Bread and Butter Pudding with Chocolate, Marmalade, Custard and Panettone / Bread and Butter Pudding com Chocolate, Doce de Laranja Amarga, Custard e Panettone.


It took me almost 12 years in the UK to make my first Bread and Butter Pudding!!
A quintessential British Pudding that (shame on me, I know) I always thought it would be strange and never rang my bells...
I'm not untitled to give my opinion about the regular Bread and Butter Puddings because I've never made or tasted one before but, this one, the one I'm sharing with you today, is so utterly delicious, decadent and moreish that, the only thing I could think after tasting it was:
Why????
Why does it took me so long to make and try such an amazing dessert???
Hope the British people forgives me because I'm totally surrounded to Bread and Butter Pudding!
This recipe is from Jamie Oliver "Christmas Cookbook", which is the book of the month chosen by Deborah for her Rainydaybites Cook Book Club and I'm so glad I gave the Bread and Butter Pudding an opportunity and specially with this recipe!! Truly and utterly divine!

Raspberry and Thyme Pie / Pie de Framboesas e Tomilho.


Another recipe for this month's Rainydaybites Cook Book Club from which I told you about in this post.
Apart from all the food we want to cook from the chosen book, Deborah asks us (if we want, of course), to post, each month, two specific recipes on specific days, and because today is #PiDay (the math formula 3.14... etc., celebration), but people usually celebrates it with pie, making it a #PieDay, that's the day Deborah chose to publish this Pie.
A fabulous Pie with fresh berries, combined with an amazing thyme flavour that was a big hit here at home and totally my kind of recipe because..., You know how much I love berries right? and so you also know, the pastry itself is to die for!!! Melt in the mouth almondy, buttery, crumbly, delicious pastry!!
The original recipe calls for fresh strawberries but, I didn't like the look of the only strawberries I could find so, I decided for raspberries instead but, saying that, fell free to use any berry you like.
As I also told you here, this month's chosen book is the amazing Home Baked by Yvette van Boven and therefore, here is it, another contribution for this amazing Cook Book Club.

Trifle Cheesecake.


The last recipe of the Summer, just before the new season, the "fall" and the Autumn colours.

When I made this cheesecake, I made it for the Sweet World challenge but, then I saw this one and I thought that, for the challenge, it would be more innovative, different and "close" to the traditional layers of the classic trifle.

Saying that, this cheesecake was so good and refreshing that I have to share the recipe with you all anyway.

It's just a different and beautiful way of enjoying a trifle and a cheesecake, all at the same time. Two dessert classics transformed into a super delicious one.

Glam Trifle Slice / Trifle do Século XXI.


Trifle is the theme for this month's Sweet World.
  • A Trifle is an English dessert typically consisting of plain or sponge cake soaked in sherry, rum, or brandy and topped with layers of jam, custard, and whipped cream. The top is traditionally decorated with angelica (a plant stem crystallized with sugar) and glace cherries, but fresh fruit or sprinkles are the modern options. Trifle is usually served in a large glass bowl so that the layers of cake, jam or jelly, custard and cream can be appreciated. 
  • After some research, the information I gathered was very inconclusive regarding to which is the real and most traditional version. 
  • The earliest use of the name Trifle was in a recipe for a thick cream flavoured with sugar, ginger and rosewater, in Thomas Dawson's 1585 book of English cookery "The Good Huswifes Jewell". 
  • Since then, Trifle evolved from a similar dessert known as a fool and many variations and versions can be found nowadays. 
  • Opinions vary greatly on what to add after the basics. Controversies revolve around whether to use gelatine and whether to use fruit and if so, should it be canned or fresh but, as Mr. Norfolk said, "Trifle is in the eye of the beholder, what you like, you put in". 
  • Some people see the addition of jelly as a modern variation, but Hannah Glasse (1708 - 1770) published a Trifle recipe in 1747 that used fruit jelly, and the poet Oliver Wendell Holmes in 1861 wrote about Trifles with jelly in them. 
  • The alcohol is another issue for the trifle connoisseur. Fairly sweet sherry is traditional, but variations include brandy, madeira, port, Frontignan and Malaga wines. Factors other than trifle preparation can influence the choice of liquor, as same people uses the same alchool that they'll be drinking after or with it. 
The Triffle I'm presenting you is an updated version. Cake, jelly, raspberry, custard and cream, are built in layers in order to be presented as a terrine instead of being presented inside the traditional glass bowl.
It's not neat, it's not perfect, but it's very delicious indeed and, saying that, here is my Triffle for the 8th edition of the Sweet World!!

A challenge called "Sweet World" and the Queen of Puddings / Um Passatempo chamado "Sweet World" e o Queen of Puddings.

Susana and myself, we like to challenge ourselves in the kitchen.

We love to come out of our comfort zones and try different things.

Simple things, complicated things, it doesn't matter. As long as it's challenging, we are up for it.

And because of that, we decided to create this challenge to which we gave the name of "Sweet World".

The idea started with cakes. We wanted to make famous cakes from around the world and the challenge would be called "World Cakes" but, as we started debating the concept, we realised that there's so much that we want to try and make than only cakes...

Therefore, we decided to give it a name that would be more generic and that would allow us to make all famous worldwide sweet things, instead of just cakes.

The idea is to make the sweet specified keeping their most specific characteristics!

Of course you can give it your twist, as long as that doesn't change the primary and more important characteristics of the specified theme.

We also decided to start with a low level difficulty challenge and increase it from here.

The themes will be presented according to season and levels of difficulty and every month, on the 20th, we will be presenting our own bake and the respective theme.

Saying that, here it is, the first challenge for this 1st Edition of our "Sweet World" which is, the very British Queen of Puddings!


What is the Queen of Puddings?
  1. Queen of Puddings is a traditional and old fashioned British dessert, consisting of a baked, breadcrumb-thickened custard mixture, spread with jam and topped with meringue.
So, do you want to make a Queen of Puddings with us?

If yes:
  • You have until the 20th of February to make your Queen of Puddings and to show it to us.
  • You'll have to leave the link for your participation here in this post if you want to be featured in our round up.
  • That same day, 20th of February, Susana will let you know, on her blog, which will be the theme for the 2nd edition of this "Sweet World".

Queen of Puddings


ingredients (serves 4):
for the base:
600ml full fat milk
25g butter + extra for greasing the dish
finely grated zest of 1 lemon
50g caster sugar
3 egg yolks
75g fresh white breadcrumbs
6 tbsp strawberry jam
for the meringue:
3 egg whites
175g caster sugar
method:
Grease a 1.5l shallow ovenproof dish with butter.
Preheat the oven to 170ºC.
Gently warm the milk in a small pan until hand hot.
Add the butter, lemon zest and sugar and stir until the sugar has dissolved.
In a bowl, lightly whisk the egg yolks.
Slowly add the warmed milk misture while whisking. Keep whisking until incorporated.
Sprinkle the breadcrumbs over the base of the buttered dish.
Pour the custard over the breadcrumbs and leave to stand for 15 minutes, so the breadcrumbs absorb the liquid.
Place the dish in a roasting tin and fill the tin halfway with hot water.
Bake the custard in the oven for 25 to 30 minutes or until set.
Remove from the oven and cool while you make the meringue.
Reduce the oven temperature to 150ºC.
To make the meringue, whisk the egg whites using an electric mixer until they form stiff peaks.
Add the sugar 1 tsp at a time, still whisking on maximum speed until the mixture is stiff and shinny.
If you want to pipe the meringue, transfer it into a piping bag.
Gently spread the jam on top of the custard then pipe or spread the meringue all over the top of the jam layer.
Return the pudding to the oven (without the roasting tin this time) for about 25 to 30 minutes or until the meringue is crisp and golden all over.
Serve at once.


I allowed mine to come to room temperature and then, I put it in the fridge for 30 to 45 minutes as I prefer it a little cold.

Tanto eu como a Susaninha, adoramos um desafio na cozinha!

Adoramos sair da nossa zona de conforto e testar coisas novas. Coisas simples, coisas complicadas, não interessa. O importante é testarmos as nossas capacidades e sair da "pasmaceira".

Por isso mesmo, decidimos criar este passatempo ao qual demos o nome de "Sweet World".

A ideia começou com bolos.
Bolos mundialmente famosos e que ambas adoraríamos fazer mas para os quais é preciso aquele "empurrão extra".
O nosso passatempo dos bolos famosos iria chamar-se "World Cakes", mas foi entretanto e enquanto discutíamos o conceito do passatempo, que concluímos que há muitos doces interessantes, para além dos bolos famosos e foi então que decidimos mudar todo o conceito e baptizar o nosso passatempo de "Sweet World", pois assim, sendo este um nome mais abrangente, podemos incluir todos os doces que achemos que merecem fazer parte deste passatempo/desafio, incluindo os tais bolos famosos, claro!

Ficámos tão entusiasmadas, que a Susaninha criou a imagem para o nosso Sweet World (caso queiram usá-la nas vossas participações, estejam à vontade, embora não seja obrigatório).

A ideia é fazer o doce que vos seja proposto, mantendo sempre as características essenciais que o definem.
Claro que podem dar-lhe o vosso próprio twist, desde que, como referido, não alterem o que de mais importante e característico o doce possui.
Aqui o grande objectivo é mantermo-nos fieis ao produto original, conhecer e reproduzir a sua genuinidade e garantirmos que, no final, estamos a visualizar e saborear um pouco de mundo, tal como ele foi originalmente idealizado.


Os temas do passatempo irão sendo lançados por grau de dificuldade e/ou sazonalidade.
Assim sendo, para esta
1ª edição do Sweet World, decidimos começar com um tema com um grau de dificuldade relativamente baixo.

Todos os meses, alternadamente, eu e a Susana lançaremos o tema, ao mesmo tempo que apresentaremos de imediato a nossa proposta para esse mesmo tema.

Então? Querem juntar-se a nós neste desafio?
Pois então cá vai o primeiro doce para a 1ª edição deste "Sweet World":

Queen of Puddings!

Um doce relativamente fácil de fazer, embora tenha alguns aspectos aos quais há que prestar atenção.


Sabem o que é um Queen of Puddings?
É uma sobremesa muito típica e popular no Reino Unido e cujas características principais são as camadas que a compõem, ou seja:
Uma camada de custard enriquecido com pão ralado fresco, uma camada de doce e uma camada de suspiro!

Queen of Puddings


ingredientes (para 4 pessoas):
para a base:
600ml leite gordo
25g manteiga + extra para untar um recipiente refractário
raspa de 1 limão
50g açúcar refinado branco
3 gemas de ovo
75g pão ralado feito a partir de pão fresco
6 colheres sopa de doce de morango (ou outro a gosto)
para o suspiro:
3 claras de ovo
175g açúcar refinado branco


preparação:
Untar com manteiga, um recipiente refractário ou Pirex baixo, com capacidade para 1.5l.
Aquecer o forno a 170ºC.
Num tachinho, aquecer o leite, até este estar morno.
Adicionar a manteiga, a raspa do limão e o açúcar e mexer até este estar dissolvido.
Numa taça, bater ligeiramente as gemas de ovo.
Pouco a pouco, e mexendo sempre, adicionar o leite em fio, a fim de que tudo fique muito bem incorporado.
Polvilhar o fundo do recipiente refractário untado com o pão ralado.
Deitar a mistura do leite e gemas sobre o pão ralado e deixar por 15 minutos, a fim de que o pão absorva o líquido.
Colocar o recipiente refractário num tabuleiro de lados altos e encher o tabuleiro com água quente, até esta chegar até meio da altura do recipiente refractário (banho Maria).
Levar ao forno por 25 a 30 minutos, ou até o custard estar firme.
Retirar tudo do forno e colocar o custard sobre uma grelha de arrefecimento, enquanto se prepara o suspiro. Descartar a água e o tabuleiro onde se levou a água ao forno.
Reduzir a temperatura do forno para os 150ºC.
Para fazer o suspiro, bater as claras em castelo firme.
Batendo sempre, adicionar o açúcar, uma colher de chá de cada vez.
Bater, até todo o açúcar haver sido incorporado e a mistura estar espessa e brilhante.
Caso queiram um efeito mais enfeitado, colocar o suspiro dentro de um saco de pasteleiro, equipado com o bico à vossa escolha.
Muito delicadamente, espalhar o doce de morango sobre o custard.
Decorar a superfície do doce com o suspiro e levar o recipiente refractário ao forno por mais 25 a 30 minutos (sem o tabuleiro da água por baixo), ou até o suspiro estar "crocante" ao toque e douradinho.
Servir morno ou à temperatura ambiente.
Eu deixei o meu arrefecer até estar à temperatura ambiente e depois coloquei-o 30 a 45 minutos no frigorífico, pois quente, acho-o muito enjoativo.

Salted butter crème caramel / Pudim de baunilha com caramelo salgado.


I think I now have a problem!!
It seems to me that I'm getting addicted to salted caramel and as soon as I see a recipe with it, I can't help but try it straight away.
This pudding is just amazing as the texture is a cross between a vanilla custard and a panna cotta.
Easy and quick to make, utterly delicious and very smooth, it's a dessert that worth being recreated.
The recipe is from Mimi Thorisson's brilliant and delightful cook book.
The step where the gelatine leaves is added to the cream is not specified in the book but I added it as explained bellow.
ingredients for the custards (serves 4):
3 gelatine leaves, soaked in cold water until softened and drained
350ml double cream
seeds scrapped from 1 vanilla bean
50g granulated sugar
3 large egg yolks
for the caramel:
150g granulated sugar
3 1/2 tbsp salted butter
60ml double cream, slightly warmed
1/4 tsp fleur de sel
method:
In a saucepan over a medium heat, bring the cream and vanilla seeds to a boil.
Add the sugar and stir until dissolved.
Take off the heat, add the drained gelatine leaves and stir until melted.
Add the egg yolks, one by one, whisking all the time.
Pour the custard into 4 (180ml capacity) ramekins. Let cool completely and then refrigerate until set (4 to 5 hours or overnight).
To make the caramel, melt the sugar in a medium saucepan over medium heat. Do not stir until it has completely melted.
When the sugas has melted, swirl the pan occasionally until the sugar is uniformly dark amber in color.
Remove from the heat and carefully add the butter. Stir quickly with a wooden spoon, return to the heat for a few seconds, then take off the heat again.
Add the warm cream, stir quickly. Return to the heat for about 10 seconds, stirring until smooth.
Stir in the flour de del and set aside yo cool.
Serve the custards topped with the caramel sauce.

Bom, quer-me parecer que estou com um problema grave, pois acho que estou a ficar uma "caramel addicted", lol!!
Eu que não achava piada nenhuma a caramelo, ou pelo menos não suspirava por ele, agora não posso ver uma receita com caramelo, especialmente se for caramelo salgado, que tenho de a testar imediatamente e mais, se for comer ou comprar gelados, adivinhem que sabor escolho?
Caramelo salgado pois claro!!
Este pudim é absolutamente fabuloso. Fácil e rápido de fazer e que faz sucesso no final de uma refeição. Cá em casa foi um grande sucesso!
Em termos de textura, é um misto entre um pudim de baunilha e uma panna cotta. Super cremoso e merece MESMO ser testado.
Esta receita é do fabuloso livro da Mimi Thorisson e mais virão e todas elas super deliciosas.
No livro, não está explicada a parte onde se incorpora a gelatina no pudim, mas eu incorporei-a de acordo com o abaixo explicado.


ingredientes para o pudim (para 4 pessoas):
3 folhas de gelatina, demolhadas em água fria até estarem macias e bem escorridas
350ml natas para culinária
sementes de uma vagem de baunilha, raspadas
50g açúcar granulado branco
3 gemas de ovo grandes
para o caramelo:
150g açúcar granulado branco
3 1/2 colheres sopa de manteiga com sal
60ml natas para culinária, ligeiramente aquecidas
1/4 colher chá de flor de sal
preparação:
Num tachinho sobre lume médio, colocar as natas e as sementes de baunilha.
Quando o leite levantar fervura, adicionar o açúcar e mexer até o açúcar estar dissolvido.
Retirar o tacho do lume, adicionar as folhas de gelatina escorridas e mexer bem até estas estarem completamente dissolvidas.
Adicionar, as gemas, uma de cada vez, mexendo muito bem com a vara de arames, entre cada adição.
Dividir o creme por 4 recipientes refractários (ou outros) com capacidade para 180ml cada, deixar arrefecer e depois refrigerar por 4 a 5 horas, ou de um dia para o outro.
Para fazer o caramelo, colocar o açúcar num tacho sobre lume médio. Não mexer até o açúcar estar completamente derretido.
Quando o açúcar estiver derretido, fazer movimentos giratórios com o tacho, por forma a obter um caramelo escurinho e de cor uniforme, tendo cuidado para que não queime.
Retirar o tacho do lume, adicionar a manteiga com cuidado (para que não salpique) e mexer rapidamente com uma colher de pau.
Voltar a colocar o tacho ao lume por uns segundos e em seguida retirá-lo novamente do lume.
Adicionar as natas, mexer rapidamente e voltar a levar ao lume por 10 segundos, mexendo sempre até obter uma mistura cremosa.
Retirar o tacho do lume, adicionar a flor de sal e deixar arrefecer completamente.
Servir os pudins cobertos com o caramelo.

Rhubarb and custard millefeuilles / Mil folhas de ruibarbo e custard.


I love rhubarb but I tend to not make many things with it as, here at home, rhubarb is loved by ones and hated by others.
My daughter loves it and my husband hates it. My son said he hated it all his life and the last time I made something with rhubarb, he had a fair amount of it and confessed that he loves it but he was saying all the time that he hated it, just to please his daddy... Unbelievable right? I almost strangled him that day, lol!
When I saw a beautiful bunch of a very pink and gorgeous rhubarb last time I went shopping, I couldn't resist and brought it home with me.
Because this Rachel Khoo recipe was one of the many marked down to test, I didn't have to think much about where I was going to use it.
This is a very gourmet dessert that went down a storm as the combination is absolutely scrumptious.
ingredients (serves 4):
375g pack of ready rolled puff pastry, removed from the fridge 20 minutes before using
1 egg, beaten
2 tbsp caster sugar
1 tbsp icing sugar
method:
Preheat the oven to 180ºC and line a baking tray with baking paper.
Cut off the pastry into 12 rectangles measuring 4cm x 10cm and place them on the baking tray.
Brush lightly with the beaten egg and sprinkle with caster sugar. Cover the rectangles with another sheet of baking paper, then place another baking tray on top, to stop the pastry from rising.
Bake for 30 minutes.


for the custard:
3 egg yolks
40g caster sugar
20g cornflour
250ml whole milk
1/2 a vanilla pod, seeds scrapped and pod reserved (I used 1 tsp vanilla paste)
method:
Whisk the egg yolks with the caster sugar for 2 to 3 minutes, or until you have a light and thick mixture.
Whisk in the cornflour.
Bring the milk to the boil with the vanilla seeds and the vanilla pod.
Pour the milk in a slow stream on to the egg mixture, whisking all the time.
Return the mixture to a clean pan and whisk continuously over a medium heat, scrapping down the sides and the bottom of the pan.
Once the cream releases a bubble or two, take it off the heat.
Pour the custard into a bowl to cool to room temperature.
When cooled, spoon it into a large pipping bag with a 1cm nozzle and place in a jug so it stays upright.
Put it in the fridge and chill for 1 to 2 hours.
for the rhubarb:
400g rhubarb, washed, trimmed and cut into 10cm pieces
50g caster sugar
method:
Toss the rhubarb in the sugar and place it in a small baking dish.
Roast at 180ºC for 20 minutes or until the rhubarb is tender but not mushy.
to assemble:
Pipe 2 blobs of custard on a serving plate. Stick a pastry rectangle on top, then place 3 to 4 slices of rhubarb on top of the pastry.
Place another piece of pastry over the rhubarb and pipe 2 lines of custard on this second layer of pastry.
Top with the 3rd rectangle and dust with icing sugar.
Repeat to make 4 millefeuilles and serve immediately.

Eu adoro ruibarbo mas não faço muitas coisas com ele porque, cá em casa, o ruibarbo é amado por uns e odiado por outros.
Eu e a minha filha adoramos. O meu marido odeia e o meu filho, que passou a vida a dizer que odiava, na última vez que fiz algo com ruibarbo, comeu que se fartou e no fim confessou que adora ruibarbo, mas que sempre disse que odiava para agradar e fazer pandilha com o seu papá... GRRR!! Quase o estrangulei nesse dia..., lol!
Quando, de uma das vezes que fui ás compras, vi um molho lindo de ruibarbo, com um aspecto fabuloso e com uma cor rosa linda, não hesitei em trazê-lo comigo para casa.
Como esta receita da Rachel Khoo, era uma das que estava marcada para fazer desde o início, podem calcular que não tive de pensar muito onde utilizar o ruibarbo certo?
Esta é ums sobremesa linda e que causa impacto em qualquer mesa e a combinação de ingredientes é completamente indescritível e difícil de adjectivar.
ingredientes (para 4 pessoas):
1 rectângulo de massa folhada com 375g, retirada do frigorífico 20 minutos antes
1 ovo, batido
2 colheres sopa de açúcar refinado branco
1 colher sopa de açúcar em pó
preparação:
Aquecer o forno a 180ºC e forrar um tabuleiro grande com papel vegetal.
Cortar a massa folhada em 12 rectângulos de 4cm x 10cm cada e colocá-los no tabuleiro.
Pincelar levemente com o ovo e polvilhar com o açúcar refinado.
Cobrir os rectângulos com uma folha de papel vegetal e colocar outro tabuleiro em cima, a fim de evitar que a massa cresça.
Levar ao forno por cerca de 30 minutos.
para o custard:
3 gemas de ovo
40g açúcar refinado branco
20g Maizena
250ml leite gordo
1/2 vagem de baunilha, sementes raspadas e casca reservada (eu usei 1 colher chá de pasta de baunilha).
preparação:
Bater as gemas com o açúcar por 2 ou 3 minutos, ou até obter uma mistura pálida e espessa.
Adicionar a maizena e voltar a bater.
Colocar o leite num tacho com as sementes e a casca da vagem da baunilha e levar ao lume até levantar fervura.
Lentamente e em fio, adicionar o leite a ferver à mistura das gemas, batendo vigorosamente o tempo todo.
Colocar a mistura num tacho limpo e aquecer em lume médio, mexendo o tempo todo e raspando bem os lados e fundo do tacho, até o creme começar a fazer bolhas. Assim que vir uma ou duas bolhas, retirar do lume imediatamente.
Deitar o custard numa taça para arrefecer até estar á temperatura ambiente.
Quando arrefecido, colocar o custard dentro de um saco de pasteleiro equipado com um bico de 1cm de diâmetro.
Colocar o saco de pasteleiro com o custard dentro de um jarro, a fim de o manter direito e refrigerar por 1 ou 2 horas.
para o ruibarbo:
400g ruibarbo, lavado, pontas aparadas e cortado em pedaços de 10cm
50g açúcar refinado branco
preparação:
Misturar os pedaços de ruibarbo com o açúcar e colocá-los num tabuleiro ou recipiente refractário. Levar ao forno a 180ºC, por cerca de 20 minutos, ou até estar macio, mas sem estar desfeito.
para montar os mil folhas:
Com o saco de pasteleiro, colocar dois pontos de custard nos pratos onde vai servir os mil folhas, a fim de evitar que eles deslizem.
Colocar 1 rectângulo de massa folhada no prato e sobre esta, colocar 2 ou 3 pedaços de ruibarbo.
Cobrir com o 2º rectângulo de massa e, sobre este, desenhar duas linhas de custard.
Cobrir com o 3º rectângulo de massa folhada e polvilhar com açúcar em pó.
Repetir o processo, até ter montado os 4 mil folhas.
Servir imediatamente.
