Cranberry and Pecan no-knead Bread for the World Bread Day / Pão "sem amassar" de Arandos e Pecã para o Dia Mundial do Pão.


It's World Bread Day and, of course, as a huge bread lover, I have to celebrate the day!
As long as I live, I'll always be amazed with the simplicity of the most ancient form of prepared food. The simplest ingredients combined and kneaded in order to feed people all over the World in its most pure, humble and simplistic way.
This year, after changing my mind time over time and recipe after recipe, I decided to make this simple yet super delicious and crusty no-knead bread.
No-knead breads are amazing. You just have to handle the dough as little as possible, let it rise for a long time and you'll have the most delicious crusty bread with an outstanding soft interior. Plus! Slow breads are most healthy and recommended right? So, hurray to slow breads and slow living!
The recipe is from Brian Hart Hoffman gorgeous "Bake from Scratch" book, from which, I've already made this Babka, this Focaccia and this amazing Cake.
For this bread, the book gives you a main, no-knead bread recipe, followed by a few flavoured options. I opted for this cranberry and pecan flavoured bread and it turned out so deliciously good that I'm tempted to try all the flavour variations soon.

Saffron Hot Cross Buns, filled with Dried Cranberries and Cocoa Nibs / Hot Cross Buns de Açafrão, recheados com Arandos secos e Pepitas de Cacau.


Today, I'm not leaving you a recipe, but an update on a recipe I made last year and that has become a favourite in our household.
The recipe you should follow is this one here and the adaptations I made this year are stated bellow.
Hot Cross Buns are an Easter staple and I couldn't not make a batch this year.
I used the same dough and method specified in this post and the only changes I made were:

Sage, speck and roasted garlic pull apart bread / Pão "pull apart" de salva, toucinho fumado e alho assado.


Another delicious Donna Hay magazine suggestion, this time a savoury pull apart bread.
This bread is a fabulous suggestion for the Christmas table.
A tear and share bread, filled with delicious flavours, textures and contrasts.
Give it a go and enjoy. The only thing I can't promise you, is that you will only have one or two pieces!


ingredients (serves 6 to 8):
250ml milk
50g unsalted butter, chopped
1 tbsp caster sugar
2 tsp dry yeast
485g plain flour, plus extra for dusting
1/2 tsp sea salt flakes
2 eggs
250g speck, rind removed and chopped
12 garlic cloves, skin on
1 bunch sage, leaves picked, plus 1/2 cup extra leaves
125ml extra virgin olive oil
150g grated fontina cheese
65g dried cranberries
70g pistachios, chopped
method:
Place 125ml of the milk in a small saucepan over high heat and bring to a simmer.
Remove from the heat, add the butter and sugar and stir until the butter has melted.
Add the remaining milk and set aside for 5 minutes.
Add the yeast and stir to combine. Set aside for 5 minutes or until the surface is foamy.
Place the flour, salt, eggs and the yeast mixture into the bowl of an electric mixer with the dough hook attached and beat for 5 minutes or until the dough is smooth.
Transfer the dough to a lightly greased bowl, cover with plastic wrap and set aside for 30 minutes or until doubled in size.
Preheat the oven to 200ºC.
Place the speck and garlic cloves on a oven tray and cook for 10 to 12 minutes or until the speck is crisp.
Set the speck aside and allow the garlic to cool slightly.
Squeeze the garlic from their skins and place in a small food processor.
Add the sage and 80ml of the olive oil and process until well combined. Set aside.
Place the dough on a lightly floured surface and roll out to a 32cm x 35cm rectangle.
Spread the dough with the sage mixture, top evenly with the speck, cheese, cranberries and pistachios.
Cut the dough in half lengthways and starting from the longest edge, roll each half to enclose the filling.
Cut each roll into 16 rounds and arrange the rounds in a lightly greased 24cm round or oval ovenproof dish.
Cover with plastic wrap  and set aside for 30 minutes or until doubled in size.
Remove the plastic wrap, top with the remaining olive oil and cook for 20 to 22 minutes or until golden brown and cooked through.
Add the extra sage leaves and cook for a further 5 minutes or until the sage leaves are crisp.

Mais uma sugestão fabulosa tirada da, não menos fabulosa, revista da Donna Hay.
Desta vez uma receita salgada. Um pão enrolado de forma a ser "puxado" e partilhado e que é uma sugestão, não só linda, como super deliciosa para a época natalícia.
Um pão recheado de contrastes e texturas e com aromas e sabores de Natal.
Atrevam-se a fazê-lo e deliciem-se. Só não vos posso prometer uma coisa: É que só vão comer um ou dois pedaços!


ingredientes (para 6 a 8 pessoas):
250ml leite
50g manteiga sem sal, em cubos
1 colher sopa de açúcar refinado branco
2 colheres chá de fermento biológico seco
485g farinha de trigo branca + extra para a bancada
1/2 colher chá de flocos ou flor de sal
2 ovos
250g speck ou toucinho fumado, sem courato e cortado em lardons
12 dentes de alho, com casca
folhas de 1 ramo de salva + 1/2 chávena (cup) de folhas extra
125ml azeite extra virgem
150g queijo fontina ralado (ou usem outro a gosto)
65g arandos secos
70g pistachios, picados
preparação:
Colocar 125ml do leite num tacho e levar ao lume até começar a querer levantar fervura.
Retirar o tacho do lume e adicionar a manteiga e o açúcar, mexendo até a manteiga estar derretida.
Adicionar o leite restante e deixar repousar por 5 minutos.
Adicionar o fermento e mexer. Reservar por mais 5 minutos, ou até a mistura formar uma espuma na superfície.
Colocar a farinha, o sal, os ovos e a mistura do fermento na taça de uma batedeira eléctrica equipada com o gancho e bater tudo por 5 minutos, ou até obter uma massa macia.
Transferir a massa para uma taça untada ligeiramente, tapar com película aderente e deixar repousar por 30 minutos, ou até a massa ter duplicado de tamanho.
Aquecer o forno a 200ºC.
Colocar o toucinho fumado e os dentes de alho num tabuleiro e levar ao forno por cerca de 10 a 12 minutos, ou até o toucinho estar douradinho e crocante.
Reservar o toucinho, deixar os alhos arrefecer até poderem ser manuseados e de seguida, descascá-los e colocá-los no copo de um robot de cozinha.
Aos alhos, adicionar as folhas de salva e 80ml do azeite e processar tudo. Reservar.
Colocar a massa sobre uma bancada ligeiramente enfarinhada e estendê-la até obter um rectângulo de cerca de 32cm x 35cm.
Barrar a massa com a mistura da salva e polvilhar com o toucinho, o queijo, os arandos e os pistachios.
Cortar a massa em 2, no sentido do comprimento e, começando por um dos lados mais compridos, enrolar cada metade, por forma a obter dois rolos recheados.
Cortar cada um dos rolos em 16 rodelas.
Untar ligeiramente um recipiente redondo ou oval que possa ir ao forno, com cerca de 24cm.
Colocar as rodelas no tabuleiro preparado, com o lado do corte virado para cima, tapar com película aderente e deixar repousar por mais 30 minutos, ou até ter duplicado novamente de volume.
Retirar a película aderente, regar com o azeite restante e levar ao forno (200ºC), por cerca de 20 a 22 minutos, ou até o pão estar douradinho e cozido.
Polvilhar com as folhas de salva extra e levar ao forno por mais 5 minutos, ou até as folhas de salva estarem crocantes.

Brioche with cranberries and Brie for the World Bread Day / Brioche recheado com queijo Brie e arandos para o Dia Mundial do Pão.


Today is World Bread Day and...,
unbelievably..., I'm participating with another Paul Hollywood recipe.
It's the third year in a row that I'm going for Paul Hollywood recipes to celebrate this day.
You all know by now that, bread wise, Paul Hollywood is my favourite Baker of all times and recurrently, I find myself digging in his books for fabulous bread recipes.
Two years ago for World Bread Day, I made this savoury couronne.
Last year I set up myself for a big challenge making this Povitica and this year, although I went for another of Paul Hollywood recipes, I decided to give it my own twist and play with a classic that I know for sure works a treat: cranberries and Brie!
Saying that, here it is my contribution for the World Bread day:
A delicious Brioche filled with creamy, smooth, buttery and sweet Brie over a layer of sweet but at the same time, tart and tangy cranberry sauce.
Like Marie Antoinette said: "If they don't have bread, let them eat Brioche"!


ingredients:
200g Brie de Meaux, cut into 10 cubes 
ingredients for the cranberry sauce:
340g fresh cranberries
200g caster sugar
45ml cherry brandy
75ml water
method:
Put all the ingredients in a pan and let it bubble away for 10 minutes, or until the berries start to pop, stirring occasionally.
Once the cranberries have burst, give the sauce a final vigorous stir, crushing the berries into the liquid and taste.
Make sure it doesn't need more sugar and add a squeeze of lemon juice if you find it to sweet.
Transfer to a bowl to cool.
Stir it well before spreading it over the brioche dough.


for the Brioche (makes 1 large loaf):
500g white bread flour, plus extra for dusting
7g salt
50g caster sugar
10g instant yeast
140ml warm full fat milk
5 medium eggs
250g unsalted butter, softened, plus extra for greasing
method:
The brioche dough needs to be made the day before.
Put the flour into the bowl of a mixer fitted with a dough hook.
Add the salt and sugar to one side of the bowl and the yeast to the other.
Add the milk and eggs and mix on a slow speed for 2 minutes.
Turn the mixer up to medium speed and mix for a further 6 to 8 minutes or until you have a soft, glossy and elastic dough.
Add the butter and continue to mix for a further 4 to 5 minutes, scraping down the bowl periodically to ensure that the butter is throughly incorporated. The dough will be very soft.
Tip the dough into a plastic bowl, cover and chill overnight.
Grease a loaf tin.
Take the brioche dough from the fridge and tip it onto a lightly floured surface.
Fold it in on itself a few times to knock out the air.
Cut the dough into 10 equal pieces (around 100g each).
Put 1 tbsp of the cranberry sauce into the middle of each piece and top each one with 1 cube of the Brie cheese.
Fold the dough over the filling and shape into balls.
Put the balls in the tin in one row.
Cover with cling film or with a clean plastic bag and leave to prove for 2 to 3 hours, or until risen just above the rim of the tin.
Preheat the oven to 190ºC.
Bake the brioche for 30 to 40 minutes or until a skewer inserted into the centre comes out clean.
At some point of the cooking time I covered the tin with foil, so the top of the brioche wouldn't be to dark (I like mine lightly golden brown in colour) but it is really up to you.
Remove the brioche from the tin and cool on a wire rack.
Serve warm or at room temperature.

Hoje é o Dia Mundial do Pão e, mais uma vez e recorrentemente, cá estou eu a participar com mais uma receita do Paul Hollywood.
É o terceiro ano que participo neste evento e sempre com receitas daquele que é, sem margem de dúvida, o meu padeiro favorito!
Sempre que procuro receitas de pão, embora tenha uns quantos livros sobre a matéria, é sempre nos livros deste Senhor que acabo por encontrar a receita que me agrada, que sempre corre bem e que nunca dá problemas.
Há dois anos atrás, participei no Dia Mundial do Pão, com esta coroa de brioche salgada.
O ano passado, decidi desafiar-me a mim mesma e fiz esta Povitica que me deu "água pela barba..." e este ano..., adivinhem? trago-vos de novo o Paul Hollywood e uma receita de brioche doce.
Para rechear este brioche, resolvi brincar com um clássico britânico que sei que é perfeito em termos de sabor e é um casamento perfeito: Arandos e queijo Brie!
Assim sendo, aqui vos deixo a minha proposta para o Dia Mundial do Pão de 2015:
Um delicioso brioche doce, recheado com a receita de molho de arandos da Nigella e cremosos quadrados de queijo Brie.
O contraste de sabores é absolutamente fenomenal e entusiasticamente recomendável e tal como disse a Maria Antonieta "Se não têm pão, que comam brioche"!!



ingredientes:
200g queijo Brie de Meaux, cortado em 10 cubos
ingredientes para o molho de arandos:
340g arandos frescos
200g açúcar refinado branco
45ml brandy de cereja (Bols)
75ml água
preparação:
Colocar todos os ingredientes num tacho sobre lume alto e, mexendo de vez em quando, cozinhar durante 10 minutos, ou até que a fruta comece a abrir.
Assim que os arandos começarem a abrir, mexer vigorosamente, esmagando a fruta ao mesmo tempo.
Provar e caso achem necessário, adicionem mais açúcar ou, caso achem muito doce, adicionem umas gotas de sumo de limão.
Colocar o molho numa taça e deixar arrefecer. O molho ficará mais espesso depois de frio.

Nota: Mexer bem o molho antes de o espalhar sobre a massa do brioche.


para o Brioche (para 1 pão grande):
500g farinha para pão + extra para a bancada
7g sal
50g açúcar refinado branco
10g fermento biológico seco para pão
140ml leite gordo morno
5 ovos médios
250g manteiga sem sal, amolecida + extra para untar a forma
preparação:
Colocar a farinha na taça da batedeira equipada com o gancho para pão.
Colocar o sal e o açúcar numa extremidade da taça e o fermento na outra extremidade.
Adicionar o leite e os ovos e misturar tudo em velocidade baixa por 2 minutos.
Aumentar a velocidade da batedeira para velocidade média e bater por mais 6 a 8 minutos, ou até obter uma massa macia, brilhante e elástica.
Adicionar a manteiga e combinar por 4 ou 5 minutos, raspando os lados da taça de vez em quando, a fim de garantir que a manteiga fica completamente incorporada na massa.
A massa ficará muito mole e será impossível trabalhá-la.
Colocar a massa num contentor de plástico, tapar o contentor e deixar a massa repousar de um dia para o outro no frigorífico a fim de que fique moldável.
No dia seguinte, untar uma forma grande de pão.
Retirar a massa do frigorífico e deitá-la sobre uma superfície ligeiramente enfarinhada.
Dobrar a massa sobre si mesma várias vezes, a fim de lhe retirar o ar.
Cortar a massa em 10 pedaços, com mais ou menos 100g cada.
Espalmar cada pedaço com a palma da mão, colocar 1 colher sopa de molho de arandos no centro da massa e por cima deste, um quadrado de Brie.
Fechar bem a massa, formando uma bola, a fim de enclausurar o recheio.
Repetir por forma a obter um total de 10 bolas recheadas e colocá-las em linha, dentro da forma untada.
Cobrir a forma com um saco plástico limpo ou película aderente e deixar repousar por cerca de 2 a 3 horas, ou até que o brioche tenha crescido um bocadinho acima da bordadura da forma.
Aquecer o forno a 190ºC.
Cozer o brioche por 30 a 40 minutos, ou até que um palito inserido no meio do mesmo, saia completamente limpo.
Retirar o brioche da forma e deixá-lo arrefecer sobre uma grelha.
Servir morno ou à temperatura ambiente.


Nota 1: A massa do brioche tem de ser feita de véspera, pois precisa de repousar no frigorífico durante a noite.
Nota 2: A determinada altura da cozedura, e porque o brioche é uma massa enriquecida com manteiga e açúcar, eu tapei a forma com papel de alumínio, para que o topo do meu brioche não ficasse muito escuro antes de estar cozido, mas esta é uma opção pessoal. Eu gosto dele com um ar mais para o douradinho claro.

Carrot, cumin and miso soup with freekeh / Sopa de cenoura, cominhos e miso com topping the freekeh.


I know I'm always repeating myself but the thing is, I really love soups.
It was not like that when I was a kid. At that time, soups were boring and the flavours were almost the same all the time and to tell you the truth, at that time, I hated soup. Eating them was an obligation, while now is a real pleasure.
No matter the season, soup is one of my favourite meals and like I wrote already, soup for me is not a starter but a meal on itself and that's why soups with a second dimension are my favourite ones.
My parents used to say that carrots make your eyes prettier and if that myth is true, this soup will do the job as it's full of carrots and if not, it will make your eyes shine, just by looking at its great and vibrant colours.
The flavour itself, is absolutely fabulous!!
ingredients (serves 4):
1 tbsp unsalted butter
1 onion, sliced
1 heaped tsp cumin seeds
1 kg carrots, roughly chopped
1 heaped tsp white miso paste
for the topping:
100g freekeh, spelt or pearl barley, boiled according to the packet instructions and drained
25g dried cranberries, soaked in warm water and drained
1/4 onion, finely chopped (I used snipped chives)
1/2 celery stalk, finely chopped
1/2 carrot, finely chopped
flaky sea salt


method:
Melt the butter in a large pan. Add the onion and cook for 10 minutes or until soft.
Push the onion to one side of the pan and add the cumin seeds.
When the seeds start to release their aroma, add the carrots and stir everything together.
Add the miso paste and stir.
Add 750ml boiling water, bring to the boil, then simmer until the carrots are tender.
Process the soup until smooth and season with salt.
Meanwhile, mix the grain of your choice with the soaked cranberries, onion, celery and carrot in a large bowl. Season with salt.
Serve the soup topped with the freekeh mixture.

Eu sei que estou sempre a repetir-me, mas o facto é que, adoro sopa. Mesmo!!! Seja qual for a estação do ano, sopa a mim agrada-me sempre e em todas as estações, pois com a diversidade de legumes que hoje em dia se encontra, facilmente se adaptam sopas a todas as estações do ano.
Não pensem que foi sempre assim, pois não foi!
Em pequena, detestava sopa. Comer sopa era uma obrigação. As sopas eram sempre as mesmas. Entediantes, com pouca variação de sabor e de "entulho" como lhes chamava.
Agora adoro sopas de "entulho", tipo sopa da pedra, de feijão e afins e adoro-as tanto como sopas cremosas ou caldos mais ligeiros.
Como já escrevi aqui antes, sopa para mim não é um começo ou terminar de refeição. Sopa para mim é, por si só, uma refeição e por isso adoro sopas com uma segunda dimensão, como é o caso desta.
Os meus pais costumavam dizer que a cenoura faz os olhos bonitos e se o mito é verdadeiro, esta será com certeza uma sopa que fará muitos olhos bonitos, dada a considerável quantidade de cenoura que leva.
Caso o mito não seja real e os olhos não fiquem mais bonitos, brilharão mais de certeza, só de olhar para as cores vibrantes duma tigela desta sopa.
Quanto ao sabor, esse nem vale a pena dizer o quanto é maravilhoso e o quanto a combinação de sabores é perfeita e harmoniosa.


ingredientes (para 4 pessoas):
1 colher sopa de manteiga sem sal
1 cebola, finamente fatiada
1 colher chá bem cheia de sementes de cominho
1 kg de cenouras, grosseiramente picadas (eu descasquei as minhas)
1 colher chá bem cheia de pasta de miso clara
para o topping:
100g freekeh (não encontrei tradução para a freekeh mas é um género de grão de trigo integral), espelta ou cevadinha, cozida, de acordo com as instruções da embalagem e escorrida.
25g arandos secos, hidratados em água a ferver e escorridos
1/4 cebola, finamente picada (eu não gostei da ideia da cebola crua e optei por cebolinho picado).
1/2 talo de aipo, finamente picado
1/2 cenoura, finamente picada
flor ou flocos de sal
preparação:
Derreter a manteiga numa panela.
Adicionar a cebola e cozinhar por 10 minutos, ou até a cebola estar macia.
Empurrar a cebola para um canto da panela e colocar as sementes de cominho no espaço vazio.
Quando as sementes começarem a estalar e a libertar o seu aroma, adicionar as cenouras e mexer tudo muito bem.
Adicionar a pasta de miso e envolver tudo muito bem.
Adicionar 750ml de água a ferver e quando a mistura levantar fervura, baixar o lume e cozinhar até as cenouras estarem macias.
Com a varinha mágica ou robot de cozinha, reduzir a sopa a puré e rectificar o sal.
Entretanto numa taça, colocar o grão escolhido, os arandos hidratados e escorridos, a cebola, o aipo e a cenoura. Temperar com flor ou flocos de sal.
Servir a sopa em tigelas, polvilhada com a mistura do topping.

Red velvet bundt cake with cream cheese icing and sugared cranberries / Bundt cake veludo vermelho, com icing de queijo creme e arandos envolvidos em açúcar.


As you all know, Bundtmania is celebrating its 1st anniversary as it goes for its 12th edition.
The theme for this celebration is Party Bundt Cakes!
All big celebrations deserve a red carpet but instead of a red carpet, I bring you red velvet.
Based on two Donna Hay recipes, I combined this red velvet cake recipe, with this icing and topping recipes and turned them into a bundt cake.
And because today is my mum's birthday and she's far away from me and I can't give her a big hug and lots of kisses, this cake is dedicated to her and to let her know that she as always been a great mother and I love her a lot!
As you know, for a perfect bundt cake, all ingredients should be at room temperature and mine were.
So, let the parties begin!!

Como todos sabem, esta é a 12ª edição do Bundtmania e como tal, celebra-se o 1º aniversário desta iniciativa de sucesso, criada pela querida Mena, Madame Bundette e por mim.
A todas as pessoas que participam neste nosso passatempo, o meu muito obrigada, pois sem vocês a Bundtmania não estaria agora a celebrar este 1º aniversário.
O bolo que hoje vos trago é a combinação desta e desta receitas da Donna Hay, que retirei da minha revista digital.
Decidi publicar hoje o meu bundt cake porque hoje é um dia especial, pois a minha mãe faz anos.
A minha mãe sempre foi e é uma mãe exemplar e sempre esteve disponível para as filhas,  nos bons e nos maus momentos. Sempre nos transmitiu os valores que hoje me regem e sempre foi uma mulher de armas e lutadora.
Como excelente mãe que é, as filhas e agora os netos, sempre estiveram em primeiro lugar e sempre sacrificou as suas próprias necessidades em prol das necessidades das filhas.
Dedico-lhe este bundt cake, pois mesmo estando longe dela e não lhe podendo dar um grande abraço e milhões de beijinhos, quero que saiba que o meu pensamento está com ela e que a amo muito e admiro imenso!
Todas as grandes celebrações merecem um tapete vermelho e como tal, e na falta do um tapete vermelho, trago-vos antes veludo vermelho :)))!!
Assim sendo e sem mais demandas, dá-se então início ás celebrações acima mencionadas!
Como todos sabem, um dos requisitos para obter um bundt cake perfeito, é que todos os ingredientes estejam à temperatura ambiente.


ingredientes para o bolo:
225g manteiga sem sal, amolecida
275g açúcar branco refinado
1 1/2 colheres chá de extracto de baunilha
3 ovos
300g farinha com fermento, peneirada
35g cacau em pó, peneirado
180ml buttermilk
60ml corante vermelho para culinária (eu comprei um à base de corante vegetal numa loja de produtos naturais).
preparação:
Aquecer o forno a 160ºC e untar muito bem uma forma para bundt.
Com a ajuda da batedeira eléctrica, bater o açúcar com a manteiga e a baunilha, por 8 a 10 minutos, ou até a mistura estar pálida e cremosa.
Adicionar os ovos, um de cada vez, batendo bem entre cada adição.
À mistura anterior, adicionar a farinha, o cacau, o buttermilk e o corante e bater - com a batedeira em velocidade mínima - até que tudo esteja combinado.
Colocar a mistura na forma, alisando o topo e levar ao forno por cerca de 1 hora e 30 minutos ou até que um palito inserido no meio do bolo, saia completamente limpo.
Deixar o bolo repousar 10 minutos na forma, antes de o desenformar em cima de uma grelha até estar completamente frio.


ingredientes para o icing:
250g queijo creme (tipo Philadelphia)
50g manteiga sem sal, amolecida
120g açúcar em pó, peneirado
1 colher sopa de leite
preparação:
Colocar o queijo e a manteiga numa taça e bater por 8 a 10 minutos.
Adicionar o açúcar em pó e bater por mais 6 a 8 minutos ou até a mistura estar cremosa e macia.
Adicionar o leite e bater até tudo estar bem combinado.
Reservar no frigorífico até ao momento de utilizar.
ingredientes para os arandos:
açúcar branco refinado, para envolver
70g arandos, frescos ou congelados - descongelados antes de usar
preparação:
Envolver os arandos no açúcar e reservar num local seco, em cima de papel vegetal.
montagem do bolo:
Colocar o bolo num prato de serviço, cobri-lo com o icing e decorar com os arandos.

Turkey, cranberry and prosciutto sausage rolls and lemon squash / Folhados de peru, arandos e presunto e squash de limão.


Rute from "Cozinha Fresh" blog, invited me for a guest post and to prepare an easy recipe to be enjoyed and eaten outdoors.
It came immediately to my mind these rolls and lemon squash that I saw at Donna Hay magazine and I decided straight away that it would be the recipe to prepare for Rute's guest post and I was right as this combination of flavours is absolutely outstanding and a great recipe to be eaten outdoors.
ingredients for the rolls (makes 8):
1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, crushed
2 tbsp sage, finely chopped
500g turkey mince
80g cranberry sauce (I made my own - recipe here)
2 tsp Dijon mustard
salt and black pepper
2 sheets puff pastry
16 slices prosciutto
1 egg, lightly beaten
pistachios, chopped, for sprinkling
mustard, to serve


method:
Preheat the oven to 200ºC.
Heat the oil in a frying pan over a medium heat.
Add the onion and garlic and cook until soft.
Place the onion mixture in a large bowl and set aside to cool.
Add the sage, turkey , cranberry sauce, mustard, salt and pepper and mix to combine. Set aside.
Line each pastry sheet with prosciutto, slightly overlapping each slice.
Cut the pastry sheets in half crossways.
Divide the turkey combination in 4 equal portions and roll into sausage shapes.
Place the sausage shaped meat at one end of each piece of pastry.
Brush the edges of the pastry with egg and roll to enclose.
Place the rolls, seam side down, on 2 lightly greased baking trays lined with baking paper.
Use scissors to cut slits in the tops of the rolls, brush with egg and sprinkle with the pistachios.
Bake for 20 to 25 minutes or until golden.
Cut each roll in half and serve with mustard.
ingredients for the lemon squash:
3 lemons, washed and roughly chopped
1 1/2 cups caster sugar (I used just 1 cup)
250ml water
750ml chilled soda water
method:
Place the lemons, sugar and water in the jug of a blender and blend until smooth.
Pass the mixture through a sieve into a bottle and stir through the soda water.
