Mango parfaits with macerated berries / Parfaits de manga, com frutos vermelhos macerados.



This dessert is a Gordon Ramsay's very nice and easy take on parfaits, as it is made with yoghurt, it is so light, that you can have all the pleasure of the pudding without the guilty of the calories!

ingredients (serves 4):
1 ripe mango, peeled and de stoned
500ml natural yoghurt (I used vanilla yoghurt)
for the macerated berries:
200g mixed berries, hulled and quartered or halved
zest and juice of 1 small orange
1 tbsp icing sugar
small handful of basil leaves, finely shredded
method:
Place the berries, orange juice and zest, sugar and shredded basil in a bowl and mix well.
Cover with clingfilm and set aside for 1 to 2 hours.
Purée the mango in a blender until smooth.
Layer the mango purée and yoghurt in 4 serving glasses and chill until needed.
When ready to serve, top each glass with the macerated berries.

Este sobremesa do Gordon Ramsay é tão deliciosa e fácil de fazer que, para além de linda, ainda pode ser saboreada sem culpas, pois em vez das habituais natas e ovos que compõem um parfait, é feita com iogurte, o que a torna muito mais leve e super agradável e fresca.
ingredientes (para 4 pessoas):
1 manga madura, descascada e descaroçada
500ml de iogurte natural (eu usei iogurte grego com mel)
para a fruta macerada:
200g mistura de frutos vermelhos (naturais), arranjados e cortados em quartos ou metades, consoante o tamanho.
sumo e raspa de 1 laranja pequena
1 colher sopa de açúcar em pó
um punhado pequeno de folhas de manjericão, cortadas em juliana fininha
preparação:
Para preparar a fruta macerada, colocar todos os ingredientes numa taça, mexer bem e cobrir com película aderente. Reservar por cerca de 1 a 2 horas.
Colocar a manga num liquidificador ou no copo de um robot de cozinha e reduzi-la a puré.
Distribuir o puré de manga por 4 copos de vidro, cobrir o puré com o iogurte e refrigerar.
Na altura de servir, cobrir os parfaits com a fruta macerada.

Warm chicken salad with jerusalem artichokes, spinach and bacon / Salada quente de frango com girassol batateiro, espinafres e bacon.


This recipe was marked to be tried for a long time, as I had to wait for the jerusalem artichokes season to try it.
Now that I could finally put my hands on a fair amount of those beauties, I'll be testing a few recipes with jerusalem artichokes.
Gordon Ramsay is my favourite Chef of all times. I have lots of admiration and passion for lots of Chefs and cooks, but Gordon is the one that got me mad and obsessed with food and I love to try his recipes as they always turn out beautiful and delicious.
ingredients (serves 4):
2 rosemary springs
3 thyme springs
1 bay leaf
2 garlic cloves, peeled
500ml chicken stock
2 to 3 chicken breasts
4 tbsp olive oil
50g butter
150g jerusalem artichokes, scrubbed or peeled
2 tbsp lemon juice
125g bacon rashers
50ml classic vinaigrette
1 tsp sherry vinegar
1 shallot, peeled and finely chopped
150g baby spinach leaves
to serve (optional):
deep fried onion rings


method:
Put the herbs, garlic and stock in a pan and bring to a simmer.
Add the chicken breasts and poach gently for 3 minutes or until firm to the touch.
Cool the chicken in the poaching liquid, then drain.
In a frying pan heat 2 tbsp of the olive oil. Fry the chicken breasts for 4 to 5 minutes on each side until golden.
Add half the butter and cook for a further 2 minutes.
Fill a small saucepan with water, add the lemon juice and simmer the artichokes for 5 to 6 minutes.
Drain, cool and slice them thickly.
Fry the artichokes in the remaining olive oil and butter for 2 to 3 minutes each side until golden brown.
Drain over kitchen paper.
Pan fry the bacon until crispy. drain over kitchen paper and cut into pieces.
Whisk the vinaigrette with the sherry vinegar and the shallot.
Cut each the chicken breast lengthways into 6 slices.
To serve, arrange the spinach, chicken slices, bacon and artichokes on a serving plate.
Dress with the vinaigrette and, if using, garnish with fried onion rings.

Tinha esta receita marcada há séculos para testar, pois estive pacientemente à espera da época do girassol batateiro e como a época começou em Outubro e é muito curta, desta vez, e como consegui deitar a mão a uma boa quantidade dele, não podia deixar de, finalmente, experimentar esta deliciosa salada.
A receita é do Gordon Ramsay! O meu Chef favorito de sempre, pois é graças a ele que tenho esta paixão e obsessão por comida e por cozinha.
Admiro e sou apaixonada por vários Chefs e cozinheiros talentosos, mas o Gordon será sempre o meu favorito.
Adoro experimentar e testar as receitas dele, pois não houve, até hoje, uma única receita deste Senhor que não ficasse bem, ou não fosse deliciosa. Sempre perfeitas e esta é mais uma que vai para o top!!
ingredientes (para 4 pessoas):
2 hastes de alecrim
3 hastes de tomilho
1 folha de louro
2 dentes de alho, descascados
500ml caldo de galinha
2 ou 3 peitos de frango (dependendo do tamanho)
4 colheres sopa de azeite
50g manteiga
150g girassol batateiro, lavado e esfregado com uma escova, ou descascado
2 colheres sopa de sumo de limão
125g fatias finas de bacon
50ml molho de vinagrete
1 colher chá de vinagre de xerez
1 chalota, descascada e picada muito finamente
150g folhas de espinafres bebé
para servir (opcional):
argolas de cebola frita


preparação:
Colocar as aromáticas (alecrim, folha de louro e tomilho), o alho e o caldo de galinha num tacho e levar ao lume até levantar fervura.
Colocar os peitos de frango no tacho e cozer por cerca de 3 minutos, ou até estarem firmes ao toque.
Deixar o frango arrefecer no líquido de cozedura e, quando frio, escorrer e reservar.
Numa frigideira, aquecer 2 colheres de sopa de azeite. Fritar os peitos de frango no azeite quente, por cerca de 4 a 5 minutos de cada lado, ou até estarem douradinhos em ambos os lados.
Adicionar metade da manteiga e deixar fritar por mais 2 minutos.
Encher um tacho pequeno com água e juntar-lhe o sumo do limão. Colocar o girassol batateiro na água e cozer por cerca de 5 ou 6 minutos.
Escorrer o girassol batateiro e cortá-lo em fatias grossas.
Numa frigideira, aquecer as restantes quantidades de azeite e manteiga e fritar as rodelas de girassol batateiro por cerca de 2 a 3 minutos de cada lado, ou até estarem douradinhas de ambos os lados. Escorrer sobre papel de cozinha e reservar.
Fritar o bacon até este estar douradinho e estaladiço. Escorrer sobre papel de cozinha e cortar em pedaços.
Entretanto, juntar a chalota e o vinagre de xerez ao vinagrete e misturar tudo muito bem.
Cortar os peitos de frango em 6 fatias longitudinais.
Numa travessa de serviço, colocar os espinafres, as fatias do frango, o bacon e o girassol batateiro.
Regar com o molho e salpicar com rodelas finas de cebola frita.

Prawn tostada / Tortilhas com camarão.


Sometimes I buy books and when I am reading them, there are recipes that appeal to me straight away and some others, or either I even don't notice them, or I don't give them much importance, and this one was one of them.
Well, saying that, when I first got this book, I didn't find it anything special and now, that I'm watching the series of Gordon Ramsay's Ultimate Home Cooking on TV, I totally changed my opinion about the book.
It's amazing how we can change our minds and just because I'm watching him preparing mouthful plates of food and all of them better than the previous ones, I totally fell in love with the book.
So, this meal is  fresh and delicious, packed full of flavour, vibrant colours and contrasting textures.
Very easy to prepare, it makes a fabulous light and relaxed lunch.



ingredients (serves 4):
400g raw king prawns, peeled, clean and deveined
2 garlic cloves, peeled and very finely sliced
1tsp chilli flakes
olive oil
2 ripe avocados, peeled, stoned and diced
4 spring onions, trimmed and finely chopped
1 red chilli, seeded and finely sliced
8 to 12 radishes, trimmed and quartered
8 to 12 cherry tomatoes, halved
juice of 1 lime
2 baby gem lettuce, shredded (I used a bag of mixed leaves)
small bunch of coriander, chopped
4 corn flour tortillas
salt and freshly ground black pepper
method:
Put the prawns, garlic, a drizzle of olive oil, salt, pepper and chilli flakes inside a bowl. Mix well and set aside.
Put the avocados, chilli, spring onions, radishes and tomatoes inside another bowl and mix together. Taste and season with salt and pepper and half the lime juice.
Mix well and stir in the lettuce and coriander and set aside.
Heat a dash of oil in a frying pan. Extract the prawns from their marinade and fry them for about 2 minutes on each side, or until they are cooked through.
Sprinkle the prawns with the remaining lime juice and stir to combine.
Toast the tortillas on a dry frying pan until nicely coloured.
Divide the salad between the tortillas and serve topped with the prawns.

É engraçado como ás vezes a nossa opinião pode mudar de repente e por coisa pouca, ou seja...
Já me aconteceu várias vezes, comprar livros e depois, ao lê-los, achá-los "normalitos", ou nada de especial e este foi um deles, tanto que ainda só tinha testado uma receita nele contida.
Ora bem, agora que estou a ver na televisão o programa do Gordon Ramsay's Ultimate Home Cooking, vejo o senhor a preparar pratos maravilhosos em família e sempre com os filhos a ajudar, pratos cada um melhor que o anterior e de dar água na boca e dou por mim a pensar porque é que não achei piada ao livro de início.
Esta conversa toda para dizer que o livro é espectacular e estou completamente rendida a ele e assim sendo, esta é a segunda receita a sair deste livro e garanto-vos que não será a última.
Recheado de sabor, cores vibrantes e texturas contrastantes, este, que para o senhor Gordon e família é um pequeno almoço, foi para nós um almoço leve, fácil de preparar e super delicioso.



ingredientes (para 4 pessoas):
400g camarão cru, descascado, arranjado e limpo
2 dentes de alho, descascados e fatiado muito finamente
1 colher chá de flocos de malagueta
azeite q.b.
2 pêras abacate, descascadas, descaroçadas e cortadas em cubos
4 spring onions, arranjadas e cortadas em rodelas finas
1 malagueta vermelha, sem sementes e cortada em rodelas (eu não usei)
8 a 12 rabanetes, arranjados e cortados em quartos
8 a 12 tomates cereja, cortados ao meio
sumo de 1 lima
2 alfaces pequenas cortadas (eu usei um saco de mistura de folhas de salada)
um ramo pequeno de coentros frescos, picados
4 tortilhas de farinha de milho
sal e pimenta preta q.b.
preparação:
Colocar os camarões numa taça, juntamente com os flocos de malagueta, os alhos laminados, sal e pimenta e um fio de azeite. Envolver tudo muito bem e reservar.
Numa taça à parte, colocar a pêra abacate, a malagueta em rodelas, as spring onions, os rabanetes e os tomates e misturar tudo. Temperar de sal e pimenta, regar com metade do sumo da lima.
Adicionar a alface e os coentros picados, mexer e reservar.
Entretanto, aquecer um fio de azeite numa frigideira. Retirar os camarões da marinada e fritá-los no azeite quente, por cerca de 2 minutos de cada lado, ou até estarem cozidos.
Regar com o restante sumo de lima e mexer.
Numa outra frigideira seca, tostar as tortilhas de ambos os lados, até começarem a ganhar cor.
Dividir a salada pelas tortilhas, cobrir com os camarões e servir.

Minute puff pastry / Massa folhada rápida.

Lets make puff pastry?
If you asked me this question not long ago, my answer would be straight away "no way!!!", but now, since I tried this recipe for the first time, Im not buying puff pastry anymore, as this one, not just is very easy to make, as it is also very moreish and after being cooked, it keeps its crispiness for 2 or 3 days. 
Believe me, this recipe is incredible!!
I used this batch to make portuguese custard tarts, but you can use it for whatever you fancy.
ingredients (makes 700g):
250g strong plain flour
1/2 tsp fine sea salt
250g butter, at room temperature but not soft, cut into small dice
150ml cold water

Vamos fazer massa folhada?
Bom, se me fizessem esta pergunta há uns tempos atrás, a minha resposta imediata seria "nem pensar numa coisa dessas!!".
Isto até ao dia em que, folheando o livro abaixo, dei com esta receita e resolvi experimentá-la...
Bom, nunca mais comprei massa folhada e garanto-vos, experimentem e não se arrependerão, pois além de fácil de fazer, lamina que é um espectáculo e depois de cozida, ainda se mantém estaladiça por 2 ou 3 dias.
Eu utilizei-a na confecção de uns belos pastéis de nata, mas usem-na para o que precisarem.
ingredientes (para 700g de massa):
250g farinha de trigo branca para pão
1/2 colher chá de sal fino
250g manteiga, à temperatura ambiente, mas sem estar muito mole e cortada em cubos pequenos.
150ml água gelada

method / preparação:
Sift together the flour and salt into a bowl.
Peneirar a farinha e o sal para uma taça grande.

Mix in the butter but don't rub it in.
Adicionar os cubos de manteiga e envolver, mas sem esfregar.


Using an wooden spoon, gradually mix in the water in order to have a firm but not sticky dough.
Gather the dough together with your hands, cover with clingfilm and refrigerate for 20 minutes.
Mexendo com uma colher de pau, adicionar a água aos poucos, por forma a obter uma massa firme mas que não esteja peganhenta.
Com as mãos, formar uma bola de massa e envolvê-la em película aderente. Refrigerar por 20 minutos.


Turn the dough out onto a floured surface and knead gently until smooth, shaping it to a rectangle.
Roll out in one direction only until it is approximately 15 x 50cm. Make sure that the edges remain straight and even.
Colocar a massa em cima de uma superfície enfarinhada e amassar suavemente até esta estar macia e formar um rectângulo.
Estender a massa num rectângulo de 15 x 50cm, tendo o cuidado de manter os extremos sempre direitinhos.



Fold the dough in three, bringing the top third down to the centre, then folding the bottom third on top.
Give the dough a quarter turn to the left or right and roll out again to 3 times the length.
Dobrar a massa em 3, dobrando 1/3 da massa até ao centro e o terceiro terço em cima deste.
Rodar a massa 90º para a esquerda ou para a direita e voltar a esticá-la até obter 3 vezes o seu tamanho.



Fold the pastry as before, cover with clingfilm and chill at least 30 minutes before rolling out to use.
Dobrar em terços como da primeira vez, envolver em película aderente e refrigerar por, no mínimo, 30 minutos, antes de utilizar normalmente.
