Crème fraîche and blueberry ice cream / Gelado de créme fraîche e mirtilos.


Ice cream season is now declared officially open and the first recipe to be shared this season, is this one, from the fabulous Yossy Arefi "Sweeter off the Vine" book.
I love making and eating (specially over crumbles or tarts) ice creams and to be truthful, this one is, until now, the most creamiest, smooth and delicious one I ever made.


ingredients (makes about 900g):
4 egg yolks
240ml whole milk
240ml double cream
250g granulated sugar, divided
pinch of salt
225g crème fraîche
160g blueberries
2 tbsp golden syrup
1 tbsp lemon juice
method:
Whisk the egg yolks together in a bowl and set aside.
Combine the milk, cream, 1 cup of the sugar and the salt in a saucepan.
Cook over medium heat, stirring occasionally, until the mixture begins to bubble around the edges, about 5 minutes.
Ladle about 1 cup of the cream mixture into the egg yolks and whisk vigorously.
Pour the egg mixture back into the pan and whisk well to combine.
Cook the mixture on medium low heat, stirring constantly with a rubber spatula, being careful not to let the mixture boil.
Cook until the mixture thickens enough to coat the back of a spoon, about 7 minutes.
Turn off the heat and whisk in the crème fraîche until smooth.
Strain the mixture through a sieve and cool completely in the refrigerator, at least 4 hours or overnight.
To make the blueberry sauce, combine the berries, the remaining 1/4 cup of the sugar, the golden syrup and lemon juice in a saucepan and mash with a potato masher.
Cook over medium high heat, stirring occasionally, until the blueberry juices reduce to a syrupy consistency, 5 to 7 minutes.
You should have about 3/4 cup of blueberry sauce.
Transfer the sauce to a bowl, cover and chill thoroughly.
Freeze the ice cream mixture in an ice cream maker according to the manufacturers instructions.
Remove the sauce from the fridge and stir it well.
Spoon 1/3 of the ice cream into a freezer safe container.
Drizzle half of the blueberry sauce on top, and repeat the process, finishing with a layer of ice cream.
Cover and freeze until firm, about 4 hours or overnight.

Confesso que adoro fazer gelados e comê-los também claro, especialmente se forem a acompanhar tartes doces, crumbles, panquecas, etc.. Adoro!
A primeira receita a ser partilhada nesta Primavera/Verão 2016, que hoje começa aqui no blogue, é este gelado magnífico do livro lindo da Yossy Arefi, o "Sweeter off the Vine" (do qual já vos falei aqui).
Acreditem se vos disser que é o gelado mais cremoso, aveludado e delicioso que fiz até hoje, pois é mesmo verdade!
Assim sendo, deixo-vos então a receita. Experimentem e digam-me se é ou não, veludo puro.


ingredientes (rende 900g):
4 gemas de ovo
240ml leite gordo
240ml natas para cozinhar
250g açúcar granulado (vai ser dividido)
uma pitada de sal
225g crème fraîche
160g mirtilos
2 colheres sopa de golden syrup
1 colher sopa de sumo de limão


preparação:
Numa taça, bater as gemas e reservar.
Num tacho, colocar o leite, as natas, 1 cup do açúcar e o sal.
Levar ao lume e, sobre lume médio, aquecer, mexendo de vez em quando, até mistura começar a querer levantar fervura.
Adicionar 1 concha da sopa da mistura do leite quente às gemas batidas, mexendo vigorosamente com uma vara de arames, até a mistura estar bem incorporada.
Deitar a mistura dos ovos de volta, no tacho do leite e misturar tudo muito bem.
Colocar o tacho sobre lume brando e, mexendo sempre muito bem com uma espátula de silicone, cozinhar por cerca de 7 minutos, ou até a mistura estar espessa e ao passar o dedo nas costas da espátula, este desenhe uma linha bem definida. Atenção  não deixe a mistura ferver nunca!!
Retirar o tacho do lume, adicionar o crème fraîche e bater bem, até obter uma mistura cremosa e macia.
Passar a mistura por um coador e refrigerar por cerca de 4 horas, ou de um dia para o outro.
Para fazer o molho de mirtilos, colocar os mirtilos num tacho, juntamente com o restante 1/4 cup do açúcar, o golden syrup e o sumo do limão.
Esmagar com um garfo ou com um daqueles utensílios para fazer puré.
Levar o tacho ao lume e cozinhar sobre lume médio a alto, mexendo de vez em quando, até o molho libertado pelos mirtilos ter reduzido e apresentar uma consistência de xarope (cerca de 5 a 7 minutos). No final deste processo, deverão ter obtido, pelo menos, cerca de 3/4 de cup de molho de mirtilos.
Transferir a mistura para uma taça, cobrir com película aderente e refrigerar.
Colocar a mistura do gelado na máquina de fazer gelados e seguir as instruções do fabricante.
Entretanto, retirar o molho de mirtilos do frigorífico e mexê-lo muito bem.
Quando o gelado estiver pronto, espalhar 1/3 do gelado no fundo de um recipiente que possa ir ao congelador.
Cobrir com 1/2 do molho de mirtilo e repetir, finalizando com uma camada do gelado.
Tapar e levar ao congelador até estar firme (cerca de 4 horas, ou de um dia para o outro).

Roasted rhubarb pavlova / Pavlova com ruibarbo assado.


Rhubarb is at its best now and this time, I decided to make it shine over this delicious pavlova.
The recipe is from Yossy Arefi "Sweeter off the Vine" gorgeous cookbook. A book full of recipes using seasonal fruit.
Although this is the first recipe from the book that Im posting here on the blog, in fact it is the second that I made from it.
ingredients (makes a 20cm pavlova):
200g caster sugar
1 1/2 tsp cornflour
4 large egg whites
1/4 tsp salt
1/8 tsp cream of tartar
1 tsp vanilla extract
1 tsp white vinegar
method:
Preheat the oven to 110ºC. Draw a 20cm circle on a sheet of baking paper and place it, upside down, on a baking tray.
Mix the sugar and cornflour together in a bowl.
Place the egg whites, salt and cream of tartar in the bowl of an electric mixer and whisk until soft peaks form.
Add the sugar mixture, 1 tbsp at a time, beating well between each addition and once the sugar has been all added, whisk for a further 7 minutes or until the mixture is stiff and glossy. Add the vanilla and vinegar and whisk for 30 more seconds.
Place large spoonfuls of the meringue mixture into the circle, smoothing the center.
Bake the meringue for 1 to 1 and 1/2 hours, or until the outside looks dry and slightly creamy in colour.
Turn the oven off the oven and prop the door ajar with a wooden spoon. Let the meringue cool completely inside the oven.


for the roasted rhubarb:
340g rhubarb stalks, cut into 5cm lengths
1 vanilla bean, split lengthwise and seeds scraped out
67g granulated sugar
pinch of salt
4 tsp lemon juice
method:
Preheat the oven to 190ºC.
Put the rhubarb, sugar, salt, lemon juice, vanilla seeds and pod in a large roasting tin and toss everything together.
Bake for about 20 to 25 minutes, or until the rhubarb is soft but not falling apart.
Let the rhubarb cool to room temperature and discard the vanilla pod (rinse it and save it for another use).
to serve:
240ml cream, whipped with 1 tbsp granulated sugar
3 tbsp pomegranate molasses
to assemble:
When ready to serve, put the meringue on a serving plate.
Top with the whipped cream, followed by the cooled rhubarb.
Drizzle with the pomegranate molasses and any rhubarb juices left in the roasting tray.

Agora que o ruibarbo está no seu melhor, há que tirar dele o maior partido.
Assim sendo, deixo-vos esta pavlova maravilhosa, cuja receita é do livro lindo da Yossy Arefi, o "Sweeter off the Vine".
Um livro lindíssimo e bem ao meu gosto, só com receitas doces com fruta e dividido por estações do ano, o que permite tirar o maior partido possível da dita fruta e da sua sazonalidade.
Embora esta seja a primeira receita do livro que aqui publico, na verdade, esta foi a segunda a ser feita, pois a primeira está à espera de dias mais quentinhos para ser publicada.


ingredientes (para uma pavlova de 20cm):
200g açúcar refinado branco
1 1/2 colheres chá de Maizena
4 claras de ovo grandes (L)
1/4 colher chá de sal fino
1/8 colher chá de cremor tártaro
1 colher chá de extracto ou pasta de baunilha
1 colher chá de vinagre de vinho branco
preparação:
Aquecer o forno a 110ºC.
Numa folha de papel vegetal, desenhar um círculo com 20cm de diâmetro. Colocar o papel vegetal sobre um tabuleiro, com a parte do lápis ou caneta, virado para baixo.
Numa taça, misturar bem o açúcar com a Maizena.
Na taça da batedeira eléctrica equipada com o balão, colocar as claras, o sal e o cremor tártaro.
bater em velocidade média, até obter picos ligeiros.
Com a batedeira em velocidade máxima. adicionar o açúcar/Maizena, uma colher de sopa de cada vez, batendo bem entre cada adição.
Quando todo o açúcar tiver sido adicionado, continuar a bater por cerca de 7 minutos, ou até obter uma mistura espessa e brilhante.
Adicionar a baunilha e o vinagre e bater por mais 30 segundos.
Colocar a mistura sobre o círculo desenhado no papel vegetal, por forma a preencher o círculo e, ao mesmo tempo, criando uma cratera (não muito profunda) no centro do merengue.
Levar ao forno por cerca de 1 a 1 hora e meia, ou até que o merengue esteja seco ao toque e ligeiramente corado.
Desligar o forno e abrir ligeiramente a porta do forno, colocando uma colher de pau ou um pano a travar a porta, por forma a que circule algum ar.
Deixar o merengue arrefecer completamente dentro do forno.


para o ruibarbo assado:
340g talos de ruibarbo, cortados em pedaços de cerca de 5cm de comprimento
1 vagem de baunilha, aberta ao meio no sentido do comprimento e sementes raspadas
67g açúcar granulado
uma pitada de sal
4 colheres chá de sumo de limão
preparação:
Aquecer o forno a 190ºC.
Num tabuleiro de ir ao forno, misturar muito bem todos os ingredientes, inclusive a vagem da baunilha raspada.
Espalhar o ruibarbo no tabuleiro, por forma a que fique numa camada única e levar ao forno por cerca de 20 a 25 minutos, ou até este estar assado, mas sem se desfazer.
Deixar que o ruibarbo arrefeça até estar à temperatura ambiente e descartar a vagem da baunilha, que poderá ser lavada, seca e guardada para outras utilizações, ou colocada num frasco com açúcar e assim obter açúcar baunilhado.


para servir:
240ml natas, batidas com 1 colher sopa de açúcar granulado
3 colheres sopa de melaço de romã
para montar a pavlova:
Colocar o merengue num prato de serviço.
Espalhar as natas batidas sobre o centro do merengue e cobrir com os talos do ruibarbo assados e arrefecidos.
Regar toda a superfície da pavlova com algum sumo que tenha ficado no tabuleiro de assar o ruibarbo e com o melaço de romã.
