic brûlée recipe was the inspiration for this blog's name and for that reason, it's the first recipe being published and it is the proof that lemon and vanilla are, indeed, a great combination of flavours!
Lots of gorgeous names were on the table for this new blog and the decision was difficult but Lemon & Vanilla was the winner and I just hope that you'll enjoy it and its contents.

ingredients (serves 6):
250ml single cream
350ml semi skimmed milk
2 tsp vanilla extract or seeds of 2 vanilla pods
3 eggs
50g caster sugar
1 tbsp cornflour
zest of 1 lemon
for the topping:
1 tbsp caster sugar
100g mango chunks






































method:
Preheat the oven to 150ºC.
Put 6 (4cm deep x 125ml capacity) ramekins inside a roasting tin and set aside.
Put the cream, milk and vanilla into a pan over a medium heat until it just starts to steam.
Put the eggs, sugar, cornflour and lemon zest into a jug and mix them together.
Once the milk mixture is steaming, stir a bit of it into the egg mixture.
Add the remaining milk gradually, stirring all the time.
Divide the mixture between the ramekins and pour enough boiling water into the roasting tin to come 1/3 of the way up their sides.
Transfer the roasting tin to the oven and bake for 30 minutes or until the mixture has almost set, but still has a little wobble in the centre.
Remove the ramekins from the oven and from the roasting tin and allow them to cool completely.
Once cool, cover them with clingfilm and refrigerate for at least 1 hour.
When ready to serve, sprinkle the brûlées with the caster sugar and caramelize them with a blowtorch until they are golden brown.
Top them with the mango chunks and serve.

Esta receita foi a que serviu de inspiração para o nome atribuído a este blogue e por essa razão é a primeira a ser publicada e a inaugurar este novo espaço, sendo também a prova de que, limão e baunilha são, de facto, uma combinação excelente!

ingredientes (para 6 pessoas):
250ml natas líquidas
350ml leite meio gordo
2 colheres chá de extracto de baunilha
3 ovos
50g açúcar refinado branco
1 colher sopa de Maizena
raspa de 1 limão
para a decoração:
1 colher sopa de açúcar refinado branco
100g manga fresca, cortada aos bocadinhos






















preparação:
Aquecer o forno a 150ºC.
Colocar 6 recipientes refractários com 4cm de profundidade e cerca de 125ml de capacidade, dentro de uma assadeira de ir ao forno.
Colocar as natas e o leite num tacho ao lume e assim que a mistura começar a querer levantar fervura, apagar o lume.
Colocar os ovos, a raspa do limão, o açúcar e a Maizena dentro de uma taça e bater bem.
Gradualmente, adicionar o leite à mistura anterior, mexendo sempre.
Dividir a mistura pelos 6 recipientes.
Colocar água a ferver no tabuleiro, de forma a que a água suba até 1/3 da altura dos recipientes refractários.
Colocar o tabuleiro no forno e cozer os crème brûlées por cerca de 30 minutos, ou até que estes estejam firmes, mas o centro ainda esteja ligeiramente mole.
Retirar os recipientes do forno e do tabuleiro e deixar arrefecer completamente em cima de uma grelha.
Quando frios, cobrir com película aderente e refrigerar por, no mínimo 1 hora.
Na altura de servir, cobrir os brûlées com o açúcar e queimar o açúcar com a ajuda de um maçarico de cozinha.
Dividir a manga pelos 6 recipientes e servir.
