Samphire and Prawns with butter and mace / Salicornia e camarão, com manteiga e macis.


The first time I came across Chef Gill Meller was on the River Cottage TV programs (a program that I have to say, I truly adore), alongside and in collaboration with Hugh Fearnley-Whittingstall .
I confess that I always loved Gill Meller way of talking about food, his innovative ideas about what and how to cook different and sometimes strange ingredients and, above all, the love and care he was always putting into every dish he created or the way he was taking about the ingredients. Always with lots of love, care and respect.
Actually, is that love, care and respect for produce, seasonality, foraging, local ingredients and cooking, that Chef Gill Meller share in his book and you can feel it in every page you flick through.
The whole book is a delight and you can breathe the love, care and attention to detail that went into every single page of that book.
From caption to recipe, to photos, every single page is a joy to read and to look at.
Gill Meller "Gather" is the book! A book that I truly adore and treasure and that is, in my honest opinion, the book of the year 2017!
The first recipe I cooked from this marvelous book is this one.
Samphire and prawns perfumed with fragrant mace and I'm not going to rave about how much we loved this meal because, truly?!! It was licking fingers delicious and... just wait until I post the Focaccia I made a few days ago and, you'll be amazed. Just by thinking of it, my mouth is watering already...

Pea soup with squid and prawns / Sopa de ervilhas com lulas e camarão.


Another delicious soup that comes out of my kitchen and that goes directly to Marta's "ingredient of the month" table.
As I wrote here, Marta challenged us to cook with peas and as I love peas, I couldn't resist this fabulous initiative and I'm cooking with peas this April.
The combination of ingredients is amazing and the flavour is second to none.
The author suggests to discard the wings and tentacles of the squid but I used everything.

Pad Thai.


Pad Thai is a very loved street food dish from Thailand.
I have to admit that I've always been very curious about this famous dish and now, having (again) a sneak peek at this fabulously gorgeous book, I "noticed" the recipe for this Pad Thai and I decided to make it straightaway.
That's one of the delights of going through books that, apparently, are forgotten in your book shelves...
You always find something new and to fall in love with...!
It was the first time I made or tasted Pad Thai and I have to tell you that it is a real treat!! Here at home, we all LOVED IT, including the kids!!
ingredients (serves 4):
300g wide dried rice noodles
200g pork fillet
150g peeled raw prawns
150g bean sprouts
4 spring onions
3 garlic cloves
3 to 4 tbsp vegetable oil
2 to 3 tbsp fish sauce
1 to 2 tsp grated palm sugar
1 tsp chilli flakes
2 tbsp lime juice
2 eggs
100g toasted peanuts, chopped
chopped fresh coriander leaves, to serve
Thai sweet chilli sauce (optional), to serve
method:
Soak he noodles according to the packet instructions. Drain and set aside.
Cut the pork into very thin slices, peel the prawns, trim the bean sprouts, slice the spring onions on the diagonal and finely chop the garlic.
Gently heat the oil in a wok.
Quickly stir fry the garlic, then add the pork and stir fry for a few more minutes until the meat is nicely browned.
Add the prawns, spring onions, fish sauce, sugar, chilli and lime juice, and stir fry for another 1 minute.
Crack the eggs into the wok and stir until they start to cook.
Add the bean sprouts and noodles and stir fry a bit more.
Serve straight away, scattered with the peanuts, coriander and the Thai sweet chilli if using.


Note: I served my Pad Thai in these gorgeous bowls that, 2 days ago, were just cheap, plain white bowls from IKEA.
Following Adrianna Adarme "The year of Cozy" book instructions, I marbled my own bowls and now, they are full of life and colour.
This book is gorgeous and packed full of delicious food recipes and gorgeous craft and decoration ideas.

Pad Thai é um prato muito típico e amado na Tailândia e que é, maioritariamente, servido e considerado como "street food".
Confesso que já andava curiosa com este prato há bastante tempo, especialmente por tanto o ver ser confeccionado no Masterchef Austrália.
Nunca o tendo experimentado, provado ou confeccionado, andava eu de volta deste livro lindo que estava "esquecido" nas minhas prateleiras, quando dei de caras com esta receita de Pad Thai. Pensei logo para comigo, "pois nem é cedo nem é tarde, é já!".
Só vos posso dizer que todos cá em casa, incluindo os miúdos, ADORÁMOS!!!
Estes são alguns dos deleites de, de vez em quando, fazer incursões por livros que já fazem parte da "mobília da casa" há anos e que são lindos de morrer :))!
ingredientes (para 4 pessoas):
300g massa de arroz larga
200g lombelo de porco
150g camarões descascados
150g rebentos de soja
4 spring onions
3 dentes de alho
3 a 4 colheres sopa de óleo vegetal
2 a 3 colheres sopa de fish sauce
1 a 2 colheres chá de açúcar de cana ralado (eu usei demerara)
1 colher chá de flocos de malagueta
2 colheres sopa de sumo de lima
2 ovos
100g amendoins torrados, picados
folhas de coentros, picados, para servir
sweet chilli sauce tailandês, para servir (opcional)
preparação:
Demolhar a massa de arroz em água a ferver, de acordo com as instruções do pacote. Escorrer e reservar.
Cortar o lombelo de porco em fatias muito fininhas.
Descascar os camarões.
Arranjar os rebentos de soja, cortar as spring onions em rodelas diagonais e picar o alho muito picadinho.
Sobre lume médio a baixo, aquecer o óleo na wok.
Aumentar o lume e saltear o alho. Adicionar a carne de porco e fritar, mexendo sempre, até a carne estar bem selada e douradinha.
Adicionar os camarões, as spring onions, a fish sauce, o açúcar, os flocos de malagueta e o sumo da lima e, mexendo sempre, fritar por mais 1 minuto.
Adicionar os ovos e, mexendo sempre, fritar até estes começarem a estar cozinhados.
Adicionar os rebentos de soja e os noodles e fritar por mais uns segundos, envolvendo tudo muito bem.
Servir de imediato, polvilhado com os amendoins tostados e picados, os coentros e, caso usem, o sweet chilli sauce.


Nota: Eu servi o meu Pad Thai nestas tigelas lindas que, até há dois dias atrás, eram só umas daquelas tigelas brancas e baratas do IKEA!

Prawn and samphire risotto / Risotto de camarões e salicornia.


I started looking for this recipe the day my sister told me that she ate the most delightful samphire risotto in a restaurant.
As I love risotto and samphire, I found this recipe that, with the addition of the prawns and the fabulous homemade prawn stock, turned it into one of the best risottos I ever made and eaten.
You really need to make the stock as specified because it really adds lots of depth and flavour to the final dish.

Confesso que fiquei cismada com risotto de salicornia, um destes dias quando, ao telefone com a minha irmã, ela me contou que tinha comido um risotto de salicornia magnífico num restaurante.
Uma pequena pesquisa pelo google, e imediatamente encontrei a receita que me convenceu e a qual seria, desde o momento que o comemos, o melhor risotto até hoje comido.
O caldo especificado na receita faz toda a diferença no resultado final do risotto, pois dá-lhe um sabor e uma cor absolutamente magníficos!!
Se gostam de risotto e dos ingredientes utilizados, não deixem de experimentar esta receita, pois ficarão completamente rendidos e deliciados!
ingredientes (para 4 pessoas):
500g camarão cru e com casca
preparação:
Cozer os camarões em água a ferver com sal, por cerca de 2 minutos.
Escorrer, deixar arrefecer e descascar os camarões, reservando a carne numa taça e guardando-a no frigorífico e reservando as cascas noutra taça para o caldo.
para o caldo: 
cascas dos camarões
metade de 1 cebola média, grosseiramente picada
metade de 1 alho francês, lavado e grosseiramente picado
metade de 1 cenoura grande, descascada e cortada em rodelas
2 dentes de alho, descascados e grosseiramente picados
10g manteiga sem sal
uma pitada de filamentos de açafrão
2 ou 3 hastes de tomilho
1/2 colher cha de sementes de coentros
5 bagas de pimenta preta
1 folha de louro
15g concentrado de tomate
75ml vinho branco
1l de caldo de peixe (pode ser de cubos - eu uso o knorr natura)
preparação:
Num tacho largo, colocar a manteiga, as cascas dos camarões, a cebola, o alho francês, a cenoura e o alho e cozinhar até estes estarem ligeiramente corados.
Adicionar os ingredientes restantes, deixar levantar fervura, baixar ligeiramente o lume e cozinhar por cerca de 1 hora, tendo o cuidado de, de vez em quando, com a ajuda de uma escumadeira, ir retirando a espuma que se forma à superfície.
Passar o caldo por 1 coador e mantê-lo quante para o risotto. O caldo deverá ter um sabor forte. Caso contrário, reduzi-lo por mais uns minutos. A quantidade final deverá rondar os 500ml.
para o risotto:
30g manteiga
200g arroz carnaroli ou outro arroz para risotto
cerca de 500ml do caldo de camarão (receita acima)
75g salicornia, arranjada e lavada
os camarões cozidos
estragão picado
30g manteiga sem sal
15ml natas para culinária
preparação:
Derreter a manteiga num tacho largo.
Adicionar o arroz e mexer, sobre lume brando, por cerca 1 minuto, ou até os grãos de arroz estarem bem impregnados com a manteiga.
Adicionar o caldo, uma concha de cada vez e mexendo sempre, só adicionando a seguinte, quando a anterior tiver sido completamente absorvida.
A meio da cozedura, temperar com sal e pimenta preta moída na altura.
Quando o caldo estiver quase no fim e o arroz estiver quase cozido, adicionar a salicornia, o estragão picado e os camarões.
Mexer tudo muito bem e deixar cozinhar por cerca de mais 1 minuto.
Adicionar a manteiga e as natas e misturar tudo muito bem.
Provar e, se necessário, rectificar os temperos e, caso a consistência não esteja a gosto, adicionar mais caldo.
Servir de imediato.

Prawn, spinach and pesto risotto / Risotto de camarão, espinafres e pesto.


Since the day I made this pesto recipe for the first time that it became a favourite here at home and since that day I made it so many times that I already know the recipe by heart.
The idea of this risotto came when I was looking at a jar of the pesto and a bowl of prawns that I had in the fridge and I can assure you that this risotto is absolutely divine and it pleased everybody, even the fussy ones that always look at greens with a nasty face and that one is my son...
ingredients (serves 4):
1.2l warm fish or vegetable stock
3 tbsp olive oil
80g butter + 1 tbsp for the prawns
1 onion, finely chopped
350g risotto rice
100ml white wine
100g baby spinach leaves
3 to 4 tbsp pesto, according to taste (I used this one, of course)
350g raw large prawns, unshelled
1 garlic clove, thinly sliced
salt and freshly ground pepper
grated parmesan cheese, to taste
method:
Put the onion, olive oil and 40g of the butter into a large high sided pan over a medium low heat and cook, stirring occasionally, until soft but not coloured.
Add the rice and stir until all the grains are coated with the buttery oil.
Add the wine and cook until it evaporates completely.
Add the stock (reserving 2 ladlefuls to finish the risotto) a ladleful at a time, only adding more when the previous one has been absorbed, stirring all the time.
When the rice is cooked, turn off the heat and add the spinach leaves, the rest of the butter, the pesto and the two reserved ladles of stock.
Season to taste with salt and freshly ground black pepper, stir well, cover the pan and allow the risotto to rest for 10 minutes.
Meanwhile, cook the prawns in a frying pan over medium heat, with 1 tbsp of butter, a pinch of salt and pepper and the sliced garlic, until the prawns turn pink and are cooked through.
Serve the risotto topped with the prawns and some grated parmesan.

Desde a primeira vez que experimentei esta receita de pesto, que não tenho feito outra, pois esta passou a ser a receita de pesto favorita cá de casa e faço-a e refaço-a vezes sem conta e foi ao olhar para o frasco do pesto e para uns camarões que estavam no frigorífico, que surgiu a ideia deste risotto que, deixem que vos diga, é absolutamente fenomenal e agradou a todos cá em casa.
Aliás, o meu filho, que torce sempre o nariz quando vê algo verde no prato (nem que seja uma folha de salsa), amou e repetiu!!
ingredientes (para 4 pessoas):
1.2l caldo de peixe ou legumes, quente
3 colheres sopa de azeite
80g manteiga + 1 colher sopa para fritar os camarões
1 cebola, finamente picada
350g arroz para risotto
100ml vinho branco
100g folhas de espinafre bebé
3 a 4 colheres sopa de pesto, de acordo com a vossa preferência (claro que usei deste)
350g camarões, crus e sem casca
1 dente de alho, finamente fatiado
sal e pimenta preta moída na altura
parmesão ralado, a gosto
preparação:
Num tacho de lados altos, colocar a cebola, o azeite e metade da manteiga e cozinhar, mexendo de vez em quando, até a cebola estar macia mas sem cor.
Adicionar o arroz e mexer até todos os grãos estarem cobertos com a mistura do azeite.
Adicionar o vinho e cozinhar, mexendo, até este evaporar completamente.
Reservar 2 conchas do caldo para terminar o risotto e adicionar o restante caldo, uma concha de cada vez, mexendo bem entre cada adição, até que a anterior tenha sido absorvida, até terminar o caldo e o risotto estar cozido, mas al dente.
Desligar o lume e adicionar o pesto, as folhas de espinafres, o resto da manteiga, o caldo reservado, sal e pimenta a gosto e mexer bem. Tapar o tacho e deixar o risotto descansar por cerca de 10 minutos.
Entretanto, numa frigideira, fritar os camarões com a manteiga, os alhos laminados, sal e pimenta, até estes estarem cozidos e tenham mudado de cor (para cor de rosa).
Servir o risotto coberto com os camarões e queijo parmesão ralado.

Warm salad with prawns, asparagus, spinach and tomatoes / Salada quente de camarões, espargos, espinafres e tomates.


"Happy is the one that cooks with love".
That's what's written on the little black board that is in my pictures and that is the way I love to cook. With lots of love and fantastic ingredients.
This salad is a combination of fabulous ingredients that work perfectly together either in flavour and/or texture.
ingredients (serves 4):
1 tbsp olive oil
2 garlic cloves, peeled and thinly sliced
225g thin asparagus spears, cut in half
300g cherry tomatoes, halved
1 tbsp za'atar
450g raw king prawns
200g baby spinach leaves
juice 1 lime
1 small bunch of coriander leaves, chopped


method:
Heat the oil and garlic in a large pan.
As soon as the garlic starts sizzling, add the asparagus and cook for 2 minutes.
Add the tomatoes and the za'atar and toss to combine.
Add the prawns and a good pinch of salt and cook until the prawns turn pink.
When the prawns are cooked, add the spinach and cook until they are just wilted.
Turn off the heat, mix in the lime juice and coriander leaves, check the seasoning and serve straightaway.

Pois é!
"Feliz é quem cozinha com amor" e eu não podia estar mais de acordo, pois é assim que gosto de cozinhar. Com muito amor e com ingredientes fantásticos e que combinam na perfeição, quer em termos de sabor, quer no que diz respeito a diferentes texturas e esta salada quente é um delicioso exemplo do que acabo de escrever.
ingredientes (para 4 pessoas):
1 colher sopa de azeite
2 dentes de alho, descascados e fatiados muito finamente
225g de espargos verdes dos mais finos, arranjados e cortados ao meio
300g tomate cereja, cortado ao meio
1 colher sopa de za'atar
450g camarão cru
200g folhas de espinafre bebé
sumo de 1 lima
1 punhado de coentros, picados
preparação:
Aquecer o azeite e o alho num tacho.
Assim que o alho começar a fritar, adicionar os espargos, mexer e cozinhar por cerca de 2 minutos.
Adicionar os tomates e o za'atar e combinar tudo muito bem.
Adicionar os camarões e uma pitada de sal e cozinhar até os camarões estarem cozidos, ou terem mudado de cor.
Quando os camarões estiverem cozidos, adicionar os espinafres e mexer.
Assim que os espinafres murcharem, apagar o lume, adicionar o sumo de lima e os coentros, rectificar de sal e pimenta e servir de imediato.

Prawn, avocado and coriander verrines / Verrines de pêra abacate, camarão e coentros.


These verrines were served last week as a starter for a friends lunch.
Served chilled, they were very much appreciated as the vibrant colour and combination of flavours are totally beautiful and delicious.
ingredients (serves 4 to 5):
200g king prawns, cooked, peeled and roughly chopped
4 king prawns, cooked and peeled, for decoration
2 ripe but firm avocados, preferably Hass
leaves from 10 coriander stalks, plus a few chopped leaves for decoration
2 tbsp olive oil
50ml ricotta cheese
lemon juice, to taste
salt and black pepper, to taste


method:
Put all the ingredients in a food processor, apart from the prawns and blend until smooth.
Place the mixture into a bowl and mix in the chopped prawns.
Adjust seasoning and add more lemon juice if needed.
Divide the mixture between 4 verrines or cocktail glasses and decorate with the whole prawn and chopped coriander.
Keep in the fridge and serve chilled.

Prawn tostada / Tortilhas com camarão.


Sometimes I buy books and when I am reading them, there are recipes that appeal to me straight away and some others, or either I even don't notice them, or I don't give them much importance, and this one was one of them.
Well, saying that, when I first got this book, I didn't find it anything special and now, that I'm watching the series of Gordon Ramsay's Ultimate Home Cooking on TV, I totally changed my opinion about the book.
It's amazing how we can change our minds and just because I'm watching him preparing mouthful plates of food and all of them better than the previous ones, I totally fell in love with the book.
So, this meal is  fresh and delicious, packed full of flavour, vibrant colours and contrasting textures.
Very easy to prepare, it makes a fabulous light and relaxed lunch.



ingredients (serves 4):
400g raw king prawns, peeled, clean and deveined
2 garlic cloves, peeled and very finely sliced
1tsp chilli flakes
olive oil
2 ripe avocados, peeled, stoned and diced
4 spring onions, trimmed and finely chopped
1 red chilli, seeded and finely sliced
8 to 12 radishes, trimmed and quartered
8 to 12 cherry tomatoes, halved
juice of 1 lime
2 baby gem lettuce, shredded (I used a bag of mixed leaves)
small bunch of coriander, chopped
4 corn flour tortillas
salt and freshly ground black pepper
method:
Put the prawns, garlic, a drizzle of olive oil, salt, pepper and chilli flakes inside a bowl. Mix well and set aside.
Put the avocados, chilli, spring onions, radishes and tomatoes inside another bowl and mix together. Taste and season with salt and pepper and half the lime juice.
Mix well and stir in the lettuce and coriander and set aside.
Heat a dash of oil in a frying pan. Extract the prawns from their marinade and fry them for about 2 minutes on each side, or until they are cooked through.
Sprinkle the prawns with the remaining lime juice and stir to combine.
Toast the tortillas on a dry frying pan until nicely coloured.
Divide the salad between the tortillas and serve topped with the prawns.

É engraçado como ás vezes a nossa opinião pode mudar de repente e por coisa pouca, ou seja...
Já me aconteceu várias vezes, comprar livros e depois, ao lê-los, achá-los "normalitos", ou nada de especial e este foi um deles, tanto que ainda só tinha testado uma receita nele contida.
Ora bem, agora que estou a ver na televisão o programa do Gordon Ramsay's Ultimate Home Cooking, vejo o senhor a preparar pratos maravilhosos em família e sempre com os filhos a ajudar, pratos cada um melhor que o anterior e de dar água na boca e dou por mim a pensar porque é que não achei piada ao livro de início.
Esta conversa toda para dizer que o livro é espectacular e estou completamente rendida a ele e assim sendo, esta é a segunda receita a sair deste livro e garanto-vos que não será a última.
Recheado de sabor, cores vibrantes e texturas contrastantes, este, que para o senhor Gordon e família é um pequeno almoço, foi para nós um almoço leve, fácil de preparar e super delicioso.



ingredientes (para 4 pessoas):
400g camarão cru, descascado, arranjado e limpo
2 dentes de alho, descascados e fatiado muito finamente
1 colher chá de flocos de malagueta
azeite q.b.
2 pêras abacate, descascadas, descaroçadas e cortadas em cubos
4 spring onions, arranjadas e cortadas em rodelas finas
1 malagueta vermelha, sem sementes e cortada em rodelas (eu não usei)
8 a 12 rabanetes, arranjados e cortados em quartos
8 a 12 tomates cereja, cortados ao meio
sumo de 1 lima
2 alfaces pequenas cortadas (eu usei um saco de mistura de folhas de salada)
um ramo pequeno de coentros frescos, picados
4 tortilhas de farinha de milho
sal e pimenta preta q.b.
preparação:
Colocar os camarões numa taça, juntamente com os flocos de malagueta, os alhos laminados, sal e pimenta e um fio de azeite. Envolver tudo muito bem e reservar.
Numa taça à parte, colocar a pêra abacate, a malagueta em rodelas, as spring onions, os rabanetes e os tomates e misturar tudo. Temperar de sal e pimenta, regar com metade do sumo da lima.
Adicionar a alface e os coentros picados, mexer e reservar.
Entretanto, aquecer um fio de azeite numa frigideira. Retirar os camarões da marinada e fritá-los no azeite quente, por cerca de 2 minutos de cada lado, ou até estarem cozidos.
Regar com o restante sumo de lima e mexer.
Numa outra frigideira seca, tostar as tortilhas de ambos os lados, até começarem a ganhar cor.
Dividir a salada pelas tortilhas, cobrir com os camarões e servir.
