Fish Soup Basquaise / Sopa de Peixe Basca.


This month we are cooking from Paula Wolfert cook books for the Rainydaybites Cookbook Club.
The book Deborah chose was the "Unforgettable" but as it is a very difficult book to find, Deborah allowed us to cook from any of Paula's books.
I'm cooking from Paula Wolfert "The Cooking of South West France" book and this recipe is actually my first one for this month's cookbook club.
I can only compare Paula Wolfert book with Julia Child or Elizabeth David books, which, in my opinion, should be mandatory books for anyone that claims their love for cooking.
More than cooking books, they are reading books that show us their passion and deep knowledge for the cuisine and ingredients of the regions they're writing and cooking from.
To write this book, Paula Wolfert spent five years researching, investigating ingredients, origins of recipes and variations in techniques.
This recipe, a fish soup, not just is easy to make, but it's also fabulous and full of flavour.
According to the author, this soup is a modern interpretation of the classic onion and pepper fish soup of Bayonne.

Spinach soup with flowers / Sopa de espinafres com flores.


This fabulous and delicious soup is very easy to make and a real showstopper when it hits the table.

The recipe was adapted from the "Nettle soup with flowers" which is one of the magnificent soups from Nicole Pisani and Kate Adams, "Magic Soup"book". A book that you all know I very much adore and from which you can find the recipes I already tested under the labels "Soups" and/or "Magic Soup book".

Celery, apple and salmon soup / Sopa de aipo, maçã e salmão.


This fabulous soup. is full of ingredients that I truly adore and the combination is so smart and unbelievable that I have to make it again.
The recipe is from Portuguese Chef - Henrique Sá Pessoa - and it's from his delightful book "A viagem do Salmão" - The salmon journey.
Try it and be amazed!!
The bowls are from Margarida Melo, an amazing Portuguese ceramist based in Lisbon.
ingredients (Serves 4):
45g unsalted butter
2 tbsp extra virgin olive oil
150g onion, chopped
500g celery, finely diced
160g potato, cut into small cubes
120g apple (Golden Delicious) cut into small cubes
sea salt flakes, to taste
100g salmon, cut into small cubes (skinless and boneless)
4 tbsp crème fraîche
4 tbsp Granny Smith apple, cut into small cubes
dill, to decorate
method:
Heat the butter and oil in a pan over medium heat.
Add the onion and celery and cook for about 4 to 5 minutes, or until soft but not coloured.
Add the potato and enough water or vegetable stock (just enough to come up to about 2 fingers over the vegetables) and cook for 8 to 10 minutes, or until the vegetables are soft.
Add the Golden Delicious apple and cook for a further 2 to 3 minutes.
Take the soup off the heat, blend until smooth and check the seasoning.
Season the salmon with salt and toss with a drizzle of olive oil.
Serve the soup warm, topped with the salmon, the cubed Granny Smith apple, a few dollops of crème fraîche and dill leaves.

Trago-vos hoje mais uma sopa maravilhosa!!
Uma combinação improvável, mas que resulta na perfeição e que é uma daquelas combinações que a mim, me deixam literalmente pasmada!
A receita, é do livro lindo que adoro, A Viagem do Salmão do Chef Henrique Sá Pessoa e é uma receita que já foi aqui, testada e aprovada pela Susana.
As taças, que já tiveram oportunidade de ver noutros posts, são da nossa fabulosa artista e ceramista, a Margarida Melo, que eu tive o privilégio de conhecer no seu atelier em Lisboa, em Dezembro passado e que faz peças lindas de morrer.


ingredientes (para 4 pessoas):
45gr de manteiga sem sal
2 colheres sopa de azeite
150gr de cebola, cortada em cubinhos
500gr de talos de aipo, sem fios e cortados em rodelas
160gr de batata, cortada em cubinhos
120gr de maçã Golden, cortada em cubos
flor ou flocos de sal, a gosto
100gr de salmão (Noruega), cortado em cubinhos
4 colheres sopa créme fraîche
4 colheres sopa de maçã Granny Smith, cortada em cubinhos
aneto, para decorar
preparação:
Num tacho aquecer o azeite e a manteiga.
Adicionar a cebola e o aipo, em lume brando, por cerca de 5 minutos.
Adicionar a batata e água ou caldo de legumes suficiente para cobrir os legumes. 
Deixar cozer em lume brando por cerca de 8 a 10 minutos ou até os legumes estarem macios.
Juntar a maçã Golden e cozer por mais 3 minutos.
Triturar a sopa no liquidificador ou robot de cozinha, até ficar bem cremosa.
Adicionar um pouco de água se achar necessário e rectificar temperos.
Temperar o salmão com um pouco de sal e azeite.
Servir a sopa decorada com o salmão, a maçã Granny Smith, o créme fraîche e folhinhas de aneto.

Regula (Miss Foodwise) Spicy chicken soup / A Sopa de galinha da Regula (Miss Foodwise).



My kids are truly chicken soup lovers and for them to say that this one is the best chicken soup they ever had, believe me - as they are chicken soup "connoisseurs" - it is the best chicken soup indeed!!
The recipe is from sweet Regula (Miss Foodwise) and was featured in The Guardian last Saturday and as I know how much they love this type of soup, I had to make it for them two days after.
It's written in the newspaper, under the title of the soup that: "This is the soup you wish you always had prepared, ready to reheat" and it is so true, specially for this cold time of the year...
Nothing can be more comforting than a bowl of this delicious chicken soup...
As you all know, a good chicken stock is the basis for lots of dishes including soup so, on Sunday I made Regula's chicken stock recipe (that was also featured in The Guardian) and the day after, I made the soup using that flavoursome stock I made.
Saying that, you can use your own chicken stock or any of your choice.
ingredients (serves 4):
1 tbsp olive oil
2 medium onions, chopped
1 tsp turmeric
2 tsp Madras curry powder
2 celery stalks, chopped
2 large carrots, chopped
1.5l chicken stock
2 cooked chicken brasts and thighs, shredded
1 x 400g tin of cannellini beans, rinsed
100g vermicelli, or other type of small pasta (I used egg Noodles)
method:
Heat the oil in a pan over a medium heat.
Add the onion and sweat with the turmeric and curry powder.
Add the celery and carrots and deglaze with the chicken stock.
Bring to a simmer and cook until the vegetables are nearly done.
Add the shredded chicken, beans and pasta and cook until the pasta is done.
Serve immediately.

Se há comida que ambos os meus filhos adoram, sopa (canja) de galinha, está sem dúvida, no topo das suas preferências. Não digo que lha podia dar a comer todos os dias, mas quase!!
São verdadeiros "connoisseurs" e para eles, sempre tão críticos no que toca a este tipo de sopa, dizerem que esta é a melhor sopa de galinha de sempre, acredito que o seja mesmo (e cá entre nós, eu concordo, pois é mesmo uma delícia)!!
A receita é da doce Regula (Miss Foodwise) e foi receita de destaque, na secção de culinária da edição do fim de semana passado do jornal "The Guardian".
Sob o título da receita, vem escrita a frase:
"Este é o tipo de sopa que sonhamos ter sempre preparada, para podermos aquecer sempre que nos apetecer".
Não podia concordar mais com esta frase, pois nestes dias frios, chuvosos e invernosos, pouca coisa pode ser mais reconfortante que uma tigela desta sopa, bem quentinha e a fumegar.
Devaneios à parte, como todos vocês sabem, um bom caldo, seja de galinha, legumes ou carne, proporciona a base para intensificar o sabor de qualquer prato ou sopa, que contenha a palavra "caldo" na receita certo?
Assim, sendo, eu fiz no Domingo, a receita do caldo de galinha caseiro da Regula (que também vinha especificada no dito jornal) e depois fiz a sopa usando esse caldo.
Dito isto e não vou deixar aqui a receita do caldo (pois todos nós sabemos fazer caldos), sintam-se à vontade para usar a vossa receita de caldo caseiro, ou caldo de galinha de compra, se acharem apropriado e não quiserem estar com trabalho.


ingredientes (para 4 pessoas):
1 colher sopa de azeite
2 cebolas médias, picadas
1 colher chá de açafrão da Índia (cúrcuma)
2 colheres chá de pó de caril Madras
2 talos de aipo, cortados em cubos
2 cenouras grandes, cortadas em cubos
1.5l caldo de galinha
2 peitos de frango e sobre coxas de galinha, cozidos e desfiados
1 lata de 400g de feijão branco (tipo manteiga), escorrido e passado por água
100g de massa vermicelli, ou outra a gosto (eu usei Noodles de ovo)
preparação:
Aquecer o azeite numa panela sobre lume médio.
Adicionar a cebola e cozinhá-la, sem que ganhe cor, juntamente com a cúrcuma e o pó de caril.
Adicionar o aipo, as cenouras e o caldo de galinha. Deixar levantar fervura, baixar um bocadinho o lume e cozinhar até os legumes estarem quase cozidos.
Adicionar o feijão, o frango desfiado e a massa e cozinhar até a massa estar cozida.
Servir de imediato.

Roasted pumpkin and rosemary soup, topped with mushrooms and pancetta / Sopa de abóbora assada com alecrim, polvilhada com cogumelos e pancetta.


It looks like, lately we're not eating anything else but soups, but believe me, we are eating much more than soups!
It's just that, soups are something that, you know I truly adore and this one, that I made up as I was going, just in order to finish a few things that were laying around is so, but so good, that I had to write everything down straightaway in order to share it with you.
Just try it and I can guarantee you, that you'll be amazed!
ingredients for the soup (serves 6):
1 pumpkin (1.5kg), peeled, deseeded and chopped into cubes
1 1/2 tsp hot smoked paprika
sea salt and freshly ground black pepper
2 garlic cloves, skin on, crushed
3 rosemary springs, leaves finely chopped
olive oil, to drizzle
2 tbsp olive oil
4 celery sticks, chopped
4 carrots, cut into small cubes
Parmesan rind (if you have any - optional)
750ml hot vegetable stock (or more if you want a thinner soup)
topping:
100g pancetta lardons
200g brown mushrooms, chopped or quartered
1 tbsp rosemary leaves, finely chopped
freshly ground black pepper
method:
Preheat the oven to 170ºC.
In a bowl, mix the pumpkin with the paprika, the crushed garlic cloves and the chopped rosemary.
Season with salt and freshly ground black pepper and drizzle with 2 tbsp of olive oil. Toss well to combine.
Put the pumpkin mixture in a large roasting tin and roast for 45 minutes or until the pumpkin is tender.
Meanwhile, heat 2 tbsp of olive oil in a large non stick saucepan.
Add the chopped celery and carrots along with the parmesan rind (if using) and cook, stirring from time to time, until the vegetables are soft.
When the pumpkin is roasted and tender, discard the garlic skins and add the containing of  the roasting tin to the pan of soft carrot and celery.
Add the hot stock and bring to the boil.
Blend the soup until you have a smooth purée. Add more stock if you find it to thick and adjust the seasoning.
Fry the pancetta in a frying pan over medium to high heat, until crispy. Add the chopped mushrooms and rosemary and fry until the mushrooms are tender. Season with freshly ground black pepper.
Serve the hot soup topped with the pancetta and mushrooms mixture.

Ultimamente até parece que cá em casa não se come mais nada a não ser sopas, mas acreditem que comemos muito mais e deliciosas refeições, para além das de sopa.
Vocês já sabem do meu grande amor por sopas e adoro fazê-las e comê-las e esta, que fiz para gastar alguns produtos que andavam cá por casa, nomeadamente uma abóbora, um resto de pancetta e uns cogumelos e que fui fazendo à medida que as ideias iam surgindo, ficou tão, mas tão deliciosa que tive de a escrever de imediato. Não só para partilhar convosco, mas também para voltar a repeti-la, pois o resultado final, acreditem, superou completamente as minhas expectativas!


ingredientes para a sopa (para 6 pessoas):
1 abóbora, com cerca de 1.5kg, descascada, sem sementes e cortada em cubos
1 1/2 colheres chá de paprika fumada picante
sal e pimenta preta moída na altura
2 dentes de alho, com casca e esmagados com as costas da faca
3 hastes de alecrim, folhas finamente picadas
azeite, para regar
2 colheres sopa de azeite
4 talos de aipo, cortados em rodelas finas
4 cenouras, descascadas e cortadas em cubos pequenos
casca de queijo Parmesão (opcional - usem só se tiverem, mas se não costumam guardar, comecem a guardar as cascas do parmesão e a colocá-la nas vossas sopas e vão ver o sabor fabuloso que dão ás sopas).
750ml caldo de legumes quente (ou mais, se acharem que a sopa está muito grossa)
para o topping:
100g lardons de pancetta
200g cogumelos castanhos, fatiados ou cortados em quartos, dependendo do tamanho
1 colher sopa de folhas de alecrim, picadas finamente
pimenta preta moída na altura
preparação:
Aquecer o forno a 170ºC.
Numa taça, colocar a abóbora, a paprika, os dentes de alho, o sal e a pimenta e o alecrim picado e regar com um fio de azeite.
Envolver tudo muito bem e colocar tudo num tabuleiro.
Levar ao forno por cerca de 45 minutos, ou até a abóbora estar assada e macia.
Entretanto, colocar um tacho ao lume e aquecer as restantes 2 colheres de sopa de azeite.
Adicionar o aipo, as cenouras e a casca do parmesão (se tiverem) e cozinhar sobre lume médio a baixo, mexendo de vez em quando, até os legumes estarem macios.
Quando a abóbora estiver assada, descartar as cascas do alho e deitar todo o conteúdo do tabuleiro, para o tacho com o aipo e as cenouras.
Adicionar o caldo de legumes quente e deixar a mistura levantar fervura.
Com a ajuda da varinha mágica, reduzir a sopa a puré.
Rectificar os temperos e, se necessário, adicionar mais caldo, até obterem a consistência desejada.
Entretanto, fritar a pancetta numa frigideira anti aderente, até esta estar crocante.
Adicionar os cogumelos e o alecrim picado e fritar, mexendo, até os cogumelos estarem macios. Temperar com pimenta preta moída na altura.
Servir a sopa quente, polvilhada com a pancetta e os cogumelos.

Linguine with vegetable ragu / Linguine com ragu de legumes.


I made this dish two days before going in holidays as I wanted to finish all the vegetables that I had at home before going away.
It turned out so delicious that I had to write it down straightaway and share it with you.
ingredients (serves 6):
2 tbsp extra virgin olive oil
1 onion, finely chopped
3 carrots, finely diced
4 celery sticks, finely chopped
1 leek, finely sliced
220g cherry tomatoes
400g can chopped tomatoes
small bunch coriander
5 springs rosemary, leaves finely chopped
1 tbsp butter
250g brown mushrooms, thickly sliced
3 garlic cloves, finely chopped
500g linguine
salt and freshly ground black pepper
grated parmesan cheese, to serve
method:
Heat the olive oil in a large non stick pan.
Add the onion, carrots, celery, leek and a pinch of salt.
Cook gently, stirring often, until the vegetables are soft but not coloured.
Add the cherry tomatoes, chopped tomatoes, coriander and rosemary and bring up to a boil.
Turn to a simmer, then cook for about 20 minutes over a low heat.
Meanwhile, heat the butter in a large frying pan.
Add the garlic and mushrooms and sauté until the mushrooms are soft.
Tip the mushroom mixture into the vegetable mixture and stir to combine.
Season the ragu with salt and freshly ground black pepper to taste.
Cook the pasta in boiling salted water, according to the pack instructions, then drain.
Serve the pasta with the ragu and sprinkle with the grated parmesan.

Este prato foi feito dois dias antes de ir de férias, pois queria gastar todos os legumes que tinha em casa antes de ir embora.
Acabou por ser uma refeição tão deliciosa, que resolvi escrevê-la de imediato e partilhá-la convosco.


ingredientes (para 6 pessoas):
2 colheres sopa de azeite extra virgem
1 cebola, picada finamente
3 cenouras, cortadas em pequenos cubos
4 talos de aipo, cortados em rodelas finas
1 alho francês, cortado em rodelas finas
220g tomates cereja
1 lata de 400g de tomate picado
um ramo pequeno de coentros, picados
5 hastes de alecrim, folhas picadas muito finamente
1 colher sopa de manteiga
250g cogumelos castanhos, grosseiramente fatiados
3 dentes de alho, muito finamente picados
500g linguine
sal e pimenta preta moída na altura
parmesão ralado, para servir
preparação:
Aquecer o azeite num tacho largo.
Adicionar a cebola, as cenouras, o alho francês, o aipo e uma pitada de sal.
Cozinhar em lume brando, mexendo frequentemente, até os legumes estarem macios mas sem cor.
Adicionar os tomats cereja inteiros, o conteúdo da lata de tomate picado, os coentros e o alecrim.
Quando levantar fervura, baixar o lume e deixar a mistura cozinhar e reduzir, por cerca de 20 minutos.
Entretanto, aquecer a manteiga numa frigideira larga.
Adicionar os alhos picados e os cogumelos fatiados e saltear até os cogumelos estarem macios.
Juntar o conteúdo da frigideira ao conteúdo do tacho, mexer e temperar de sal e pimenta a gosto.
Cozer a massa de acordo com as instruções do pacote e escorrê-la.
Servir a massa com o ragu e polvilhar com o queijo parmesão ralado.

Carrot, cumin and miso soup with freekeh / Sopa de cenoura, cominhos e miso com topping the freekeh.


I know I'm always repeating myself but the thing is, I really love soups.
It was not like that when I was a kid. At that time, soups were boring and the flavours were almost the same all the time and to tell you the truth, at that time, I hated soup. Eating them was an obligation, while now is a real pleasure.
No matter the season, soup is one of my favourite meals and like I wrote already, soup for me is not a starter but a meal on itself and that's why soups with a second dimension are my favourite ones.
My parents used to say that carrots make your eyes prettier and if that myth is true, this soup will do the job as it's full of carrots and if not, it will make your eyes shine, just by looking at its great and vibrant colours.
The flavour itself, is absolutely fabulous!!
ingredients (serves 4):
1 tbsp unsalted butter
1 onion, sliced
1 heaped tsp cumin seeds
1 kg carrots, roughly chopped
1 heaped tsp white miso paste
for the topping:
100g freekeh, spelt or pearl barley, boiled according to the packet instructions and drained
25g dried cranberries, soaked in warm water and drained
1/4 onion, finely chopped (I used snipped chives)
1/2 celery stalk, finely chopped
1/2 carrot, finely chopped
flaky sea salt


method:
Melt the butter in a large pan. Add the onion and cook for 10 minutes or until soft.
Push the onion to one side of the pan and add the cumin seeds.
When the seeds start to release their aroma, add the carrots and stir everything together.
Add the miso paste and stir.
Add 750ml boiling water, bring to the boil, then simmer until the carrots are tender.
Process the soup until smooth and season with salt.
Meanwhile, mix the grain of your choice with the soaked cranberries, onion, celery and carrot in a large bowl. Season with salt.
Serve the soup topped with the freekeh mixture.

Eu sei que estou sempre a repetir-me, mas o facto é que, adoro sopa. Mesmo!!! Seja qual for a estação do ano, sopa a mim agrada-me sempre e em todas as estações, pois com a diversidade de legumes que hoje em dia se encontra, facilmente se adaptam sopas a todas as estações do ano.
Não pensem que foi sempre assim, pois não foi!
Em pequena, detestava sopa. Comer sopa era uma obrigação. As sopas eram sempre as mesmas. Entediantes, com pouca variação de sabor e de "entulho" como lhes chamava.
Agora adoro sopas de "entulho", tipo sopa da pedra, de feijão e afins e adoro-as tanto como sopas cremosas ou caldos mais ligeiros.
Como já escrevi aqui antes, sopa para mim não é um começo ou terminar de refeição. Sopa para mim é, por si só, uma refeição e por isso adoro sopas com uma segunda dimensão, como é o caso desta.
Os meus pais costumavam dizer que a cenoura faz os olhos bonitos e se o mito é verdadeiro, esta será com certeza uma sopa que fará muitos olhos bonitos, dada a considerável quantidade de cenoura que leva.
Caso o mito não seja real e os olhos não fiquem mais bonitos, brilharão mais de certeza, só de olhar para as cores vibrantes duma tigela desta sopa.
Quanto ao sabor, esse nem vale a pena dizer o quanto é maravilhoso e o quanto a combinação de sabores é perfeita e harmoniosa.


ingredientes (para 4 pessoas):
1 colher sopa de manteiga sem sal
1 cebola, finamente fatiada
1 colher chá bem cheia de sementes de cominho
1 kg de cenouras, grosseiramente picadas (eu descasquei as minhas)
1 colher chá bem cheia de pasta de miso clara
para o topping:
100g freekeh (não encontrei tradução para a freekeh mas é um género de grão de trigo integral), espelta ou cevadinha, cozida, de acordo com as instruções da embalagem e escorrida.
25g arandos secos, hidratados em água a ferver e escorridos
1/4 cebola, finamente picada (eu não gostei da ideia da cebola crua e optei por cebolinho picado).
1/2 talo de aipo, finamente picado
1/2 cenoura, finamente picada
flor ou flocos de sal
preparação:
Derreter a manteiga numa panela.
Adicionar a cebola e cozinhar por 10 minutos, ou até a cebola estar macia.
Empurrar a cebola para um canto da panela e colocar as sementes de cominho no espaço vazio.
Quando as sementes começarem a estalar e a libertar o seu aroma, adicionar as cenouras e mexer tudo muito bem.
Adicionar a pasta de miso e envolver tudo muito bem.
Adicionar 750ml de água a ferver e quando a mistura levantar fervura, baixar o lume e cozinhar até as cenouras estarem macias.
Com a varinha mágica ou robot de cozinha, reduzir a sopa a puré e rectificar o sal.
Entretanto numa taça, colocar o grão escolhido, os arandos hidratados e escorridos, a cebola, o aipo e a cenoura. Temperar com flor ou flocos de sal.
Servir a sopa em tigelas, polvilhada com a mistura do topping.

Ossobuco with lentils / Ossobuco com lentilhas.


With the low temperatures outside we just want to eat comforting and delicious food and this "one pot" meal is one of the most comforting and delicious meals we had lately.
The smell that comes from the oven while it's cooking is absolutely incredible and it is such a tasteful dish that you really have to give it a go to believe.
ingredients (serves 4):
2 tbsp olive oil
1kg ossobuco
1 onion, finely chopped
1 carrot, finely chopped,
2 celery stalks, finely chopped
3 garlic cloves, finely chopped
2 rosemary springs
1/2 bunch thyme
2 fresh bay leaves
3 whole cloves
250ml white wine
400g tin diced tomatoes
500ml chicken stock
225g green lentils (Puy)
chopped parsley, to finish


method:
Preheat the oven to 180ºC.
Heat the oil in a casserole dish and fry the ossobuco pieces in batches until well browned. Put the ossobuco on a plate and set aside.
In the same oil, over medium heat, cook the onion, carrots, celery and garlic for 10 minutes, or until soft.
Stir in the rosemary, thyme, bay leaves and whole cloves.
Add the wine, bring to the boil and reduce by half.
Add the tomatoes and 1 1/2 cups of the stock, stir, then put the ossobuco pieces into the sauce and bring to the boil.
Cover the casserole with a lid and cook in the oven for 1 hour.
Add the lentils and the remaining stock, return the casserole to the oven and cook for another 30 minutes or until the meat is tender and falling off the bone.
Sprinkle with the chopped parsley.

Com as baixas temperaturas que se fazem sentir lá fora, só apetecem comidinhas aconchegantes e as chamadas comidas de conforto e é isso mesmo que este prato é.
Comida de conforto ao mais alto nível e tão, mas tão boa que só experimentando constatarão o quanto tenho razão.
O cheirinho e perfume que emana do forno enquanto está a cozinhar é algo de sublime e o sabor..., bom, esse é fenomenal!!
ingredientes ( para 4 pessoas):
2 colheres sopa de azeite
1kg rodelas de ossobuco
1 cebola, finamente picada
1 cenoura, cortada em cubos muito pequeninos
2 talos de aipo, cortados em rodelas muito finas
3 dentes de alho, finamente picados
2 hastes de alecrim
1/2 ramo de tomilho
2 folhas de louro, de preferência frescas
3 cravinhos da Índia
250ml vinho branco
1 lata de 400g de tomate picado
500ml caldo de galinha
225g lentilhas verdes (lentilhas de Puy)
salsa picada, para decorar
preparação:
Aquecer o forno 180ºC.
Aquecer o azeite num tacho de ferro ou outro que possa ir ao forno e selar o ossobuco (em várias vezes) até estar douradinho de ambos os lados. Colocar a carne num prato e reservar.
No mesmo tacho e no mesmo azeite, sobre lume médio, cozinhar a cebola, a cenoura, o aipo e os alhos, por cerca de 10 minutos, ou até estarem macios.
Adicionar o alecrim, o tomilho e o cravinho e mexer.
Adicionar o vinho branco, deixar levantar fervura e reduzir para metade.
Adicionar os tomates e 1 1/2 chávenas do caldo, mexer tudo muito bem e colocar as rodelas de ossobuco de volta no tacho.
Deixar levantar fervura, tapar e levar o tacho ao forno por cerca de 1 hora.
Findo esse tempo, adicionar as lentilhas e o caldo restante e levar ao forno por mais 30 minutos, ou até a carne estar tenrinha e a separarar-se do osso.
Polvilhar com a salsa picada.

Ossobuco alla milanese / Ossobuco com risotto de açafrão.


This meal comes from Jamie Oliver Comfort Food cook book and it is so delicious and tasteful and full of contrasts that is unbelievable how good it is.
This recipe serves 6.

ingredients for the ossobuco:
6 ossobuco
1 whole nutmeg, for grating
plain flour, for dusting
2 knobs of unsalted butter
olive oil
2 onions, chopped
2 small carrots, finely diced
2 cloves of garlic, chopped
2 sticks of celery, finely diced
2 springs fresh rosemary leaves, chopped
200ml white wine (Pinot Bianco or Verdicchio)
1 tbsp tomato purée
1l chicken stock
method:
Preheat the oven to 180ºC.
Season the ossobuco with salt, pepper and grated nutmeg, then dust them in flour, shaking off any excess.
Put an ovenproof pan on a medium heat with the butter and a good lug of olive oil. Add the ossobuco and fry for 10 to 15 minutes, or until nicely golden, turning halfway.
When the veal has browned nicely, remove it to a plate.
Drain away most of the fat from the pan, then add the chopped vegetables (carrots, celery, onions and garlic) and rosemary and cook for 15 minutes, stirring frequently.
Pour in the wine and cook it away. Stir in the tomato purée and stock. Bring to the boil and using an wooden spoon, pick up all the sticky goodness from the bottom of the pan. Turn off the heat and return the meat to the pan. Cover with a damp sheet of baking paper and tin foil.
Place the pan in the oven and cook for 2 hours or until the meat is falling apart. Check on it halfway and add a splash of water if needed.

ingredients for the risotto:
1.2l chicken stock, hot
1 onion, finely chopped
1 celery heart, finely chopped
2 knobs of unsalted butter
1 good pinch of saffron threads
450g arborio rice
200ml white wine (Pinot Bianco or Verdicchio)
80g parmesan cheese, grated
extra virgin olive oil, to drizzle
method:
Put the onion and celery into a large high sided pan on a medium low heat with 1 knob of butter and cook for 15 minutes, or until soft but not coloured, stirring occasionally.
Put the saffron threads in a bowl and cover with a small ladleful of hot stock.
Stir the rice into the pan for a couple of minutes. Turn the heat up to medium high and add the wine. Cook it away completely and then add the saffron stock and stir for a few minutes until absorbed.
Add the remaining stock, a ladleful at a time, only adding more when the previous ladleful has been nearly absorbed, stirring all the time until the stock is finished and the rice is cooked. This could take around 16 minutes.
Add a final splash of stock to give the risotto a loose consistency and remove the pan from the heat.
Beat in the remaining knob of butter and most of the grated cheese. Season the risotto with salt and pepper if needed and cover with a lid and leave to sit for 2 minutes.
After 2 minutes, stir well and finish the risotto with a drizzle of extra virgin olive oil and the remaining grated cheese.

ingredients for the gremolata:
2 small cloves of garlic, finely chopped
1 bunch of fresh parsley, finely chopped
zest of 1 lemon
method:
Chop and mix all the ingredients together until fine.

to serve:
Divide the risotto between warm bowls or plates, then place one piece of the ossobuco on top.
Spoon the ossobuco cooking liquid over the top, then scatter over the gremolata.

1 noz de moscada, para ralar
farinha de trigo, para envolver o ossobuco
2 nozes de manteiga sem sal
azeite
2 cebolas, picadas
2 cenouras pequenas, cortadas em cubinhos
2 dentes de alho, picados
2 hastes de aipo, cortadas em cubinhos
2 hastes de alecrim, folhas picadas
200ml vinho branco (Pinot Bianco or Verdicchio)
1 colher sopa de concentrado de tomate
1l caldo de galinha
preparação:
Aquecer o forno 180ºC.
Temperar os pedaços de ossobuco com sal, pimenta e noz moscada ralada e envolvê-lo na farinha, sacudindo o excesso.
Colocar um tacho ou recipiente que possa ir ao forno, sobre lume médio. Colocar uma noz de manteiga no tacho e um bom golo de azeite.
Fritar os pedaços de ossobuco por cerca de 10 a 15 minutos, ou até estarem bem caramelizados, virando a meio do tempo.
Retirar a carne do tacho e reservar num prato.
Descartar a maior parte da gordura que ficou no tacho.
Colocar os vegetais no tacho, assim como o alecrim e cozinhar por 15 minutos, mexendo regularmente.
Adicionar o vinho branco e deixar evaporar.
Adicionar o concentrado de tomate e o caldo de galinha. Quando levantar fervura, e com uma colher de pau, raspar bem o fundo do tacho para soltar a caramelização lá ficou agarrada.
Desligar o lume, colocar a carne selada dentro do tacho. Cobrir o tacho com uma folha de papel vegetal molhada e por cima, cobrir com papel de alumínio.
Levar ao forno por cerca de 2 horas, ou até a carne estar macia e a quase a desfazer-se.
A meio do tempo de cozedura, espreitar e verificar se é preciso adicionar mais líquido. caso seja necessário, adicionar um pouco de água.


ingredientes para o risotto:
1,2l caldo de galinha, quente
1 cebola, picada finamente
1 coração (parte interior do aipo, depois de retiradas as primeiras hastes) de aipo, picado finamente
2 nozes de manteiga sem sal
1 boa pitada de filamentos de açafrão
450g arroz para risotto (Arborio ou outro)
200ml vinho branco (Pinot Bianco or Verdicchio)
80g queijo parmesão, ralado
azeite extra virgem, para regar
preparação:
Num tacho de lados altos sobre lume médio, colocar o aipo e a cebola, juntamente com uma noz de manteiga e cozinhar por 15 minutos, mexendo de vez em quando, até os vegetais estarem tenros, mas sem cor.
Entretanto, colocar os filamentos de açafrão numa taça, juntamente com uma concha de caldo de galinha quente e deixar repousar.
Quando os legumes estiverem macios, deitar o arroz no tacho e cozinhar por uns minutos, mexendo sempre.
Levantar o lume, adicionar o vinho e deixar evaporar, até ter sido completamente absorvido.
Adicionar a mistura de açafrão ao arroz e cozinhar uns minutos, mexendo sempre, para incorporar bem.
Começar a adicionar o caldo de galinha ao risotto, uma concha de cada vez, não adicionando a seguinte, até que a anterior tenha sido absorvida.
Este processo poderá demorar cerca de 16 minutos.
Quando o risotto estiver pronto, adicionar a última concha de caldo e desligar o lume.
Adicionar uma noz de manteiga e a maior parte do queijo ralado ao risotto. Temperar de sal e pimenta, se necessário e mexer bem.
Tapar o tacho e deixar o risotto repousar por cerca de 2 minutos.
Após o tempo de repouso, regar o risotto com azeite extra virgem e polvilhar com o restante queijo ralado.

ingredientes para a gremolata:
2 dentes de alho pequenos, picados finamente
1ramo de salsa, picada finamente
raspa de 1 limão
preparação:
Picar misturar bem todos os ingredientes até obter uma mistura fina.

para servir:
Dividir o risotto por pratos quentes e em cima deste, colocar uma rodela de ossobuco.
Regar com o molho de assar o ossobuco e polvilhar com uma colherzinha da gremolata.
