Micro Steamed Asparagus with Poached Egg and Walnut Vinaigrette / Espargos no microondas com Ovo Escalfado e Vinagrete de Noz.


"The Food Lab" by J. Kenji Lopez-Alt is the book Deborah chose for April's Rainydaybites Cook Book Club.
As you can guess by the name, The Food Lab is more than a recipe book. Its's a book about cooking through science, meaning, cooking techniques that should be adopted instead of others, depending on the ingredients, tips, tricks, explanations about how things happen and why, etc.
It is a very interesting book and I'm loving exploring it.
The first recipe that I tried was this one. Not just because I was very curious about the method used to cook the asparagus, but also because of the walnut vinaigrette that caught my attention straightaway.
I confess that I never cooked asparagus in the microwave and I have to say, this method really works!!

Jerusalem artichoke and Chestnut Soup with Chorizo and Apple / Sopa de Girassol batateiro e Castanhas, com Chouriço e Maçã.


When you think you add all the possible Jerusalem artichoke soup combinations that can be, and that this kind of soup can't be improved anymore, here comes another fabulous combination that leaves you on your knees. Yes!! and I promise, I'm not exagerating.
Just check under the "soup" label here on the blog and you'll see how many Jerusalem artichoke soups I made already! Not just one, two or three but more than that and all of them, absolutely delicious!
As I had a bag of Jerusalem artichokes in the fridge, as soon as I saw this recipe in one of Chef Maria Elia books, the "Full of Flavour" book, of course, I couldn't hold myself but use them artichokes in this recipe.
No words!!! A true delight and that's another reason why I love this ingredient so much. Absolutely divine!

Trout with samphire and beurre blac / Truta salmonada, salicornia e beurre blac.


Samphire, a very common and British ingredient, is beautiful and delicious. At its best (depending on the kind of samphire) in July and August it started to be in season again now and I couldn't resist its freshness and bright green colour.

Although, here at home, we had it lots of times before, I never had a chance to publish a recipe here on the blog and so today is the day.

A salicornia maritima, ou espargos do mar, como aqui foi já, alcunhada por alguns Chefs, é um ingrediente muito comum no Reino Unido e muito apreciado como acompanhamento para pratos de peixe ou borrego.
Aqui fica o link, caso queiram ler mais sobre este fabuloso ingrediente.
Embora aqui em casa, já tenhamos degustado várias vezes refeições com salicornia, essas nunca tiveram oportunidade de vir parar aqui ao blogue, pois não houve tempo para reportagem fotográfica. Desta vez, tive o cuidado de preparar esta receita a tempo de a poder fotografar.
A receita é do Valentine Warner, um conceituado Chef britânico e garanto-vos que é absolutamente maravilhosa. Caso consigam arranjar salicornia, não deixem de experimentar, pois é uma experiência fantástica.
Receita para 2 pessoas que eu dupliquei pois somos 4 cá em casa.


para o beurre blanc:
140g manteiga sem sal, fria e cortada em cubos
2 chalotas médias, descascadas e finamente fatiadas
1/2 dente de alho, descascado e finamente fatiado
1 haste de tomilho fresco
1 folha de louro pequena
3 grãos de pimenta preta, esmagados
150ml vinho branco seco
1 colher chá de vinagre de vinho branco
flocos ou flor de sal
1 a 2 colheres sopa de sumo de limão
preparação:
Num tacho sobre lume médio, aquecer 1 colher sopa de manteiga.
Quando a manteiga tiver derretido, adicionar as chalotas, o alho, o tomilho e os grãos de pimenta e cozinhar por 2 ou 3 minutos, ou até as chalotas estarem macias mas sem cor.
Adicionar o vinho e o vinagre e quando levantar fervura, cozinhar até quase todo o líquido ter evaporado.
Adicionar a manteiga, 1 cubo de cada vez, mexendo sempre com a vara de arames.
O molho está pronto, quando toda a manteiga tiver sido incorporada e o molho estiver espesso e brilhante.
Coar o molho para uma taça aquecida, temperar de sal a gosto e misturar-lhe o sumo do limão, também a gosto.
Manter o molho em local quente até ao momento de servir, tendo em atenção que não seja um local quente demais, senão o molho pode talhar.
para a truta salmonada:
2 a 3 colheres sopa de farinha de trigo branca
sal e pimenta preta moída na altura
2 a 3 colheres sopa de óleo de girassol
2 lombos de 200g cada de truta salmonada
preparação:
Aquecer o óleo numa frigideira.
Colocar a farinha num prato e temperar de sal e pimenta.
Secar bem os lombos de truta com papel absorvente de cozinha e passá-los (lado da pele), pela farinha. Sacudindo a farinha em excesso.
Colocar a truta na frigideira, com o lado da pele virado para baixo e cozinhar por 3 a 4 minutos, ou até que a pele da truta esteja douradinha e mais de metade do lombo tenha uma cor opaca.
Virar a truta e fritar do outro lado por mais 1 minuto ou a gosto.
para a salicornia:
2 bons punhados de salicornia, lavada e talos mais grossos descartados
1 colher sopa de manteiga
1 a 2 colheres sopa de sumo de limão
pimenta preta moída na altura
preparação:
Colocar a salicornia numa panela de água a ferver (atenção, não pôr sal, pois a salicornia é salgada) e cozer por 2 ou 3 minutos, ou até estar macia.
Escorrer bem e voltar a colocar a salicornia na panela.
Adicionar a manteiga, o sumo do limão e pimenta a gosto.
para servir:
Dividir a salicornia por pratos aquecidos, colocar os lombos de truta em cima da salicornia e rodear com o berre blanc.

Scrambled eggs with farinheira and crostini / Ovos mexidos com farinheira e pão torrado.


When food bloggers meet is mainly to talk about food and eat right?
Well, that's what we did last October when I met with this girl and this girl and we add a fantastic day in Lisbon.
We add lunch at Mercado da Ribeira, a fabulous foodie spot to visit and where you can have fabulous food and buy some of our portuguese fantastic produces. Then we went up to Chiado and we add a fabulous afternoon snack at the Tartine, a charming and very pretty café, just before ending the day at Santini's for one of the most delicious ice creams you can get. It was a fabulous day and I wish we can do it again one day. Just the 3 of us!!
Having that fabulous day in mind, I tried to recreate the delicious scrambled eggs with farinheira crostini that we add at the Tartine and I made this fabulous José Avillez recipe.
Farinheira is a unique portuguese kind of smoked sausage and if you can get hold of it, you should try this very traditional portuguese speciallity.
ingredients (serves 4):
1 farinheira
6 eggs
crusty bread, thinly sliced
50g shallots, finely chopped
1 tsp thyme leaves
olive oil, for the toasts and for frying
salt and freshly ground pepper
sea salt flakes, to finish
method:
Preheat the oven to 180ºC.
Cook the farinheira in water until tender. Drain and allow it to cool a bit before taking it out of the case and mashing the inside with a fork. Discard the case.
Put the sliced bread on a baking tray. Season with salt and pepper and drizzle with olive oil.
Bake for 5 minutes or until the bread is golden and crunchy.
Whisk the eggs in a medium bowl. Add the mashed farinheira and the thyme leaves. Season with salt and pepper to taste.
Heat the olive oil in a non stick frying pan. Add the shallots and cook, over a medium low heat, until softened but not coloured.
Turn the heat up and add the egg mixture to the frying pan whisking all the times until the eggs are cooked but not completely set. Turn off the heat and keep whisking.
Sprinkle the scrambled eggs with a pinch of sea salt flakes and serve with the toasted bread.

Quando food bloggers se encontram, normalmente, ou é para falar de comida, ou comer, certo?
Pois foi isso mesmo que aconteceu num belo Sábado de Outubro passado aquando da minha visita a Lisboa, em que me encontrei com estas duas espectaculares meninas (esta e esta).
Passámos um dia fabuloso juntas, a comer e a falar de comida claro...
Almoçámos no Mercado da Ribeira, depois subimos ao Chiado apreciando a paisagem, tagarelando e aproveitando o dia fabuloso de Sol que se fazia sentir.
Fomos lanchar à Tartine, tendo depois terminado o nosso périplo culinário com um absolutamente divino gelado na  Santini.
Foi um dia espectacular que espero e desejo, poder repetir outra vez, com estas mesmas DUAS bem dispostas e divertidas meninas!!
Dito isto e nostalgias à parte, as saudades de bons momentos batem à porta quando menos esperamos e não tendo nem as meninas nem os locais por perto, recriei na minha cozinha, a fabulosa tartine de ovos mexidos com farinheira que comemos nesse dia na Tartine.
Utilizei uma receita de um dos meus Chefs portugueses preferidos, o José Avillez, e de repente foi como se estivesse de novo em Lisboa, a lanchar e a rir com a Helena e com a Marmita...
ingredientes (para 4 pessoas):
1 farinheira
6 ovos
pão alentejano, finamente fatiado
50g chalotas, picadas
1 colher chá folhas de tomilho fresco
azeite para as tostas e para a frigideira
sal e pimenta preta moída na altura
flor de sal, para polvilhar


preparação:
Aquecer o forno a 180ºC.
Cozer a farinheira em água até estar macia.
Escorrer a farinheira, descartar a pele e esmagar o interior com um garfo.
Colocar o pão fatiado num tabuleiro, polvilhar com sal e pimenta e regar com um fio de azeite.
Levar ao forno por 5 minutos, ou até o pão estar douradinho e crocante.
Numa taça, bater os ovos com varas de arame. Adicionar a farinheira esmagada e as folhas de tomilho. Temperar de sal e pimenta a gosto.
Aquecer o azeite numa frigideira. Adicionar as chalotas e cozinhar, em lume médio a baixo, até estas estarem macias mas sem ganharem cor.
Aumentar o lume e adicionar a mistura dos ovos, mexendo energicamente o tempo todo.
Quando os ovos estiverem quase cozidos, mas ainda moles, retirar do lume, continuando a mexer. Os ovos querem-se húmidos, portanto cuidado neste passo para não os deixar secar.
Salpicar os ovos com flor de sal e servir com as tostas.

Roasted chicken with Jerusalem artichokes and lemon / Frango assado com girassol batateiro (alcachofras de Jerusalem) e limão.


Another recipe from Yotam Ottolenghi fabulous cookbook.
This time, a fantastic and very aromatic chicken surrounded by a small combination of very flavoursome vegetables.
Start preparing this recipe the night before, as it improves in flavour if marinated in the fridge overnight.
ingredients (serves 4):
450g Jerusalem artichokes, peeled and cut lengthways into 1,5cm wedges
3 tbsp lemon juice
8 chicken thighs, on the bone and the skin on (I used thighs and drumsticks) or a small whole chicken, divided into 4.
12 banana shallots*, peeled and halved lengthways (I couldn't get banana shallots so I used the round ones).
12 large garlic cloves, sliced
1 medium lemon, cut in half lengthways and then into very thin slices
1 tsp saffron threads
50ml olive oil
150ml cold water
1 1/2 tbsp pink peppercorns, slightly crushed
10g fresh thyme leaves
40g tarragon leaves, chopped
2 tsp salt
1/2 tsp black pepper


method:
Put the Jerusalem artichokes in a saucepan. Cover with plenty of water and half the lemon juice (1 1/2 tbsp). Bring to the boil, reduce the heat and simmer until tender but not soft. Drain and leave to cool.
Place the cooled Jerusalem artichokes and all the remaining ingredients, excluding the remaining lemon juice and half of the tarragon, in a large bowl and mix everything together very well. Cover and leave to marinate in the fridge overnight or for at least 2 hours.
Preheat the oven to 240ºC.
Arrange the chicken, skin side up, in the centre of a roasting tin and spread the remaining ingredients around the chicken.
Roast for 30 minutes and after that time, cover the tin with foil and cook for a further 15 minutes, or until the chicken is cooked through.
Remove from the oven and add the remaining lemon juice and tarragon. Stir well, taste for seasoning and serve.

*Tip: I learnt this tip with a famous Chef and it's a very useful one.
The easiest way to peel shallots is to put them in a bowl and pour boiling water over them. Drain the shallots after a few seconds and the peel will come away very easily and without any fuss.

Mais uma receita magnífica, do fabulástico livro Jerusalem do Senhor Yotam Ottolenghi.
Desta vez trago-vos este franguinho, bem aromático e delicioso e super bem acompanhado.
O melhor é começarem a preparar a receita de véspera, pois o sabor fica muito mais intenso e delicioso se os ingredientes "marinarem" no frigorífico de um dia para o outro.
ingredientes (para 4 pessoas):
450g girassol batateiro ou alcachofras de Jerusalem (como lhe quiserem chamar), descascadas e cortadas longitudinalmente, em fatias de 1,5cm de espessura.
3 colheres sopa de sumo de limão
8 sobre coxas de frango, com pele e osso, ou um frango pequeno dividido em 4 (eu usei coxas e sobre coxas).
12 chalotas banana*, descascadas e cortadas ao meio no sentido do comprimento (eu não consegui arranjar a variedade banana e usei das redondas).
12 dentes de alho grandes, laminados
1 limão médio, cortado ao meio no sentido do comprimento e depois em fatias muito finas
1 colher chá de filamentos de açafrão
50ml azeite
150ml água fria
1 1/2 colheres sopa de pimenta rosa, ligeiramente esmagada
10g folhas de tomilho fresco
40g folhas de estragão, picadas
2 colheres chá de sal
1/2 colher chá de pimenta preta moída
preparação:
Colocar o girassol batateiro numa panela, cobri-lo com água e metade do sumo de limão ou seja, 1 1/2 colheres sopa. Quando levantar fervura, abrandar o lume e cozer até estar tenro, mas sem se desfazer. Escorrer e deixar arrefecer.
Depois de frio, colocar o girassol batateiro e todos os restantes ingredients, à excepção das restantes 1 1/2 colheres sopa de sumo de limão e de metade do estragão (reserve-os), numa taça grande e misturar tudo muito bem.
Cobrir a taça com película aderente e colocar no frigorífico, de preferência de um dia para o outro, ou pelo menos, durante 2 horas.
Aquecer o forno a 240ºC.
Retirar os pedaços de frango da marinada e colocá-los, pele virada para cima, no meio de uma assadeira.
Rodear o frango com os restantes ingredientes da marinada, incluindo o molho, e levar ao forno por 30 minutos.
Após esse tempo, tapar a assadeira com papel de alumínio e levar ao forno por mais 15 minutos, ou até o frango estar cozido.
Retirar do forno e adicionar os restantes sumo de limão e estragão. Mexer, rectificar os temperos e servir.

*Dica: Porque #aliasabecozinhar e #gostadepartilhar, deixo-vos esta dica fantástica, que aprendi com um famoso Chef e que dá imenso jeito.
Para descascar chalotas facilmente, coloquem-as numa taça e cubram-nas com água a ferver. Escorram-nas após uns segundos e descasquem-nas de seguida. Verão que fácil é descascá-las desta maneira, pois a casca sai toda inteirinha e rapidamente.

Warm chicken salad with jerusalem artichokes, spinach and bacon / Salada quente de frango com girassol batateiro, espinafres e bacon.


This recipe was marked to be tried for a long time, as I had to wait for the jerusalem artichokes season to try it.
Now that I could finally put my hands on a fair amount of those beauties, I'll be testing a few recipes with jerusalem artichokes.
Gordon Ramsay is my favourite Chef of all times. I have lots of admiration and passion for lots of Chefs and cooks, but Gordon is the one that got me mad and obsessed with food and I love to try his recipes as they always turn out beautiful and delicious.
ingredients (serves 4):
2 rosemary springs
3 thyme springs
1 bay leaf
2 garlic cloves, peeled
500ml chicken stock
2 to 3 chicken breasts
4 tbsp olive oil
50g butter
150g jerusalem artichokes, scrubbed or peeled
2 tbsp lemon juice
125g bacon rashers
50ml classic vinaigrette
1 tsp sherry vinegar
1 shallot, peeled and finely chopped
150g baby spinach leaves
to serve (optional):
deep fried onion rings


method:
Put the herbs, garlic and stock in a pan and bring to a simmer.
Add the chicken breasts and poach gently for 3 minutes or until firm to the touch.
Cool the chicken in the poaching liquid, then drain.
In a frying pan heat 2 tbsp of the olive oil. Fry the chicken breasts for 4 to 5 minutes on each side until golden.
Add half the butter and cook for a further 2 minutes.
Fill a small saucepan with water, add the lemon juice and simmer the artichokes for 5 to 6 minutes.
Drain, cool and slice them thickly.
Fry the artichokes in the remaining olive oil and butter for 2 to 3 minutes each side until golden brown.
Drain over kitchen paper.
Pan fry the bacon until crispy. drain over kitchen paper and cut into pieces.
Whisk the vinaigrette with the sherry vinegar and the shallot.
Cut each the chicken breast lengthways into 6 slices.
To serve, arrange the spinach, chicken slices, bacon and artichokes on a serving plate.
Dress with the vinaigrette and, if using, garnish with fried onion rings.

Tinha esta receita marcada há séculos para testar, pois estive pacientemente à espera da época do girassol batateiro e como a época começou em Outubro e é muito curta, desta vez, e como consegui deitar a mão a uma boa quantidade dele, não podia deixar de, finalmente, experimentar esta deliciosa salada.
A receita é do Gordon Ramsay! O meu Chef favorito de sempre, pois é graças a ele que tenho esta paixão e obsessão por comida e por cozinha.
Admiro e sou apaixonada por vários Chefs e cozinheiros talentosos, mas o Gordon será sempre o meu favorito.
Adoro experimentar e testar as receitas dele, pois não houve, até hoje, uma única receita deste Senhor que não ficasse bem, ou não fosse deliciosa. Sempre perfeitas e esta é mais uma que vai para o top!!
ingredientes (para 4 pessoas):
2 hastes de alecrim
3 hastes de tomilho
1 folha de louro
2 dentes de alho, descascados
500ml caldo de galinha
2 ou 3 peitos de frango (dependendo do tamanho)
4 colheres sopa de azeite
50g manteiga
150g girassol batateiro, lavado e esfregado com uma escova, ou descascado
2 colheres sopa de sumo de limão
125g fatias finas de bacon
50ml molho de vinagrete
1 colher chá de vinagre de xerez
1 chalota, descascada e picada muito finamente
150g folhas de espinafres bebé
para servir (opcional):
argolas de cebola frita


preparação:
Colocar as aromáticas (alecrim, folha de louro e tomilho), o alho e o caldo de galinha num tacho e levar ao lume até levantar fervura.
Colocar os peitos de frango no tacho e cozer por cerca de 3 minutos, ou até estarem firmes ao toque.
Deixar o frango arrefecer no líquido de cozedura e, quando frio, escorrer e reservar.
Numa frigideira, aquecer 2 colheres de sopa de azeite. Fritar os peitos de frango no azeite quente, por cerca de 4 a 5 minutos de cada lado, ou até estarem douradinhos em ambos os lados.
Adicionar metade da manteiga e deixar fritar por mais 2 minutos.
Encher um tacho pequeno com água e juntar-lhe o sumo do limão. Colocar o girassol batateiro na água e cozer por cerca de 5 ou 6 minutos.
Escorrer o girassol batateiro e cortá-lo em fatias grossas.
Numa frigideira, aquecer as restantes quantidades de azeite e manteiga e fritar as rodelas de girassol batateiro por cerca de 2 a 3 minutos de cada lado, ou até estarem douradinhas de ambos os lados. Escorrer sobre papel de cozinha e reservar.
Fritar o bacon até este estar douradinho e estaladiço. Escorrer sobre papel de cozinha e cortar em pedaços.
Entretanto, juntar a chalota e o vinagre de xerez ao vinagrete e misturar tudo muito bem.
Cortar os peitos de frango em 6 fatias longitudinais.
Numa travessa de serviço, colocar os espinafres, as fatias do frango, o bacon e o girassol batateiro.
Regar com o molho e salpicar com rodelas finas de cebola frita.

Honey roasted parsnip, carrot and shallot tart / Tarte de pastinacas, cenouras e chalotas assadas com mel.


Here at home, we are more and more loving vegetarian or vegetable based meals and this tart was a huge hit that pleased adults and kids and everybody was happy and asking for seconds.
ingredients for the spelt pastry (to line a 23cm tart tin):
220g wholemeal spelt flour
1 tsp dired quick yeast
1/2 tsp salt
2 tbsp olive oil
1 egg
60ml warm water
method:
Mix the flour, salt and yeast in a bowl.
Make a well in the centre and pour in the egg, olive oil and water.
Mix everything together until you get a soft dough.
Transfer the dough onto a lightly floured surface and knead for 2 minutes or until you have a soft but not sticky dough.
Roll out the dough with a rolling pin until 3mm thick and line a greased tart tin. Do not trim the edges yet.
ingredients for the filling:
200g carrots, sliced on the diagonal
200g parsnips, cut into matchsticks
180g shallots, halved (or quartered if they are big)
1 tbsp runny honey
40ml olive oil
1 tsp salt
1/2 tsp ground black pepper
100g Cheddar cheese, grated
150g Greek yoghurt
method:
Preheat the oven to 200ºC.
Put the carrots, parsnips and shallots in a roasting tin and drizzle with the honey and olive oil. Season with salt and pepper and toss everything together.
Cover the tray with foil and roast for 30 minutes.
Remove from the oven, leave covered and allow to cool for 10 to 15 minutes.
Reduce the oven temperature to 170ºC.
Mix 60g of the cheese into the roasted vegetables.
Mix the remaining cheese with the yoghurt and spoon the mixture into the tart shell.
Scatter the vegetables over the yoghurt mixture, spreading them evenly.
Trim the excess dough around the edges.
Bake in the oven for 25 to 30 minutes.
Remove from the oven and leave to cool.

Cá em casa estamos todos a ficar cada vez mais adeptos de refeições vegetarianas ou, pelo menos, baseadas em vegetais e esta tarte foi uma dessas deliciosas refeições e posso assegurar-vos que foi um sucesso entre miúdos e graúdos e toda a gente quis repetir.
ingredientes para a base de espelta (dá para forrar uma tarteira de 23cm de diâmetro):
220g farinha de espelta integral
1 colher chá de fermento biológico seco
1/2 colher chá de sal
2 colheres sopa de azeite
1 ovo
60ml água morna
preparação:
Numa taça, misturar a farinha, o sal e o fermento.
Fazer um buraco no meio da farinha e adicionar o ovo, o azeite e a água. Mexer tudo muito bem até obter uma massa macia.
Colocar a massa em cima de uma bancada ligeiramente enfarinhada e amassar por mais 2 minutos ou até obter uma massa macia mas não pegajosa.
Com a ajuda do rolo da massa, estender a massa até obter uma espessura de 3mm.
Untar uma tarteira com manteiga e forrá-la com a massa.
Não cortar os excessos de massa e reservar a tarteira preparada.
ingredientes para o recheio:
200g cenoura, cortada em rodelas diagonais
200g pastinaca, cortada em palitos
180g chalotas, cortadas ao meio (ou em quartos se forem grandes)
1 colher sopa de mel líquido
40ml azeite
1 colher chá de sal
1/2 colher chá pimenta preta moída
100g queijo Cheddar (ou outro similar), ralado
150g iogurte grego
preparação:
Aquecer o forno 200ºC.
Colocar as cenouras, pastinacas e chalotas num tabuleiro de ir ao forno. Regar com o mel e azeite e temperar com o sal e a pimenta. Misturar tudo muito bem, por forma a que todos os ingredientes fiquem bem incorporados.
Tapar o tabuleiro com folha de alumínio e levar ao forno por 30 minutos.
Retirar o tabuleiro do forno, mantê-lo coberto com o papel de alumínio e deixar arrefecer por 10 a 15 minutos.
Baixar a temperatura do forno para os 170ºC.
Misturar 60g do queijo ralado com os vegetais assados.
Numa taça, misturar o iogurte com o restante queijo e espalhar a mistura sobre a base da tarte.
Colocar os vegetais assados sobre o iogurte, tendo o cuidado de os espalhar numa camada uniforme.
Agora sim, cortar o excesso de massa à volta da altura dos vegetais.
Levar a tarte ao forno e cozer por cerca de 25 a 30 minutos.
Retirar do forno e deixar arrefecer na própria forma.
Nós comemos a nossa à temperatura ambiente.
