Oreo Pancakes with Chocolate Fudge Sauce / Panquecas de Oreo com Molho Fudge de Chocolate.

That special day. My niece's birthday and the day that I always post something to celebrate her birthday.
Being far away from her makes it very hard but making something special to celebrate the day, makes the distance less painful.
I'm not going to write again about how much I love my niece and about how much she means to me. If you read the last two years posts, you already know everything that is to know about my feelings for this gorgeous girl that has always been my ray of sunshine.
Two years ago I made her these meringues and last year I made her this upside down meringue pie.
Today she's 19 years old and I decided to celebrate with something more indulgent. As today it's also Pancake Day, I made these delicious Oreo pancakes with a decadent chocolate sauce. Something easy to make and that will appeal to my niece and her friends and colleagues from the Medical School as it is something that they all can cook and enjoy together as a very special treat. The recipe is from Hannah Miles, "Pancakes, Crêpes, Waffles & French Toast" book.

ingredients for the pancakes (makes 12):
160g self raising flour
1 tsp baking powder
1 egg, separated
1 tsp vanilla extract or paste
2 tbsp caster sugar
a pinch of salt
250ml milk
2 tbsp melted butter, plus extra for frying
9 Oreo cookies or similar, broken into pieces
method:
Put the flour, baking powder, egg yolk, vanilla, sugar, salt and milk in a large mixing bowl and whisk together.
Add in the melted butter and whisk again. The batter should have a smooth, dropping consistency.
In a separate bowl, whisk the egg white to stiff peaks.
Gently fold the whisked egg white into the batter mixture using a spatula.
Cover and refrigerate to rest for 30 minutes.
Meanwhile, make the chocolate sauce.
When ready to serve, remove the batter from the fridge and stir once.
Put a little butter in a large frying pan set over a medium heat.
Allow the butter to melt and coat the base of the pan, then ladle small amounts of the batter into the pan.
Sprinkle some of the Oreo cookies into the batter and cook until the batter is just set, then turn over and cook for a further 2 to 3 minutes.
Once cooked, keep the pancakes warm while you cook the remaining batter in the same way, adding a little butter to the pan each time, if required.
Serve the pancakes in a stack with the hot chocolate fudge sauce poured over the top.


for the sauce:
30g cocoa powder, sifted
1 tsp cold water
150ml double cream
100g milk chocolate, chopped
1 tbsp golden syrup
1 tbsp butter
a pinch of salt
1 tsp vanilla extract or paste
method:
Put all the ingredients in a saucepan over a medium heat and simmer until the chocolate has melted and you have a smooth, glossy sauce.
Keep the pan on the heat but turn it down to low to keep the sauce warm until you're ready to serve.

Aquele dia especial! Aquele dia em que, quem me lê e segue o meu blogue, sabe que é o dia em qua a minha amada sobrinha faz anos e é o dia em que sempre publico algo em sua homenagem e que a ela é dedicado.
Não me vou repetir sobre o grande amor que nutro por esta minha sobrinha e o quanto ela é especial e um raio de Sol luminoso na minha vida. Isso tudo já todos sabem, incluindo ela e quem não sabe, poderá ler este post e este post e ao mesmo tempo, saborear as delícias que lhe preparei nos dois últimos anos.
Embora à distância, preparar algo especial para a minha fofinha neste dia, faz-me sentir mais perto dela.
Todos os anos preparo algo em que o "suspiro" predomina, pois como sabem, a minha menina é uma "meringue girl"!
Este ano, como o seu aniversário coincide com o Dia das Panquecas, decidi fazer algo mais indulgente e rico para celebrar as suas 19 Primaveras em conjunto com o Dia das panquecas.
Panquecas indulgentes e pecaminosas, do livro lindo da Hannah Miles, "Pancakes, Crêpes, Waffles & French Toast", fáceis de fazer e que poderão ser feitas em grupo. Em conjunto com os amigos e colegas da FML, poderão fazê-las juntos e depois degustá-las harmoniosamente, brindadno e cantando os parabéns à Princesa mais linda do mundo!

ingredientes para as panquecas (12):
160g farinha de trigo com fermento
1 colher chá de fermento em pó
1 ovo, separado
1 colher chá de extracto ou pasta de baunilha
2 colheres sopa de açúcar refinado branco ou granulado
uma pitada de sal
250ml leite
2 colheres sopa de manteiga derretida + extra para fritar
9 bolachas Oreo, ou semelhantes, partidas em pedaços
preparação:
Numa taça, colocar a farinha, o fermento, a gema de ovo, a baunilha, o açúcar, o sal e o leite e bater tudo muito bem com a vara de arames.
Adicionar a manteiga derretida e voltar a bater muito bem. A massa deverá apresentar-se lisa e cremosa.
Numa taça à parte, bater a clara de ovo em castelo firme.
Adicioanr a clara à mistura anterior e envolver tudo muito delicadamente.
Tapar a taça e refrigerar por cerca de 30 minutos para que a massa possa descansar.
Entretanto, preparar o molho de chocolate.
Na altura de servir, retirar a massa do frigorífico e mexer uma vez só.
Colocar um bocadinho de manteiga numa frigideira sobre lume médio.
Deixar que a manteiga derreta, cobrindo toda a superfície da base da frigideira.
Com a ajuda de uma concha, colocar pequenos montes de massa na frigideira, separando-os.
Polvilhar com bocados de Oreo e deixar fritar até a massa estar firme.
Virar as panquecas e cozinhar por mais 2 a 3 minutos.
Manter as panquecas quentes enquanto se cozinham as restantes, seguindo os passos anteriores. Adicioanr mais manteiga à frigideira, sempre que achar necessário.
Servir as panquecas empilhadas, regadas com o molho de chocolate.


para o molho de chocolate:
30g cacau em pó, peneirado
1 colher chá de água fria
150ml natas para culinária
100g chocoalte de leite, picado
1 colher sopa de golden syrup
1 colher sopa de manteiga
uma pitada de sal
1 colher chá de extracto ou pasta de baunilha
preparação:
Colocar todos os ingredientes num tacho.
Aquecer sobre lume médio, até o chocolate estar derretido e a mistura se apresentar macia e brilhante.
Manter o tacho sobre lume muito brando a fim de que o molho se mantenha quente até ao momento de servir as panquecas.
