Saint Lucia/Saffron Buns/Lussekatter for the Sweet World.


Saint Lucia buns, also known as Lussekatter or Saffron Buns, are rich, spiced yeast-leavened sweet buns that are flavoured with saffron and contains raisins.
The buns are baked into many traditional shapes, of which the simplest is a reversed "S" shape.
They are traditionally eaten during Advent, and especially on Saint Lucy's Day, December 13.
St. Lucia celebrations include a procession of young girls in white dresses carrying candles. Most of the girls carry a single candle, but the girl chosen to represent Lucia wears an entire crown of lit candles, and carries a tray of saffron scented St. Lucia buns.
Saint Lucia or Saffron Buns, is the theme chosen for this month's Sweet World and the recipe I choose is this one, from my favourite Scandinavian author, Brontë Aurell and from her delicious book, The Scandi Kitchen.

Povitica for the World Bread Day / Povitica para o Dia Mundial do Pão.


When it comes to bread, two words come up onto my mind and they are: Paul Hollywood. My favourite baker of all times and a most respected and professional bread baker.
And if last year, I participated in the world bread day with this delicious savoury couronne, this year I decided to participate with this totally delicious sweet bread from Eastern Europe.
The first time I came across this bread was on this year's edition of the Great British Bake Off. It was one of the technical challenges for the contenders and it proved to be a piece of work.
As I'm always up for a challenge, this is the bread I chose straight away to be the one to make for this special occasion - The World Bread Day!.
I found that the most difficult steps are the stretching of the dough, as it as to be paper thin and the spreading of the filling, as the dough is so thin that it can easily ripe apart and although my Povitica is not perfect as it should be, I can guarantee you that it is a stunningly delicious bread and it worth's to be given a go.

Povitica é um pão doce da Europa de Leste.
Quando se fala de pão, o nome Paul Hollywood é o primeiro a vir-me de imediato à cabeça, pois é o meu "padeiro" de eleição e um profissional conceituadíssimo nesta arte.
No ano passado participei no dia mundial do pão, com esta fabulosa coroa salgada e este ano, decidi participar com este fabuloso pão doce, a Povitica.
A primeira vez que vi, ou ouvi falar neste pão doce, foi na edição deste ano do Great British Bake Off. Este foi um dos desafios técnicos para um dos episódios deste fenomenal programa e todos os concorrentes o acharam difícil, até porque não estavam em posse da receita completa.
Assim que o vi, decidi que seria o pão a fazer para este dia mundial do pão e não sendo uma receita fácil, decididamente vale a pena experimentar, pois é fantástico em termos de sabor.
As partes que achei mais difíceis na confecção deste pão, foram o esticar da massa, pois tem de ficar mais fina que uma folha de papel e o espalhar do recheio, porque como a massa é super fina, é difícil espalhá-lo sem rasgar a massa.
Como podem ver, o meu pão não ficou perfeito, mas valeu pela experiência e pelo sabor!!
Aqui fica então a receita traduzida.


ingredientes para a massa:
300g de farinha de trigo branca
40g de açúcar refinado branco
7g de sal
10g de fermento biológico seco
30g de manteiga sem sal, derretida
1 ovo grande (L), batido
1/2 vagem de baunilha, sementes raspadas do interior
150ml de leite gordo, morno
para o recheio:
60g de manteiga sem sal
4 colheres sopa de leite gordo
280g de miolo de noz
1/2 vagem de baunilha, sementes raspadas do interior
100g de açúcar refinado branco
2 colheres sopa de cacau em pó
1 gema de ovo, batida
para terminar:
15g manteiga, derretida
1 clara de ovo, batida
100g açúcar em pó


preparação do pão:
Colocar a farinha e o açúcar na taça da batedeira eléctrica equipada com o gancho para pão.
Colocar o sal num lado da taça e o fermento do outro lado.
Adicionar a manteiga derretida, o ovo, a baunilha e o leite morno e misturar em velocidade baixa.
Quando a massa começar a juntar-se, misturar por mais 5 a 8 minutos, a velocidade média, até obter uma massa macia, fofa e elástica.
Colocar a massa numa taça untada com óleo, cobrir com película aderente e deixar levedar por cerca de 1 hora, ou até ter duplicado de tamanho.
Untar uma forma rectangular com capacidade para 1kg.


preparação do recheio:
Colocar a manteiga e o leite num tachinho e aquecer em lume brando, até a manteiga derreter. Retirar do lume imediatamente.
Colocar as nozes, a baunilha, o açúcar e o cacau em pó no copo do robot de cozinha e processar até obter uma mistura areada.
Adicionar a gema do ovo e a mistura do leite e manteiga e pulsar para combinar bem. Reservar.
Entretanto, colocar uma toalha ou lençol limpo em cima da mesa e polvilhar com farinha.
Colocar a massa levedada em cima da toalha e estender a massa até obter um rectângulo com cerca de 50 x 30cm.
Pincelar toda a superfície da massa com 15g de manteiga derretida.
Enfarinhar as mãos e, começando no meio da massa, começar a esticá-la suavemente com as costas das mãos, por forma a que a massa  fique o mais fina possível. No final, a massa deveria ter 1m x 60cm. A minha não ficou tão extensa, pois começou a rasgar e eu optei por não esticar mais.
Com muito cuidado, para que a massa não rasgue, espalhar o recheio sobre a massa, o mais uniformemente possível, de forma a que toda a massa fique coberta ( a minha não ficou totalmente coberta, como podem verificar no resultado final...).
Caso o recheio esteja espesso e difícil de espalhar, adicionar um pouco de leite morno, por forma a ficar mais manejável.
Começando por um dos lados mais longos da massa, começar a enrolar a massa em forma de "torta longa", o mais apertadinho possível. Usar o lençol ou toalha para ajudar a este processo.
Com muito cuidado, pegar numa das pontas da "torta" e colocá-la numa das extremidades da base da forma, continuando a colocá-la no fundo da forma em forma de U. Voltar a massa para cima e criar um segundo U em cima do primeiro.
Colocar a forma dentro de um saco plástico limpo e deixar repousar por mais uma hora.
Aquecer o forno a 180ºC.
Pincelar o pão com a clara de ovo e levar ao forno por 15 minutos. Findo esse tempo, baixar a temperatura do forno para os 150ºC e cozer por mais 45 minutos, ou até o topo do pão estar douradinho.
Caso o topo comece a ficar muito escuro, antes de terminado o tempo de cozedura, cobrir com folha de alumínio.
Retirar a forma do forno e deixar o pão arrefecer na forma por cerca de 3 0 minutos.
Arrefecer completamente em cima de uma grelha.
Entretanto, misturar bem o açúcar em pó com umas gotas de água, até obter um icing líquido o suficiente, para ser espalhado por cima dom pão.
Acreditem que dá trabalho, mas é fenomenal e um bom desafio para quem gosta de fazer pão e afins.

Sweet dough lemon loaf | Pão doce de limão.


I am totally crazy and mad about citrus and lemon is one of my favourite, if not The one!!
Therefore, each time I see recipes with lemon my mouth starts watering straight away and this sweet pull apart lemon loaf recipe was no exception.
It is so scrumptious, moist and divinely lemony that it is the confirmation of my love for lemons in particular and citrus in general!
ingredients for the dough:
75ml lukewarm whole milk
60ml tepid water
50g caster sugar
1/2 tsp salt
2 1/4 tsp dried yeast
350g plain flour, plus extra for dusting
55g unsalted butter, melted, plus extra for greasing
2 large eggs, beaten
2 tsp vanilla extract
for the filling:
60g unsalted butter
100g caster sugar
grated zest of 3 lemons
for the topping:
90g cream cheese
40g icing sugar, sifted
1 tbsp lemon juice
grated zest of 1 lemon, plus extra to decorate
1 tbsp whole milk
method:
Grease a loaf tin with butter, dust it with flour and set aside.
In a jug, mix together the milk, water, salt, dried yeast and 1 tsp of the sugar.
Set it aside to ferment for about 30 minutes or until foamy on the surface.
In a mixing bowl, mix together the flour and remaining sugar. Make a well in the centre.
Meanwhile, melt the butter.
When the yeast mixture is ready, stir in the eggs, vanilla and melted butter.
Pour the liquid mixture into the centre of the dry ingredients and mix together to form a dough.
Knead the dough for 5 minutes over a floured surface.
Place the kneaded dough on a lightly floured bowl, cover with clingfilm and leave to rise in a warm place for  about 45 minutes or until doubled in size.
Meanwhile melt the butter for the the lemon sugar filling.
In a small bowl, mix the sugar, lemon zest and melted butter. Set it aside trying to keep it somewhere warm so that the butter doesn't set.
When the dough has proved, turn it onto a lightly floured surface and gently knock it down back.
Roll it out until it is about 30 x 38cm and using a sharp knife, cut the dough lengthways into 4 equal strips.
Using a pastry brush, coat each strip with the lemon sugar filling.
Gently lift the strips and pile them neatly on top of each other. Cut the pile of strips into 6 equal square stacks.
Lift each stack and place it into the tin, cut side facing up.
Place each stack next to another to fill the length of the tin, packing them together like a sliced loaf.
Wrap the tin with clingfilm and leave to rise in a warm place for  about 30 to 40 minutes or until doubled in size.
Preheat the oven to 170ºC.
Bake the loaf for 30 to 35 minutes or until golden brown.
When cooked, set aside and cool slightly.
Make the cream cheese topping by whisking the cheese and icing sugar together just until smooth.
Add the lemon juice, zest and milk and mix well until creamy and smooth.
Once the loaf has cooled slightly, remove it from the tin and top with the lemony topping.
Scatter with extra lemon zest and serve warm or at room temperature.

Eu sou daquelas pessoas que adora citrinos. Tudo o que sejam receitas com citrinos em geral e limões em particular, põem-me logo as papilas gustativas a palpitar.
Este pão doce de limão, é a confirmação da minha paixão por citrinos e, em especial, por limão, pois é delicioso, fofo, com um intenso sabor a limão e com a vantagem de que (bem embrulhado) se mantém fresco e fofo por 2 ou 3 dias.
ingredientes:
75ml leite gordo morno
60ml água tépida
50g açúcar refinado branco
1/2 colher chá de sal
2 1/4 colheres chá de fermento biológico seco
350g farinha de trigo branca + extra para a bancada
55g manteiga sem sal, derretida + extra para untar a forma
2 ovos grandes (L), batidos
2 colheres chá de extracto de baunilha
para o recheio:
60g manteiga sem sal
100g açúcar refinado branco
raspa de 3 limões
para a cobertura:
90g queijo creme (tipo Philadelphia)
40g açúcar em pó, peneirado
1 colher sopa de sumo de limão
raspa de 1 limão + extra para decorar
1 colher sopa de leite gordo
preparação:
Untar uma forma tipo bolo inglês com manteiga e polvilhá-la com farinha. Reservar.
Num jarro, misturar o leite, a água, o sal, o fermento e 1 colher de chá do açúcar.
Reservar por 30 minutos ou até que forme uma camada de espuma na superfície.
Numa taça, misturar a farinha e o resto do açúcar.
Derreter a manteiga e quando a mistura do fermento estiver pronta, adicionar-lhe os ovos, a baunilha e a manteiga derretida e mexer tudo muito bem.
Fazer um buraco no centro da farinha e deitar para lá a mistura líquida.
Misturar bem até obter uma massa.
Colocar a massa sobre uma superfície enfarinhada e amassar por 5 minutos, ou até obter uma massa macia e elástica.
Colocar a bola de massa numa taça ligeiramente enfarinhada, cobrir com película aderente e reservar em local aquecido por cerca de 45 minutos, ou até esta ter duplicado de tamanho.
Enquanto a massa repousa, fazer o recheio.
Derreter a manteiga. Numa taça, misturar o açúcar, a raspa do limão e a manteiga derretida. Reservar em local mais ou menos aquecido, para que a manteiga não solidifique.
Findo o tempo de repouso da massa, colocá-la em cima de uma superfície ligeiramente enfarinhada e "espancá-la" gentilmente a fim de lhe retirar o ar.
Com a ajuda do rolo, estender a massa num rectângulo com cerca de 30 x 38cm e, com uma faca bem afiada, cortá-la, no sentido do comprimento, em 4 tiras iguais.
Com um pincel de cozinha, pincelar o recheio por cima das 4 tiras de massa.
Com muito cuidado e sempre com a parte pincelada virada para cima, colocar as tiras de massa umas em cima das outras, por forma a obter uma pilha.
Cortar a pilha em 6 quadrados iguais e, sempre muito delicadamente, colocar os quadrados dentro da forma, com o lado do corte voltado para cima, por forma a encher a forma - como se estivéssemos a encher uma forma com fatias de pão colocadas lado a lado na vertical.
Tapar a forma com película aderente e reservar em local aquecido, por cerca de 30 a 40 minutos, ou até o pão ter duplicado de tamanho.
Aquecer o forno a 170ºC.
Cozer o pão por cerca de 30 a 35 minutos, ou até estar bem douradinho.
Quando cozido, retirar do forno deixar arrefecer na forma até estar morno.
Para fazer a cobertura, bater o queijo com o açúcar em pó até obter uma mistura cremosa.
Adicionar o sumo e a raspa do limão e o leite e voltar a bater, até obter uma mistura cremosa e homogénea.
Quando o pão estiver morno, desenformar, regar com a cobertura e polvilhar com mais raspa ou zeste de limão.
Servir morno ou à temperatura ambiente.

Cinnamon rolls / Caracóis de canela.


That I am totally crazy about cookery books everybody knows already and this book was a surprisingly  fabulous Christmas gift.
It is such a pretty book and so full of gorgeous pictures and fantastic recipes that you just want to try them all at once, which would not be very wise, of course...
Well, these cinnamon rolls are one of these recipes that I was dying to try since the day I got the book and I can tell you that they are the best cinnamon rolls I've ever tried.
ingredients for the dough (makes 12):
10g dried yeast
235ml lukewarm milk
100g caster sugar
80g unsalted butter
1 tsp salt
2 eggs
650g plain flour (I used white spelt flour)
ingredients for the filling:
215g  light brown sugar
2 1/2 tbsp ground cinnamon
100g pecan nuts
120g raisins
80g unsalted butter, softened
for the glaze:
115g unsalted butter
220g icing sugar
65g cream cheese
1/2 tsp vanilla extract
1/8 tsp salt
method:
To make the dough in a bread maker, place all the ingredients in the bread pan following the manufacturers instructions regarding the order liquid / dry ingredients and set the machine to the "dough"setting.
To make the dough by hand, place the flour, salt, sugar, butter and eggs in a mixing bowl and mix together the yeast and milk in a jug.
Pour the milk/yeast mixture into the bowl with the other ingredients and using your hands, mix together until it forms a dough and comes away from the bowl. Cover the bowl with clingfilm and leave in a warm place for 1 hour or until doubled in size.
Preheat the oven to 200ºC.
Turn the dough out onto a lightly floured surface and using a rolling pin, roll the dough into a 50 x 40cm rectangle.
To make the filling, mix all the ingredients, except the butter, in a bowl.
Brush the dough rectangle with the butter and sprinkle the filling mixture over it.
Roll the far side of the dough towards you to make a Swiss roll and cut into 5cm slices.
Line a baking tray with parchment paper and place the slices cut side down into the prepared tin, keeping them 5cm apart from each other.
Bake for 20 minutes or until golden brown and cooked through.
To make the glaze, beat all the ingredients together, until smooth and creamy.
Take the cinnamon rolls out of the oven and cover them straightway with the glaze.

Este livro foi um surpreendentemente delicioso presente de Natal. Recheado de receitas fabulosas, fotos lindas e sugestões de nos deixar de água na boca, é um daqueles livros dos quais apetece experimentar as receitas todas de uma vez e estes caracóis de canela, assim que lhes pus a vista em cima, não descansei enquanto não os experimentei e posso assegurar-vos que são os melhores caracóis de canela que já comi!
ingredientes para a massa (faz 12 caracóis):
10g fermento biológico seco
235ml leite morno
100g açúcar refinado branco
80g manteiga sem sal
1 colher chá de sal
2 ovos
650g farinha de trigo branca (eu usei farinha de espelta branca)
ingredientes para o recheio:
215g  açúcar amarelo
2 1/2 colheres sopa de canela em pó
100g nozes pecãs
120g passas
80g manteiga sem sal, amolecida
para o glacê:
115g manteiga sem sal
220g açúcar em pó
65g queijo creme tipo Philadelphia
1/2 colher chá de extracto de baunilha
1/8 colher chá de sal
preparação:
Eu fiz a massa colocando todos os ingredientes (pela ordem líquidos/sólidos) na cuba da máquina de fazer pão e seleccionei o programa "amassar" que demora 1.30h.
Para fazer a massa à mão, dissolver o fermento no leite. Adicionar os restantes ingredientes e misturar bem.
Trabalhar a massa com as mãos polvilhadas com farinha até obter uma bola.
Colocar a massa numa taça, cobri-la com película aderente e deixar levedar em local aquecido por cerca de 1 hora, ou até ter duplicado de tamanho.
Aquecer o forno a 200ºC e forrar um tabuleiro com papel vegetal.
Estender a massa sobre uma superfície enfarinhada, até obter um rectângulo de 50 x 40cm.
Para fazer o recheio, misturar todos os ingredientes (com excepção da manteiga), numa taça e reservar.
Barrar o rectângulo de massa com a manteiga e polvilhar com a mistura do recheio.
Comece a enrolar a massa pelo lado maior do rectângulo, até obter um rolo tipo torta.
Cortar em fatias de 5cm e colocá-las no tabuleiro preparado, espaçadas por 5cm umas das outras.
Leve ao forno por cerca de 20 minutos ou até estarem douradas e cozidas.
Para fazer o glacê, bater todos os ingredientes até obter uma consistência cremosa.
Retirar os caracóis do forno e cobri-los de immediato com o glacê.
