Lamb Burgers with Pomegranate Seeds / Hambúrgueres de Borrego com bagos de Romã.

A book that I'm totally in love with and that is on my kitchen table since the day I got it. I'll be cooking a lot from it during this season and, of course, in between food steps and processes, I'll keep on reading the stories and dreaming over the gorgeous photos of New York.
A big thank you to the publisher Murdoch Books UK that sent me this gem of a book that I totally recommend!
These burgers were the first recipe I tried as, I marked down so many to try that, of course, I couldn't wait until Christmas to try them all right?
The meat is slow cooked with some Christmassy spices and after 3 hours, it just falls off the bone and melts in your mouth. A recipe to try over and over again and that was loved an joyfully enjoyed by adults and kids.
As this month Marta asked us to make recipes featuring pomegranate for her October "ingredient of the month", I invite Marta to try and enjoy these delicious burgers.

Vegan Beetroot & Beans Burgers / Hamburgeres vegan de Beterraba e Feijão Preto.


These burgers are just my favourite vegan burgers of all times.
Since Kimberly published the recipe on her gorgeous "The Little Plantation" blog, I've already made them countless times.
I adore these burgers and my daughter adores them too and loves to take them for school in her pack lunch. I could give her one of these burgers a day and she'd be super happy.
I'm just posting the recipe in Portuguese (below) as, there's no point on publishing the English version of it when it is very well explained and detailed here, at Kimberly's blog.

Jerusalem artichoke soup served with a game burger and Jerusalem crisps / Sopa de girassol batateiro, servida com hamburguer de caça e crisps de girassol batateiro.



Jerusalem artichoke is an ingredient that I truly adore.
It's a shame that the Jerusalem artichoke season is so short and therefore, when I can get some, I try to make the most of them.
Although I already have some recipes with Jerusalem artichokes, including soups, published on the blog (here, here, here, here and here), this time, and because is a festive season, I decided to use them in a more gourmet way.
A creamy and delicious soup, suggested by Tom Kitchin, my very favourite Scottish Chef, that has 3 fantastic restaurants in Edinburgh (The Kitchin, Castle Terrace and The Scran & Scallie) and where, fortunately and more than once, I already had the opportunity to eat.




ingredients (serves 4 to 6):
for the soup:
2 tbsp vegetable oil
1 large onion, chopped
salt and pepper
10 to 12 Jerusalem artichokes, peeled and placed in acidulated water
750ml chicken stock
150ml whipping cream
1/2 lemon, juice only
method:
Heat the vegetable oil in a large pan and gently fry the onion and a pinch of salt for 5 to 6 minutes, or until soft. 
Cut the artichokes into 2cm cubes. Add them to the onions and fry for a further 3 to 4 minutes.
Pour in the chicken stock and cream and cook over a medium heat until the vegetables are soft.
Add the lemon juice and cook for 5 more minutes.
Transfer the cooked vegetables to food processor and blend to a smooth soup.
If it is too thick, add a little more stock or water.
Taste to check the seasoning and add salt and pepper as required.
Keep warm until ready to serve.
for the game burgers:
50ml olive oil, plus extra to serve
1 onion, finely chopped
200g game livers
200g pork fat
200g pork belly
200g mixed game meat
50g dried apricots
1 to 2 free range eggs
200ml cream
200g breadcrumbs
method:
Heat a dash of the olive oil in a frying pan. Once hot, add the onion and gently fry until soft and translucent. Set aside to cool.
Put the livers, pork fat, pork belly, game and apricots through a mincer, or very finely chop them (alternatively, ask your butcher to do this for you).
Add one egg, the cream and breadcrumbs and mix together.
If the mixture doesn’t bind together add the other egg. Season with salt and pepper to taste.
Mould the meat into burgers and fry in a large frying pan with the olive oil for 2 to 3 minutes on each side.
for the Jerusalem crisps:
vegetable oil, for deep frying
4 Jerusalem artichokes, sliced lengthways on a mandolin, skin on 
50g plain flour
2 tbsp fresh chives, sliced into 2mm pieces, to garnish (optional)
method:
Fill a deep-fat fryer with vegetable oil and preheat to 180ºC.
Dry the slices of artichokes with a clean tea towel and dust with flour.
Fry for 2 minutes, or until crisp and golden brown. 
Serve the Jerusalem artichoke soup with the game burger in the centre of each of the bowls, garnished with the artichoke crisps, chives and a swirl of olive oil.

Girassol batateiro, um ingrediente que adoro de paixão e que só tenho pena que tenha uma época tão curtinha, pois é um ingrediente fabuloso e único.
Embora já tenha algumas receitas com girassol batateiro publicadas (aqui, aqui, aqui, aqui e aqui) no blogue, incluindo sopas, não podia deixar de vos apresentar mais esta.
Uma sopa super gourmet, sugestão do meu Chef escocês preferido, o Chef Tom Kitchin, que tem 3 restaurantes em Edimburgo, dois deles com estrela Michelin, o Castle Terrace e o The Kitchin e um outro que é tipo pub, mas com comida e serviço de "fine dinning", o  The Scran & Scallie e, onde, felizmente, já tive o privilégio de comer em todos eles mais que uma vez!!

Caso consigam arranjar o girassol batateiro e aproveitando esta época festiva em que se quer comida mais sofisticada, não deixem de experimentar esta sugestão gourmet e absolutamente deliciosa.


ingredientes (para 4 a 6 pessoas):
para a sopa:
2 colheres sopa de óleo vegetal
1 cebola grande, picada
sal e pimenta preta moída na altura, a gosto
10 a 12 tubérculos de girassol batateiro, descascados e colocados imediatamente em água com limão, para que não oxidem.
750ml caldo de galinha
150ml natas para culinária
sumo de 1/2 limão
preparação:
Aquecer o óleo num tacho largo e cozinhar a cebola com uma pitada de sal, por cerca de 5 a 6 minutos, ou até esta estar macia, mas sem cor.
Cortar o girassol batateiro em cubos de cerca de 2cm e adicioná-los à cebola, cozinhando por cerca de 3 a 4 minutos.
Adicionar o caldo e as natas e cozinhar, sobre lume médio, até o girassol batateiro estar macio.
Adicionar o sumo do limão e cozinhar por mais 5 minutos.
Com a varinha mágica ou num liquidificador, reduzir a sopa a puré, até este estar macio e cremoso.
Se achar que a sopa está muito espessa, adicionar mais caldo ou água. Temperar a gosto, com sal e pimenta preta moída na altura.
Manter a sopa quente até ao momento de servir.
para os hamburgueres:
50ml azeite + extra para servir
1 cebola, picada
200g fígados de caça
200g gordura de porco
200g barriga de porco
200g mistura de carnes de caça (faisão, perdiz, veado, etc.)
50g alperces secos
1 ou 2 ovos, de preferência caseiros
200ml natas para culinária
200g pão ralado
preparação:
Aquecer um fio de azeite numa frigideira e quando bem quanto, adicionar a cebola e cozinhar até esta estar macia e translúcida. Reservar até cebola estar fria.
Colocar todas as carnes e os alperces numa máquina de picar carne ou, pedir logo no talho para picarem as carnes todas juntas e em casa, picar os alperces e juntá-los ás carnes.
Adicionar 1 ovo, as natas e o pão ralado e misturar tudo muito bem.
Caso a mistura não tenha uma consistência apropriada para moldar os hamburgueres, adicionar mais um ovo.
Temperar de sal e pimenta a gosto e moldar mini hamburgueres.
Fritar os hamburgueres num fio de azeite, por cerca de 2 a 3 minutos de cada lado.
para as crisps de girassol batateiro:
óleo vegetal, para fritar
4 tubérculos de girassol batateiro, com casca, finamente fatiados, no sentido do comprimento, com uma mandolina e colocados em água com limão.
50g farinha de trigo branca
2 colheres sopa de cebolinho, picado (opcional), para decorar
preparação:
Aquecer o óleo na fritadeira até este estar a 180ºC.
Secar as fatias de girassol batateiro num pano limpo e polvilhá-las com a farinha.
Fritar por cerca de 2 minutos, ou até estarem douradinhas e crocantes e estaladiças.
Servir a sopa com um hamburguer de caça no centro do prato e colocar as crisps em cima do hamburguer.
Caso utilizem, polvilhar com o cebolinho picado e regar com um fio de azeite.

Salmon burgers / Hamburgueres de salmão.


Healthy and homemade burgers are being a hit here at home this Summer.
All, kids and grown ups love them and these ones are absolutely delicious and easy to prepare.
The recipe is here and if you like fish burgers, these ones really are worthy to be tried.

Hamburgers caseiros, sejam de peixe, vegetarianos ou de carne, têm sido muito apreciados por todos cá em casa este Verão.
Esta receita é absolutamente deliciosa e facílima de preparar e se gostam de hamburgueres de peixe, aqui fica a sugestão, pois vale mesmo a pena!!
A receita é para 2 pessoas, que eu dupliquei para dar para 4.


ingredientes (para 2 pessoas):
160 a 200g de salmão fresco
1 spring onion
1 punhado de alcaparras
1 colher chá de mostarda de Dijon
1 ovo
3 colheres sopa de pão ralado panko
1 punhado de salsa
1 punhado de manjericão
azeite
sal e pimenta preta moída na altura
3 colheres sopa de maionese
raspa de 1 limão e sumo de meio limão
para servir:
pães de hamburguer
folhas de alface
1 pêra abacate, em rodelas
1 tomate, em rodelas
6 rodelas de pepino
anéis de 1cebola vermelha (não usei)
preparação:
Picar o salmão grosseiramente.
Picar as spring onions e as alcaparras e juntá-las ao salmão.
Adicionar a mostarda, sal e pimenta.
Adicionar o ovo e o pão ralado e misturar tudo muito bem.
Picar a salsa e o manjericão e adicioná-los à mistura anterior.
Moldar a mistura em dois hamburgueres e levá-los ao frigorífico por cerca de 30 minutos ou podem deixar de um dia para o outro que foi o que eu fiz.
Misturar a maionese com o sumo e a raspa do limão. Temperar com pimenta preta e reservar.
Cortar o pão dos hamburgueres ao meio e torrá-lo.
Pincelar ambos os lados dos hamburgueres com azeite e fritá-los numa frigideira aquecida, por cerca de 3 minutos de cada lado.
Barrar as metades de baixo do pão com a maionese de limão e por cima, colocar a alface e a pêra abacate.
Colocar 1 hamburguer em cima de cada uma das metades de pão preparadas, cobrir com o tomate, o pepino e a cebola (caso utilizem) e temperar com pimenta.
Barrar as partes de cima do pão com mais maionese e com elas cobrir os hamburgueres.
Servir imediatamente.

Cod burgers served on a bagel, with bacon, samphire and fried egg / Hamburgueres de bacalhau servidos em bagel, com ovo a cavalo, bacon e salicornia.



This recipe is absolutely stunning and I have to thank and give my compliments to Vera as she was the one that created it.
I just followed her indications and steps, adapting it and giving it my twist.
Vera served her burgers with slices of red pepper and lettuce, but I served mine with blanched samphire.
Absolutely delicious and a recipe that you really should try!!
ingredients for the burgers (serves 4):
500g fresh cod fish, roughly chopped
1 egg, lightly beaten
2 tbsp oatmeal (Vera used plain flour so fell free to use flour if you want)
2 tbsp fresh breadcrumbs
5 springs fresh parsley, roughly chopped
1/2 red onion, roughly chopped
2 garlic cloves, peeled and roughly chopped
freshly ground white pepper, to taste
salt, to taste
olive oil, to fry
method:
Put all the ingredients into the bowl of a food processor and pulse until the mixture is coarsely chopped but not fully pureed.
Put the mixture inside a bowl and use your hands to form 4 patties.
Heat a skillet over medium heat and add the olive oil.
Cook the burgers for 4 to 5 minutes on each side, or until cooked through and golden on both sides.
Drain the burgers over kitchen towel.


to finish:
4 bagels
4 small eggs
2 tbsp olive oil
method:
Heat a skillet over medium low heat and add 1 tbsp olive oil.
Slice the bagels in half and fry the bases of your bagels, cut side down, until golden brown.
Remove the bread from the skillet and keep warm.
Now put the top halves of your bagels in the skillet, cut side down.
Break one egg inside each bagel hole, allowing the egg white to run first and down the hole, so the egg yolk stay at the level of the hole.
Add another tablespoon of olive oil to the pan and fry until the egg whites are cooked, basting the egg yolks with spoonfuls of warm olive oil from the skillet.
When the egg whites are cooked and the egg yolks are cooked to your liking, turn off the heat.
to serve:
4 handfuls of samphire, blanched in boiling water and drained
8 thin slices bacon, fried or baked until very crispy
7 tbsp mayonnaise mixed with 1 tsp hot paprika
assembling the burgers:
Put one base of the fried bagel, cut side up, on each serving plate.
Top with the blanched samphire, followed by the crispy bacon, the burgers and the top side of the bagel with the fried egg.
Serve with the spicy paprika and chips.

Estes hamburgueres são algo de absolutamente fenomenal e só tenho de agradecer à Vera, que foi quem os criou.
Foram altamente apreciados cá em casa e uma refeição deliciosa e a repetir muitas vezes.
Segui a receita da Vera com alguns "twists" pessoais, ou seja:


  1. Usei bacalhau fresco.
  2. Em vez de farinha, usei farelo de aveia na mistura dos hamburgueres, pois é algo que adoro.
  3. Em vez da alface e do pimento vermelho, servi com salicornia que foi simplesmente escaldada em água a ferver e escorrida.
  4. A Vera retirou parte da clara do ovo antes de colocar os ovos no buraco das bagels, e eu comprei ovos bem pequenos, deixando primeiro escorrer a branca pelo buraco, por forma a que a gema ficasse alinhada com o buraco da bagel, tendo assim utilizado o ovo inteiro.
  5. A Vera levou os ovos ao forno a fim de cozer as gemas, mas eu como gosto das gemas a escorrer, simplesmente fui regando as gemas com o azeite quente da frigideira, por forma a  que ficassem cozidas, mas a escorrer como fazemos com os ovos estrelados.
  6. À maionese adicionei 1 colher de chá de paprika picante, o que, no conjunto, acabou por elevar o sabor da maionese e dar um toque especial a todos os componentes do hamburguer.

Caso queiram experimentar, o que, sinceramente, aconselho vivamente, sigam a receita da Vera tal qual, dêem-lhe o vosso twist, ou ainda, se gostam e conseguem arranjar, sirvam como eu, com a salicornia, pois em conjunto com o bacon e a textura dos hamburgueres, é algo de absolutamente magnífico e mais uma valiosa adição ao cardápio.
Quanto a mim, da próxima vez que os fizer, terei o cuidado de os moldar com o mesmo diâmetro das bagels, pois teriam ficado mais lindos visualmente, de resto, não mudo uma vírgula a esta receita.

Greens and beans burgers with avocado cream / Hamburgueres de espinafres e feijão com creme de pêra abacate.


Fabulous burgers that can easily be transformed in vegetarian burgers by omitting the bacon.
The avocado cream not only works as a topping for the burgers, but it can also be used as a dip for chips or vegetables.
ingredients for the burgers (serves 4 to 6):
2 slices thick cut bacon
170g fresh spinach
2 garlic cloves, minced
3 cups canned cannellini beans, rinsed and drained
1/4 cup all-purpose or whole wheat flour (I used 1/3 cup of oatmeal)
2 large eggs, lightly beaten
2 tbsp freshly grated Parmesan cheese
2 spring onions, sliced
1/4 tsp salt
1/4 tsp freshly ground black pepper
2 tbsp extra-virgin olive oil
method:
Heat a large frying pan over medium to low heat.
Add the bacon and cook until crispy. Remove the bacon from the pan with a slotted spoon and let it drain over kitchen towel.
To the same skillet, add the spinach and garlic and cook until the spinach is wilted. Turn off the heat.
Add the spinach and garlic to the bowl of a food processor.
Add the beans, bacon, flour, eggs, cheese, spring onions, salt and pepper and pulse until the mixture is coarsely chopped but not fully pureed.
Put the mixture inside a bowl. Use your hands to form 6 to 8 patties out of the bean mixture, depending on the size of your buns.
Heat the same skillet over medium heat and add the olive oil.
Cook the burgers for 4 to 5 minutes on each side, or until golden on both sides.


for the avocado cream:
2/3 cup plain full-fat or low-fat Greek yogurt
1 avocado, pitted, peeled, and chopped
1/4 tsp salt
1/4 tsp freshly ground black pepper
method:
Put the yoghurt, avocado, salt, and pepper in the bowl of the food processor and puree until smooth.
to serve:
6 to 8 whole-grain buns (or other kind of buns), toasted
to finish:
Serve the burgers on the toasted buns, topped with the avocado cream.

Uns hamburgers maravilhosos que, omitindo o bacon (algo impossível para mim), podem transformar-se numa refeição vegetariana.
ingredientes para os hamburgueres (para 4 a 6 pessoas):
2 fatias grossas de bacon
170g folhas de espinafres frescos
2 dentes de alho, esmagados
3 chávenas de feijão branco de lata, escorrido e lavado
1/4 chávena de farinha de trigo branca ou integral (eu usei 1/3 chávena de farelo de aveia)
2 ovos grandes, ligeiramente batidos
2 colheres sopa queijo parmesão ralado
2 spring onions, picadas
1/4 colher chá de sal
1/4 colher chá de pimenta preta moída na altura
2 colheres sopa de azeite extra virgem
preparação:
Sobre lume médio a brando, aquecer uma frigideira larga ou skillet.
Adicionar o bacon e cozinhar até o bacon estar estaladiço.
Com uma escumadeira, remover o bacon para um prato e escorrer sobre papel absorvente de cozinha.
Na mesma frigideira, colocar os espinafres e os alhos e cozinhar até os espinafres murcharem. Desligar o lume.
No copo de um robot de cozinha, colocar a mistura dos espinafres, o feijão, o bacon, a farinha, os ovos, o queijo, as spring onions, sal e pimenta e processar, pulsando, até a mistura estar bem incorporada, mas não em puré fino. Convém que fique um puré grosseiro.
Transferir a mistura para uma taça e, com as mãos, moldar 6 a 8 hamburgueres, dependendo do tamanho do pão que vão usar.
Sobre lume médio, aquecer a mesma frigideira onde fritou o bacon e os espinafres e adicionar o azeite.
Fritar os hamburgueres por cerca de 4 a 5 minutos de cada lado, ou até estarem douradinhos em ambos os lados.


para o creme de pêra abacate:
2/3 chávena de iogurte grego
1 pêra abacate, sem caroço, sem casca e picada
1/4 colher chá de sal
1/4 colher chá de pimenta preta moída na altura
preparação:
Colocar todos os ingredientes no copo do robot de cozinha e processar até obter um puré macio.
para servir:
6 ou 8 pães de hamburguer (variedade à escolha), torrados
para terminar:
Servir os hamburgueres e o creme de abacate, sobre o pão torrado.

Salmon burgers with pine nuts / Hamburgueres de salmão com pinhões.


An absolutely fabulous burger that makes and was an easy and very satisfying dinner for all the family.
ingredients (makes 4 to 6 burgers):
300g potatoes, peeled, cut into chunks, boiled in salted water, drained and mashed
450g fresh salmon, skinned and boneless and chopped into chunks
175g spinach leaves, blanched in boiling water for 2 minutes, drained, squeezed and chopped
extra handful of spinach leaves for serving
55g pine nuts, toasted
2 tbsp lemon zest
1 tbsp chopped fresh parsley
2 tbsp wholemeal flour
200ml crème fraîche
4cm piece of cucumber, peeled and finely chopped
2 tbsp sunflower oil
salt and freshly ground black pepper
4 to 6 wholemeal buns, split
grilled cherry tomatoes, to serve


method:
Place the blanched spinach in a food processor with the salmon, mashed potatoes, pine nuts, 1 tbsp of the lemon zest, the parsley and salt and pepper to taste.
Blend using the pulse button, until everything comes together.
Shape the mixture into 4 or 6 equal sized burgers, cover and chill in the fridge for about 1 hour.
Meanwhile, mix together in a bowl the crème fraîche with the chopped cucumber and the remaining lemon zest. Cover and chill until required.
Coat the burgers with the flour.
Brush the burgers with the oil and cook over medium hot coals for 4 to 6 minutes on each side or shallow fry them in  a frying pan or grill them on a hot griddle pan.
Place the reserved spinach leaves on the bottom halves of the buns and top them with the burgers.
Spoon over a little of the crème fraîche mixture and cover with the other bun half.
Serve with grilled cherry tomatoes and to drink, serve this fabulous and refreshing watermelon, lime and mint lemonade.

Uns hamburgueres magníficos e que, um dia destes ao jantar, fizeram as delícias de toda a família.
ingredientes (para 4 ou 6 hamburgueres, dependendo do tamanho):
300g batatas, descascadas, cortadas em pedaços, cozidas em água com sal, escorridas e esmagadas
450g salmão fresco, sem pele nem espinhas e cortado em pedaços
175g folhas de espinafres, escaldadas em água a ferver por 2 minutos, escorridas, espremidas e picadas
folhas de espinafres, para servir
55g pinhões, tostados
2 colheres sopa de raspa de limão
1 colher sopa de salsa fresca picada
2 colheres sopa de farinha integral
200ml crème fraîche
um pedaço de pepino com cerca de 4cm, descascado e finamente picado
2 colheres sopa de óleo de girassol
sal e pimenta preta moída na altura
4 a 6 bolas de pão integral, cortadas ao meio
tomates cereja grelhados, para servir


preparação:
No copo do robot de cozinha, colocar os espinafres, o salmão, as batatas esmagadas, os pinhões, 1 colher de sopa de raspa de limão, a salsa picada e sal e pimenta a gosto.
Processar tudo com o botão pulsar e assim que tudo estiver incorporado, retirar o preparado do copo do robot e moldar 4 a 6 hamburgueres de idêntico tamanho.
Cobrir os hamburgueres com película aderente e refrigerar no frigorífico por cerca de 1 hora.

Entretanto, numa taça, misturar o crème fraîche, o pepino e a restante raspa de limão, cobrir e refrigerar até ser necessário.
Colocar a farinha num prato e passar os hamburgueres pela farinha.
Pincelar os hamburgueres com o óleo e grelhar em cima da grelha de um fogareiro, sobre uma placa ou grelhador em cima do fogão, ou fritar numa frigideira anti aderente, por cerca de 4 a 6 minutos de cada lado.
Colocar as folhas de espinafres suplentes sobre a metade inferior do pão, cobrir com o hamburguer frito ou grelhado e sobre este, colocar uma colherzinha da mistura de crème fraîche.
Tapar com a outra metade do pão e servir com tomates cereja grelhados e para beber, servir esta fabulosa e altamente refrescante limonada de melancia, hortelã e lima da querida Mafalda Pinto Leite.
