Poached rhubarb with vanilla and blood orange / Ruibarbo com baunilha e laranja sanguínea.


A simple suggestion with the best that February has to offer.
For Marta and her ingredient of the month, which is precisely the vanilla, I prepared this very easy and simple suggestion.
I don't even call it a recipe because it really is only a suggestion! A simple but delicious suggestion!

ingredients:
300g rhubarb, cut into 5cm sticks
2 tbsp vanilla sugar
1 tsp vanilla paste
1 grated blood orange zest
juice from 2 blood oranges
method:
Put all the ingredients in a saucepan and cook gently for 8 to 10 minutes, or until the rhubarb starts to break down.
Scoop out the rhubarb with a slotted spoon and boil the juices until thick, syrupy and reduced by half.
Pour the reduced juices over the rhubarb and serve warm, cold or at room temperature.
You can serve the poached rhubarb over porridge, granola and/or yoghurt for breakfast or with ice cream, custard or on its own for dessert.

Para a querida Marta e para o seu mês de Fevereiro, o mês da baunilha, deixo esta simples mas deliciosa sugestão.
Não me venham dizer que em Portugal é difícil arranjar ruibarbo pois existem já muitos locais e lojas que o vendem (passo a publicidade, mas a "Horta do Bairro" em Lisboa vende ruibarbo e distribui para todo o País).
Fica então a sugestão e chamo-lhe sugestão e não receita, pois é tão básico que nem pode ter o título de receita...!


ingredientes:
300g ruibarbo, cortado em pedaços de cerca de 5cm
2 colheres sopa de açúcar baunilhado
1 colher chá de pasta de baunilha (ou extracto)
raspa de 1 laranja sanguínea (podem usar laranja normal)
sumo de 2 laranjas sanguíneas (podem usar laranja normal)
preparação:
Colocar todos os ingredientes num tacho.
Levar ao lume e quando levantar fervura, cozinhar sobre lume médio a baixo, por cerca de 8 a 10 minutos, ou até o ruibarbo começar a ficar macio e querer desfazer-se.
Retirar o ruibarbo do tacho com uma escumadeira e reservar.
Ferver o líquido do tacho sobre lume alto, até este reduzir para metade e adquirir uma consistência de xarope.
Deitar o xarope sobre o ruibarbo e servir quente, frio ou à temperatura ambiente.
Pode servir o ruibarbo para o pequeno almoço a acompanhar papas de aveia, granola ou iogurte, ou pode servi-lo como sobremesa, a acompanhar gelado, creme inglês, ou até mesmo sózinho.
