Pretzel Caramel Bars / Barrinhas de Caramelo Salgado e Pretzels.


About this recipe, I'm not going to talk much about because, as you can see, the images say's it all!
The recipe is from Aimee Twigger gorgeous book Love, Aimee X. A book from which you can find other fabulous recipes here on the blog, under the label "Aimee Twigger" or "Aimee x".
I not just love Aimee's books but I also love her gorgeous blog and Instagram account which are, both, always full of fabulous suggestions. Not to talk about Aimee herself, which is a fantastic person, kind, generous and a delight to deal with.
This recipe was my daughter's request after being flicking through Aimee's book and, of course, I was more than happy to satisfy her wish!

Peanut butter and strawberry bundt cake / Bundt cake de manteiga de amendoim e morangos.


As you can read here, the theme for this month Bundtmania is berries.
I was in doubt about using blueberries, cranberries or raspberries and finally and decided to go for strawberries and forget about the other berries.
The result is this delicious cake that I gave away to raise money for charity.
The cake had to be sliced and individually wrapped and I'm happy because I could bake a cake and the fact of giving it away for such a noble cause, just doubled the pleasure of baking it.


ingredients for the strawberry jam:
300g strawberries, hulled and halved
100g caster sugar
1/4 tsp freshly grated lemon zest
1 tsp freshly squeezed lemon juice
method:
Place the strawberries in a medium pan and mash them slightly with a fork.
Cook over medium heat for 6 minutes.
Reduce the heat to low.
Add the sugar and cook, stirring, until it has dissolved.
Stir in the lemon juice and zest. Raise the heat to medium and cook for 15 to 20 minutes, or until the mixture has thickened.
Pour into a small bowl or jar and let cool. The jam will keep in an airtight container in the refrigerator for up to 2 weeks.


ingredients for the cake (serves 10 to 12):
115g unsalted buter, at room temperature, plus melted butter for greasing the tin
300g plain flour, plus extra for dusting the tin
1 1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
150g granulated sugar
160g light brown sugar
260g creamy peanut butter
2 tsp vanilla extract
3 eggs
240ml whole milk
255g strawberry jam (recipe above)
method:
Preheat the oven to 180ºC. Grease a 10 cup bundt tin with melted butter and dust it lightly with flour, tapping out any excess.
Mix the flour, baking powder, baking soda and salt in a bowl until throughly combined.
Beat the butter with sugars on medium speed for 2 to 3 minutes or until light and fluffy.
Add the peanut butter and vanilla and beat until thoroughly incorporated.
Add the eggs, on at a time, beating well after each addition.
With the mixer on low, add the flour mixture (in three goes), alternately with the milk (in two goes), beginning and ending with the flour and beating until just combined.
Pour about half of the batter into the prepared tin and then dollop with about half of the jam. Using a knife, swirl the jam into the batter.
Pour the remaining batter into the pan and repeat with the remaining jam.
Bake the cake for 1 hour, or until a skewer inserted in the centre comes out clean.
Let the cake cool in the tin on a wire rack for about 15 minutes, then invert the cake on the rack and let it cools completely.
Dust with icing sugar and serve.

Eu andei indecisa entre mirtilos, framboesas e arandos, mas finalmente decidi-me, por nenhum deles e sim por morangos.
O resultado é este bolo delicioso, o qual só provei para me poder pronunciar, pois foi por mim oferecido para angariar dinheiro para caridade.
Poder fazer um bolo e doá-lo para angariar fundos para tão nobre causa, foi algo que me deu um prazer redobrado.
O bolo foi vendido em fatias, embrulhadas individualmente, o que me permitiu mostrar-vos o seu interior, pois de outra forma, teria de fazer outro bolo. Disserem-me no dia seguinte que tinha sido um sucesso, o que não poderia ter-me deixado mais feliz.


ingredientes para o doce de morango:
300g morangos, arranjados e cortados ao meio
100g açúcar refinado branco
1/4 colher chá de raspa de limão
1 colher chá de sumo de limão
preparação:
Colocar os morangos num tacho e esmagá-los ligeiramente com um garfo.
Cozinhar sobre lume médio, por cerca de 6 minutos.
Reduzir o lume para brando, adicionar o açúcar e cozinhar, mexendo, até que o açúcar tenha dissolvido.
Adicionar a raspa e o sumo do limão, aumentar o lume para médio e cozinhar por 15 a 20 minutos, ou até a mistura estar espessa.
Colocar numa taça ou frasco e deixar arrefecer.
O doce conservar-se-à no frigorífico, fechado num recipiente de fecho hermético, por duas semanas.


ingredientes para o bolo (para 10 a 12 semanas):
115g manteiga sem sal, à temperatura ambiente + manteiga derretida para untar a forma
300g farinha de trigo branca + extra para polvilhar a forma
1 1/2 colheres chá de fermento em pó
1 colher chá de bicarbonato de sódio
1/2 colher chá de sal
150g açúcar granulado branco
160g açúcar amarelo
260g manteiga de amendoim sem pedaços
2 colheres chá de extracto de baunilha
3 ovos
240ml leite gordo
255g doce de morango (receita acima)
preparação:
Aquecer o forno a 180ºC. Untar com manteiga derretida, uma forma de bundt - com capacidade para 10 chávenas - e polvilhá-la com farinha, sacudindo o excesso.
Numa taça, misturar a farinha, o fermento, o bicarbonato de sódio e o sal. reservar.
Na taça da batedeira eléctrica e em velocidade média, bater a manteiga com os açúcares por 2 ou 3 minutos, ou até obter uma mistura leve e fofa.
Adicionar a manteiga de amendoim e a baunilha e bater até tudo estar incorporado.
Adicionar os ovos, um de cada vez, batendo bem entre cada adição.
Com a batedeira em velocidade baixa e só até os ingredientes estarem incorporados, adicionar a farinha em 3 vezes, alternando com o leite (em 2 vezes), começando e terminando com a farinha.
Deitar metade da mistura na forma.
Colocar metade do doce de morangos em colheradas sobre a massa e com a ajuda de uma faca, criar um efeito marmoreado.
Deitar a restante massa na forma e repetir o processo com a restante metade do doce.
Cozer o bolo por 1 hora, ou até que um palito inserido no meio, saia completamente limpo.
Deixar o bolo arrefecer na própria forma sobre uma grelha, por cerca de 15 minutos.
Desenformar o bolo sobre a grelha e deixar arrefecer completamente.
Polvilhar com açúcar em pó e servir.

Chocolate and peanut butter cream pie / Pie com chocolate, manteiga de amendoim e natas.


I'm not a big fan of peanut butter but this pie, although it's very caloric, it's truly delicious and decadent and the combination of ingredients is absolutely perfect.
ingredients (serves 10):
250g Oreo biscuits
1 tbsp plain flour
75g butter, melted and cooled
300ml double cream
2 tbsp icing sugar
chocolate shavings, to garnish
for the peanut butter filling:
250g smooth peanut butter
1 tbsp icing sugar, sifted
50g butter, melted and cooled
40g salted peanuts, roughly chopped
5 tbsp chocolate syrup
for the chocolate mousse:
3 gelatine leaves
175g dark chocolate (no more than 62% cocoa solids), chopped
2 medium eggs, separated
50g caster sugar
200ml double cream, whipped


method:
Preheat the oven to 180ºC.
Put the biscuits, plain flour and a pinch of salt in a food processor and process until quite fine.
Mix in the melted butter until incorporated.
Transfer the mixture to a 23cm pie dish, pressing it into the base and sides with the back of a spoon.
Chill for 20 minutes.
Bake the biscuit base in the oven for 10 minutes, until crisp and the leave it to cool completely.
To make the filling, beat the peanut butter, icing sugar and melted butter in a bowl, until smooth.
Spoon it into the baked and cooled pie crust and level out the surface.
Top with the peanuts and drizzle the chocolate syrup evenly all over. Put it in the fridge.
To make the mousse, place the gelatine leaves in a bowl of cold water and leave to soak. Put the chocolate in a bowl and place it over a pan of simmering water, stirring until it's melted. Remove the chocolate from the heat and set aside to cool.
In a bowl, combine the egg whites and sugar. Place it over the pan of simmering water and stir until the sugar is dissolved.
Squeeze the water from the gelatine leaves and add them to the egg whites. Whisk the mixture until it has almost tripled in size and holds its shape.
Beat the egg yolks into the chocolate until incorporated and then fold in the egg whites followed by the whipped cream.
Spread the mixture over the peanuts and chocolate syrup.
Chill the pie in the fridge for at least 1 hour.
Before serving, whip the double cream and icing sugar until it forms thick peaks.
Spread it over the mousse and chill the pie in the fridge for at least 30 minutes.
Decorate with chocolate shavings.

Para ser franca, não sou grande fã de manteiga de amendoim, mas esta pie, embora ultra calórica, tem uma combinação de ingredientes fabulosa e é de uma decadência absolutamente fenomenal e daí ter arriscado fazê-la e não me ter arrependido nada.
ingredientes (para 10 pessoas):
250g bolachas Oreo
1 colher sopa de farinha de trigo branca
75g manteiga, derretida e arrefecida
300ml natas para bater
2 colheres sopa de açúcar em pó
raspas de chocolate, para decorar
para o recheio de manteiga de amendoim:
250g manteiga de amendoim sem pedaços
1 colheres sopa de açúcar em pó, peneirado
50g manteiga, derretida e arrefecida
40g amendoins com sal, grosseiramente picados
5 colheres sopa de molho ou xarope de chocolate (de compra - daquele de pôr por cima dos gelados).
para a mousse:
3 folhas de gelatina
175g chocolate preto (não mais que  62% de cacau), picado
2 ovos médios, separados
50g açúcar refinado branco
200ml natas para bater, batidas


preparação:
Aquecer o forno a 180ºC.
No copo de um robot de cozinha, colocar as bolachas Oreo, a farinha e uma pitada de sal e processar até obter uma mistura fina. Adicionar a manteiga derretida e processar até tudo estar bem incorporado.
Colocar a mistura num recipiente para pie com cerca de 23cm de diâmetro e pressionar bem, com as costas de uma colher, no fundo e lados do recipiente, por forma a forrar toda a superfície. Refrigerar por cerca de 20 minutos.
Colocar o recipiente no forno e cozer a base da pie por cerca de 10 minutos, ou até estar estaladiça. Arrefecer por completo.
Para fazer o recheio: Numa taça, bater a manteiga de amendoim com o açúcar em pó e a manteiga derretida, até obter uma mistura macia e cremosa.
Deitar a mistura sobre a base das bolachas e alisar a superfície.
Por cima da mistura anterior, espalhar os amendoins picados e por cima destes, regar uniformemente com o xarope de chocolate. Reservar no frigorífico.
Entretanto, para fazer a mousse de chocolate, começar por colocar as folhas de gelatina numa taça com água fria e reservar.
Colocar o chocolate numa taça, sobre uma panela de água a ferver (sem que a taça toque na água) e derreter o chocolate, mexendo sempre. Retirar a taça do chocolate do lume e deixar arrefecer.
Sobre o mesmo tacho de água quente, colocar uma taça com as claras de ovo com o açúcar e mexer até que o açúcar dissolva.
Escorrer a água das folhas de gelatina e adicioná-las ás claras. Bater a mistura muito bem, sobre a panela de água quente, até que esta triplique de volume e as claras estejam como que em castelo.
Adicionar as gemas ao chocolate derretido e bater bem.
Sem bater, incorporar as claras na mistura do chocolate e gemas, logo seguidas pelas natas batidas.
Espalhar esta mistura sobre a última camada da pie (o xarope de chocolate) e refrigerar por cerca de 1 hora.
Antes de servir, bater as natas com o açúcar em pó, até estas estarem em Chantilly e espalhar sobre a mousse de chocolate. Refrigerar por 30 minutos e no momento de servir, decorar com as raspas de chocolate.
