Millefeuilles with Vanilla Crème Pâtissière & feathered Fondant Icing / Mil Folhas com Creme Pasteleiro de Baunilha, decorados com Icing Fondante.


This month and for th 20th edition of the Sweet World, we're asking you to make Millefeuilles.
Millefeuilles are a classic French pastry that consists of layers of puff pastry and cream filling.
Millefeuilles means one thousand sheets, layers, or leaves and they're an old school French pastry that's airy, crispy, flaky, decadent and moreish, in all the right places.
The very first recipe for a millefeuille appeared in François Pierre La Varenne's cookbook in 1651.
Officially, a gâteau millefeuille is constructed of three layers of puff pastry and stabilized pastry cream (mixed with a little gelatin for a tighter cream that's not too runny), decorated with fondant and garnished with a chocolate spider web design on top.
Sometimes mixed up, a millefeuille is not the same as a Napoleon, an Italian dessert where almond paste - similar to frangipane - is sandwiched between its many layers.
Apart from making your own puff pastry instead of using shop bought pastry, a millefeuille is not difficult to make. Actually, if you already mastered how to make a good crème pâtissière, there's nothing to worry about.

As for the puff pastry, I always make this recipe but there's this one too, which is simpler to make and will be perfect for your millefeuilles.

You know I'm a "Pavlova Queen" right?
Not just I love making Pavlovas, they're also my absolute favourite dessert in the world.
Under the "Pavlova" label, you can already find 10 pavlova recipes here on the blog and although I loved every and each one of them, I have to tell you that this one, that I'm leaving you today, is the BEST PAVLOVA EVER!!! Absolutely divine!
The recipe is from Lorraine Pascale amazing new books "Bake" and as you might remember, I already made these delicious millefeuilles from it.

Red Velvet Napoleons with Raspberries / Mil Folhas de Veludo Vermelho e Framboesas.


You know I can't resist a millefeuille recipe right?
Here o the blog, you can find 3 millefeuilles recipes (here, here and here) and each one, better than the previous one!!
So, as soon as I got Lorraine Pascale new book "Bake", I couldn't resist but make this millefeuilles straightaway!
The book is amazing!! Full of delicious recipes and I have lots of them already marked down to be tried.
As for this one, as expected, the millefeuilles were a true delight and a true winner and you should tried it!
Not the healthiest recipe, as you can notice by the ingredients list, but surely, a treat!!


Notes:
  • Of course, I made my own homemade puff pastry, but of course, you can use shop bought puff pastry if that makes you more comfortable.
  • Filling wise, the full fiiling recipe is too much for this recipe so, I advise you to make only half the quantity of the filling because it will be more than enough.

"Let Them eat Cake" cake / O Bolo "Let Them eat Cake".


Last Tuesday the 10th of may, was my daughter's 10th birthday and as always, I baked her a cake.
Last year she chose this Linda Lomelino cake.
This year, the cake was chosen months ago! She really wanted this Lorraine Pascale "Let Them eat Cake" and of course, I baked her the cake she wanted.
To make it higher and more funny, I used this Lakeland kit but you can make it as a regular cake.
The sponge is absolutely divine as it's moist and light and the buttercream is a delight.
To my taste, the Maltesers makes it to much sweet but, of course, for kids, it's the perfect chocolaty sugar rush!!
ingredients for the cake:
150g really soft butter, plus a little extra for greasing
250g caster sugar
150g self raising flour
125ml sour cream
4 medium eggs (at room temperature)
50g cocoa powder
1 tsp baking powder
pinch of salt
1/2 vanilla pod (or few drops of vanilla extract)
for the buttercream:
100g dark chocolate (minimum 70% cocoa solids)
550g icing sugar
250g really soft butter
2 tbsp milk
for the decoration:
4 x 135g packets of Maltesers
method:
Preheat the oven to 180ºC. Grease and line 2 x 20cm loose-bottomed sandwich cake tins.
Place each of the cake ingredients into a large bowl and use an electric mixer to blend well until you have a soft, smooth mixture. 
Divide between the cake tins, smooth the tops and place in the oven for 25 to 30 minutes, or until a skewer comes out clean. 
Leave the cakes to cool for a few minutes before removing from the tins, then leave to cool completely over a wire rack.
To make the buttercream, break the chocolate into a bowl and melt it in the microwave in 30 second blasts, stirring in between. 
Sift the icing sugar into a bowl, then add the butter and milk and beat with an electric mixer until it is really light and fluffy. Pour in the melted chocolate, stirring all the time.
Sit one of the cakes on a cake stand, then put about a third of the buttercream on and spread it around.
Sit the other sponge on top and spread the remaining buttercream all over so it is completely covered.
Once you have covered the cake, take the Maltesers and stick them all over the cake.

Na passada 3ª feira dia 10 de Maio, a minha filhota fez 10 anos.
Como já vem sendo hábito, faço sempre os bolos de aniversário dos miúdos, de acordo com a escolha deles.
O ano passado, escolheu este bolo da Linda Lomelino.
Este ano, o bolo já estava escolhido há meses. Queria, porque queria, este bolo da Lorraine Pascale e eu, claro, fiz o bolo que ela tanto queria.
Para mim, o bolo é dos melhores de sempre. Facílimo de fazer, leve e nada massudo e com uma textura húmida e nada seco.
O buttercream de chocolate também é uma delícia e em conjunto com o bolo, fazem uma dupla perfeita!
Os Maltesers, para mim, tornam o todo muito enjoativo, mas claro, as crianças, acharam-no maravilhoso e mais que fosse!!
Eu fiz o bolo com este efeito que vêm nas imagens, usando este kit que comprei na Lakeland, que não é mais que uma base de plástico, de onde sai um tubo que passa pelos bolos e onde, os doces escolhidos para o bolo, são colados ao tubo, usando chocolate derretido ou, neste caso, o próprio buttercream, mas claro, podem fazer o bolo normal e sem o efeito de altura.


ingredientes para o bolo:
150g manteiga bem amolecida + extra para as formas
250g açúcar refinado branco
150g farinha de trigo branca com fermento
125ml sour cream (natas azedas)
4 ovos médios (M), à temperatura ambiente
50g cacau em pó
1 colher chá de fermento em pó
uma pitada de sal
1/2 vagem de baunilha, sementes raspadas, ou umas gotas de pasta ou extracto de baunilha.
para o buttercream:
100g chocolate negro (mínimo 70% cacau)
550g açúcar em pó
250g manteiga, bem amolecida
2 colheres sopa de leite, à temperatura ambiente
para decorar:
4 pacotes de 135g (cada) de Maltesers


preparação:
Aquecer o forno a 180ºC. Untar e forrar com papel vegetal, as bases de duas formas de 20cm de diâmetro.
Colocar todos os ingredientes do bolo numa taça e bater até obter uma mistura cremosa e macia.
Dividir a massa pelas duas formas e levar ao forno por cerca de 25 a 30 minutos, ou até que um palito inserido no meio dos bolos, saia completamente limpo.
Retirar os bolos do forno e deixá-los arrefecer nas próprias formas por uns minutos.
Desenformar os bolos e colocá-los sobre uma grelha, para completo arrefecimento.
Para fazer o buttercream, colocar o chocolate numa taça e derretê-lo no micro ondas em intervalos de 30 segundos, mexendo a cada 30 segundos ou, alternativamente (e é o que eu faço), derreter o chocolate sobre um tacho de água quente, mexendo de vez em quando, sem deixar que o fundo da taça toque na água.
Peneirar o açúcar em pó para uma taça.
Adicionar a manteiga e o leite e bater com a batedeira eléctrica, até a mistura estar bem leve, fofa e cremosa.
Adicionar o chocolate derretido, em fio, batendo o tempo todo, até tudo estar bem incorporado.
Colocar um dos bolos sobre um prato de serviço e barrar o topo com 1/3 do buttercream.
Colocar o segundo bolo sobre este e barrar toda a superfície dos bolos (topo e lados) com o buttercream restante.
Decorar toda a superfície do bolo, colando os Maltesers no buttercream, começando pela base e à volta de todo o bolo e terminando com a decoração do topo.

Lorraine Pascale dad's lasagne / A lasanha do pai da Lorraine Pascale.


Throughout my life, I ate and made a fair amount of lasagne recipes, including some that I made up relying on the ingredients that I had at home at the time.
This one, since the moment I made it for the first time, is the all times favourite and became a classic here at home.
It is so flavoursome, fragrant and moreish that, each time I make lasagne, everybody asks straightaway if it is the "special" one!
The recipe is from Lorraine Pascale "Home Cooking Made Easy" cookbook and it's called "My dad's really very good lasagne".
Well, I can only say that it should be called "the best lasagne ever". That's how good it is!
ingredients:
150ml Madeira, red whine or stock
150ml beef stock
100g pancetta chunks
1 red onion, peeled and finely chopped
2 large springs of fresh rosemary, finely chopped
2 tsp dried oregano
oil for cooking
2 cloves of garlic, finely chopped
500g beef mince
200g fresh pork sausages, skins removed
1 bay leaf
1 x 400g an of chopped tomatoes
3 to 4 squidges of tomato purée
1 tsp soft light brown sugar
1 good bunch of basil leaves
salt and pepper
8 to 10 lasagne sheets
50g grated Parmesan cheese
for the béchamel sauce:
40g flour
40g butter, plus extra for greasing
300ml double cream
300ml milk
salt, pepper and nutmeg
method:
Pour the Madeira or red wine in a saucepan, bring to the boil and boil until the liquid has reduced by half.
In another pan, add the pancetta and fry until golden brown, then add the onion, rosemary and oregano and a little bit of oil, and cook until the onions are soft (10 minutes). Add the garlic and cook for about 1 minute. Add the beef and pork along with the bay leaf, stirring with a wooden spoon to break up the meat.
While the meat is cooking, pour the beef stock into the pan containing the reduced wine. Bring to the boil and reduce by half.
Once the meat has turned from pink to brown, add the reduced wine/stock, the tomato purée, the tin of chopped tomatoes, the sugar and some seasoning and stir together.
Leave to simmer for about 15 minutes or until cooked. Once cooked, there should be some liquid left in the meat, but it should not look too soupy.
Make the béchamel sauce by putting the butter in a pan over a medium heat and heating until it melts. Take the pan of the heat and add the flour. Put the cream and milk together in a jug and add a little of it to the butter and flour. Mix it together with a wooden spoon, then add a little more liquid and mix well. Keep adding the milk mixture slowly, bit by bit, stirring well between each addition. Return the pan to the heat and bring it to the boil, stirring all the time. When slightly thickened, remove the pan from the heat and season well with salt, pepper and nutmeg.
Grease a lasagne dish with butter, then spread a thin layer of the meat sauce on the bottom of the dish. Sprinkle over some basil leaves, then add a layer of lasagne sheets over the top. Spread another layer of the meat on top, sprinkle with some more basil leaves and then some of the white sauce. Repeat the layers, finishing with a layer of the white sauce. Grate some Parmesan cheese on top and cook in a preheated oven (180ºC) for 45 minutes.
Take the lasagne out of the oven and leave it to cool for a few minutes.

Tinha de vos deixar a receita desta lasanha que já foi feita cá em casa vezes sem conta, mas ainda não tinha tido oportunidade de aqui a publicar.
Já comi e fiz muitas lasanhas ao longo da minha vida (algumas até inventadas de acordo com os ingredientes que havia em casa), mas esta, sinceramente, supera todas.
Desde que a fiz pela primeira vez cá em casa que, sempre que faço lasanha, a pergunta que sempre ouço é: "Esta é a lasanha especial"?
A receita é do livro "Home Cooking Made Easy" da Lorraine Pascale e chama-se "A lasanha mesmo muito boa do meu pai". Quanto a mim, devia chamar-se "A melhor lasanha de sempre".


Experimentem e deliciem-se, pois aposto que passará a ser também a vossa favorita!!
ingredientes:
150ml vinho da Madeira, vinho tinto, ou caldo de carne
150ml caldo de carne
100gr cubos de pancetta
1 cebola roxa, descascada e picada finamente
folhas de 2 hastes de alecrim fresco, picadinhas
2 colheres chá de oregãos secos
azeite q.b.
2 dentes de alho picados
500gr carne de vaca picada
200gr salsichas de porco frescas, sem pele
1 folha de louro
1 lata de 400gr de tomate picado
3 a 4 espremidelas de uma bisnaga de concentrado de tomate
1 colher chá de açúcar amarelo
1 punhado de folhas de manjericão
sal e pimenta
8 a 10 folhas de lasanha (eu usei fresca mas caso usem da seca, não é necessário pré cozer)
50gr queijo Parmesão ralado
para o molho béchamel:
40gr farinha
40gr manteiga + extra para untar o tabuleiro
300ml natas para culinária
300ml leite
sal, pimenta e noz moscada


preparação:
Colocar o vinho num tachinho, aquecer até levantar fervura e ferver até este ter reduzido para metade.
Num tacho à parte, colocar os cubos de pancetta e fritar até estarem douradinhos.
Adicionar a cebola picada, o alecrim, os oregãos e um fio de azeite e cozinhar até a cebola estar macia (cerca de 10 minutos).
Adicionar a carne picada, a carne das salsichas e a folha do louro, mexendo bem com uma colher de pau para quebrar a carne e deixar alourar, mexendo de vez em quando.
Enquanto a carne aloura, adicionar o caldo de carne ao vinho reduzido, levar ao lume e quando levantar fervura, deixar ferver até reduzir de novo para metade.
Quando a carne estiver bem douradinha, adicionar-lhe a redução de vinho/caldo, a lata de tomates picados, o concentrado de tomate, o açúcar, sal e pimenta e mexer bem.
Cozinhar por cerca de 15 minutos, ou até a carne estar totalmente cozida. O resultado final será uma mistura quase seca.
Entretanto fazer o molho béchamel, derretendo a manteiga num tachinho em lume médio.
Retirar o tachinho do lume e adicionar a farinha.
À parte, misturar as natas com o leite e adicionar um bocadinho da mistura à manteiga/farinha, mexendo bem com uma colher de pau.
Ir adicionado o leite e natas à manteiga/farinha, até o líquido acabar, mexendo bem para incorporar.
Levar o tacho de novo ao lume, mexendo sempre até engrossar. Retirar do lume e temperar de sal, pimenta e noz moscada.
Untar um tabuleiro para lasanha com manteiga e, no fundo, espalhar uma fina camada da mistura de carne.
Polvilhar com algumas das folhas de manjericão e, por cima, colocar uma camada de folhas de lasanha.
Espalhar outra camada de molho de carne, sobre as folhas de lasanha, polvilhar com mais folhas de manjericão e cobrir com uma fina camada de molho béchamel. Repetir as camadas até todos os ingredientes acabarem, terminando com uma camada de molho branco. Polvilhar com o queijo ralado e levar ao forno pré aquecido (180ºC), por cerca de 45 minutos.
Retirar do forno e deixar arrefecer uns minutos antes de servir.

Chive and Parmesan popcorn and Toxin Clensing Blast Smoothie / Pipocas com parmesão e cebolinho e Smoothie saudável.


Today I'm leaving you with another healthy snack from Lorraine Pascale new book and a recipe for a delicious smoothie that I made with my new Nutribullet. A fabulous machine with 12 pieces, one of them being a spice or nut grinder.
Using the hashtag #eatingwellmadeeasy, I won this Nutribullet from Lorraine Pascale on instagram, with the picture of these popcorn.
I confess that, at the time, I was in Portugal for a few days of holiday and when I read that I was the winner I was totally thrilled and surprised!
I was dreaming about these Lorraine Pascale popcorn even before the book came out.
Lorraine posted their picture on instagram and I couldn't stop thinking how delicious they should be.
Well, I was right as they really are a treat!!
ingredients for the popcorn:
2 tbsp olive oil
100g popcorn kernels
25g Parmesan cheese, finely grated
2 tbsp fresh chives, finely chopped
sea salt and freshly ground pepper
method:
Heat the oil in a large pan over a medium high heat.
Add the popcorn kernels, turn down the heat to low medium and cover with the lid.
When the kernels start popping loudly, shake the pan gently from side to side while it is on the hob in order to make sure that all the kernels get the heat.
As the popping begins to slow down, shake the pan a few more times until you are only hearing the odd pop every few seconds.
The whole cooking process shouldn't take more than 2 to 3 minutes.
Remove the pan from the heat and carefully remove the lid and tip the popcorn into a large serving bowl.
Add the parmesan, chives, salt and pepper and give everything a good toss before serving.


ingredients for the smoothie:
2 handfuls of rinsed spinach
1 cored pear
1 cored apple
1 banana
1 cup of pineapple
water
method:
Put all the ingredients inside your Nutribullet cup or in a blender and add water to taste (if using a blender) or to the MAX line of your Nutribullet cup.
Blend until smooth and drink straightaway.

Um snack delicioso que são estas pipocas maravilhosas do novo livro da Lorraine e a receita do primeiro smoothie que fiz usando o Nutribullet que ganhei da Lorraine Pascale no instagram!
Uma máquina fantástica, com 12 acessórios, em que um deles também dá para triturar especiarias, frutos secos ou sementes.
Sob a hashtag #eatingwellmadeeasy, publiquei a foto destas pipocas no instagram e qual não é o meu espanto (estava eu de férias em Portugal), quando li que tinha ganho esta máquina fabulosa, oferecida pela Lorraine Pascale e pelo editor do livro.
Claro que fiquei para lá de feliz, pois sou pessoa de ficar feliz com as pequenas coisas que a vida me vai oferecendo...
Ainda antes de o livro ser publicado, já eu sonhava com estas pipocas, pois a Lorraine publicou uma foto delas no instagram e só pela foto, tive a certeza que seriam uma delícia.
Bom, claro que são e como eu adoro pipocas salgadas, estas não podiam ser mais à minha medida!!
ingredientes para as pipocas:
2 colheres sopa de azeite
100g milho para pipocas
25g queijo parmesão ralado
2 colheres sopa de cebolinho, picado
sal e pimenta preta moída na altura
preparação:
Aquecer o azeite num tacho largo sobre lume médio a alto.
Deitar o milho para o tacho, reduzir o lume para baixo a médio e tapar o tacho.
Quando o milho começar a estalar ruidosamente, abanar o tacho (sobre o lume) de um lado para o outro, por forma a que todos os grãos de milho apanhem calor.
Quando já só se ouvirem alguns estalos intervalados, abanar o tacho mais umas quantas vezes, até já só se ouvir um estalar aqui e ali.
Este processo todo não deverá demorar mais que 2 a 3 minutos.
Retirar o tacho do lume, destapar e deitar as pipocas para uma taça larga.
Polvilhar com o parmesão ralado, o cebolinho picado, sal e pimenta e misturar tudo muito bem antes de servir.


ingredientes para o smoothie:
2 punhados de espinafres lavados
1 pera, lavada e sem caroço
1 maça, lavada e sem caroço
1 banana
1 chávena de pedaços de ananás
água
preparação:
Colocar todos os ingredientes no copo alto do Nutribullet e adicionar água até à marca "MAX".
Caso não tenham um Nutribullet, podem usar o liquidificador e adicionar água a gosto, té obterem a consistência desejada.
Processar tudo até obter uma mistura cremosa e beber de imediato.

Parsnip crisps with thyme, salt and mustard / Crisps de pastinaca com tomilho, sal e mostarda.


Today I leave you an healthy snack suggestion.
This recipe/suggestion is from Lorraine Pascale new cookbook.
A book in which you can find all sorts of fabulous, colourful and delicious dishes and healthy ideas.
I made these crisps a few weeks ago and let me warn you that they are very, very delicious but they're also totally addictive!
ingredients:
2 large parsnips, washed and shaved into strips using a mandolin or a peeler
spray oil
2 tbsp fresh thyme leaves
2 tsp English mustard powder
sea salt and freshly ground pepper
method:
Preheat the oven 150ºC.
Line 2 baking trays with baking paper.
Arrange the parsnip shavings on the baking trays in a single layer.
Spray them evenly with the oil and sprinkle with the thyme and salt.
Using a sieve, sprinkle the mustard powder evenly over the parsnip shavings.
Bake in the oven for 30 minutes, swapping the trays around half way through and giving the parsnips a bit of toss.
Bake until golden brown and crisp.
Allow to cool a little, adjust the seasoning and serve in a large bowl.

Hoje deixo-vos esta sugestão da Lorraine que tanto pode ser um snack delicioso, como fazer parte de uma mesa de aperitivos.
Esta receita é retirada do novo livro da Lorraine Pascale.
Um livro recheado de fabulosas sugestões que, além de deliciosas, são também saudáveis.
Fiz estas crisps de pastinaca há umas semana atrás e aviso já que são absolutamente maravilhosas mas altamente viciantes.
A sorte é que são saudáveis, pois são feitas no forno e quase sem gordura nenhuma, por isso podem ser consumidas sem culpas, nem pesos na consciência.
ingredientes:
2 pastinacas grandes, lavadas e laminadas no sentido do comprimento, com a ajuda de uma mandolina ou do descascador de cenouras.
óleo ou azeite em spray
2colheres sopa de folhas frescas de tomilho
2 colheres chá de mostarda inglesa em pó
sal e pimenta preta moída na altura
preparação:
Aquecer o forno a 150ºC.
Forrar com papel vegetal 2 tabuleiros de ir ao forno.
Dispôr as lâminas de pastinaca numa só camada nos tabuleiros.
Borrifá-las com o óleo em spray, temperar de sal e pimenta e salpicá-las com as folhas do tomilho.
Com a ajuda de um coador, polvilhar a mostarda uniformemente sobre as pastinacas, por forma que fique bem distribuída.
Levar ao forno por 30 minutos, rodando e trocando os tabuleiros de prateleira, a meio do tempo.
Com a ajuda de uma espátula, dar uma "mexidela" às pastinacas. Cozinhar até estas estarem douradinhas e crocantes.
Retirar os tabuleiros do forno, deixar arrefecer um pouco, rectificar os temperos e servir.

Spicy baked eggs with spinach, mushroom and oregano / Ovos no forno com especiarias, espinafres, cogumelos e oregãos.


Here it is, the first recipe from Lorraine Pascale new cook book.
A book full of healthy and delightful recipes that, like all her books, is a stunner.
ingredients (serves 6):
2 tsp ground cumin
2 tsp paprika
1 tsp cayenne
1 tbsp extra virgin olive oil
1 red onion, halved and finely sliced
2 tsp dried oregano
2 red peppers, deseeded and cut into thin strips
2 orange peppers, deseeded and cut into thin strips
125g chestnut mushrooms, finely sliced
1 large clove of garlic, finely chopped
2 x 400g tins of chopped tomatoes
1 red chilli, deseeded and finely chopped (optional)
80g baby spinach, roughly chopped
6 eggs, preferably free range
2 tbsp fresh parsley leaves, roughly chopped
sea salt and freshly ground black pepper
method:
Put the cumin, paprika and cayenne in a ovenproof frying pan over a gentle heat and cook until fragrant.
Tip them onto a plate and return the pan to a medium heat.
Add the oil to the pan, along with the onion and oregano and cook for about 10 minutes until softened, stirring from time to time.
Preheat the oven to 180ºC.
Once the onions are ready, add the peppers and mushrooms and cook for another 10 minutes or until soften.
Add the garlic and cook for 1 minute.
Stir in the tomatoes and the chilli.
Stir in the spices, salt and freshly ground black pepper. Bring to the boil and reduce the heat to simmer for 5 minutes or until the sauce has slightly thickened.
Stir in the spinach for a minute or so until wilted. Remove the pan from the heat and carefully break in the eggs in separate spots around the top of the sauce.
Place the pan in the oven and bake for 10 to 12 minutes or until the egg whites are set but the yolks are still runny.

Deixo-vos hoje a primeira receita tirada do novo livro da lorraine Pascale.
Um livro lindo, como todos os livros que tenho desta Senhora e que está recheado de receitas saudáveis, mas cheias de cor e sabor.


ingredientes (para 6 pessoas):
2 colheres chá de cominhos em pó
2 colheres chá de paprika
1 colher chá de pimenta de Caiena
1 colher sopa de azeite extra virgem
1 cebola roxa, descascada e cortada em rodelas bem fininhas
2 colheres chá de oregãos secos
2 pimentos vermelhos, sem sementes e cortados em tiras fininhas
2 pimentos cor de laranja, sem sementes e cortados em tiras fininhas
125g cogumelos frescos castanhos, fatiados finamente
1 dente de alho grande, picadinho
2 latas de 400g (cada) de tomate picado
1 malagueta vermelha, sem sementes e bem picadinha (opcional)
80g de folhas de espinafres bebé, picados grosseiramente
6 ovos, de preferência biológicos
2 colheres sopa de folhas de salsa, picada
sal e pimenta preta moída na altura
preparação:
Numa caçarola ou frigideira grande que possam ir ao forno, colocar, sobre lume brando, a paprika, os cominhos e a pimenta de Caiena. Assim que as especiarias começarem a libertar os seus aromas, retirá-las do lume e reservá-las num prato.
Voltar a colocar a frigideira sobre lume médio e adicionar o azeite, a cebola e os oregãos.
Cozinhar por cerca de 10 minutos, mexendo com frequência, até a cebola estar macia.
Aquecer o forno a 180ºC.
Assim que a cebola estiver macia, adicionar os pimentos e os cogumelos e cozinhar por 10 minutos ou até estes estarem macios.
Adicionar o alho e cozinhar por 1 minuto.
Adicionar o tomate e a malagueta, assim como as especiarias reservadas anteriormente, sal e pimenta. Mexer tudo muito bem e quando a mistura levantar fervura, baixar um bocadinho o lume e cozinhar por mais 5 minutos ou até o molho ter engrossado ligeiramente.
Adicionar os espinafres e cozinhar por 1 minuto ou até estes terem murchado.
Retirar a frigideira do lume e partir os ovos sobre o molho, espaçando-os.
Levar a frigideira ao forno pré aquecido e cozinhar por 10 a 12 minutos, ou até as claras estarem cozidas, mas de forma a que as gemas ainda fiquem moles.
Polvilhar com a salsa picada e servir.

Mascarpone and brown sugar scones / Scones de mascarpone e açúcar amarelo.


I think I already wrote what I'm about to write now but, any way, here am I, writing it again.
I just love to go through books that are "forgotten" on my book shelves and rediscover them again.
This happened last week when I was having a look at Lorraine Pascale very 1st book and I saw the recipe for these scones.
You know me and my scones and how I am always in a quest to find the perfect scone recipe right?
Well, this is another recipe that is totally approved and that I truly recommend as the flavour is incredible and the texture is, again, like I love it, light as a feather and not stodgy at all.
ingredients (makes 9):
340g self-raising flour, plus extra for dusting
1 tsp baking powder
pinch of salt
80g butter, cold and cubed
2 tbsp soft light brown sugar
80g mascarpone
90ml milk
1 egg, lightly beaten, for glazing
method:
Preheat the oven to 210°C and dust a large baking tray with flour.
Put the flour, baking powder, salt, butter and sugar in a food processor and pulse until the mixture resembles breadcrumbs.
Add the mascarpone, then pulse again for 3 seconds.
Pour the mixture into a large bowl and make a hole in the centre, then pour in enough milk to make a soft dough and stir with a knife.
Use both hands to bring the mixture together, and squeeze, making sure any dry bits get picked up. It may seem like a crumbled mess but keep squeezing and the dough will come together.
Knead lightly for a few seconds just to make the dough smooth and then roll out quickly on a lightly floured surface to about 2cm thick.
Cut out rounds using a 6cm round cutter and place them on the prepared baking tray. Don't  twist the cutter whilst doing this or the scones won't rise evenly when baked.
Brush the tops with beaten egg and bake in the oven for 10 to 12 minutes,  or until the scones are nicely risen, firm and golden brown.
Remove from the oven and leave to cool a little on the tray.
Serve warm with clotted cream, crème fraîche or whipped cream and jam.

Acho que já aqui escrevi isto, mas se não o escrevi, pensei e assim sendo, cá vai:
Adoro fazer novas incursões pelas minhas prateleiras de livros e reler e rever os livros mais antigos e re-descobri-los.
Aconteceu a semana passada, quando peguei no primeiro livro da Lorraine Pascale (e olhem que ela já vai no 6º) e vi esta receita de scones e outras mais que entretanto marquei para fazer e refazer.
Como já vos contei, adoro scones e ando sempre à procura da receita perfeita e já vos apresentei algumas e esta é mais uma que aprovo e recomendo totalmente, pois estes scones, quer em termos de sabor que é excelente, quer em termos de textura (e já sabem que é nesta parte que sou exigente nos scones), é mesmo como eu gosto, ou seja, leve e sem ser uma textura "maçuda".


ingredientes (para 9 scones):
340g farinha com fermento + extra para o tabuleiro e bancada
1 colher chá de fermento em pó
uma pitada de sal
80g manteiga, fria e cortada em cubos
2 colheres sopa de açúcar amarelo
80g queijo mascarpone
90ml leite
1 ovo, ligeiramente batido, para pincelar


preparação:
Aquecer o forno a 210°C  e polvilhar com farinha, um tabuleiro largo de ir ao forno.
No copo do robot de cozinha, colocar a farinha, o fermento, o sal, a manteiga e o açúcar.
Pulsar até a mistura estar com um aspecto areado.
Adicionar o mascarpone e pulsar por mais 3 segundos.
Colocar a mistura numa taça e fazer um buraco no meio da mistura.
Deitar o leite no buraco e misturar tudo com uma faca de mesa, até obter uma massa mole.
Atenção, não deitar o leite todo de uma vez, pois pode não necessitar do leite todo.
Com as mãos, amassar, por forma a que a massa se junte toda, tendo o cuidado de aproveitar todos os bocadinhos que estejam na taça.
Amassar por breves segundos, por forma a obter uma massa macia.
Colocar a massa sobre a bancada enfarinhada e estender até esta ter cerca de 2cm de espessura (tentar trabalhar a massa o mínimo possível).
Com um cortador de cerca de 6cm de diâmetro, cortar círculos da massa e colocá-los no tabuleiro preparado.
Atenção: Não rodar o cortador enquanto se cortam os círculos, pois ao rodar o cortador, vai impedir que os scones cresçam de forma uniforme.
Pincelar a superfície dos scones com o ovo batido e levar ao forno por 10 a 12 minutos, ou até os scones terem crescido e estarem firmes ao toque e douradinhos.
Retirar os scones do forno e deixar arrefecer no tabuleiro por uns minutos no próprio tabuleiro.
Servir os scones ainda mornos, acompanhados de crème fraîche, natas batidas ou clotted cream e do doce que lhe apetecer.
