Grilled baby squid with chorizo / Lulas grelhadas com chouriço.


To be truthful, this recipe was made a few months ago but, somehow, it was forgotten in the middle of other recipes, which was a big mistake because it is truly a fabulous and delicious combination.
Another recipe from Luke Nguyen amazing book. This one is from the Basque region.
According to Chef Luke, Basque cuisine is influenced by the abundance of produce from the sea on one side, and the fertile Spanish Ebro Vally on the other.
The combination of ingredients is something that we all know as a treat!
ingredients (serves 4):
125g chorizo in one piece
12 baby squid, cleaned
generous pinch of espelette pepper
1 tbsp extra virgin olive oil
1 tbsp chopped flat leaf parsley
lime wedges, to serve
method:
Heat a chargrill pan to medium high. Grill the chorizo sausage for 4 minutes, turning every now and then to brown all over.
Meanwhile, season the squid with a generous pinch of sea salt and espelette pepper and coat with the olive oil.
Remove the sausages from the grill, then chargrill the squid for 1 minute on each side.
Slice the chorizo and transfer to a serving plate, along with the squid.
Sprinkle with the parsley and serve with lime wedges.

Para dizer a verdade, esta receita já foi feita há uns mesitos atrás e, não sei como, ficou perdida na pasta dos rascunhos do blogue.
Facto imperdoável, pois é tão deliciosa que seria um desperdício não a publicar.
Mais uma receita fantástica e simples de se fazer, do livro lindo do Chef Luke Nguyen.
Uma receita inspirada na região Basca e que combina sabores simples e ingredientes absolutamente magníficos.
De acordo com o Chef Luke, a cozinha Basca é influenciada, por um lado, pela riqueza e abundância dos produtos do mar e por outro, pelos produtos encontrados na fértil região espanhola do Vale do Ebro.
Lulas e chouriço, mar e terra, numa combinação harmoniosa que todos bem conhecemos e que funciona sempre.
ingredientes (para 4 pessoas):
125g chouriço
12 lulas pequenas, limpas
uma boa pitada de pimenta de espelette
1 colher sopa de azeite extra virgem
1 colher sopa de salsa picada
gomos de lima, para servir
preparação:
Aquecer um grelhador sobre lume média a alto.
Grelhar o chouriço por cerca de 4 minutos, virando de vez em quando, a fim de que fique bem grelhado em todos os lados.
Entretanto, temperar as lulas com sal, a pimenta de espelette e o azeite.
Retirar o chouriço do grelhador e grelhar as lulas por cerca de 1 minuto de cada lado, ou até estarem cozidas.
Cortar o chouriço em rodelas e colocá-las num prato de serviço.
Juntar-lhe as lulas, polvilhar com a salsa picada e servir acompanhado com gomos de lima.

Beetroot, coconut and galangal soup / Sopa de beterraba assada, leite de coco e raiz de galanga.


Another recipe from Chef Luke Nguyen fabulous book, once more and like this one here, inspired by and in, the Loire Valley region of France.
A soup that is full of fragrance, flavours that I adore and vibrant colours.
ingredients (serves 4):
500g small beetroot
olive oil, for drizzling
400ml light coconut milk
2 tbsp fish sauce
juice of 1 lime
1/2 tsp sea salt
method:
Preheat the oven to 180ºC.
Place the beetroot in a roasting tin, drizzle with olive oil and toss to coat.
Roast for 50 to 60 minutes, or until easily pierced with a sharp knife.
Remove from the oven and leave until cool enough to handle, then peel off the skin. Roughly chop and set aside.
ingredients for the stock:
1 tbsp vegetable oil
4 red Asian shallots, finely chopped
3 garlic cloves, thinly sliced
4 lemongrass stems, chopped into 2,5cm lengths
2cm knob of fresh galangal, peeled and thinly sliced
2cm knob of fresh ginger, peeled and grated
6 kaffir lime leaves, thinly sliced
50g coriander, stalks and leaves chopped (reserve a few leaves for garnishing)
1 bird's eye chilli, seeded and thinly sliced (reserve the seeds if you’d like more heat in your stock)
method:
Place a large saucepan over medium heat.
Add the vegetable oil and fry the shallots, garlic, lemongrass, galangal, ginger and lime leaves for 3 to 4 minutes to release their flavour.
Add 650ml (22 fl 02) cold water and the remaining stock ingredients. If you want a spicy broth, add a few chilli seeds to the pan as well.
Bring to the boil, then reduce the heat and simmer for 30 minutes.
Discard the solids before straining the stock.
to finish the soup:
Pour the stock back into the pan, add the chopped beetroot and bring back to a simmer for 5 to 10 minutes.
Blitz with a hand-held stick blender, then stir in the coconut milk.
Bring the soup back to the boil again, then stir in the fish sauce, lime juice and sea salt.
Ladle the soup into small soup bowls and garnish with the reserved coriander leaves. Drizzle with olive oil and serve.

Mais uma receita do fantástico livro do Chef Luke Nguyen que, tal como esta que aqui publiquei, é inspirada na região francesa do Vale do Loire.
Uma sopa repleta de sabores e aromas asiáticos e cuja cor linda e vibrante é um colírio para os olhos.
Não se assustem com a lista de ingredientes, pois qualquer um deles é, hoje em dia, facilmente encontrado em qualquer boa loja de produtos asiáticos.


ingredientes (para 4 pessoas):
500g beterrabas pequenas
azeite, para regar
400ml leite de coco light
2 colheres sopa de fish sauce
sumo de 1 lima
1/2 colher chá de sal
preparação:
Aquecer o forno a 180ºC.
Colocar a beterraba num tabuleiro, regar com o azeite e untar bem.
Levar ao forno por 50 a 60 minutos, ou até que a beterraba esteja macia e seja facilmente penetrável, quando espetada com uma faca.
Retirar o tabuleiro do forno e deixar a beterraba arrefecer até ser suportável manuseá-la.
Descascar a beterraba, picá-la e reservar.
ingredientes para o caldo:
1 colher sopa de óleo vegetal
4 chalotas vermelhas asiáticas (eu usei das normais), finamente picadas
3 dentes de alho, finamente fatiados
4 talos de lemongrass, cortados em pedaços de 2,5cm
1 raiz de galanga com cerca de 2cm, descascada e finamente fatiada
1 pedaço de gengibre fresco, com cerca de 2cm, descascado e ralado
6 folhas de lima kaffir, finamente fatiadas
50g coentros, folhas e talos picados (reservando algumas folhas para a decoração final)
1 malagueta bird's eye (das pequenas), sem sementes e finamente fatiada (reservar algumas das sementes, caso queira um caldo mais picante).
preparação:
Colocar uma panela sobre lume médio.
Colocar o óleo na panela. Adicionar as chalotas, o alho, o lemongrass, a galanga, o gengibre e as folhas de lima e fritar por cerca de 3 a 4 minutos, ou até os ingredientes estarem aromáticos.
Adicionar 650ml de água fria e os restantes ingredientes listados para o caldo.
Caso queiram um caldo mais picante, adicionar também sementes da malagueta a gosto.
Quando o caldo levantar fervura, baixar o lume e cozinhar por cerca de 30 minutos.
Descartar os sólidos e coar o caldo.
para finalizar a sopa:
Colocar o caldo coado de volta na panela.
Adicionar a beterraba assada, descascada e picada que havia sido reservada anteriormente e cozinhar por cerca de 5 a 10 minutos.
Com a ajuda da varinha mágica, reduzir a sopa a puré e adicionar o leite de coco.
Levar a sopa de novo ao lume e quando levantar fervura, adicionar a fish sauce, o sumo da lima e o sal.
Desligar o lume e servir a sopa em tigelas pequenas, decorada com as folhas de coentros reservadas e regada com uns pingos de azeite.

Lemongrass and kaffir lime crème brûlée / Crème brûlée de lemongrass e lima Kaffir.


Everybody knows by now that crème brûlée is my favourite pudding and each time there's crème brûlée on the menu, I always..., Always!! go for it.
As soon as I laid my eyes on this exotic recipe, I marked it straightaway to be tested.
The flavours are just some of my favourite ones and combined in my favourite pudding? Heaven!!
This is another recipe from Chef Luke Nguyen beautiful "France" book and it appears in the Loire Valley chapter of his gastronomic adventure.
According to Chef Luke, "no trip to France is complete without taking in the Loire Valey". I've never been but I'll remember his advice next time I go to France.


ingredients (serves 8):
750ml single cream
1 vanilla bean
8 Kaffir lime leaves, thinly sliced
3 lemongrass stems, white part only, finely chopped
115g caster sugar, plus extra for sprinkling
12 free range egg yolks
method:
Pour the cream into a saucepan.
Split the vanilla bean lengthways using a small sharp knife, then scrape the seeds into the cream.
Add the lime leaves and lemongrass and bring to the boil. Turn off the heat, cover the pan and allow the flavours to infuse for 10 minutes.
Beat the sugar and egg yolks together in a mixing bowl until creamy.
Pour the infused cream over the egg mixture, whisking constantly until combined.
Strain the mixture into a large jug, discarding the solids.
Pour into eight 125 ml cups or ramekins, filling each about two-thirds full.
Bring a wok or saucepan of water to a rapid boil.
Place the teacups in a metal or bamboo steamer and cover with the lid.
Reduce the heat to low, then sit the steamer over the wok and steam for 25 to 30 minutes, or until the custards are just set but still slightly wobbly in the middle.
Allow to cool to room temperature, then cover with plastic wrap and refrigerate for 2 hours, or until set.
Just before serving,  evenly distribute a tsp of caster sugar over the top of each custard, and then caramelise with a kitchen blowtorch or under a hot grill for a few minutes.


Note: If you don't have a steamer you can cook the custards in the oven (and that's what I did) according to this method.

Já todos conhecem a minha paixão por crème brûlée certo?
Digo sempre e repito vezes sem conta que é a minha sobremesa favorita e sejam quais forem os sabores e combinações, sempre que leio ou vejo as palavras crème brûlée escritas seja em livros ou em menus de restaurantes, a minha atenção já não consegue ser desviada para mais nada, pois fico logo com os olhinhos em bico de contentamento!!
Pois foi o que aconteceu com esta receita do Chef Luke! Assim que li o título e vi os ingredientes exóticos deste crème brûlée, fiquei logo a sonhar com ele e a imaginar o seu sabor magnífico. Sabores cítricos são os meus preferidos e esta combinação não podia ser um 3 em 1 mais perfeito!
Na aventura gastronómica do Chef Luke por terras de França, esta receita aparece no capítulo da região do Vale do Loire e, de acordo com o Chef Luke: "Nenhuma viagem a França é completa se não incluir uma visita ao Vale do Loire". Nunca lá estive, mas fica registada a dica para uma próxima viagem a França.


ingredientes (para 8 pessoas):
750ml natas líquidas para culinária
1 vagem de baunilha
8 folhas de lima Kaffir, finamente fatiadas
parte branca de 3 talos de lemongrass, picados finamente
115g açúcar refinado branco + extra para queimar
12 gemas de ovo, de preferência ovos caseiros
preparação:
Colocar as natas num tacho.
Cortar a vagem de baunilha ao meio longitudinalmente, raspar as sementes do seu interior e adicioná-las ás natas (podem colocar a vagem raspada dentro de um frasco de açúcar e obterão açúcar baunilhado).
Juntar as folhas de lima e o lemongrass ás natas e levar tudo ao lume até levantar fervura.
Desligar o lume, tapar o tacho e deixar a mistura em infusão por cerca de 10 minutos.
Entretanto, bater as gemas com o açúcar, até obter uma mistura cremosa.
Batendo sempre, e em fio, juntar a mistura das natas quentes ás gemas batidas, a fim de combinar tudo muito bem.
Coar a mistura para um jarro, descartando as folhas de lima e o lemongrass.
Distribuir a mistura por 8 recipientes refractários (ou outros) com capacidade para 125ml, enchendo-os até 2/3 da sua capacidade total.
Colocar uma Wok ao lume com água e aquecer até a água estar a ferver.
Baixar o lume para o mínimo, colocar os recipientes do creme em cestos de bambu chineses para cozer a vapor, tapar e colocar os cestos sobre a wok com a água a ferver.
Cozinahr os cremes por cerca de 25 a 30 minutos, ou até os cremes estarem firmes, mas o centro esteja mole quando se abanam os recipientes.
Retirar os cremes dos cestos, deixá-los arrefecer à temperatura ambiente e depois, cobri-los com película aderente e refrigerar por um mínimo de 2 horas.
Antes de servir, polvilhar cada creme com uma colher de chá de açúcar e caramelisar com a ajuda de um maçarico de cozinha ou debaixo do grill do forno.


Nota: Caso não tenham os cestos de bambu, ou não queiram estar a cozinhar os cremes a vapor, podem colocá-los no forno (e foi o que eu fiz), seguindo o método de cozedura explicado neste post.

Seared scallops with pumpkin purée & Yuzu dressing / Vieiras com puré de abóbora e molho de yuzu.


Luke Neguyen's new book is out and it is a truly delight.
A book that I was waiting for many months and that I finally got.
I watched the series many months ago on TV and I was so excited about the dishes I saw this amazing Chef cooking on TV, that, straightaway, I was sure that it would end up being a great book.
Well, my expectations were highly exceeded as the book is absolutely amazing.
Gorgeous pictures, descriptions of the different french regions and mouthwatering recipes.
The recipes, most of them french classics, cooked with an asian twist, are an absolute stunner and a pleasure for any foodie palate.
I would say that It is, indeed, a truly gastronomic adventure!!
This recipe, the first I cooked from this amazing book, is from the Île D'Oléron region that is also known as the "Island of Oysters" and the combination of ingredients, although is not a combination that pops straightaway onto our minds, is absolutely mind blowing and that is one of the big reasons that I love to rely on professional Chefs to challenge mine and my family and friends taste buds!
ingredients (serves 4):
pumpkin purée:
1 tbsp extra virgin olive oil
2 French shallots. thinly sliced
1 tsp Chinese five-spice
1 garlic clove, diced
1 butternut pumpkin (squash), peeled, seeded and diced
25g butter
method:
Heat a pan over medium low heat.
Add the olive oil and the shallots and sauté for a few minutes or until the shallots are soft.
Add the five spice and the garlic and sauté for 2 minutes.
Add the pumpkin and butter, cover the pan, reduce the heat to low and cook for 12 to 15 minutes or until the pumpkin is tender.
Blitz the pumpkin until puréed with a hand held stick blender. Season to taste with sea salt and freshly ground black pepper and set aside, keeping it warm.


yuzu dressing:
2 tbsp yuzu juice
1 tbsp light soy sauce
dash of sesame oil
1 tbsp grapeseed oil
method:
Put all the ingredients in a bowl and mix well to combine.
for the scallops and to finish:
2 tbsp olive oil
16 scallops, roe removed
6 chives, thinly sliced
edible flowers, to garnish
sea salt, for sprinkling
method:
Heat a frying pan over high heat.
Add the olive oil and wait until it is really hot.
Sear the scallops for 1 minute on each side and drain over kitchen paper. Don't over crowed the pan or the scallops will sweat instead of frying, so cook them in batches.
Spoon the pumpkin purée onto serving plates, smoothing it out with the back of a spoon.
Arrange the scallops over the purée and drizzle with the yuzu dressing.
Garnish with the chives, edible flowers and a sprinkling of sea salt.
Serve straightaway.

Acabadinho de sair, o novo livro do fantástico Chef Luke Neguyen e que maravilha de livro!!
Um livro que, confesso, ansiava há muito tempo, pois vi, há já bastantes meses atrás, uma série na televisão, onde ele cozinhava pratos fabulosos na sua aventura gastronómica por terras de França.
Posso garantir apenas que o livro superou as minhas expectativas, pois é lindo graficamente, as fotos são fantásticas, as descrições gastronómicas de cada uma das regiões francesas por onde passa são um deleite para os leitores e as receitas..., bom, as receitas são algo de extraordinário, pois a maior parte delas são clássicos franceses cozinhados com um toque asiático, o que, para o palato de qualquer foodie ou gourmet, é uma verdadeira explosão de sabores e aromas.
Deixo-vos hoje a primeira receita que fiz deste livro. Uma combinação improvável e que não me passaria pela cabeça, mas que nos deixou a todos com as papilas gustativas aos saltos de tão deliciosa que é.
Esta é uma das principais razões pela qual eu gosto de confiar em Chefs profissionais para me surpreenderem com combinações que à partida são pouco prováveis e que acabam por ser verdadeiras maravilhas!!
Caso para dizer: Quem sabe, sabe e contra factos não se argumenta!!
Esta receita é inspirada na gastronomia da região da Ilha de Oléron que, de acordo com o autor, é também conhecida como a "Ilha das Ostras".


ingredientes (para 4 pessoas):
puré de abóbora:
1 colher sopa de azeite extra virgem
2 chalotas, picadas muito finamente
1 colher chá de Chinese five-spice (5 especiarias chinesa)
1 dente de alho, picado
1 abóbora (butternut squash), descascada, sem sementes e cortada em cubos pequenos
25g manteiga
preparação:
Aquecer o azeite num tacho sobre lume médio a brando.
Adicionar as chalotas e saltear até estas estarem macias.
Adicionar a especiaria e o alho e saltear por mais 2 minutos.
Adicionar a abóbora e a manteiga, tapar o tacho, baixar o lume e cozinhar por cerca de 12 a 15 minutos, ou até a abóbora estar macia.
Depois de cozida, reduzir a abóbora a puré, com a ajuda da varinha mágica.
Temperar de sal e pimenta preta moída na altura e reservar, mantendo o puré quente.



para o molho de yuzu:
2 colheres sopa de sumo de yuzu (vende-se nas lojas de produtos asiáticos)
1 colher sopa de molho de soja light
um bocadinho de óleo de sésamo
1 colher sopa de óleo de semente de uva (se não arranjarem, podem usar azeite)
preparação:
Colocar todos os ingredientes numa taça e misturar muito bem.
para as vieiras e para terminar o prato:
2 colheres sopa de azeite
16 vieiras, sem a parte laranja
6 hastes de cebolinho, finamente picado
flores comestíveis, para decorar (eu usei flores de salva e de cebolinho)
flor de sal, para polvilhar
preparação:
Aquecer uma frigideira sobre lume alto.
Adicionar o azeite e deixar que aqueça muito, muito bem.
Tendo o cuidado de não colocar muitas vieiras na frigideira ao mesmo tempo, selar as vieiras por cerca de 1 minuto de cada lado, escorrendo-as depois sobre papel absorvente de cozinha.
Se colocarem muitas vieiras ao mesmo tempo na frigideira, elas vão cozer e não fritar, por isso é preciso ter muita atenção a este factor.
Para servir, dividir o puré de abóbora pelos pratos, espalhando-o com as costas de uma colher.
Colocar as vieiras em cima do puré, regar com o molho de yuzu, decorar com as flores e salpicar com flor de sal.
Servir de imediato.
