Chocolate Roulade with Sweet Chestnut Purée, Honeyed Cream & Crushed Honeycomb Filling / Torta de Chocolate, recheada com Creme de Castanha, Natas batidas com Mel e Honeycomb.


Time just flies by and before we realize, here we are!
Last day of 2017!
I can say that, all in all, it was a great year and if 2018 is going to be as good as 2017, bring it on.
I'll not complain and I'll not ask for more!
As I didn't have the time to write a post wishing you a very Merry Christmas, I didn't want the same to happen now and not be able to wish you a Fabulous, Fantastic and very Happy 2018!
This super delicious roulade is my choice as the last post of 2017.
The original recipe is in a shape of a Yule Log and I made it for Christmas (as you can see here).
As it was such a huge success, I decided to make it again - as a roulade - to leave you the recipe, so you can make it and try this absolute delight.
Hope you enjoy it as much as we all did!

Bread and Butter Pudding with Chocolate, Marmalade, Custard and Panettone / Bread and Butter Pudding com Chocolate, Doce de Laranja Amarga, Custard e Panettone.


It took me almost 12 years in the UK to make my first Bread and Butter Pudding!!
A quintessential British Pudding that (shame on me, I know) I always thought it would be strange and never rang my bells...
I'm not untitled to give my opinion about the regular Bread and Butter Puddings because I've never made or tasted one before but, this one, the one I'm sharing with you today, is so utterly delicious, decadent and moreish that, the only thing I could think after tasting it was:
Why????
Why does it took me so long to make and try such an amazing dessert???
Hope the British people forgives me because I'm totally surrounded to Bread and Butter Pudding!
This recipe is from Jamie Oliver "Christmas Cookbook", which is the book of the month chosen by Deborah for her Rainydaybites Cook Book Club and I'm so glad I gave the Bread and Butter Pudding an opportunity and specially with this recipe!! Truly and utterly divine!

Smoky Chorizo Salmon / Salmão com Chouriço e Tomates.


So, Summer is officially over and as a good bye to this Summer homegrown sweet tomatoes, here is another recipe from Jamie Oliver "5 ingredients - Quick & Easy Food".
In this recipe, the tomatoes are combined with crispy skin salmon, smoky chorizo and olives. A fantastic combination, full of Mediterranean flavours.
If you still have some nice and sweet tomatoes left, give this recipe a try because it's truly delicious.

Thai Red Chicken Soup / Sopa de Frango com Caril Vermelho Tailandês.


Here it is, another Jamie Oliver, "5 Ingredients - Quick & Easy Food" recipe.
A fabulous Thai red soup with poached chicken, that made the delights of the family on a coolish Scottish day.
Easy and simple, like all the recipes in this book (as I wrote here), this recipe is a "must try" one!

Chocolate & Rye Cookies / Cookies de Chocolate e Centeio.


"5 Ingredients Quick and Easy Food" is the title of Jamie Oliver new book.
The name says it all and I'm really enjoying trying the recipes from this book.
A surprisingly fantastic book, full of clever combinations and quick and easy recipes to make, specially for the busy weekdays.
Maximum flavour from a small amount of ingredients, little clever tricks and combinations is what you get from every single recipe.
This is the first one I'm sharing here one the blog but I've already tried a good amount of them and I'll share them with you as soon as I can.
Honestly, after the holidays, it's being difficult to restart the routine of posting and visiting blogs but, I'll get there. I just need to get rid of the laziness that took over and organize myself and my time a bit better.
Saying that, here are these cookies that I made for my kids a few days ago and that are healthier than the usual ones and also very delicious.

Fish soup and cauliflower couscous / Sopa de peixe e couscous de couve flor.


In his new book "Everyday Super food", Jamie calls this soup "moreish fish soup" and it is simple but, yes, a very moreish soup!
Although the recipe calls for wholewheat couscous, I decided to serve mine with cauliflower couscous and to prepare them, I simply whizzed the cauliflower in a food processor, cooked it for 2 minutes in boiling vegetable stock and drained it.
ingredients (serves 2):
2 x 120g mackerel fillets, skin on, scaled, scored and pin boned (ask for the head and bones too) - I used sea bass instead of mackerel.
cayenne pepper
1 heaped tsp fennel seeds
1 heaped tsp coriander seeds
2 cloves of garlic
1 sprig of fresh rosemary
1 lemon
500ml really good vegetable stock
1 x 400g tin of plum tomatoes
100g wholewheat couscous (I made cauliflower couscous)
2 small potatoes
2 carrots
200g mussels, scrubbed and debearded
1/2 bunch (15g) of fresh flat-leaf parsley or basil
method:
Put a large pan on medium high heat, place the mackerel head (gills removed) and bones in the pan and brown for 5 minutes.
Add a good pinch of cayenne and the fennel and coriander seeds.
Using a speed peeler, strip the zest from the lemon and add them to the pan.
Crush the garlic and add it to the pan, along with the rosemary leaves.
Stir and fry for 3 minutes in order to release all the flavours. Cover with the stock and add the tomatoes. Bring to the boil and then simmer for 15 minutes.
In a bowl, just cover the couscous with boiling water, pop a plate on top an d leave to fluff up.
Wash the potatoes and carrots, cut into 1cm dice and place in a casserole.
Sit a coarse sieve on top and pour the broth through it into the pan, using the back of a ladle to squash and push everything through, discarding what remains.
Cook the potatoes and carrots in the broth for 15 minutes, or until tender.
Add 300ml of boiling water and the mussels. Cover and cook for 5 minutes, or until the mussels open.
At the same time, place the mackerel fillets skin side down in a dry non stick frying pan on a medium heat with a sprinkle of cayenne. Cook for 4 minutes, or until crispy. Flip over for 30 seconds more, then serve on top of your couscous in large warm soup bowls.
Finely chop the parsley or basil and stir through the soup with the lemon juice, then season to taste and divide between the bowls.

No livro novo do Jamie - "Everyday Super food", esta sopa é chamada de Sopa de peixe moreish.
Moreish é uma palavra criada por foodies, a partir da palavra "more" e é utilizada para descrever algo que é tão bom, que é impossível parar de comer e só apetece comer mais e mais... o que é o caso desta sopa.
Na receita original, o Jamie utiliza filetes de cavala e serve a sopa e o peixe, com couscous de trigo integral.
Eu utilizei filetes de robalo e fiz couscous de couve flor.
Simplesmente piquei a couve flor no copo do robot de cozinha, cozendo depois os couscous ligeiramente por cerca de 2 minutos em caldo de legumes a ferver e escorrendo-os de seguida.
Deixo-vos no entanto, a receita original e se quiserem podem dar-lhe o vosso próprio twist.


ingredientes (para 2 pessoas):
2 filetes de cavala com cerca de 120g cada, com pele, sem escamas e sem espinhas - Pedir as espinhas e a cabeça ao peixeiro, para fazer o caldo.
pimenta de Caiena
1 colher chá bem cheia de sementes de funcho
1 colher chá bem cheia de sementes de coentros
2 dentes de alho, com pele e esmagados
1 haste pequena de alecrim, folhas separadas
1 limão, casca removida com um descascador de cenouras e reservada
500ml de um bom caldo de legumes
1 lata de 400g de tomate pelado
100g couscous de trigo integral
2 batatas pequenas, lavadas e cortadas em cubos de 1cm
2 cenouras, lavadas e cortadas em cubos de 1cm
200g mexilhão, limpo e arranjado
1/2 ramo (15g) de salsa ou manjericão
preparação:
Colocar um tacho sobre lume médio a alto.
Colocar as espinhas e a cabeça do peixe (guelras removidas) no tacho e alourar por cerca de 5 minutos.
Adicionar uma boa pitada de pimenta de Caiena e as sementes de funcho e de coentros.
Em seguida, adicionar as cascas do limão, os alhos e as folhas do alecrim.
Fritar tudo, mexendo, por cerca de 3 minutos, ou até a mistura estar bem aromática.
Adicionar o caldo de legumes e os tomates. Deixar levantar fervura e cozinhar por cerca de 15 minutos.
Entretanto, colocar os couscous numa taça e cobri-los com água a ferver. Tapar com um prato e deixar repousar até a água ter sido absorvida.
Colocar as batatas e as cenouras numa panela e colocar um coador sobre esta.
Coar o caldo de peixe para cima das batatas e das cenouras, espremendo bem com as costas da concha, a fim de extrair o máximo de sabor do caldo.
Descartar as espinhas e restantes sólidos.
Cozer as batatas e as cenouras no caldo, por cerca de 15 minutos, ou até estarem macias.
Adicionar 300ml de água a ferver e o mexilhão e cozinhar por cerca de 5 minutos, ou até o mexilhão abrir.
Entretanto, colocar uma frigideira anti aderente sobre lume médio.
Polvilhar os filetes com uma pitada de pimenta de Caiena e fritá-los, com a pele virada para baixo, por cerca de 3 minutos, ou até a pele estar estaladiça.
Virar os filetes e fritar do outro lado, por cerca de 30 segundos.
Juntar o sumo do limão e a salsa ou manjericão picados à sopa e servir acompanhada com os couscous e o peixe frito.

Harissa waffles, sesame fried eggs and carrot salad / Waffles de harissa, ovos estrelados com sementes de sésamo e salada de cenoura.


I know that breakfast is the most important meal of the day but I've never been a breakfast girl.
Since early age, the maximum that I can eat in the morning is a piece of fruit or a fruit or green juice/smoothie and nothing else. Big continental or british breakfasts are not for me but, saying that, I have to confess that I love breakfast food.
My favourite chapters in cookbooks are precisely the breakfast chapters and although I can't have this kind of food in the morning, I love it for lunch or even for a midweek lazy dinner.
The recipe I'm leaving you today is from the breakfast chapter of Jamie Oliver new cookbook and it made a fabulous early dinner for my kids and myself. The combination of flavours and textures is fabulous and utterly delicious.
ingredients (serves 2):
100g wholemeal self-raising flour
1 tbsp poppy seeds
2 tsp harissa
3 large eggs
100ml semi-skimmed milk
sesame oil
sesame seeds
1 large carrot
50g baby spinach
1 pomegranate, seeds and juices
2 sprigs of fresh mint, leaves separated
to serve:
2 tablespoons fat-free natural yoghurt
hot chilli sauce


method:
Preheat the waffle iron.
In a bowl, mix the flour, poppy seeds, harissa and 1 egg together.
Gradually add the milk, whisking until combined, and season with sea salt and black pepper.
Brush the waffle iron with a minimal amount of sesame oil, then sprinkle half a teaspoon of sesame seeds into each side, followed by a quarter of your waffle mixture.
Cook the waffles for a few minutes, or until golden and cooked through.
Meanwhile, peel and matchstick the carrot and place in a bowl.
Finely slice the spinach and add them to the bowl.
Add the pomegranate seeds and their juices to the bowl.
Add the mint leaves to the bowl and toss everything together.
Drizzle a small non-stick frying pan on a medium heat with oil, then wipe around and out with kitchen paper. Crack in 1 of the remaining eggs, sprinkle with a pinch of sesame seeds, then cover the pan to set the top of the egg and cook to your liking.
Serve the waffles with the salad, the sesame fried egg, a dollop yoghurt and a good shake of chilli sauce.

Depois de uns dias de férias em família, que souberam a "céu" e de uns outros tantos de introspecção, o blogue está de volta à sua rotina habitual e focado no objectivo para o qual foi criado, ou seja, partilha de receitas!!
Não pretendo ser famosa, não pretendo escrever livros de receitas e não aspiro a aplausos e palcos de deslumbramento.
No dia que decidir dedicar-me a algo de sério relacionado com a culinária, concorro ao Masterchef, pois aí sim, é que realmente se conclui e se percebe quem sabe, de facto, alguma coisa sobre culinária!
Há umas 3 semanas atrás, vi uma frase num perfil do instagram que dizia "Just trying to be a good girl, in a world full of bad nasty bitches" e sinceramente, esta frase não podia vir mais a propósito no momento...
Enfim..., em frente que atrás vem gente, deixo-vos hoje com a primeira receita que fiz do novo livro do Jamie Oliver.
Embora esta receita faça parte do capítulo dos pequenos almoços, eu nunca fui de grandes pequenos almoços.
Desde tenra idade, o máximo que consigo ingerir de manhã é uma peça de fruta, ou um sumo/batido de fruta.
Dito isto, confesso que os capítulos dos pequenos almoços, são os capítulos que mais adoro nos livros de culinária, pois adoro comida de pequeno almoço, mas para comer ao almoço, ou até mesmo ao jantar!
Asim sendo, deixo-vos esta deliciosa receita de comida de pequeno almoço, que foi um belíssimo jantar para mim e para as minhas crianças.
ingredientes (para 2 pessoas):
100g farinha de trigo integral com fermento
1 colher sopa de sementes de papoila
2 colheres chá de harissa vermelha
3 ovos grandes (L)
100ml leite meio gordo
óleo de sésamo
sementes de sésamo
1 cenoura grande
50g folhas de espinafre bebé
bagos e o sumo de 1 romã
folhas de 2 pés de hortelã menta
para servir:
2 colheres sopa de iogurte natural magro
molho picante (eu usei sweet chilli sauce)


preparação:
Aquecer a máquina de fazer waffles.
Numa taça, misturar a farinha, as sementes de papoila, a harissa e o ovo.
Adicionar o leite, um bocadinho de cada vez, mexendo bem até obter uma mistura macia e temperar de sal e pimenta.
Pincelar a máquina das waffles com o mínimo possível de óleo de sésamo e salpicar ambos os lados com sementes de papoila.
Colocar colheradas da mistura na máquina, sem encher demasiado, por forma a fazer waffles mais pequenas.
Cozinhar as waffles até estarem douradinhas de ambos os lados e o interior estar cozido.
Entretanto, descascar a cenoura e cortá-la em palitos fininhos ou ralá-la. Colocar a cenoura numa taça.
Cortar as folhas de espinafres em tiras e adicionámos à taça.
Adicionar os bagos da romã e o sumo que tiver conseguido espremer da mesma.
Adicionar as folhas de hortelã menta e envolver tudo muito bem.
Colocar uma frigideira anti aderente sobre lume médio e com a ajuda de uma folha de papel absorvente de cozinha, esfregá-la com azeite ou óleo.
Partir 1 ovo na frigideira e salpicá-lo com sementes de sésamo. Repetir, de acordo com o número de pessoas que vai servir, servindo 1 ovo por pessoa.
Tapar a frigideira com uma tampa e deixar o ovo cozinhar, por forma a que a clara fique bem cozida, mas a gema fique mole.
Servir as waffles com a salada, o ovo estrelado, o iogurte e o molho picante.

Watercress and mint soup with bacon shards / Sopa de agrião e menta, com bacon estaladiço.


What caught my attention when I saw this soup on the new Jamie Oliver magazine, was not just the ingredients that I love, but also the vibrant green colour of it and I didn't rest until I tried it.
It is a truly delicious and very comforting soup.
The quantities mentioned on the recipe are for 2, but as a starter, I found that it is more than enough for 4 people.
ingredients:
450g watercress, roughly chopped
1 large handful of mint leaves
20g butter
1 tbsp olive oil
280g onion, finely chopped
250g potato, peeled and cut into very small cubes
650ml vegetable stock
4 rashers of bacon, rind removed, grilled until crisp, drained and broken into shards
100ml fat free Greek yoghurt
method:
Prepare the watercress and mint, reserving a few leaves of each for decoration.
Fill a large bowl with cold water and a handful of ice cubes.
Bring a large pan of water to the boil and wilt the prepared mint and watercress in batches, draining and plunging it straightaway in the iced water. Drain and reserve.
Heat the butter and olive oil in a pan over medium low heat. Add the onions, potatoes and a pinch of seasoning.
Cook gently until soft but not coloured.
Add the stock, bring to just below the boil, cover and simmer for 10 minutes.
Squeeze any excess water from the watercress and mint and add them to the soup.
Take the pan off the heat and purée the mixture with an hand held stick blender or in a food processor.
Return the soup to the pan, whisk in the yoghurt and heat gently, stirring, but don't  boil it.
Season to taste and serve topped with the bacon shards and the reserved leaves.

Quando vi esta sopa na nova revista do Jamie, não só fiquei deliciada com os ingredientes que adoro, mas também e para ser honesta, principalmente, o que mais me cativou nesta sopa foi a cor, pois o seu verde vibrante não me deixou de todo indiferente.
Uma sopa absolutamente deliciosa e magnífica para estes dias frios que por aqui se têm feito sentir.
A receita diz que a sopa é para 2 pessoas. Poderá ser para 2 pessoas se servida como refeição, mas se for servida como entrada, dá à vontade para 4 pessoas.
ingredientes:
450g agrião, picado grosseiramente
1 bom punhado de folhas de menta
20g manteiga
1 colher sopa de azeite
280g cebola, finamente picada
250g batata, descascada e cortada em cubos muito pequeninos
650ml caldo de legumes
4 fatias finas de bacon, sem pele, grelhado até estar crocante, escorrido e cortado em pedaços
100ml iogurte grego magro
preparação:
Preparar o agrião e a menta e reservar algumas folhas de ambos para decoração.
Encher uma taça com água fria e algumas pedras de gelo.
Colocar uma panela de água ao lume até esta estar a ferver.
Escaldar o agrião e a menta em porções na água a ferver, escorrer e mergulhar de imediato na água com gelo. Escorrer e reservar.
À parte, numa panela sobre lume brando, aquecer manteiga e o azeite. Adicionar a cebola, as batatas e um pouco de sal e pimenta e cozinhar até ambos estarem macios mas sem cor.
Adicionar o caldo de legumes e quando estiver quase a levantar fervura, tapar a panela e cozinhar em lume médio a baixo, por cerca de 10 minutos.
Escorrer o excesso de água do agrião e da menta e adicioná-los à sopa.
Retirar a panela do lume e reduzir a sopa a puré.
Voltar a colocar a sopa ao lume, adicionar o iogurte e aquecer, mexendo sempre, mas não deixar ferver.
Rectificar de sal e pimenta e servir a sopa decorada com os pedaços de bacon e as folhas de agrião e menta reservadas.

Smoked salmon, leek and Jarlsberg cheese tart / Tarte de salmão fumado, alho francês e queijo Jarlsberg.


This tart recipe came in one of the latest issues of Jamie Oliver magazine and it's called "terrific tart".
The name couldn't be more appropriated as it is really terrific!!
ingredients for the pastry (serves 4):
200g plain flour
150g butter
for the filling:
4 eggs
125ml double cream
200g smoked salmon, roughly chopped
100g Jarlsberg cheese, roughly diced
1 leek, thinly sliced
dill, to garnish
smoked salmon, to garnish
grated Jarlsberg cheese, to garnish


method:
Preheat the oven to 175ºC.
Put the flour and butter in a bowl, then cut the butter up, into the flour. Add 2 tsp of water, kneading until it forms a firm dough. Wrap it in clingfilm and chill for 1 hour.
Roll the pastry between 2 sheets of baking paper and line a tart tin with it.
Prick the pastry all over with a fork and bake until golden.
Lower the oven temperature to 150ºC.
In a bowl, mix together the eggs and cream. Season with salt and freshly ground black pepper.
Stir in the salmon, leek and cheese and pour into the baked pastry.
Bake until the egg mixture has set.
Garnish with springs of dill, smoked salmon slices and grated cheese before serving.

A receita desta tarte vem numa das últimas revistas do Jamie Oliver e chama-se "tarte formidável".
O nome não podia ser mais apropriado, pois é mesmoooo formidável!!
ingredientes para a massa (para 4 pessoas):
200g farinha de trigo branca
150g manteiga
para o recheio:
4 ovos
125ml natas para culinária
200g salmão fumado, picado grosseiramente
100g queijo Jarlsberg, cortado em cubos
1 alho francês, finamente fatiado
aneto, para decorar
salmão fumado para decorar
queijo Jarlsberg ralado, para decorar
preparação:
Aquecer o forno a 175ºC.
Colocar a farinha e a manteiga numa taça e trabalhar a manteiga na farinha, até obter uma mistura areada. Adicionar 2 colheres chá de água e amassar até obter uma bola.
Embrulhar a massa em película aderente e refrigerar por 1 hora.
Estender a massa entre 2 folhas de papel vegetal e com ela forrar uma tarteira.
Picar toda a superfície da massa com um garfo e levar ao forno até estar douradinha.
Baixar a temperatura do forno para os 150ºC.
Para fazer o recheio, bater as natas e os ovos numa taça. Temperar de sal e pimenta preta moída na altura.
Adicionar o queijo, o salmão e o alho francês e mexer tudo muito bem.
Deitar este preparado sobre a base da tarteira e levar ao forno até que a mistura dos ovos esteja cozida.
Antes de servir, decorar com aneto, salmão fumado e queijo ralado.

Chocolate and peanut butter cream pie / Pie com chocolate, manteiga de amendoim e natas.


I'm not a big fan of peanut butter but this pie, although it's very caloric, it's truly delicious and decadent and the combination of ingredients is absolutely perfect.
ingredients (serves 10):
250g Oreo biscuits
1 tbsp plain flour
75g butter, melted and cooled
300ml double cream
2 tbsp icing sugar
chocolate shavings, to garnish
for the peanut butter filling:
250g smooth peanut butter
1 tbsp icing sugar, sifted
50g butter, melted and cooled
40g salted peanuts, roughly chopped
5 tbsp chocolate syrup
for the chocolate mousse:
3 gelatine leaves
175g dark chocolate (no more than 62% cocoa solids), chopped
2 medium eggs, separated
50g caster sugar
200ml double cream, whipped


method:
Preheat the oven to 180ºC.
Put the biscuits, plain flour and a pinch of salt in a food processor and process until quite fine.
Mix in the melted butter until incorporated.
Transfer the mixture to a 23cm pie dish, pressing it into the base and sides with the back of a spoon.
Chill for 20 minutes.
Bake the biscuit base in the oven for 10 minutes, until crisp and the leave it to cool completely.
To make the filling, beat the peanut butter, icing sugar and melted butter in a bowl, until smooth.
Spoon it into the baked and cooled pie crust and level out the surface.
Top with the peanuts and drizzle the chocolate syrup evenly all over. Put it in the fridge.
To make the mousse, place the gelatine leaves in a bowl of cold water and leave to soak. Put the chocolate in a bowl and place it over a pan of simmering water, stirring until it's melted. Remove the chocolate from the heat and set aside to cool.
In a bowl, combine the egg whites and sugar. Place it over the pan of simmering water and stir until the sugar is dissolved.
Squeeze the water from the gelatine leaves and add them to the egg whites. Whisk the mixture until it has almost tripled in size and holds its shape.
Beat the egg yolks into the chocolate until incorporated and then fold in the egg whites followed by the whipped cream.
Spread the mixture over the peanuts and chocolate syrup.
Chill the pie in the fridge for at least 1 hour.
Before serving, whip the double cream and icing sugar until it forms thick peaks.
Spread it over the mousse and chill the pie in the fridge for at least 30 minutes.
Decorate with chocolate shavings.

Para ser franca, não sou grande fã de manteiga de amendoim, mas esta pie, embora ultra calórica, tem uma combinação de ingredientes fabulosa e é de uma decadência absolutamente fenomenal e daí ter arriscado fazê-la e não me ter arrependido nada.
ingredientes (para 10 pessoas):
250g bolachas Oreo
1 colher sopa de farinha de trigo branca
75g manteiga, derretida e arrefecida
300ml natas para bater
2 colheres sopa de açúcar em pó
raspas de chocolate, para decorar
para o recheio de manteiga de amendoim:
250g manteiga de amendoim sem pedaços
1 colheres sopa de açúcar em pó, peneirado
50g manteiga, derretida e arrefecida
40g amendoins com sal, grosseiramente picados
5 colheres sopa de molho ou xarope de chocolate (de compra - daquele de pôr por cima dos gelados).
para a mousse:
3 folhas de gelatina
175g chocolate preto (não mais que  62% de cacau), picado
2 ovos médios, separados
50g açúcar refinado branco
200ml natas para bater, batidas


preparação:
Aquecer o forno a 180ºC.
No copo de um robot de cozinha, colocar as bolachas Oreo, a farinha e uma pitada de sal e processar até obter uma mistura fina. Adicionar a manteiga derretida e processar até tudo estar bem incorporado.
Colocar a mistura num recipiente para pie com cerca de 23cm de diâmetro e pressionar bem, com as costas de uma colher, no fundo e lados do recipiente, por forma a forrar toda a superfície. Refrigerar por cerca de 20 minutos.
Colocar o recipiente no forno e cozer a base da pie por cerca de 10 minutos, ou até estar estaladiça. Arrefecer por completo.
Para fazer o recheio: Numa taça, bater a manteiga de amendoim com o açúcar em pó e a manteiga derretida, até obter uma mistura macia e cremosa.
Deitar a mistura sobre a base das bolachas e alisar a superfície.
Por cima da mistura anterior, espalhar os amendoins picados e por cima destes, regar uniformemente com o xarope de chocolate. Reservar no frigorífico.
Entretanto, para fazer a mousse de chocolate, começar por colocar as folhas de gelatina numa taça com água fria e reservar.
Colocar o chocolate numa taça, sobre uma panela de água a ferver (sem que a taça toque na água) e derreter o chocolate, mexendo sempre. Retirar a taça do chocolate do lume e deixar arrefecer.
Sobre o mesmo tacho de água quente, colocar uma taça com as claras de ovo com o açúcar e mexer até que o açúcar dissolva.
Escorrer a água das folhas de gelatina e adicioná-las ás claras. Bater a mistura muito bem, sobre a panela de água quente, até que esta triplique de volume e as claras estejam como que em castelo.
Adicionar as gemas ao chocolate derretido e bater bem.
Sem bater, incorporar as claras na mistura do chocolate e gemas, logo seguidas pelas natas batidas.
Espalhar esta mistura sobre a última camada da pie (o xarope de chocolate) e refrigerar por cerca de 1 hora.
Antes de servir, bater as natas com o açúcar em pó, até estas estarem em Chantilly e espalhar sobre a mousse de chocolate. Refrigerar por 30 minutos e no momento de servir, decorar com as raspas de chocolate.

Ossobuco alla milanese / Ossobuco com risotto de açafrão.


This meal comes from Jamie Oliver Comfort Food cook book and it is so delicious and tasteful and full of contrasts that is unbelievable how good it is.
This recipe serves 6.

ingredients for the ossobuco:
6 ossobuco
1 whole nutmeg, for grating
plain flour, for dusting
2 knobs of unsalted butter
olive oil
2 onions, chopped
2 small carrots, finely diced
2 cloves of garlic, chopped
2 sticks of celery, finely diced
2 springs fresh rosemary leaves, chopped
200ml white wine (Pinot Bianco or Verdicchio)
1 tbsp tomato purée
1l chicken stock
method:
Preheat the oven to 180ºC.
Season the ossobuco with salt, pepper and grated nutmeg, then dust them in flour, shaking off any excess.
Put an ovenproof pan on a medium heat with the butter and a good lug of olive oil. Add the ossobuco and fry for 10 to 15 minutes, or until nicely golden, turning halfway.
When the veal has browned nicely, remove it to a plate.
Drain away most of the fat from the pan, then add the chopped vegetables (carrots, celery, onions and garlic) and rosemary and cook for 15 minutes, stirring frequently.
Pour in the wine and cook it away. Stir in the tomato purée and stock. Bring to the boil and using an wooden spoon, pick up all the sticky goodness from the bottom of the pan. Turn off the heat and return the meat to the pan. Cover with a damp sheet of baking paper and tin foil.
Place the pan in the oven and cook for 2 hours or until the meat is falling apart. Check on it halfway and add a splash of water if needed.

ingredients for the risotto:
1.2l chicken stock, hot
1 onion, finely chopped
1 celery heart, finely chopped
2 knobs of unsalted butter
1 good pinch of saffron threads
450g arborio rice
200ml white wine (Pinot Bianco or Verdicchio)
80g parmesan cheese, grated
extra virgin olive oil, to drizzle
method:
Put the onion and celery into a large high sided pan on a medium low heat with 1 knob of butter and cook for 15 minutes, or until soft but not coloured, stirring occasionally.
Put the saffron threads in a bowl and cover with a small ladleful of hot stock.
Stir the rice into the pan for a couple of minutes. Turn the heat up to medium high and add the wine. Cook it away completely and then add the saffron stock and stir for a few minutes until absorbed.
Add the remaining stock, a ladleful at a time, only adding more when the previous ladleful has been nearly absorbed, stirring all the time until the stock is finished and the rice is cooked. This could take around 16 minutes.
Add a final splash of stock to give the risotto a loose consistency and remove the pan from the heat.
Beat in the remaining knob of butter and most of the grated cheese. Season the risotto with salt and pepper if needed and cover with a lid and leave to sit for 2 minutes.
After 2 minutes, stir well and finish the risotto with a drizzle of extra virgin olive oil and the remaining grated cheese.

ingredients for the gremolata:
2 small cloves of garlic, finely chopped
1 bunch of fresh parsley, finely chopped
zest of 1 lemon
method:
Chop and mix all the ingredients together until fine.

to serve:
Divide the risotto between warm bowls or plates, then place one piece of the ossobuco on top.
Spoon the ossobuco cooking liquid over the top, then scatter over the gremolata.

ingredientes para o ossobuco:
6 rodelas de ossobuco
1 noz de moscada, para ralar
farinha de trigo, para envolver o ossobuco
2 nozes de manteiga sem sal
azeite
2 cebolas, picadas
2 cenouras pequenas, cortadas em cubinhos
2 dentes de alho, picados
2 hastes de aipo, cortadas em cubinhos
2 hastes de alecrim, folhas picadas
200ml vinho branco (Pinot Bianco or Verdicchio)
1 colher sopa de concentrado de tomate
1l caldo de galinha
preparação:
Aquecer o forno 180ºC.
Temperar os pedaços de ossobuco com sal, pimenta e noz moscada ralada e envolvê-lo na farinha, sacudindo o excesso.
Colocar um tacho ou recipiente que possa ir ao forno, sobre lume médio. Colocar uma noz de manteiga no tacho e um bom golo de azeite.
Fritar os pedaços de ossobuco por cerca de 10 a 15 minutos, ou até estarem bem caramelizados, virando a meio do tempo.
Retirar a carne do tacho e reservar num prato.
Descartar a maior parte da gordura que ficou no tacho.
Colocar os vegetais no tacho, assim como o alecrim e cozinhar por 15 minutos, mexendo regularmente.
Adicionar o vinho branco e deixar evaporar.
Adicionar o concentrado de tomate e o caldo de galinha. Quando levantar fervura, e com uma colher de pau, raspar bem o fundo do tacho para soltar a caramelização lá ficou agarrada.
Desligar o lume, colocar a carne selada dentro do tacho. Cobrir o tacho com uma folha de papel vegetal molhada e por cima, cobrir com papel de alumínio.
Levar ao forno por cerca de 2 horas, ou até a carne estar macia e a quase a desfazer-se.
A meio do tempo de cozedura, espreitar e verificar se é preciso adicionar mais líquido. caso seja necessário, adicionar um pouco de água.


ingredientes para o risotto:
1,2l caldo de galinha, quente
1 cebola, picada finamente
1 coração (parte interior do aipo, depois de retiradas as primeiras hastes) de aipo, picado finamente
2 nozes de manteiga sem sal
1 boa pitada de filamentos de açafrão
450g arroz para risotto (Arborio ou outro)
200ml vinho branco (Pinot Bianco or Verdicchio)
80g queijo parmesão, ralado
azeite extra virgem, para regar
preparação:
Num tacho de lados altos sobre lume médio, colocar o aipo e a cebola, juntamente com uma noz de manteiga e cozinhar por 15 minutos, mexendo de vez em quando, até os vegetais estarem tenros, mas sem cor.
Entretanto, colocar os filamentos de açafrão numa taça, juntamente com uma concha de caldo de galinha quente e deixar repousar.
Quando os legumes estiverem macios, deitar o arroz no tacho e cozinhar por uns minutos, mexendo sempre.
Levantar o lume, adicionar o vinho e deixar evaporar, até ter sido completamente absorvido.
Adicionar a mistura de açafrão ao arroz e cozinhar uns minutos, mexendo sempre, para incorporar bem.
Começar a adicionar o caldo de galinha ao risotto, uma concha de cada vez, não adicionando a seguinte, até que a anterior tenha sido absorvida.
Este processo poderá demorar cerca de 16 minutos.
Quando o risotto estiver pronto, adicionar a última concha de caldo e desligar o lume.
Adicionar uma noz de manteiga e a maior parte do queijo ralado ao risotto. Temperar de sal e pimenta, se necessário e mexer bem.
Tapar o tacho e deixar o risotto repousar por cerca de 2 minutos.
Após o tempo de repouso, regar o risotto com azeite extra virgem e polvilhar com o restante queijo ralado.

ingredientes para a gremolata:
2 dentes de alho pequenos, picados finamente
1ramo de salsa, picada finamente
raspa de 1 limão
preparação:
Picar misturar bem todos os ingredientes até obter uma mistura fina.

para servir:
Dividir o risotto por pratos quentes e em cima deste, colocar uma rodela de ossobuco.
Regar com o molho de assar o ossobuco e polvilhar com uma colherzinha da gremolata.
