Harissa Chicken with Leeks, Potatoes and Yogurt / Frango assado com Harissa, Alho francês, Batatas e Iogurte.


Second and last recipe challenge of the month and also a "Cook the Cover" challenge for May's Rainydaybites Cook Book Club.
Deborah asked us to cook this fabulous one sheet meal and I'm glad she did because, not just I love all the ingredients in this recipe, I also love the fact that there's almost no washing up after.
The combination of ingredients, as you might guessed by the title, is absolutely incredible and the textures and flavour are, both, absolutely fabulous.
Another great hit from Melissa Clark "Dinner: Changing the Game" book which, by all means, I'm loving to bits!

Sausage and white bean bake / Feijão branco com salsichas.


Today I'm leaving you this delicious, comforting and very easy to make suggestion.
The recipe comes from Pip McCormac gorgeous book "The Herb and Flower Cookbook".
A book full of fabulous pictures and delicious recipes, all featuring herbs and flowers in it.
All the herbs or flowers suggested in each recipe have a few alternatives so, in case you can't find one of them, you can always make the recipe using one of the suggested ones.
ingredients (serves 4 to 6):
25g butter
1 small leek, chopped
6 good quality sausages (I used venison sausages), meat squeezed out of their skins
1 red pepper, deseeded and chopped
1 tbsp chopped sage leaves (you can use marjoram, basil or thyme)
125ml red wine
200ml beef stock
1 tbsp tomato purée
400g tin of white beans, drained
salt and black pepper, to taste
method:
Put the butter into a bevy bottomed casserole and ser it over a medium heat.
Once melted, add the leek and allow it to sweat for 1 minute.
Add the sausage meat to the pan. Stir the meat as it cooks to help it to break down up a little.
When the sausage meat begins to brown, add the pepper and the herb of your choice.
Cook for 10 minutes, or until the meat looks cooked and the pepper is soft.
Add the wine and turn up the heat so the alcohol bubbles away and reduce.
Once it looks like it is drying out, add the stock, tomato purée, the beans, a pinch of salt and a couple of grinds of black pepper.
Stir everything together, put the lid on and turn down the heat. Cook for about 45 minutes.
Serve warm with a side of your choice.
According to the author, this stew is even better the day after.

A rapidez e facilidade da receita em nada compromete o sabor excelente da mesma e o quão reconfortante é, especialmente para esta altura do ano.
A receita é do livro lindo do Pip McCormac - "The Herb and Flower Cookbook".
Um livro recheado de fotos lindas e receitas magníficas, todas elas contemplando ervas aromáticas e/ou flores.
Uma das características positivas do livro, é que todas as receitas contemplam uma erva ou flor, mas ao mesmo tempo, sugere várias outras opções de substituição, o que é fantástico, pois caso não encontrem uma delas, encontrarão, com certeza, uma das sugestões apresentadas.


ingredientes (para 4 a 6 pessoas):
25g manteiga
1 alho francês pequeno, cortado em rodelas finas
6 salsichas frescas de boa qualidade (eu usei salsichas frescas de veado), carne retirada da película que as envolve.
1 pimento vermelho, sem sementes e cortado em cubos pequenos
1 colher sopa de folhas de salva, picada (podem substituir por manjerona, manjericão ou tomilho).
125ml vinho tinto
200ml caldo de carne
1 colher sopa de concentrado de tomate
1 lata de 400g de feijão branco, escorrido
sal e pimenta preta moída na altura, a gosto
preparação:
Colocar a manteiga num tacho (tipo caçarola), sobre lume médio.
Quando a manteiga estiver derretida, adicionar o alho francês e deixá-lo cozinhar por 1 minuto.
Adicionar a carne das salsichas e mexer, por forma a desfazer um bocado a carne.
Quando a carne começar a ficar escurinha, adicionar o pimento vermelho e a erva escolhida.
Cozinhar por cerca de 10 minutos, ou até a carne e o pimento estarem macios.
Adicionar o vinho tinto, aumentar o lume e deixar evaporar, mexendo, até o mesmo ter reduzido substancialmente e a mistura começar a secar.
Adicionar o caldo, o concentrado de tomate, o feijão e sal e pimenta a gosto.
Mexer tudo muito bem, tapar o tacho, baixar o lume para o mínimo e cozinhar por cerca de 45 minutos.
Servir quante, com um acompanhamento a gosto.
De acordo com o autor, este guisado sabe ainda melhor no dia seguinte, o que poderá ser uma boa opção para despachar com antecedência, o jantar ou almoço do dia seguinte.

Cream of spinach soup with flaked salmon / Creme de espinafres com lascas de salmão.


My suggestion today is this creamy and fabulous soup.
The recipe is from a very well known Portuguese Chef - Henrique Sá Pessoa - and it's the first recipe that I made from his last and amazing book called "A viagem do Salmão" - The salmon journey.
I got this book as a gift at Christmas time and I'm totally delighted and in love with it.
It is one of those books that you don't choose one, two or three recipes to test. You choose ALL of them. Truly incredible book!
ingredients (Serves 4):
200g salmon, cooked and flaked (skinless and boneless)
100g onion, chopped
150g leek, thinly sliced
250g baby spinach leaves
20ml olive oil
120g potatoes, cut into small cubes
4 tbsp crème fraîche
salt flakes and freshly ground black pepper, to taste
fresh watercress leaves drizzled with with oil, to serve
method:
Heat the oil in a pan over medium heat.
Add the onion and leek and cook for about 4 to 5 minutes, or until soft.
Add the potato, salt and pepper to taste and cover with water (just enough water, in order to come up to about 2 fingers over the vegetables).
Allow it to boil, reduce the heat and cook for 8 to 10 minutes, or until the potato is soft.
Add the spinach and cook for 1 minute.
Take the soup off the heat, blend until smooth and check the seasoning.
Serve the soup warm, topped with the salmon flakes, a few dollops of crème fraîche and watercress leaves.

A minha sugestão de hoje e para começar bem a semana, é esta sopa maravilhosa e cremosa do Chef Henrique Sá Pessoa.
A receita vem no seu último livro "A viagem do salmão".
Um livro absolutamente magnífico e pelo qual estou completamente in love!
Recebi-o de prenda no Natal e confesso que é daqueles livros que me surpreendeu e muito e só pela positiva.
Sabem aqueles livros que compramos e dos quais acabamos por escolher 2 ou 3 receitas para fazer?
Pois não é o caso deste!! Para vos ser sincera, não há uma única receita neste livro que eu não tenha marcado para fazer. Bom, talvez haja uma...
... pois de resto, estão todas marcadas!
Salmão é um peixe que amo de paixão e as sugestões apresentadas no livro são TODAS elas absolutamente magníficas e não consegui ficar indiferente.
Assim sendo, vamos lá à primeira receita testada. Esta sopa dos céus!!
ingredientes (para 4 pessoas):
200g salmão, cozido e desfeito em lascas (sem pele nem espinhas)
100g cebola, picada
150g alho francês, em juliana
250g espinafres bebé
20ml azeite
120g batata, cortada em cubos pequenos
4 colheres sopa de crème fraîche
flor de sal e pimenta preta moída na altura, a gosto
folhas de agrião, temperadas com azeite, para decorar
preparação:
Aquecer o azeite num tacho.
Adicionar a cebola e o alho francês e cozinhar por 4 a 5 minutos, ou até ambos estarem macios.
Adicionar a batata, sal e pimenta a gosto e cobrir com água (até dois dedos de altura acima dos vegetais).
Deixar levantar fervura, abrandar o lume e cozinhar por cerca de 8 a 10 minutos, ou até a batata estar macia.
Adicionar os espinafres e cozinhar por mais 1 minuto.
Reduzir a sopa a puré com a varinha mágica, ou no liquidificador e rectificar os temperos.
Servir a sopa quente, decorada com as lascas do salmão, o crème fraîche e as folhas de agrião temperadas.

Linguine with vegetable ragu / Linguine com ragu de legumes.


I made this dish two days before going in holidays as I wanted to finish all the vegetables that I had at home before going away.
It turned out so delicious that I had to write it down straightaway and share it with you.
ingredients (serves 6):
2 tbsp extra virgin olive oil
1 onion, finely chopped
3 carrots, finely diced
4 celery sticks, finely chopped
1 leek, finely sliced
220g cherry tomatoes
400g can chopped tomatoes
small bunch coriander
5 springs rosemary, leaves finely chopped
1 tbsp butter
250g brown mushrooms, thickly sliced
3 garlic cloves, finely chopped
500g linguine
salt and freshly ground black pepper
grated parmesan cheese, to serve
method:
Heat the olive oil in a large non stick pan.
Add the onion, carrots, celery, leek and a pinch of salt.
Cook gently, stirring often, until the vegetables are soft but not coloured.
Add the cherry tomatoes, chopped tomatoes, coriander and rosemary and bring up to a boil.
Turn to a simmer, then cook for about 20 minutes over a low heat.
Meanwhile, heat the butter in a large frying pan.
Add the garlic and mushrooms and sauté until the mushrooms are soft.
Tip the mushroom mixture into the vegetable mixture and stir to combine.
Season the ragu with salt and freshly ground black pepper to taste.
Cook the pasta in boiling salted water, according to the pack instructions, then drain.
Serve the pasta with the ragu and sprinkle with the grated parmesan.

Este prato foi feito dois dias antes de ir de férias, pois queria gastar todos os legumes que tinha em casa antes de ir embora.
Acabou por ser uma refeição tão deliciosa, que resolvi escrevê-la de imediato e partilhá-la convosco.


ingredientes (para 6 pessoas):
2 colheres sopa de azeite extra virgem
1 cebola, picada finamente
3 cenouras, cortadas em pequenos cubos
4 talos de aipo, cortados em rodelas finas
1 alho francês, cortado em rodelas finas
220g tomates cereja
1 lata de 400g de tomate picado
um ramo pequeno de coentros, picados
5 hastes de alecrim, folhas picadas muito finamente
1 colher sopa de manteiga
250g cogumelos castanhos, grosseiramente fatiados
3 dentes de alho, muito finamente picados
500g linguine
sal e pimenta preta moída na altura
parmesão ralado, para servir
preparação:
Aquecer o azeite num tacho largo.
Adicionar a cebola, as cenouras, o alho francês, o aipo e uma pitada de sal.
Cozinhar em lume brando, mexendo frequentemente, até os legumes estarem macios mas sem cor.
Adicionar os tomats cereja inteiros, o conteúdo da lata de tomate picado, os coentros e o alecrim.
Quando levantar fervura, baixar o lume e deixar a mistura cozinhar e reduzir, por cerca de 20 minutos.
Entretanto, aquecer a manteiga numa frigideira larga.
Adicionar os alhos picados e os cogumelos fatiados e saltear até os cogumelos estarem macios.
Juntar o conteúdo da frigideira ao conteúdo do tacho, mexer e temperar de sal e pimenta a gosto.
Cozer a massa de acordo com as instruções do pacote e escorrê-la.
Servir a massa com o ragu e polvilhar com o queijo parmesão ralado.

Caldo Verde.


Caldo verde is a very traditional portuguese cabbage soup.
In our traditional recipe, the base of the soup is a potato purée and the cabbage is cut into a very, very fine chiffonade. One slice of cooked chorizo will be added at the end and will be found at the bottom of the mug or bowl.
I love when I find portuguese inspired recipes in cook books that are not portuguese and this version of the portuguese caldo verde, comes in this fabulous book.
I have to tell you that, although I love the traditional portuguese caldo verde, this version is more to my liking as it is made and presented in a very rustic, hearty and chunky way.
ingredients (serves 2):
1/2 tbsp unsalted butter
1/2 onion, finely chopped
1 garlic clove, finely chopped
1/2 tbsp olive oil
1 leek, halved lengthways and thinly sliced
1 potato, cut into 1cm cubes
1/2 tsp paprika
600ml vegetable stock, hot
1/2 tbsp tomato purée
50g cooking chorizo, cut into 1cm cubes
50g kale, hard stems removed and leaves shredded
extra virgin olive oil, to drizzle
sea salt flakes


method:
Heat the butter in a saucepan. Add the onion and cook gently for a few minutes. Add the garlic and cook for a further 2 minutes.
Add the olive oil and leek and cook for 5 minutes, or until the leek is soft.
Add the potato, salt and paprika and cook, stirring well, for a couple of minutes.
Add the stock and tomato purée and bring to the boil. Reduce the heat and cook until the potatoes are almost tender.
Add the kale and cook for about 5 minutes, or until tender. Season with salt.
Heat a skillet or frying pan over medium heat. Add the chorizo and fry until slightly crispy. Set aside.
Ladle the soup into bowls and top with the fried chorizo and a drizzle of extra virgin olive oil.

O nosso português caldo verde dispensa apresentações entre nós certo?
Adoro quando encontro receitas portuguesas ou inspiradas em receitas portuguesas, em livros estrangeiros e foi o caso deste caldo verde que encontrei neste livro magnífico.
Tenho a dizer que, embora seja grande apreciadora do nosso caldo verde, cortado fininho e com a base de puré de batata, esta versão foi uma muito, muito agradável surpresa, pois eleva o nosso caldo verde a uma dimensão um bocadinho superior e dá-lhe mais sabor e textura.


ingredientes (para 2 pessoas):
1/2 colher sopa de manteiga sem sal
1/2 cebola, finamente picada
1 dente de alho, finamente picado
1/2 colher sopa de azeite
1 alho francês, cortado ao meio no sentido do comprimento e finamente fatiado
1 batata, cortada em cubos de 1cm
1/2 colher chá de paprika
600ml caldo de legumes, quente
1/2 colher sopa de concentrado de tomate
50g chouriço, cortado em cubos de 1cm
50g couve portuguesa, talos grandes removidos e folhas esfarripadas
azeite extra virgem, para regar
flor ou flocos de sal
preparação:
Derreter a manteiga numa panela. Adicionar a cebola e cozinhar por uns minutos. Adicionar o alho e cozer por mais 2 minutos.
Adicionar o azeite e o alho francês e cozinhar por 5 minutos, ou até este estar macio.
Adicionar as batatas, o sal e a paprika, mexer bem e cozinhar por uns minutos.
Adicionar o caldo de legumes e o concentrado de tomate e mexer. Quando levantar fervura, baixar o lume, e cozinhar até que as batatas estejam quase cozidas.
Adicionar a couve e cozer por cerca de 5 minutos, ou até esta estar macia. Temperar de sal.
Entretanto, numa frigideira bem quente, mas sem adicionar nenhum tipo de gordura, fritar os cubos de chouriço até estarem douradinhos.
Servir a sopa em tigelas, com o chouriço por cima e regar com um fio de azeite.

Smoked salmon, leek and Jarlsberg cheese tart / Tarte de salmão fumado, alho francês e queijo Jarlsberg.


This tart recipe came in one of the latest issues of Jamie Oliver magazine and it's called "terrific tart".
The name couldn't be more appropriated as it is really terrific!!
ingredients for the pastry (serves 4):
200g plain flour
150g butter
for the filling:
4 eggs
125ml double cream
200g smoked salmon, roughly chopped
100g Jarlsberg cheese, roughly diced
1 leek, thinly sliced
dill, to garnish
smoked salmon, to garnish
grated Jarlsberg cheese, to garnish


method:
Preheat the oven to 175ºC.
Put the flour and butter in a bowl, then cut the butter up, into the flour. Add 2 tsp of water, kneading until it forms a firm dough. Wrap it in clingfilm and chill for 1 hour.
Roll the pastry between 2 sheets of baking paper and line a tart tin with it.
Prick the pastry all over with a fork and bake until golden.
Lower the oven temperature to 150ºC.
In a bowl, mix together the eggs and cream. Season with salt and freshly ground black pepper.
Stir in the salmon, leek and cheese and pour into the baked pastry.
Bake until the egg mixture has set.
Garnish with springs of dill, smoked salmon slices and grated cheese before serving.

A receita desta tarte vem numa das últimas revistas do Jamie Oliver e chama-se "tarte formidável".
O nome não podia ser mais apropriado, pois é mesmoooo formidável!!
ingredientes para a massa (para 4 pessoas):
200g farinha de trigo branca
150g manteiga
para o recheio:
4 ovos
125ml natas para culinária
200g salmão fumado, picado grosseiramente
100g queijo Jarlsberg, cortado em cubos
1 alho francês, finamente fatiado
aneto, para decorar
salmão fumado para decorar
queijo Jarlsberg ralado, para decorar
preparação:
Aquecer o forno a 175ºC.
Colocar a farinha e a manteiga numa taça e trabalhar a manteiga na farinha, até obter uma mistura areada. Adicionar 2 colheres chá de água e amassar até obter uma bola.
Embrulhar a massa em película aderente e refrigerar por 1 hora.
Estender a massa entre 2 folhas de papel vegetal e com ela forrar uma tarteira.
Picar toda a superfície da massa com um garfo e levar ao forno até estar douradinha.
Baixar a temperatura do forno para os 150ºC.
Para fazer o recheio, bater as natas e os ovos numa taça. Temperar de sal e pimenta preta moída na altura.
Adicionar o queijo, o salmão e o alho francês e mexer tudo muito bem.
Deitar este preparado sobre a base da tarteira e levar ao forno até que a mistura dos ovos esteja cozida.
Antes de servir, decorar com aneto, salmão fumado e queijo ralado.

Salmon and spinach quiche / Quiche de salmão e espinafres.


This quiche is an absolute stunner.
The filling is so flavoursome and full of textures that is almost addictive and the crust, well, the crust is one of the best quiche/tart pastries I ever had.
Truly, truly good!!
ingredients (serves 4 to 6):
for the pastry:
80g sweet rice flour (white rice flour)
60g quinoa flour
70g amaranth flour
1 1/2 tsp xanthan gum
1/2 tsp fine sea salt
100g unsalted butter, chilled and cubed
1 small organic egg
4 tbsp cold water, more if needed
1 egg white lightly beaten with a fork, for brushing the pastry
method:
In a bowl, combine the flours, salt and xanthan gum.
Add the butter and combine until you have a crumbly mixture.
Add the egg and mix with a fork.
Add the water gradually and mix until the dough forms a ball.
Wrap the dough in clingfilm and chill for at least 1 hour.
Grease a 28 to 30cm quiche tin.
Preheat the oven to 200ºC.
Roll out the dough into a round large enough to fit the tart pan.
Transfer the dough to the prepared tin, line it neatly and prick the dough all over with a fork.
Cover the dough with baking paper and top it with ceramic beans.
Bake for 10 minutes and then, remove the baking paper and beans, brush the pastry with the egg white and return to the oven for a further 5 minutes.
Take the tin out of the oven and set aside.


for the filling:
200g baby spinach or watercress
4 tbsp olive oil
235ml whole milk
1 bay leaf
salt and pepper
500g skinned salmon
4 large eggs
175ml double cream
grated nutmeg
1 tbsp chopped dill
a few sage leaves, chopped
2 small leeks, white part only, finely sliced
1 shallot, finely chopped
method:
Heat 2 tbsp of the olive oil in a frying pan over medium heat. Add the spinach or watercress and sauté for 3 minutes stirring.
Drain the spinach over a colander, squeeze out the excess liquid and chop them. Set aside.
In the same pan, heat the remaining 2 tbsp of the oil. Add the shallot and leeks and cook for about 5 minutes without browning, stirring, until soft.
Remove from the heat, stir in the spinach and set aside.
In a pot, heat 3/4cup of the milk with the bay leaf and a pinch of salt and pepper.
When it begins to simmer, add the salmon and poach for 3 minutes.
Remove from the heat, cover with a lid and let infuse for 10 minutes.
Remove the salmon from the poaching liquid and crumble it into a bowl. Set aside.
In a bowl, beat the eggs with the cream and the remaining 1/4 cup of milk. Season with salt and pepper and add the nutmeg, dill and sage.
Scatter the vegetables and salmon over the baked pastry and pour the egg batter over the top.
Bake for 30 to 35 minutes or until golden and the egg flan is set.
Let the quiche rest for 10 minutes before cutting.

Esta quiche é absolutamente magnífica. Desde o recheio que é altamente saboroso, à massa que, para ser franca, acho que é das melhores massas de tarte/quiche que já comi!
Experimentem e verão como tenho razão!
ingredientes (para 4 a 6 pessoas):
para a massa:
80g farinha de arroz branca (também chamada de farinha doce de arroz)
60g farinha de quinoa
70g farinha de amaranto
1 1/2 colheres chá de goma xantana
1/2 colher chá de sal fino
100g manteiga sem sal, gelada e cortada em cubos
1 ovo pequeno (de preferência biológico)
4 colheres de sopa de água gelada ou mais se necessário
1 clara de ovo, ligeiramente batida com um garfo, para pincelar a massa.
preparação:
Numa taça, misturar bem as farinhas, com a goma xantana e o sal.
Adicionar a manteiga e esfregar com a ponta dos dedos até obter uma massa areada.
Adicionar o voo e misturar bem com um garfo.
Adicionar a água gradualmente, amassando até a massa descolar da taça e formar uma bola.
Enrolar a bola em película aderente e refrigerar por, no mínimo, 1 hora.
Untar uma forma de quiche (lados mais altos que uma tarteira) com cerca de 28 a 30cm de diâmetro.
Aquecer o forno a 200ºC.
Entre 2 folhas de papel vegetal, estender a massa por forma a que cubra a medida da forma.
Forrar a forma com a massa, cortar os excessos e furar toda a base da massa com um garfo.
Forrar a superfície da massa com uma folha de papel vegetal (das que usou para a esticar) e encher com bolas de cerâmica, feijão, ou grão.
Levar a forma ao forno por cerca de 10 minutos.
Após esse tempo, retirar o papel vegetal e as bolas de cerâmica, pincelar toda a base com a clara de ovo e levar ao forno por mais 5 minutos.
Retirar a base do forno e reservar.


para o recheio:
200g folhas de espinafre bebé ou folhas e pés tenros de agrião
4 colheres de sopa de azeite
235ml leite gordo
1 folha de louro
sal e pimenta preta
500g salmão sem pele e espinhas
4 ovos grandes, de preferência biológicos
175ml natas para culinária
noz moscada ralada
1 colher sopa de aneto ou endro picado
2 ou 3 folhas de sálvia, picada (eu não usei e aumentei no aneto)
parte branca de 2 alhos franceses pequenos, cortados em rodelas finas
1 chalota, picada finamente
preparação:
Sobre lume médio, aquecer uma frigideira com 2 colheres de sopa de azeite.
Adicionar os espinafres ou agrião, e saltear por 3 minutos, mexendo sempre.
Escorrer os espinafres, espremer bem o excesso de líquido, picá-los e reservar.
Na mesma frigideira, aquecer as outras 2 colheres sopa de azeite. Adicionar o alho francês e a chalota e cozinhar por 5 minutos, ou até os vegetais estarem macios, sem deixar ganhar cor, mexendo sempre.
Quando prontos, apagar o lume, juntar-lhes os espinafres picados e reservar tudo.
Entretanto, aquecer 3/4 chávena de leite num tachinho, juntamente com a folha de louro, sal e pimenta.
Assim que o leite começar a querer levantar fervura, baixar o lume, colocar o salmão dentro do tacho e cozer por 3 minutos. Apagar o lume, tapar o tacho e deixar em infusão por cerca de 10 minutos.
Passado esse tempo, retirar o salmão do tacho e descartar o líquido de cozedura.
Lascar ou cortar o salmão em pedaços e reservar.
Numa taça, bater os ovos com as antas e a restante 1/4 chávena do leite. Temperar de sal e pimenta e adicionar a noz moscada, a sálvia e o aneto. Reservar.
Espalhar os legumes e o salmão sobre a base da tarte e cobrir com a mistura dos ovos.
Levar ao forno por cerca de 30 minutos, ou até a tarte estar douradinha e a mistura líquida ter solidificado.
Retirar a quiche do forno e antes de cortar, deixar arrefecer por uns 10 minutos.
Servir quente ou à temperatura ambiente, acompanhada de uma salada.
