Lemon Coconut Panna Cotta with Blood Orange / Panna Cotta de Limão e Coco, com Laranja Sanguínea.


Here it is, another absolute stunner recipe, from Rita Serano FABULOUS, FABULOUS book "Vegan in 7", from which I've already shared this soup and this salad and a book from! honestly? I can't stop cooking. I might be turning vegan and not assuming it yet (lol)...
I love lemon as you all know and coconut is another ingredient that I totally adore so, this panna cotta couldn't go unnoticed!
And!!!
Let me tell you...
This Panna Cotta is Masterchef worthy!
It has just the perfect wobble and its texture and flavours are amazing!!
I added a few grinds of vanilla powder to my panna cotta just because, as you know, "vanilla" is my first surname and, as blood oranges are now in season, I've topped my panna cotta with segmented blood orange but, feel free to top it with any oranges variety you like or even with any other seasonal fruit.
As oranges are Marta's "ingredient of the month", this is my last post for Marta and her January table.

Fig & Rose Millefeuille / Mil Folhas de Figos e Rosas.


You all know I love a good millefeuilles right?
To me, Millefeuilles are like Pavlovas! Can't see one new recipe of either of them, and you'll spot me running into the kitchen to make it straightaway!
In this post, you can see the list of all the homemade millefeuilles I've already made until today and, this one, with all these exotic and Persian flavours, couldn't go unnoticed and not being part of my millefeuilles list, right?
This is another great recipe from Sabrina Ghayour beautifully gorgeous "Feasts" book and it was so, so delicious that I had to share it with you all.
Try it and thank me later because you will be delighted :))).

Burrata with burnt Oranges, Pistachios, Mint and Pomegranate / Burrata com Laranjas queimadas, Menta e Romã.


Delicious little sharing "salad" type plate, from Sabrina Ghayour new book "Feasts" and one that fits perfectly into this month's "Marta's ingredient of the month" which is, pomegranate!!
I truly adore Sabrina's books and this last one, "Feasts" is a real delight.
Full of colorful and delightful recipes and the type of book that makes you go to the kitchen and cook the book off!
This salad was the first recipe I prepared form the book. Not just because I'm mad about Burrata, but also because all the ingredients and colours combination was screaming "PREPARE ME"!!
This plate is not, just easy and quick to prepare, but it's also a great combination of flavours and textures.
As soon as I saw that Marta chose pomegranate as the ingredient of the month, I knew that this gorgeous plate would be a winner at her monthly table and here it is!

Carrot Keftedes / Keftedes de Cenoura.


Although, usually, keftedes are made with minced meat, this vegetarian option is a great and super delicious solution for those that are avoiding meat.
Served with a simple salad, Skordalia and/or Tabbouleh, these are just perfect warm or cold.
The recipe is from Chef Maria Elia "Smashing Plates" cookbook and it's another fabulous suggestion that I'm leaving for Marta and her May "Carrot - the ingredient of the month"!

Warm Squid salad with Cucumber, Mint and Aioli / Salada quente de Lulas, Pepino, Menta e Aioli.


This month we are cooking from the absolutely gorgeous Melissa Clark book "Dinner", for the Rainydaybites online Cook Book Club.
I already told you about this book in this post, when I posted this fabulous chicken recipe and, today, I'm leaving you this super delicious salad. A warm salad, with ingredients that I love.
A fabulous combination and explosion of flavours and textures that tantalizes your taste buds.

Red Velvet Napoleons with Raspberries / Mil Folhas de Veludo Vermelho e Framboesas.


You know I can't resist a millefeuille recipe right?
Here o the blog, you can find 3 millefeuilles recipes (here, here and here) and each one, better than the previous one!!
So, as soon as I got Lorraine Pascale new book "Bake", I couldn't resist but make this millefeuilles straightaway!
The book is amazing!! Full of delicious recipes and I have lots of them already marked down to be tried.
As for this one, as expected, the millefeuilles were a true delight and a true winner and you should tried it!
Not the healthiest recipe, as you can notice by the ingredients list, but surely, a treat!!


Notes:
  • Of course, I made my own homemade puff pastry, but of course, you can use shop bought puff pastry if that makes you more comfortable.
  • Filling wise, the full fiiling recipe is too much for this recipe so, I advise you to make only half the quantity of the filling because it will be more than enough.

Festive Sangria and Happy 2016 / Sangria festiva e Feliz 2016.


2015 is finally over!
An year that was very good in most aspects of my life but very ackward in others.
2016 is here and as we say in Portugal "New year, New life"! and that's what I expect it to be: A very good year all-round!
To start this 2016 in a very good mood and with lots of joy, I'm leaving you the recipe for this delicious "Donna Hay Magazine" Festive Sangria and therefore, CHEERS to the brand new year that is starting now and HAPPY NEW YEAR to all of you!
ingredients (serves 6 to 8):
750ml chilled Jacobs Creek Cool Harvest Shiraz Rosé
750ml chilled lemonade
750ml chilled apple juice
1 tsp vanilla extract
1 pomegranate, cut into wedges
4 springs of mint
ice cubes, to taste
method:
Mix all the ingredients together and stir to combine.
Add ice cubes and serve.

2015 acabou finalmente!!!
Um ano recheado de coisas boas em muitos aspectos da minha vida, mas muito estranho e Super decepcionante em determinadas áreas.
2016 já começou e como se costuma dizer, "Ano Novo, Vida Nova".
De nada vale chorar sobre o leite derramado, pois as acções ficam para quem as pratica e eu entro neste novo ano de alma lavada e de consciência tranquila, pois sei que tentei desfazer qualquer injustiça que em 2015 tenha cometido e para mim é o quanto basta:
O facto de eu estar de bem comigo própria!
Assim sendo, desejo a todos os que por aqui passam um MUITO FELIZ 2016, cheio de Saúde, Paz, Harmonia e muitas Alegrias e Sonhos realizados e para o começar alegremente, deixo-vos a receita desta Sangria da revista da Donna Hay que, não sendo quase nada alcoólica, é super refrescante, tem uma cor linda e é mesmo apropriada para um brinde harmonioso e festivo. Tchin Tchin!!


ingredients (para 6 a 8 pessoas):
750ml vinho Jacobs Creek Cool Harvest Shiraz Rosé, gelado
750ml de limonada
750ml sumo de maçã, gelado
1 colher chá de extracto de baunilha
1 romã, cortada em quartos
4 hastes de menta
cubos de gelo, a gosto
preparação:
Misturar todos os ingredientes num recipiente e misturar bem.
Adicionar o gelo e servir.

Sticky cassis pork ribs with mint and broad bean couscous / Costelas de porco caramelizadas com crème de cassis, acompanhadas com couscous de menta e favas.



I confess that when I was reading the ribs recipe I was afraid that it would be too sweet and that I would have to deal with lots of complaining and moaning here at home but..., as I am always truly curious about "strange" and different combinations, I decided to try it anyway and I'm very pleased that I did so, because it was a real delight and no complains at all.
Big smiles of satisfaction and lots of compliments of joy and delight that's what I got, which means, that I'll have to make them again!
ingredients (serves 4 to 6):
for the ribs:
160g blackcurrant jam
4 tbsp runny honey
125ml crème de cassis
1 tsp freshly ground black pepper
1 lemon, zested and roughly chopped
salt
1.5kg pork ribs
method:
Whisk together the jam, honey, crème de cassis, pepper, lemon zest and 2 tsp of salt.
Place the ribs, chopped lemon and the marinade in a freezer bag and seal it tightly. Give it a shake so the ribs are well coated with the marinade.
Leave to marinate in the fridge for at least 1 hour or overnight.
Preheat the oven to 150ºC.
Place the ribs, marinade and chopped lemons in a large tray. Cover with foil and cook for 2 hours.
Turn the heat up to 200ºC, remove the foil and baste the ribs with the marinade. Roast for another 15 to 30 minutes, basting a couple of times.
The sauce should be sticky and thick and the ribs should be dark and glossy from the sauce.
Remove from the oven, transfer the ribs to a dish and cover with foil.
Pour the sauce into a saucepan and boil for 5 to 10 minutes and then pour the reduced sauce over the ribs.



for the couscous:
20g fresh mint, leaves and stalks separated
200g fresh or frozen broad beans
425ml boiling water
200g couscous
2 tbsp olive oil
method:
Roughly chop the mint stalks and place in a pot with the broad beans, a pinch of slat and the boiling water.
Bring to a boil and then pour over the couscous.
Turn off the heat, cover with clingfilm and leave to stand for 10 minutes.
Remove the mint stalks and fluff up with a fork.
Stir in the mint leaves, olive oil and taste for salt.
Serve with the ribs.

Embora todos cá em casa adorem costelas de porco, ou entrecosto, cozinhado, grelhado ou assado de forma tradicional, confesso que ao ler esta receita, tive um bocado de receio que ficasse doce demais e que no final ainda tivesse de ouvir comentários tipo "estás sempre a inventar...", "porque não fazes coisas normais...?", enfim... acho que alguns de vocês saberão do que falo, certo?
Ora, como eu sou adepta de experimentar tudo o que me pareçam combinações "estranhas" ou pouco prováveis, claro que pus de lado os meus receios e experimentei a receita.
O resultado final não podia ser melhor e os comentários, ao invés de serem os acima referidos, foram comentários de satisfação, agrado e "não há mais?"... ou seja, uma receita a repetir sem dúvidas e com confiança!
ingredientes (para 4 a 6 pessoas):
para as costelas de porco:
160g doce de groselha preta
4 colheres sopa de mel líquido
125ml crème de cassis (licor de groselha preta)
1 colher chá de pimenta preta moída na altura
1 limão - primeiro, casca zestada e depois o limão cortado em pedaços grosseiros
sal
1.5kg costelas de porco ou entrecosto separado em costelas
preparação:
Para preparar a marinada, numa taça, misturar bem o doce de groselha, o mel, o licor, a pimenta, a raspa do limão e 2 colheres chá de sal.
Colocar as costelas, os bocados do limão e a marinada num saco de cozinha com fecho (zip).
Fechar bem o saco e sacudi-lo, por forma a que todas as costelas fiquem bem cobertas com o molho da marinada.
Colocar o saco no frigorífico e deixar marinar por, no mínimo 1 hora, mas de preferência, de um dia para o outro.
Aquecer o forno a 150ºC.
Colocar o conteúdo do saco num tabuleiro, cobrir o tabuleiro com folha de alumínio e levar ao forno por cerca de 2 horas.
Aumentar a temperatura do forno para os 200ºC, retirar o papel de alumínio, e regar as costelas com o molho.
Cozinhar por mais 15 a 30 minutos, regando as costelas com o molho mais uma ou duas vezes, ou até que o molho esteja espesso e caramelizado e as costelas estejam tostadinhas e brilhantes.
Retirar o tabuleiro do forno, colocar as costelas num prato de serviço e cobrir com folha de alumínio.
Colocar o molho num tacho e ferver por 5 a 10 minutos, ou até que tenha reduzido.
Cobrir as costelas com o molho reduzido e servir com os couscous.



para os couscous:
20g menta fresca, talos e folhas separados
200g favas, frescas ou congeladas
425ml água a ferver
200g couscous
2 colheres sopa de azeite
preparação:
Picar grosseiramente os talos da menta e colocá-los num tacho, juntamente com as favas e uma pitada de sal.
Deitar a água a ferver por cima e quando esta voltar a levantar fervura, adicionar os couscous, desligar o lume, cobrir com película aderente e deixar repousar por 10 minutos.
Remover os talos da menta do tacho e discartá-los.
Soltar os couscous com a ajuda de um garfo e adicionar as folhas da menta e o azeite. Rectificar o sal e servir os couscous com as costelas.

Grapefruit tart / Tarte de toranja.


Mad as I am about citrus and brûlée, as soon as I saw this recipe in this adorable Hannah Miles book, I knew it would be the first to be tried.
The combination, even if not a classic one, is just amazing and surprisingly delicious.
ingredients for the pastry:
(if you don't want to make your own pastry, use 500g of shop bought shortcrust pastry)
280g plain flour
pinch of salt
115g butter, chilled and cut into small cubes
plain flour, for dusting
method:
Sift the flour into a bowl and add the salt.
Rub the butter into the flour until you have the consistency of fine breadcrumbs.
Add 1 to 2 tbsp of cold water and mix in with a round bladed knife, adding a little more water if the mixture is too dry.
Bring the dough together into a ball, wrap in clingfilm and chill for 1 hour.
Grease a 23cm loose bottom, round fluted tart pan.
On a lightly floured surface, roll out the pastry into a circle and line the prepared tin with the rolled pastry, trimming the edges.
Prick the base of the pastry with a fork and chill in the fridge for 30 minutes.
Preheat the oven to 200ºC.
Line the pastry with baking paper and fill with baking beans.
Bake for 15 to 20 minutes or until the pastry is golden brown.
Low the oven temperature to 180ºC.
Remove the beans and baking paper.


for the custard:
9 eggs
350g caster sugar + extra for sprinkling
juice of 2 red grapefruit, sieved
1 tbsp mint leaves
1 tbsp lemon and mint cordial
300ml double cream
method:
Whisk together the eggs, sugar, grapefruit juice, mint and cordial in a bowl.
Slowly pour in the cream, whisking all the time.
Place the bowl of a pan of simmering water until the mixture becomes just warm. This will take about 5 minutes. Strain the mixture to remove the mint and then pour it into the pastry case.
Bake for 30 to 40 minutes until the top of the custard is lightly golden and has risen.
Remove from the oven and let cool.
Just before serving, sprinkle the top with a thin layer of caster sugar and caramelize into a brûlée using a blowtorch.
Serve immediately.

A minha paixão por citrinos e brûlée é já sobejamente conhecida e assim que vi esta receita  neste livro lindo da Hannah Miles, decidi logo que seria a primeira a ser testada.
A combinação de ingredientes, embora não sendo uma combinação clássica, é absolutamente surpreendente e deliciosa.
ingredientes para a massa:
(caso não queiram fazer a massa, podem usar 500g de massa quebrada de compra)
280g farinha
uma pitada de sal
115g manteiga, fria e cortada em cubos
farinha, para a bancada
preparação:
Peneirar a farinha e o sal para uma taça.
Adicionar a manteiga e esfregá-la na farinha, usando as pontas dos dedos, até obter uma mistura areada.
Adicionar 1 ou 2 colheres de sopa de água gelada e misturar com a ponta de uma faca de mesa. Adicionar mais um bocadinho de água se a massa parecer muito seca.
Juntar a massa numa bola, enrolar em película aderente e refrigerar por cerca de 1 hora.
Untar uma forma de tarte de fundo amovível com cerca de 23cm de diâmetro.
Estender a massa sobre uma bancada enfarinhada e forrar a tarteira com a massa, aparando as extremidades para que a massa fique direitinha em toda a bordadura da tarteira.
Furar a base da massa com um garfo e refrigerar por 30 minutos.
Aquecer o forno a 200ºC.
Forrar a massa da tarteira com papel vegetal e encher com bolas de cerâmica, arroz ou feijão.
Levar ao forno por cerca de 15 a 20 minutos, ou até a massa estar douradinha.
Retirar a tarteira do forno e baixar a temperatura para os 180ºC. Retirar o papel vegetal e as bolas de cerâmica da tarteira e reservar.


para o creme:
9 ovos
350g açúcar refinado branco + extra para polvilhar e caramelizar
sumo de 2 toranjas (de preferência das de polpa vermelha), coado
1 colher sopa de folhas de menta
1 colher sopa de concentrado de menta e limão (cordial)
300ml natas para culinária (double cream)
preparação:
Numa taça, bater os ovos com o açúcar, o sumo das toranjas, as folhas de menta e o cordial.
Adicionar as natas devagarinho, batendo o tempo todo.
Colocar a taça sobre um tacho de água a ferver, até a mistura aquecer. Este processo poderá demorar cerca de 5 minutos.
Coar a mistura para retirar as folhas da menta e deitar o creme sobre a massa.
Levar ao forno por cerca de 30 to 40 minutos ou até a superfície estar douradinha e tiver crescido ligeiramente.
Retirar do forno e deixar arrefecer.
Antes de servir, polvilhar a superfície da tarte com uma camada fina de açúcar refinado branco e caramelizar com a ajuda de um maçarico.
Servir imediatamente.

Watercress and mint soup with bacon shards / Sopa de agrião e menta, com bacon estaladiço.


What caught my attention when I saw this soup on the new Jamie Oliver magazine, was not just the ingredients that I love, but also the vibrant green colour of it and I didn't rest until I tried it.
It is a truly delicious and very comforting soup.
The quantities mentioned on the recipe are for 2, but as a starter, I found that it is more than enough for 4 people.
ingredients:
450g watercress, roughly chopped
1 large handful of mint leaves
20g butter
1 tbsp olive oil
280g onion, finely chopped
250g potato, peeled and cut into very small cubes
650ml vegetable stock
4 rashers of bacon, rind removed, grilled until crisp, drained and broken into shards
100ml fat free Greek yoghurt
method:
Prepare the watercress and mint, reserving a few leaves of each for decoration.
Fill a large bowl with cold water and a handful of ice cubes.
Bring a large pan of water to the boil and wilt the prepared mint and watercress in batches, draining and plunging it straightaway in the iced water. Drain and reserve.
Heat the butter and olive oil in a pan over medium low heat. Add the onions, potatoes and a pinch of seasoning.
Cook gently until soft but not coloured.
Add the stock, bring to just below the boil, cover and simmer for 10 minutes.
Squeeze any excess water from the watercress and mint and add them to the soup.
Take the pan off the heat and purée the mixture with an hand held stick blender or in a food processor.
Return the soup to the pan, whisk in the yoghurt and heat gently, stirring, but don't  boil it.
Season to taste and serve topped with the bacon shards and the reserved leaves.

Quando vi esta sopa na nova revista do Jamie, não só fiquei deliciada com os ingredientes que adoro, mas também e para ser honesta, principalmente, o que mais me cativou nesta sopa foi a cor, pois o seu verde vibrante não me deixou de todo indiferente.
Uma sopa absolutamente deliciosa e magnífica para estes dias frios que por aqui se têm feito sentir.
A receita diz que a sopa é para 2 pessoas. Poderá ser para 2 pessoas se servida como refeição, mas se for servida como entrada, dá à vontade para 4 pessoas.
ingredientes:
450g agrião, picado grosseiramente
1 bom punhado de folhas de menta
20g manteiga
1 colher sopa de azeite
280g cebola, finamente picada
250g batata, descascada e cortada em cubos muito pequeninos
650ml caldo de legumes
4 fatias finas de bacon, sem pele, grelhado até estar crocante, escorrido e cortado em pedaços
100ml iogurte grego magro
preparação:
Preparar o agrião e a menta e reservar algumas folhas de ambos para decoração.
Encher uma taça com água fria e algumas pedras de gelo.
Colocar uma panela de água ao lume até esta estar a ferver.
Escaldar o agrião e a menta em porções na água a ferver, escorrer e mergulhar de imediato na água com gelo. Escorrer e reservar.
À parte, numa panela sobre lume brando, aquecer manteiga e o azeite. Adicionar a cebola, as batatas e um pouco de sal e pimenta e cozinhar até ambos estarem macios mas sem cor.
Adicionar o caldo de legumes e quando estiver quase a levantar fervura, tapar a panela e cozinhar em lume médio a baixo, por cerca de 10 minutos.
Escorrer o excesso de água do agrião e da menta e adicioná-los à sopa.
Retirar a panela do lume e reduzir a sopa a puré.
Voltar a colocar a sopa ao lume, adicionar o iogurte e aquecer, mexendo sempre, mas não deixar ferver.
Rectificar de sal e pimenta e servir a sopa decorada com os pedaços de bacon e as folhas de agrião e menta reservadas.

Pea, mint and coconut soup / Sopa de ervilhas, menta e leite de coco.


From one of my favourite blogs of all times, a fabulously delicious soup and a great and very yummy combination of flavours.
I served it as a starter at a dinner party and it was a huge success!

Uma sopa absolutamente fabulosa, receita de um dos meus blogues favoritos de sempre, e que, em termos de combinação de sabores, é algo de transcendental.
Eu servi-a como entrada num jantar de amigos e foi um verdadeiro sucesso!
A receita em inglês está aqui, mas deixo-vo-la traduzida.
ingredientes (para 4 pessoas):
1 colher sopa de óleo de coco, ou azeite virgem
1 cebola, picada
2 dentes de alho, picados
500g ervilhas frescas descascadas (cerca 1,5 quilos com casca) ou ervilhas congeladas, descongeladas (que foi o que eu utilizei).
1 colher chá de sal
folhas de 10 hastes de menta
350ml caldo de legumes ou água
350ml leite de coco (completo)
azeite virgem, para regar
micro ervas, para decorar (eu decorei com folhas de menta)
preparação:
Numa panela sobre lume médio, aquecer o óleo ou azeite.
Adicionar a cebola e os alhos picados e cozinhar por cerca de 3 a 5 minutos, ou até estes estarem macios.
Adicionar o caldo, ou água, as ervilhas, a menta e o leite de coco.
Quando levantar fervura, desligar o lume.
Com a varinha mágica ou no liquidificador, reduzir a sopa a um puré macio.
Temperar de sal a gosto e se achar necessário, juntar mais água ou caldo de legumes, por forma a adquirir a consistência desejada.
Servir a sopa em tigelas, regada com um fio de azeite e decorada com micro ervas, uma pitada de sal e pimenta.
