Chicken, morcilla and sherry / Frango com morcela e xerez.


The new Diana Henry book is amazing and it's all about the chicken. A bird that, here at home, we all love and eat very often.
A book full of fabulous recipes that make your mouth water and this one, amongst lots of them that I marked to try, was the first one that I tried.
I chose this recipe to try first as I went to a fantastic Spanish deli in Edinburgh and I bought a proper Spanish morcilla that was enough for this recipe and for another one that I'll publish later.
The recipe serves 2 but I doubled it to serve 4.
ingredients (serves 2):
1 tbsp olive oil
salt
freshly ground black pepper
4 skin on bone in chicken thighs (I used thighs and drumsticks)
8 slices of morcilla or black pudding
1/2 large onion, cut into slim crescent moon shaped wedges
200ml dry sherry
3 1/2 tbsp double cream
1 tbsp toasted pine nuts
1 tbsp chopped parsley leaves
method:
Preheat the oven to 180ºC.
Heat the oil in a ovenproof frying pan that can fit the chicken and morcilla snugly in a single layer.
Season the chicken and brown on both sides just for colour.
Take out of the pan and set aside.
Add the morcilla to the pan and cook it lightly on both sides, then remove it from the pan and set aside with the chicken.
Add the onion to the pan and colour it lightly.
Deglaze the pan with the sherry, scrapping the base with a wooden spoon to remove all the flavoursome scraps.
Return the chicken and morcilla to the pan and bake in the oven for 40 minutes or until the chicken is cooked through.
Take the pan out of the oven and put it over medium heat. If theres no liquid left, you can add another 3 1/2 tbsp of sherry and stir it in.
Pour in the cream, heating it until it bubbles.
Sprinkle with the pine nuts and parsley and serve immediately.

O novo livro da Diana Henry é fantástico!
Um livro recheado de receitas só de frango. Uma carne muito apreciada cá em casa e que comemos com alguma frequência e as receitas são tão magníficas que apetece testar todas!
Esta foi a primeira receita a ser testada, já que há uns dias atrás, fui a uma delicatessen espanhola em Edimburgo e comprei uma morcela espanhola fabulosa que foi suficiente para esta receita e para uma outra que vos apresentarei muito em breve.
A receita apresentada é para 2 pessoas, mas eu dobrei-a para 4.
ingredientes (para 2 pessoas):
1 colher sopa de azeite
sal
pimenta preta moída na altura
4 sobrecoxas de frango com a pele e o osso (eu usei sobrecoxas e coxas)
8 rodelas de morcela
1/2 cebola grande, cortada em meias luas fininhas
200ml xerez seco
3 1/2 colheres sopa de natas para culinária
1 colher sopa de pinhões, tostados
1 colher sopa de salsa picada
preparação:
Aquecer o forno a 180ºC.
Aquecer o azeite numa frigideira que possa ir ao forno e que seja grande o suficiente para que o frango e a morcela possam ficar numa camada única.
Temperar o frango de sal e pimenta e selar no azeite, a fim de a corar de ambos os lados.
Retirar o frango da frigideira e reservar.
Colocar as rodelas de morcela na frigideira e fritar ligeiramente dos dois lados. Retirar a morcela e reservar juntamente com o frango.
Colocar a cebola na frigideira e fritar até que esta ganhe cor. Não é preciso que fique macia.
Adicionar o xerez e raspar o fundo da frigideira com uma colher de pau, a fim de soltar todos os sedimentos que tenham ficados agarrados ao fundo.
Colocar o frango e a morcela na frigideira e levar ao forno por 40 minutos, ou até que o frango esteja cozido.
Retirar a frigideira do forno e colocá-la sobre lume médio. Em princípio haverá líquido suficiente na frigideira, mas caso não haja, adicionem mais 3 1/2 colheres sopa de xerez e mexam.
Adicionar as natas e aquecer até que as natas comecem a ferver.
Polvilhar com os pinhões tostados e a salsa picada e servir de imediato.

Beetroot risotto with gorgonzola cheese / Risotto de beterraba com queijo gorgonzola.


Risotto and beetroot are a great combination and before the weather gets warmer and the "risotto season" finishes, here I am, leaving you the last risotto of the winter.
The recipe comes from here, a very inspiring and full of fabulous suggestions blog.
Ana topped her risotto with goat's cheese, but because I love the tanginess of blue cheese against the sweetness of the beetroot risotto, I decided to top my risotto with Gorgonzola. A cheese that I truly adore!
ingredients (serves 4):
2 medium beetroots
2 tbsp olive oil
1 onion, finely chopped
2 cups risotto rice
1/2 cup white wine
2 tbsp balsamic vinegar
4 cups hot vegetable stock
butter, to taste
50g gorgonzola cheese (or any kind you like), crumbled
salt and freshly ground black pepper
toasted pine nuts, to serve
method:
Cook one of the beetroots in salted water until tender and then make a purée using a hand blender. Add water if needed. Set the purée aside.
Cut the second beetroot in small cubes.
Heat the olive oil in a large pan and cook the onion and the cubed beetroot for 5 minutes or until the onion is soft.
Add the risotto rice and stir very well to combine or until the rice is coated with the oil.
Add the wine and balsamic vinegar and allow it to evaporate.
Add the stock, one ladle at a time, stirring all the time, until the stock finishes and the rice is cooked but still a bit al dente.
Stir in the beetroot purée and the butter, turn off the heat, cover the pan and allow the risotto to rest for 5 minutes.
Serve the risotto topped with the crumbled cheese and the toasted pine nuts.

Beterraba e risotto são uma combinação divina e não há receita com estes dois ingredientes que me escape e foi o que aconteceu com esta receita da Ana que, segundo ela, é a receita que ninguém quer ou precisa. Eu quero e quis Ana!!
Antes que o tempo comece a aquecer (como se isso fosse possível por aqui, mas enfim..., lá virão uns dias melhorzitos), aqui vos deixo o último risotto da temporada.
Fiz o risotto de acordo com a receita da Ana, adaptando-a para 4 pessoas e utilizei queijo Gorgonzola em vez do queijo de cabra usado pela Ana, pois adoro a ligeira acidez do queijo azul a contrastar com a doçura do risotto de beterraba.
A receita está aqui e vale a pena ser testada por quem gosta desta combinação.

Chèvre chaud 2015.


This amazing recipe is a classic to which Ana decided to give a new, clean and fresh look and as soon as I saw this dish at Ana's blog I couldn't stop thinking of it as I love all the ingredients in it.
Flavour wise, the final result is absolutely amazing. You have zing, sweetness and sharpness, but everything is perfectly balanced.
Texture wise you have the same great experience, as you have crunchiness  and softness in every forkful.
As for the sauce/dressing..., oh Lord!!! It's to die for!! I could eat it all on it's own with a spoon as it is so, so delicious!!
ingredients (serves 4):
12 rounds of goat's cheese, cut 0.5cm thick (from a thin log)
12 rounds of white bread, cut the same size as the cheese rounds
2 medium yellow beetroots
1 medium red beetroot
2 tsp honey
4 tbsp olive oil
juice of 1/2 lemon
salt and freshly ground black pepper
1 tsp Dijon mustard
4 small pickled red beetroots
50g pine nuts, toasted (I didn't use because I totally forgot about them...)
salad leaves, to serve
method:
Pre heat the oven to 200ºC.
Cook 1 red beetroot in a pan of water until tender and a separate bowl, cook 1 of the yellow beetroots until tender.
When cooked, peel both beetroots, red and yellow and keep them apart.
Purée the red beetroot with the olive oil, lemon juice, mustard, salt and freshly ground black pepper.
Taste for seasoning and feel free to add more olive oil, salt and pepper, mustard, or lemon juice you you want. Set aside until needed.
Cut the cooked yellow beetroot and the pickled red beetroots in small cubes.
Using a mandolin, thinly slice the raw yellow beetroot.
Put the cheese rounds on top of the bread rounds, drizzle with the honey and bake in the oven until the cheese is golden brown on top and starts to melt.
Divide all the ingredients between 4 plates and serve drizzled with the beetroot sauce and a few salad leaves.

Esta receita é um clássico ao qual a Ana decidiu dar um novo e "clean" look e que lindo e apetitoso ficou.
Para ser honesta, não consegui deixar de pensar nesta receita desde o dia que a vi no blogue da Ana e não descansei enquanto não reuni todos os ingredientes e a reproduzi.
O meu veredicto? Absolutamente fenomenal!!!!!
Combinação de sabores, perfeita e em total harmonia!
Texturas absolutamente fantásticas e diferentes em cada garfada! Na minha faltou a textura e sabor dos pinhões, mas eu, tonta, esqueci-me completamente deles na tacinha... enfim...
O molho... OMG o molho... quase não havia para os pratos, pois juro-vos, é tão maravilhoso que eu era capaz de comer só o molho à colher (e quase comi..., lol)!!!

Salmon burgers with pine nuts / Hamburgueres de salmão com pinhões.


An absolutely fabulous burger that makes and was an easy and very satisfying dinner for all the family.
ingredients (makes 4 to 6 burgers):
300g potatoes, peeled, cut into chunks, boiled in salted water, drained and mashed
450g fresh salmon, skinned and boneless and chopped into chunks
175g spinach leaves, blanched in boiling water for 2 minutes, drained, squeezed and chopped
extra handful of spinach leaves for serving
55g pine nuts, toasted
2 tbsp lemon zest
1 tbsp chopped fresh parsley
2 tbsp wholemeal flour
200ml crème fraîche
4cm piece of cucumber, peeled and finely chopped
2 tbsp sunflower oil
salt and freshly ground black pepper
4 to 6 wholemeal buns, split
grilled cherry tomatoes, to serve


method:
Place the blanched spinach in a food processor with the salmon, mashed potatoes, pine nuts, 1 tbsp of the lemon zest, the parsley and salt and pepper to taste.
Blend using the pulse button, until everything comes together.
Shape the mixture into 4 or 6 equal sized burgers, cover and chill in the fridge for about 1 hour.
Meanwhile, mix together in a bowl the crème fraîche with the chopped cucumber and the remaining lemon zest. Cover and chill until required.
Coat the burgers with the flour.
Brush the burgers with the oil and cook over medium hot coals for 4 to 6 minutes on each side or shallow fry them in  a frying pan or grill them on a hot griddle pan.
Place the reserved spinach leaves on the bottom halves of the buns and top them with the burgers.
Spoon over a little of the crème fraîche mixture and cover with the other bun half.
Serve with grilled cherry tomatoes and to drink, serve this fabulous and refreshing watermelon, lime and mint lemonade.

Uns hamburgueres magníficos e que, um dia destes ao jantar, fizeram as delícias de toda a família.
ingredientes (para 4 ou 6 hamburgueres, dependendo do tamanho):
300g batatas, descascadas, cortadas em pedaços, cozidas em água com sal, escorridas e esmagadas
450g salmão fresco, sem pele nem espinhas e cortado em pedaços
175g folhas de espinafres, escaldadas em água a ferver por 2 minutos, escorridas, espremidas e picadas
folhas de espinafres, para servir
55g pinhões, tostados
2 colheres sopa de raspa de limão
1 colher sopa de salsa fresca picada
2 colheres sopa de farinha integral
200ml crème fraîche
um pedaço de pepino com cerca de 4cm, descascado e finamente picado
2 colheres sopa de óleo de girassol
sal e pimenta preta moída na altura
4 a 6 bolas de pão integral, cortadas ao meio
tomates cereja grelhados, para servir


preparação:
No copo do robot de cozinha, colocar os espinafres, o salmão, as batatas esmagadas, os pinhões, 1 colher de sopa de raspa de limão, a salsa picada e sal e pimenta a gosto.
Processar tudo com o botão pulsar e assim que tudo estiver incorporado, retirar o preparado do copo do robot e moldar 4 a 6 hamburgueres de idêntico tamanho.
Cobrir os hamburgueres com película aderente e refrigerar no frigorífico por cerca de 1 hora.

Entretanto, numa taça, misturar o crème fraîche, o pepino e a restante raspa de limão, cobrir e refrigerar até ser necessário.
Colocar a farinha num prato e passar os hamburgueres pela farinha.
Pincelar os hamburgueres com o óleo e grelhar em cima da grelha de um fogareiro, sobre uma placa ou grelhador em cima do fogão, ou fritar numa frigideira anti aderente, por cerca de 4 a 6 minutos de cada lado.
Colocar as folhas de espinafres suplentes sobre a metade inferior do pão, cobrir com o hamburguer frito ou grelhado e sobre este, colocar uma colherzinha da mistura de crème fraîche.
Tapar com a outra metade do pão e servir com tomates cereja grelhados e para beber, servir esta fabulosa e altamente refrescante limonada de melancia, hortelã e lima da querida Mafalda Pinto Leite.

Celeriac and grainy mustard soup / Sopa de raíz de aipo e mostarda de grão.


I love soup and the way I enjoy it more is as a meal on itself.
A hot bowl of soup and a chunk of bread..., and you don't need anything else...
It is so comforting and warming.
Soups can be sophisticated and delicious without being boring and predictable and that's what I love about this soup and its flavour.
ingredients (serves 6):
70g unsalted butter
2 leeks, trimmed and sliced
2 celery hearts, trimmed and sliced (inner leaves reserved)
800g celeriac, peeled and chopped
salt and ground white pepper
1l chicken or vegetable stock
1 tsp grainy mustard
to serve:
150g bacon, diced
50g pine nuts
method:
Melt the butter in a large saucepan over a low heat.
Add the leeks, celery and celeriac. Season with a heaped tsp of salt and fry gently for 30 minutes, stirring frequently.
Add the stock, bring to the boil and simmer over a low heat for 15 minutes.
Purée the soup in a liquidiser and pass it through a sieve back into the pan.
Whisk in the mustard and taste to check the seasoning.
Meanwhile, fry the bacon in a frying pan over a medium heat, until golden and crisp.
Add the pine nuts and fry for a couple of minutes.
Remove the bacon and pine nuts from the frying pan and drain over kitchen paper.
Serve the soup in warm bowls, topped with the bacon and pine nuts and garnished wirth chopped celery leaves.

Adoro sopa e sempre gostei de sopa como uma refeição por si só e não como entrada para uma refeição.
Faço muitas vezes sopas, daquelas que todos nós fazemos, com uma combinação variada de legumes e que, para além de serem saudáveis e fazerem super bem à saúde, aquecem o estômago em dias frios.
As sopas que aqui vou publicando não são essas, as que todos nós fazemos diariamente e sabemos fazer, são sopas mais sofisticadas e com sabores diferentes e imprevisíveis e esta é, sem dúvida, uma dessas sopas!!
ingredientes (para 6 pessoas):
70g manteiga sem sal
2 alhos franceses, limpos e cortados em rodelas
2 corações de aipo, limpos e cortados em rodelas (folhas interiores reservadas e picadas).
800g raiz de aipo, descascada e cortada em pedaços
sal e pimenta branca moída
1l caldo de galinha ou legumes
1colher ché de mostarda de grão
para servir:
150g lardons de bacon
50g pinhões
preparação:
Em lume brando, derreter a manteiga numa panela.
Adicionar o alho francês, o aipo e a raiz de aipo. Temperar com uma colher de chá bem cheia de sal e cozinhar gentilmente, por cerca de 30 minutos, mexendo frequentemente.
Acrescentar o caldo escolhido e, ainda em lume brando, cozinhar por mais 15 minutos.
Num liquidificador ou com uma varinha mágica, reduzir a sopa a puré.
Passar a sopa por um coador, voltando a colocá-la na panela.
Adicionar a mostarda, mexer e provar. Rectificar os temperos.
Entretanto, fritar o bacon numa frigideira, até estar douradinho e estaladiço.
Adicionar os pinhões e fritar por mais uns minutos.
Escorrer a mistura sobre papel absorvente de cozinha.
Servir a sopa em tigelas aquecidas, polvilhada com o bacon e os pinhões e as folhas de aipo picadas.
