Strawberry and spinach wrap / Wrap de morangos e espinafres.


Before May ends, I leave this very simple but delicious suggestion for Marta and for her "May - The Strawberry month".
I don't call this a recipe because it's not! It's just a suggestion.
A recipe, for me, is something that involves cooking and/or some kind of cooking technique.
This is an assembling of ingredients and therefore, I don't call it a recipe.
The suggestion is adapted from Erin Gleeson book "The Forest Feast".
for 1 wrap:
Spread 2 tbsp of soft goat cheese (I used Philadelphia cream cheese) on a wholewheat flour tortilla.
Lay out about 5 sliced strawberries and then top those with 1/4 cup of rocket (I used baby spinach leaves).
Drizzle with olive oil and balsamic vinegar and sprinkle with sea salt flakes and freshly ground black pepper and then roll it up.

Watermelon salad / Salada de melancia.


A very beautiful, simple and deliciously refreshing Summer salad.
ingredients (serves 1):
1 circular slab of watermelon, rind removed and cut 2.5cm thick
3 to 5 slices fresh mozzarella cheese
1 tbsp mint, chopped
1 tbsp basil, chopped
1 tbsp walnuts, chopped
1 tbsp almonds, sliced
olive oil and salt, to dress


method:
Lay the watermelon slab on the plate and top with the mozzarella cheese.
Scatter over the nuts and herbs.
Drizzle with olive oil and a sprinkle with sea salt.

Uma salada diferente, linda, deliciosa e que está na mesa em menos de 5 minutos.
ingredientes (por pessoa):
1 rodela de melancia, sem casca e cortada com uma espessura de cerca de 2.5cm
3 a 5 fatias de queijo mozzarella
1 colher sopa de menta, picada
1 colher sopa de manjericão, picado
1 colher sopa de nozes, picadas
1 colher sopa de amêndoas, fatiadas
azeite, para regar
flor de sal
preparação:
Colocar a rodela de melancia no centro do prato.
Cobrir com as rodelas de mozzarella.
Polvilhar com as ervas e os frutos secos.
Regar com um fio de azeite e salpicar com flor de sal.
