Fried Dover Soles with Capers, Olives and Sun-dried Tomatoes / Solha frita, com molho de Alcaparras, Azeitonas e Tomates Secos.


Helen is doing a fabulous job on promoting this gorgeous historic town where we live. Linlithgow!
This week is all about food and drink and promoting all our lovely shops, cafes, restaurants, etc.
To celebrate Linlithgow food and drink week, I decided to be part of it and after meeting with lovely Helen in one of our most gorgeous cafes in linlithgow, the Granary Cafe, we agreed that I'd be posting a recipe promoting our local shops.
When I saw these Dover soles in our local fish shop, I couldn't resist them.
Shallow fried and topped with Mediterranean flavours, these soles are a great delicatessen and a delightful treat.
The recipe is from Bart Van Olphen, Bart's Fish Tales book and was marked down to be tried for a long time now. It's absolutely as I thought it would be: Exquisite!
The sun-dried tomatoes and capers were bought at our local healthy shop, Complete Health. A shop that I truly adore and where you can find everything healthy and organic. The owner, Gail, is so kind, adorable and thoughtful. Honestly, is one of my favourite shops in town and it's always a pleasure to go there.

Smoky Chorizo Salmon / Salmão com Chouriço e Tomates.


So, Summer is officially over and as a good bye to this Summer homegrown sweet tomatoes, here is another recipe from Jamie Oliver "5 ingredients - Quick & Easy Food".
In this recipe, the tomatoes are combined with crispy skin salmon, smoky chorizo and olives. A fantastic combination, full of Mediterranean flavours.
If you still have some nice and sweet tomatoes left, give this recipe a try because it's truly delicious.

Lamb's Lettuce, roasted Red Pepper, Olives and Tuna Salad / Salada de Canónigos, Pimento Vermelho assado, Azeitonas e Atum.


I don't know if I have already told you but I don't like canned tuna. Actually, now I should say, I didn't like canned tuna...
Yes, I changed my mind and got converted to canned tuna by Manuela who offered me two cans of the fantastic Santa Catarina canned tuna from Azores.
Manuela said that after I tried that tuna I'd be converted and I really did because is an outstanding tuna and very high quality.
This salad was prepared for Marta and her "ingredient of the month" which is, as I wrote here, the peppers!
The suggestion is from Omar Allibhoy gorgeous book "Spanish Made Simple" and although simple to put together, it's very, very delicious.

Chicken with Marsala, Olives and Blood Oranges / Frango com Marsala, Azeitonas e Laranjas Sanguíneas.


Chicken and blood oranges, a fabulous combination of flavours and ingredients that works heavenly and I know (and told you) it works and it is absolutely delicious because of this Eva Flores recipe that I published a few weeks ago.
Today's suggestion is from Diana Henry "A Bird in the Hand" book.
I love Diana Henry books and this one is all about chicken recipes and all of them incredibly interesting and super appetizing.
Last here I posted the very delicious recipe of Chicken with Morcilla and Sherry that was absolutely to die for and although I made this blood orange recipe last year too, I didn't have the opportunity to take pictures of it so, now that the blood oranges are in season again, I had to make it again and post the recipe here because it's so, so delicious!!
Give it a try and you'll be impressed with such a clever combination and even if you can't find blood oranges, try it with regular Navel oranges because I'm sure, it will be as good.

Greek lamb with orzo / Borrego com orzo á grega.


This Valli Little recipe was made long time ago and it is so delicious that I can't understand why it was not shared before. Never to late I would say and so, here it is now...
Lamb is a kind of meat that is very underrated in Portugal. Most people that I know, don't like lamb and I can't understand why because, if cooked properly, is such a delicious meat.
Anyway, here in the UK, lamb is very appreciated and it is indeed a very delicious meat.
For those that don't like lamb, you can use beef mince in this recipe.
ingredients (serves 4 to 6):
2 tbsp olive oil
500g lamb mince
1 onion, finely chopped
4 garlic cloves, finely chopped
2 tsp ground cinnamon
1 tsp dried oregano
1 1/2 tsp ground cumin
1 1/2 tsp ground coriander
1/2 tsp dried chilli flakes
2 x 400g cans chopped tomatoes
500ml beef stock
500g orzo pasta
juice of 1 lemon
100g baby spinach leaves
1 cup mint, chopped, plus extra leaves to serve
1 cup parsley, chopped
40g pitted kalamata olives
100g Feta, crumbled


method:
Heat 1 tablespoon of oil in a large saucepan over medium high heat.
Add the lamb and cook, breaking up lumps with a wooden spoon, for 2 to 3 minutes until browned. Transfer the meat to a plate and set aside.
Return the pan to medium heat with the remaining 1 tbsp of oil. Add the onion and garlic and cook, stirring, for 5 minutes or until soft.
Add the spices and dried herbs, season with salt and pepper, then cook, stirring, for 1 minute or until fragrant.
Add the tomatoes and stock, bring to a simmer, then cook, uncovered, for 25 minutes.
Return the meat to the pan and cook a further 15 minutes or until the sauce is reduced. Remove from the heat.
Cook the pasta in a pan of billing water according to the packet instructions. Drain, reserving 125ml of the cooking liquid.
Return the pasta to the pan, add the lemon juice and toss to combine.
Add the spinach to the lamb mixture and toss until wilted, then add the mint, parsley and pasta. Toss everything together to combine.
Add a little of the reserved cooking liquid if the sauce is too dry.
Serve topped with olives, feta and extra mint leaves.

Esta é uma receita da fabulosa Valli Little e foi feita há imenso tempo.
Sinceramente, não consigo entender porque é que andava esquecida nos meus arquivos, pois é uma verdadeira delícia.
"Antes de tarde que nunca", diz o povo e, assim sendo, aqui a partilho convosco.
Borrego!
A carne tão mal amada em Portugal e que, sinceramente, não percebo porquê, pois se for cozinhada como deve ser, é uma carne fantástica.
Quase ninguém, das pessoas que conheço em Portugal, gosta de borrego.
De qualquer forma, aqui no Reino Unido, o borrego é Rei e é uma carne muito consumida e apreciada e eu gosto e muito.
Quem não gostar de borrego, pode substitui-lo nesta receita por carne de vaca picada, mas não deixem de experimentar a combinação, pois é mesmo magnífica.


ingredientes (para 4 a 6 pessoas):
2 colheres sopa de azeite
500g carne de borrego picada
1 cebola, picada finamente
4 dentes de alho, picados finamente
2 colheres chá de canela em pó
1 colher chá de oregãos secos
1 1/2 colheres chá de cominhos em pó
1 1/2 colheres chá de coentros em pó
1/2 colher chá de flocos de malagueta seca
2 latas de 400g cada de tomate picado
500ml caldo de carne
500g orzo ou massa pevide
sumo de 1 limão
100g de folhas de espinafre bebé
1 chávena de folhas de menta, picadas + folhas extra para servir
1 chávena de salsa, picada
40g azeitonas kalamata, descaroçadas
100g queijo Feta, esfarelado
preparação:
Sobre lume médio a alto, aquecer 1 colher de sopa de azeite num tacho.
Adicionar a carne e cozinhar, quebrando a carne com uma colher de pau, por 2 ou 3 minutos, ou até a carne estar bem selada por todo. Transferir a carne para um prato e reservar.
Voltar a colocar o tacho sobre lume médio e aquecer mais 1 colher de sopa de azeite.
Adicionar a cebola e os alhos picados e cozinhar, mexendo, por 5 minutos, ou até a cebola estar macia.
Adicionar as especiarias e ervas secas e temperar de sal e pimenta preta moída na altura.
Cozinhar por 1 minuto, mexendo sempre, até as especiarias soltarem a sua fragrância.
Adicionar os tomates e o caldo e quando começar a levantar fervura, cozinhar, sem tapar o tacho, por 25 minutos.
Voltar a colocar a carne no tacho e cozinhar por mais 15 minutos, ou até o molho ter reduzido de volume.
Retirar o tacho do lume.
Numa panela à parte, cozer a massa em água a ferver, de acordo com as instruções do pacote.
Escorrer a massa e reservar 125ml da água de cozedura.
Voltar a colocar a massa na panela e juntar-lhe o sumo do limão.
Adicionar os espinafres à mistura da carne e combinar até estes murcharem. Adicionar a menta, a salsa e a massa e envolver tudo muito bem.
Caso o molho esteja muito espesso, diluir com a quantidade que achar necessária, da água de cozer a massa que havia sido reservada.
Servir polvilhado com as azeitonas, o queijo Feta e folhas de menta.

Easy tomato pasta sauce / Molho de tomate rápido para servir com massa.


Everybody needs an easy tomato pasta sauce recipe for those busy days that there's no time to think about dinner right?
So here it is, the easiest tomato pasta sauce in the world that is not just easy and quick but totally delicious.
ingredients (serves 4):
80ml olive oil
4 garlic cloves, finely chopped
1/2 tsp chilli flakes
2 x 400g cans chopped tomatoes
1 tsp caster sugar
150g mixed pitted olives (I just used a few kalamata olives as my kids don't like olives very much).
2 tbsp parsley, finely chopped
method:
Heat the oil in a pan over medium heat.
Add the garlic and cook for 1 minute, stirring all the time until fragrant.
Add the chilli, tomatoes and sugar and stir until the sugar dissolves.
Reduce the heat to medium low and cook for 20 minutes or until thickened.
Remove from the heat.
Season with salt and freshly ground black pepper and stir in the olives and parsley.
Serve with spaghetti and basil leaves.

Todos nós precisamos de uma receita fácil e rápida de molho de tomate para massas certo?
Dá imenso jeito, especialmente naqueles dias da semana em que se chega tarde a casa e não há muito tempo para pensar em refeições elaboradas.
Pois então aqui está, um molho de tomate rápido, fácil de fazer e que é absolutamente divino!
ingredientes (para 4 pessoas):
80ml azeite
4 dentes de alho, finamente picados
1/2 colher chá de flocos de malagueta
2 latas de 400g cada de tomate picado
1 colher chá de açúcar refinado branco
150g mistura de azeitonas (eu usei kalamata e poucas, pois as minhas crianças não são nada adeptas de azeitonas).
2 colheres sopa de salsa, picada
preparação:
Aquecer o azeite num tacho sobre lume médio.
Adicionar o alho e mexer por 1 minuto, ou até o alho libertar o seu aroma.
Adicionar os flocos de malagueta, os tomates e o açúcar e mexer para dissolver o açúcar.
Baixar o lume para médio a baixo e cozinhar por 20 minutos, ou até o molho estar espesso.
Retirar do lume, temperar de sal e pimenta preta moída na altura.
Adicionar as azeitonas e a salsa picada e servir com esparguete e folhas de manjericão.

Baked chicken with lemon, potato and green olives / Frango no forno com limão, batatas e azeitonas verdes.


Bill Granger is one of the Chefs that, when I moved to the UK, was responsible for bringing out of me the passion for food and cooking that I have now.
Each time I was watching one of his programmes on TV, I just wanted to go shopping straightaway, get into the kitchen and prepare the delicious food I watched him preparing in each of the programmes I've watched.
His style is honest, clean and uncomplicated and his suggestions are always mouthwatering.
This recipe, even for a midweek supper, is a roasted meal suggestion that is easy and quick to put together and totally delicious.
ingredients (serves 4):
1kg roasting potatoes, washed and cut into chunks
1 red onion, peeled and cut into wedges
75g green olives, pitted
1 lemon, sliced
50g pancetta, cut into strips
2 bay leaves
1 tbsp tomato paste
1 tbsp balsamic vinegar
120ml chicken stock
1.7kg chicken, jointed
1 tbsp extra virgin olive oil
sea salt and freshly ground black pepper
chopped parsley, to sprinkle
method:
Preheat the oven to 180ºC.
Place the potatoes in a roasting tin. Scatter over the onion, olives, lemon, pancetta and bay leaves.
Stir the tomato paste, balsamic vinegar and stock together and pour over the potatoes.
Lay the chicken pieces on top, drizzle with the olive oil and sprinkle with salt and pepper.
Roast for 50 minutes or until the chicken is golden.
Transfer the chicken to a warm plate, cover with foil and set aside.
Increase the oven to 220ºC and return the roasting tin to the oven for 10 minutes or until the potatoes, onion and lemon slices are well coloured.
Place the chicken back on top of the potatoes, scatter with chopped parsley and serve.

Quando mudei aqui para o Reino Unido e comecei a ver os programas dele, sempre que um programa dele terminava, só me apetecia ir a correr ás compras e ir para a cozinha recriar todas as delícias que ele tinha preparado.
Gosto do estilo dele, pois a comida dele é o que se chama de comida honesta, fresca e descomplicada e embora eu adore desafios complicados na cozinha, há dias em que o (des)complicado e delicioso são a pareceria e os aliados perfeitos.
Este assado é fantástico, mesmo para um jantar durante a semana, pois é rápido, fácil e agrada a todos, tanto miúdos como adultos.


ingredientes (para 4 pessoas):
1kg batatas para assar, lavadas e cortadas em pedaços
1 cebola vermelha, descascada e cortada em meias luas
75g azeitonas verdes, descaroçadas
1 limão, fatiado
50g pancetta, cortada em lardons
2 folhas de louro
1 colher sopa de concentrado de tomate
1colher sopa de vinagre balsâmico
120ml caldo de galinha
1.7kg frango, de preferência caseiro, cortado em bocados
1 colher sopa de azeite extra virgem
sal e pimenta preta moída na altura
salsa picada, para decorar
preparação:
Aquecer o forno a 180ºC.
Colocar as batatas num tabuleiro de ir ao forno. Polvilhá-las com a cebola, as azeitonas, as rodelas de limão, a pancetta e as folhas de louro.
À parte, misturar o caldo de galinha, com a pasta de tomate e o vinagre balsâmico e regar as batatas com esta mistura.
Dispôr os pedaços de frango no tabuleiro, em cima do preparado anterior. Regar com o azeite e polvilhar com sal e pimenta a gosto.
Levar o tabuleiro ao forno por 50 minutos, ou até o frango estar coradinho.
Retirar o frango do tabuleiro, colocá-lo num prato, tapar com folha de alumínio e reservar.
Aumentar a temperatura do forno para 220ºC e colocar o tabuleiro de novo no forno por mais 10 minutos, ou até que as batatas, o limão e a cebola, tenham ganhado cor e estejam bem douradinhos.
Voltar a colocar o frango em cima das batatas, polvilhar com salsa picada e servir.

Chicken, mushroom and tarragon cassoulet / Cassoulet de frango, cogumelos e estragão.


Depending on which part of the world you're reading this post, some of you might be thinking that this meal is more of a Winter than a Spring or Summer meal but here, in Scotland, believe me, with temperatures of 11 or 12º degrees Celsius most of the time, we still need some comforting dishes instead of light meals and springy or summery salads.
This recipe is from my new book "A lot on her plate".
It requires a bit of time in the kitchen but it's so delicious and full of flavour that you'll end up thinking that it was worthy of every minute you spent preparing it.
I used a mix of different varieties of mushrooms but I leave you the original quantities called in the recipe.
ingredients (serves 4):
1 large handful of cherry tomatoes, halved
extra virgin olive oil
sea salt and freshly ground black pepper
25g butter
1 garlic clove, crushed
3 small shallots, finely chopped
handful of fresh tarragon, chopped, plus extra to garnish
100g chanterelles, little ones whole and bigger ones broken up
2 large portobello mushrooms, cleaned and sliced
50g chestnut or button mushrooms, cleaned and halved
bunch of parsley, finely chopped
1 to 2 tsp white wine vinegar or tarragon vinegar
8 free range chicken thighs, skin on (I used a mix of thighs and drumsticks)
150ml white wine
80g kalamata olives, pitted and sliced
500 to 700ml chicken stock or water
400g tin cannellini beans, drained and rinsed
method:
Preheat the oven to 180ºC.
Place the tomatoes in a roasting tin, coat them with 1 tbsp of olive oil, season with salt and pepper and roast for 15 to 20 minutes, until they're aromatic.
Meanwhile, heat a large frying pan and add the butter, garlic and half of the shallots and cook for about 2 minutes or until they start to soften.
Add the tarragon, mushrooms a pinch of salt and a grind of pepper and sauté for 5 minutos, or until the mushrooms are tinged golden brown.
Transfer the mixture to a bowl and stir in the chopped parsley and the vinegar to taste.
Using the same pan, heat 1 tbsp of olive oil over medium high heat. Add the chicken, first with the skin side down and fry until golden brown on both sides. Transfer the chicken to a plate and set aside.
Add the remaining shallots to the pan and fry for 4 minutes, or until soft.
Deglaze the pan with the white wine and place the chicken back in the pan.
Add the olives and pour in stock or water until it covers the chicken.
Bring to the boil. Turn down the heat and simmer for 35 minutes.
Add the roasted tomatoes and stir, then add the beans.
After 5 minutes, add the mushrooms and simmer for 7 to 10 minutes, or until the sauce has reduced and gone a bit creamy from the beans.
Garnish with tarragon leaves and serve.

Dependendo da zona do globo em que estejam a ler este post, muitos de vós poderá estar a pensar neste momento que esta receita, é mais para o Outono/Inverno, que propriamente para a Primavera/Verão que se faz sentir em alguns países.
Pois acreditem que por aqui, com os 11 a 12º centígrados que ainda se fazem sentir a maior parte dos dias, saladinhas e comidinhas leves de Verão, ainda não é algo que apeteça muito...
Esta é a primeira receita a sair do meu novo livro "A lot on her plate" e garanto-vos que vale a pena, pois tanto de sabor, como de aroma, é absolutamente magnífica!
A preparação requer umas horitas na cozinha, mas nada de complicado e que não seja prazenteiro para quem gosta de cozinhar.
A receita original pede as quantidades e variedades de cogumelos que abaixo transcrevo, mas eu usei o mesmo peso numa mistura de várias variedades dos mesmos.


ingredientes (para 4 pessoas):
1 bom punhado de tomates cereja, cortados ao meio
azeite extra virgem
sal e pimenta preta moída na altura
25g manteiga
1 dente de alho, esmagado
3 chalotas pequenas, finamente picadas
um punhado de folhas de estragão fresco, picadas + extra para decorar
100g cogumelos chanterelles, os pequenos inteiros e os maiores esfarripados
2 cogumelos portobello grandes, limpos e fatiados
50g brancos ou castanhos, lavados e cortados ao meio
um punhado de salsa, picada
1 a 2 chá de vinagre de vinho branco ou vinagre de estragão
8 sobre coxas de frango, de preferência frango do campo (eu usei coxas e sobre coxas)
150ml vinho branco
80g azeitonas kalamata olives, sem caroço e picadas
500 a 700ml caldo de galinha ou água
1 lata de 400g de feijão branco, escorrido e passado por água
preparação:
Aquecer o forno a 180ºC.
Colocar os tomates num tabuleiro, regar com 1 colher sopa de azeite e temperar de sal e pimenta.
Levar os tomates ao forno por 15 a 20 minutos, ou até estarem assados e aromáticos.
Entretanto, aquecer uma frigideira grande. Adicionar a manteiga, o alho e metade das chalotas.
Cozinhar por 2 minutos, ou até as chalotas estarem macias.
Adicionar o estragão, os cogumelos, uma pitada de sal e pimenta e saltear por 5 minutos, ou até os cogumelos estarem coradinhos.
Transferir a mistura para uma taça, adicionar a salsa picada e 1 ou 2 colheres de chá de vinagre, consoante o vosso gosto. Reservar.
Na mesma frigideira onde se saltarem os cogumelos, aquecer 1 colher sopa de azeite sobre lume médio a alto.
Fritar o frango, primeiro com o lado da pele virado para baixo, até que esteja douradinho de ambos os lados. Transferir o frango para um prato e reservar.
Colocar as restantes chalotas na frigideira e fritar por 4 minutos, ou até estarem macias.
Adicionar o vinho branco e com uma espátula, raspar bem os resíduos do fundo da frigideira.
Voltar a colocar o frango na frigideira e adicionar as azeitonas e caldo de galinha ou a água suficiente, por forma a cobrir o frango.
Deixar levantar fervura, baixar o lume e cozinhar por cerca de 35 minutos.
Adicionar os tomates assados ao frango e mexer. Em seguida, adicionar o feijão.
Após 5 minutos, adicionar os cogumelos e cozinhar por cerca de 7 a 10 minutos, ou até o molho ter reduzido e estar ligeiramente cremoso devido à goma do feijão.
Decorar com folhas frescas de estragão e servir.

Lemon and sumac chicken, with cherry tomatoes and olives / Frango no forno com limão, sumagre, tomate cereja e azeitonas.


This is such a delicious, quick and easy way to cook chicken and the combination of flavours is just amazing and totally scrumptious!
ingredients ( serves 4 to 6):
4 free range whole chicken legs, washed and dry
handful of good quality black olives
olive oil
2 tsp sumac
large handful cherry tomatoes
1 preserved lemon, sliced into rounds
salt and freshly ground black pepper


method:
Preheat the oven to 180ºC.
Place the chicken in a roasting dish. Scatter the black olives on top and drizzle with olive oil.
Sprinkle with the sumac and some salt and black pepper.
Bake for 30 minutes and then top with the cherry tomatoes and lemon slices and return to the oven to cook for a further 20 to 30 minutes.
Serve with a salad or any side of your choice.

Esta é uma forma rápida, fácil e deliciosa de preparar frango. Num instante está na mesa e pode ser servido com uma salada, ou outro acompanhamento à escolha.
ingredientes ( para 4 a 6 pessoas):
4 pernas inteiras de frango, de boa qualidade, lavadas e secas
um punhado de azeitonas pretas, de boa qualidade
azeite, para regar
2 colheres chá sumagre
um bom punhado de tomate cereja
1 limão de conserva, cortado em rodelas
sal e pimenta preta, moída na altura
preparação:
Preheat the oven to 180ºC.
Colocar o frango num tabuleiro de ir ao forno. Salpicar com as azeitonas pretas e regar com azeite.
Polvilhar o sumagre em cima do frango e temperar de sal e pimenta.
Levar o tabuleiro ao forno por 30 minutos.
Findo esse tempo, colocar os tomates e as rodelas de limão no tabuleiro e voltar a levar ao forno por mais 20 ou 30 minutos, ou até o frango estar completamente cozido.

Chicken, olives and lemon tagine / Tagine de frango com azeitonas e limão.


Tagine is a Moroccan stew and shares it's name with the terra cotta pot where it is traditionally cooked. You can read more about it here.
If there's ingredients that I really love, spices is one of them and I can tell that I love everything about them. Their fragrance, their flavour and all the exotic senses that they awake.
This tagine is everything I love as it combines chicken and perfumed and tasty spices. The olives and preserved lemons just gives it the needed freshness and are a fabulous complement to the whole dish.
I served it with giant couscous and flatbread to mop up the juices but it can be served with rice.


ingredients (serves 6):
3 tbsp olive oil
6 whole chicken legs
salt and black pepper, to taste
2 large onions, sliced
2 tbsp ground coriander
2 tsp ground white pepper
2 tsp ground ginger
1 tsp. ground turmeric
1/2 tsp crushed saffron threads
1 1/2 cups chicken stock
1 1/4 cups green olives, cracked
2 tbsp unsalted butter
1 tbsp parsley, finely chopped
2 tsp coriander, finely chopped
2 preserved lemons, cut into slices


method:
Heat the oven to 180ºC.
Heat the oil in a large tagine or a cast iron pot over medium heat.
Season the chicken with salt and freshly ground black pepper and add to the pot. Cook, turning, until browned. This can take between 12 to 15 minutes. Transfer the chicken to a plate.
Add the onions to the pot and cook for 10 to 12 minutes, or until golden.
Add the spices and cook for 2 minutes.
Return the chicken to the pot, add the stock and bring to the boil.
Bake the chicken, covered, for 35 to 40 minutes or until tender.
Stir in the olives, butter, parsley, coriander and sliced lemons and cook for a further 6 minutes.

Tagine é um guisado com origem marroquina e o prato partilha o nome com a panela especial em que é cozinhado. Aqui, podem ler mais sobre o assunto.
Se há ingredientes que adoro, especiarias é um deles, pois adoro tudo sobre especiarias, desde o perfume e fragrância, ás cores apelativas e sabor que conferem aos pratos em que são utilizadas.
Esta tagine é tudo isso e é um verdadeiro despertar dos sentidos, tanto em termos de aroma, como em termos de cor e sabor.
As azeitonas e os limões de conserva, são ingredientes indispensáveis para lhe darem a frescura necessária e elevarem este prato a uma segunda dimensão.
Eu servi esta tagine com couscous gigantes e pão, mas podem servi-la com arroz.


ingredientes (para 6 pessoas):
3 colheres sopa de azeite
6 pernas de frango inteiras
sal e pimenta preta do moínho, a gosto
2 cebolas grandes, fatiadas
2 colheres sopa de coentros em pó
2 colheres chá de pimenta branca em pó
2 colheres chá de gengibre em pó
1 tsp colher chá de açafrão das índias ou cúrcuma
1/2 colher chá de filamentos de açafrão, esmagados
1 1/2 chávenas de caldo de galinha
1 1/4 chávenas de azeitonas verdes, esmagadas
2 colheres sopa de manteiga sem sal
1 colher sopa de salsa, picada finamente
2 colheres chá de coentros, picados finamente
2 limões de conserva, cortados em fatias finas
preparação:
Aquecer o forno 180ºC.
Sobre lume médio, aquecer o azeite na base de uma tagine ou num tacho de ferro.
Temperar o frango com sal e pimenta preta moída na altura e colocar o frango no azeite quente.
Cozinhar, virando de vez em quando, até estar bem douradinho. Este processo pode demorar entre 12 a 15 minutos.
Colocar o frango num prato e reservar.
No tacho ou base de tagine onde se selou o frango, colocar a cebola e cozinhar por 10 a 12 minutos, ou até estar douradinha.
Adicionar as especiarias e cozinhar por 2 minutos, mexendo sempre.
Voltar a colocar o frango no tacho e adicionar o caldo de galinha.
Quando levantar fervura, tapar o tacho ou tagine com a tampa e colocar no forno por cerca de 35 a 40 minutos, ou até o frango estar tenrinho.
Adicionar as azeitonas, a manteiga, os coentros, a salsa e os limões fatiados, mexer, tapar e cozinhar por mais 6 minutos.

Squid with lemon rounds, thyme and big green olives / Lulas com rodelas de limão, tomilho e azeitonas verdes.


This way of cooking squid is so simple and delicious that everybody was amazed here at home of how quick they were prepared and how delicious it was.
ingredients (serves 4):
700g squid, cleaned, washed and cut into 2cm rounds
4 lemons
3 tbsp olive oil
2/3 cup big green olives (preferably Castelvetranos)
6 to 8 springs fresh thyme
sea salt
freshly ground black pepper


method:
Slice 2 of the lemons into thin rounds.
Cut the other 2 lemons in half to squeeze over the cooked squid and reserve.
Heat the oil in a large skillet over the highest possible heat.
When the oil is really hot, add the lemon slices and let them fry for 30 seconds.
Add the squid, olives and thyme and stir regularly to ensure even cooking, until the squid goes from translucent to opaque.
When the squid is cooked, squeeze on plenty of lemon juice from the lemon halves. Season with salt and pepper and serve immediately.

Esta forma de cozinhar as lulas é tão deliciosa e rápida que, cá em casa, todos ficaram espantados com a rapidez com que o jantar foi para a mesa e o quão delicioso estava.
ingredientes (para 4 pessoas):
700g lulas, limpas, lavadas e cortadas em argolas de cerca de 2cm de espessura
4 limões
3 colheres de sopa de azeite
2/3 chávena de azeitonas verdes (de preferência, as fantásticas Castelvetrano)
6 a 8 hastes de tomilho fresco
sal
pimenta preta moída na altura
preparação:
Cortar 2 dos limões em rodelas finas.
Cortar os outros 2 limões ao meio e reservar, para espremer em cima das lulas depois de cozinhadas.
Sobre lume o mais forte possível, aquecer o azeite numa frigideira larga. Quando o azeite estiver bem quente, adicionar as rodelas de limão e fritar por 30 segundos.
Adicionar as lulas, as azeitonas e o tomilho e fritar, mexendo sempre, até as lulas passarem de translúcido a opaco.
Quando as lulas estiverem macias, espremer-lhes em cima os limões reservados.
Temperar de sal e pimenta preta e servir imediatamente.
Mais rápido é impossível e mais delicioso..., não sei...
