Fennel, Watercress, Orange & Avocado Salad / Salada de Funcho, Agrião, Laranja e Pêra Abacate.

Remember about the fabulous Rita Serano book "Vegan in 7", I talked about in this post?
Here it is, another fabulous recipe from this amazing book.
Honestly, I'm loving cooking from this book so much, that I could become a vegan before you notice it (lol).
No! I love food in general so, I couldn't choose a way of eating that easily but, again, saying that, I'm more and more in love with vegan or even vegetarian food! Specially after trying Rita's recipes!
I made this salad twice last week and we all loved it here at home so, as Marta's ingredient of the month is oranges, I decided to post this recipe to be part of Marta's January round up.
It's such a simple, yet, super delicious and fulfilling salad that, I couldn't help but share it!

Teriyaki Salmon and Avocado Poke / Poke de Teriyaki de Salmão e Pêra abacate.

Poke is a popular Hawaiian snack of raw fish seasoned with soy sauce and sesame oil.
In the Islands, poke is available everywhere, from food trucks to local Chefs restaurants.
Martha Cheng "The Poke" cookbook is all about this fresh way of eating fish and it's a delightful little book that I intend to use a lot, as I'm a lover of this kind of food.
Saying that, here is y first Poke!

The breakfast bowl / Uma taça de pequeno almoço.

In their book "Good + Simple", The Hemsley sisters call this suggestion "The breakfast bowl".
As you already know, breakfast food, for me, means lunch food and this bowl of goodness made such a delicious lunch that I'm sure I'll be making it lots of times (actually, I already did).
As Marta invited us to cook with spinach this month, I invite Marta to take this bowl of pleasure to her table.
Although the spinach are not the star ingredient in this suggestion, they surely play an important role in the whole combination.

This salad is definitely for sushi lovers!!
You know those days when you're craving sushi but you don't want to go out to buy it or you don't have the time to make proper sushi rolls?
Well, here is the solution! Sushi salad!
I was amazed with this salad and believe me, I'm totally in love with it and it became and will become a favourite here at home!
The sushi flavours are all there and it's like making effortless sushi.
Try it and you'll see that I'm right!

Note: the recipe states that it serves 1 but it was more than enough for 2.

ingredients (serves 1 or 2):
for the dressing:
1 tsp vegetable oil
2 tsp pomegranate molasses
1 tsp soy sauce
method:
Mix all the ingredients together and set aside.
for the salad:
100g sushi rice
50g frozen edamame beans (I didn't have any so, I used frozen baby broad beans peeled)
1 tbsp sesame oil
1 sheet of nori, torn
handful of pomegranate seeds
50g smoked salmon, cut into bite-sized slices
1 small avocado, stoned, peeled and sliced
1 tbsp black sesame seeds
sushi ginger, to serve (optional)
method:
Rinse the sushi rice really well and put it in a small pan covered with 200ml of cold water.
Bring to the boil, then simmer for 10 minutes with the lid on.
Remove from the heat and keep the lid on for 15 minutes.
Meanwhile, pour boiling water over the beans and leave to defrost. Drain and set aside.
Heat the sesame oil in a frying pan and add the nori. Cook for 1 to 2 minutes on a medium heat until crisp.
Transfer the rice to a serving bowl, add the beans, the pomegranate seeds, the salmon and the avocado slices.
Sprinkle with the black sesame seeds, drizzle with the dressing and top with slices of sushi ginger if you like.

Fabulous burgers that can easily be transformed in vegetarian burgers by omitting the bacon.
The avocado cream not only works as a topping for the burgers, but it can also be used as a dip for chips or vegetables.
ingredients for the burgers (serves 4 to 6):
2 slices thick cut bacon
170g fresh spinach
2 garlic cloves, minced
3 cups canned cannellini beans, rinsed and drained
1/4 cup all-purpose or whole wheat flour (I used 1/3 cup of oatmeal)
2 large eggs, lightly beaten
2 tbsp freshly grated Parmesan cheese
2 spring onions, sliced
1/4 tsp salt
1/4 tsp freshly ground black pepper
2 tbsp extra-virgin olive oil
method:
Heat a large frying pan over medium to low heat.
Add the bacon and cook until crispy. Remove the bacon from the pan with a slotted spoon and let it drain over kitchen towel.
To the same skillet, add the spinach and garlic and cook until the spinach is wilted. Turn off the heat.
Add the spinach and garlic to the bowl of a food processor.
Add the beans, bacon, flour, eggs, cheese, spring onions, salt and pepper and pulse until the mixture is coarsely chopped but not fully pureed.
Put the mixture inside a bowl. Use your hands to form 6 to 8 patties out of the bean mixture, depending on the size of your buns.
Heat the same skillet over medium heat and add the olive oil.
Cook the burgers for 4 to 5 minutes on each side, or until golden on both sides.

for the avocado cream:
2/3 cup plain full-fat or low-fat Greek yogurt
1 avocado, pitted, peeled, and chopped
1/4 tsp salt
1/4 tsp freshly ground black pepper
method:
Put the yoghurt, avocado, salt, and pepper in the bowl of the food processor and puree until smooth.
to serve:
6 to 8 whole-grain buns (or other kind of buns), toasted
to finish:
Serve the burgers on the toasted buns, topped with the avocado cream.

2 ovos grandes, ligeiramente batidos
2 colheres sopa queijo parmesão ralado
2 spring onions, picadas

Sandwiches might be my favourite thing in the world to eat.
Anything that includes bread makes me happy and for me, as I wrote once here, BLT is on the top of my list as I'm as mad about bread as I am about bacon.
This BLT is special as on top of everything good about a BLT it also includes avocado which is another thing that I love.
ingredients (makes 1):
2 to 3 slices thick cut bacon
1 mini baguette
Dijon mustard, to taste
mayonnaise, to taste
3 to 4 slices ripe tomato
1/2 ripe avocado, sliced
handful rocket (I used green salad leaves)
salt and freshly ground pepper
method:
Fry the bacon in a skillet until golden brown on both sides.
When brown and crispy, remove the bacon from the pan and set on kitchen paper to absorb the excess fat.
Toast the bread and spatter one side with mustard and the other side with mayonnaise.
Top with the bacon, tomato, avocado and rocket.
Season with salt and pepper to taste.

1 mini baguette
Mostarda de Dijon, a gosto
Maionese, a gosto

Sometimes I buy books and when I am reading them, there are recipes that appeal to me straight away and some others, or either I even don't notice them, or I don't give them much importance, and this one was one of them.
Well, saying that, when I first got this book, I didn't find it anything special and now, that I'm watching the series of Gordon Ramsay's Ultimate Home Cooking on TV, I totally changed my opinion about the book.
It's amazing how we can change our minds and just because I'm watching him preparing mouthful plates of food and all of them better than the previous ones, I totally fell in love with the book.
So, this meal is  fresh and delicious, packed full of flavour, vibrant colours and contrasting textures.
Very easy to prepare, it makes a fabulous light and relaxed lunch.

ingredients (serves 4):
400g raw king prawns, peeled, clean and deveined
2 garlic cloves, peeled and very finely sliced
1tsp chilli flakes
olive oil
2 ripe avocados, peeled, stoned and diced
4 spring onions, trimmed and finely chopped
1 red chilli, seeded and finely sliced
8 to 12 radishes, trimmed and quartered
8 to 12 cherry tomatoes, halved
juice of 1 lime
2 baby gem lettuce, shredded (I used a bag of mixed leaves)
small bunch of coriander, chopped
4 corn flour tortillas
salt and freshly ground black pepper
method:
Put the prawns, garlic, a drizzle of olive oil, salt, pepper and chilli flakes inside a bowl. Mix well and set aside.
Put the avocados, chilli, spring onions, radishes and tomatoes inside another bowl and mix together. Taste and season with salt and pepper and half the lime juice.
Mix well and stir in the lettuce and coriander and set aside.
Heat a dash of oil in a frying pan. Extract the prawns from their marinade and fry them for about 2 minutes on each side, or until they are cooked through.
Sprinkle the prawns with the remaining lime juice and stir to combine.
Toast the tortillas on a dry frying pan until nicely coloured.
Divide the salad between the tortillas and serve topped with the prawns.
