Red Curry, Ginger and Squash Soup / Sopa de Abóbora, Caril Vermelho Tailandês e Gengibre.


For this month's Rainydaybites Cookbook Club, we are cooking from Joanne Chang and Karen Akunowicz "Myers + Chang at Home" book.
This cookbook brings to the table dishes from the incredibly popular Boston restaurant. The recipes are Asian inspired and unique with a focus on flavour.
The perfect book to kick off the comfort food season and for me, nothing is more comforting than a big bowl of soup and that's why this was the first recipe I chose from the book.
Full of balanced flavours, this soup is perfect for lunch or dinner and it's so satisfying that, after having a warm bowl of it, you don't need anything else.

Thai Red Chicken Soup / Sopa de Frango com Caril Vermelho Tailandês.


Here it is, another Jamie Oliver, "5 Ingredients - Quick & Easy Food" recipe.
A fabulous Thai red soup with poached chicken, that made the delights of the family on a coolish Scottish day.
Easy and simple, like all the recipes in this book (as I wrote here), this recipe is a "must try" one!

Coconut curried chickpeas with wilted spinach / Caril de Grão de bico com leite de coco e espinafres.


A perfect meal for a "meatless Monday"!!
I made this curry for Saturday lunch and I don't have to tell you how simple an delicious it is!!
As I told you already a thousand times, I love cooking from Emilie Raffa "The Clever Cookbook" and, I promise, I'm not going to repeat myself.
Just check here, all the recipes that I already cooked from this book and it will be easy for you to conclude by yourselves, how fabulous and easy to make, Emilie's suggestions are.
As I wrote above, this was our lunch last Saturday and although the poached egg was not part of Emilie's recipe, I decided to serve the curry with a poached egg on top as, I think, an egg, specially if it's perfectly poached, makes everything better...

Chicken katsu curry burger / Hamburger de frango com molho de caril katsu.


First of all, I start by saying sorry to the ones that try to comment on my blog but can't find the comments box.
Blogger and Google+ together are a disaster and the amount of messages I received this week from people that was complaining that they couldn't comment on my blog was a nightmare.
I didn't do any changes at all!! It's just that Blogger and Google+ combination that definitely doesn't work!!!
So, if you really want to comment, you need to click directly on the post title instead of trying to comment from the blog link. Annoying I know and I'm getting tired of this but, until I decide to change, theres nothing I can do...

Coconut and turmeric chicken curry with roasted pumpkin / Caril de frango, com coco, açafrão das índias e abóbora assada.


This curry was marked down to be tried since the day I bought Simmone Logue fabulous "In the Kitchen" book, from which I already made this fabulous cake and this delicious salad.
As the super talented Maria Midões challenged us to work together with asian recipes this month, I couldn't waste the opportunity to present this recipe to Maria and, maybe (who knows), be lucky enough to see the recipe reproduced and styled by Maria herself.
I love this kind of fragrant asian food and this curry exceeded all my expectations, as the combination of flavours, textures and aromas, is just incredible and utterly delicious!


ingredients for the curry paste (serves 6):
1 tsp ground turmeric
1 thumb sized piece of fresh ginger
1 lemongrass stem, pale part only
2 garlic cloves, peeled
1 large red chilli
2 red asian shallots, peeled
method:
Place all the ingredients in a food processor and blend until you have a paste.
for the chicken curry:
500g pumpkin (jap or kent - I used butternut squash), peeled and cut into large chunks
6 tbsp vegetable oil
270ml coconut milk
270ml coconut cream
6 kaffir lime leaves
800g skinless free range chicken breast fillets, sliced into strips
1 tbsp fish sauce
1 tbsp light brown sugar
1/2 tsp sea salt
juice of 1 lime, plus extra lime wedges, to serve
250g cherry tomatoes, cut in half
6 kale stalks, leaves roughly chopped
3 tbsp fried shallots (shop bought or deep fry it yourself)
45g fresh coriander, roughly chopped
method:
Preheat the oven to 180ºC. Line a baking tray with baking paper.
Place the pumpkin on the baking tray and drizzle with 2 tbsp of the vegetable oil.
Season with salt and freshly ground black pepper and bake for 20 minutes or until the pumpkin is soft.
In a large heavy based saucepan, heat the remaining vegetable oil over medium high heat.
Add the curry paste and cook, stirring, for 5 minutes, until the oil has split out of the paste.
Turn the heat down to medium, add the coconut milk, coconut cream and lime leves and cook gently for a further 5 minutes.
Add the chicken strips to the pan, mixing the sauce through, then cook with the lid on for 8 minutes. It is very important at this point that the sauce is just thinking over very slowly as you want the chicken to poach gently so it is lovely and tender.
Stir in the fish sauce, sugar, salt and lime juice and check the seasoning.
Add the pumpkin, tomatoes and kale and cook for 5 minutes.
Serve the curry sprinkled with the fried shallots and coriander, with lime wedges and steamed rice on the side.

Este caril estava marcado para ser reproduzido e testado, desde o dia que comprei este livro lindo da Simmone Logue, o "In the Kitchen". Deste livro, se bem se lembram, já fiz este bolo maravilhoso e esta salada divina.
A receita foi sendo adiada e outras lhe passaram à frente, mas assim que vi este desafio da nossa super talentosa Maria Midões, pensei logo que seria esta a receita que iria preparar para o desafio de receitas asiáticas da querida Maria Midões.
Caso tenha a sorte de a Maria seleccionar esta receita, cozinhá-la e fazer o styling da mesma, à boa maneira e com o extremo bom gosto a que a Maria já nos habituou, ficarei super feliz da vida e muito vaidosa.
Caso isso não aconteça, aconselho-vos a reproduzir esta maravilha, pois é absolutamente delicioso, aromático, picante, mas ao mesmo tempo, fresco e, sobretudo, completamente viciante.
Todos os ingredientes são facilmente encontrados numa boa loja de produtos asiáticos.


ingredientes para a pasta do caril (serves 6):
1 colher chá de açafrão das índias (curcuma)
1 pedaço de gengibre fresco (tamanho de um pulgar)
1 talo de lemongrass, parte clara
2 dentes de alho, descascados
1 malagueta vermelha (red chilli)
2 chalotas asiáticas, descascadas
preparação:
Colocar todos os ingredientes no copo do robot de cozinha e processar até obter uma pasta.


para o caril de frango:
500g abóbora (jap ou kent - eu usei squash), descascada e cortada em pedaços grandes
6 colheres sopa de óleo vegetal
270ml leite de coco
270ml creme de coco
6 folhas de lima kaffir
800g peitos de frango (do campo ou frango caseiro), sem pele e cortados em tiras
1 colher sopa de fish sauce
1 colher sopa de açúcar mascavado claro
1/2 colher chá de sal
sumo de 1 lima, mais gomos ou quartos de lima extra, para servir
250g tomate cherry, cortados ao meio
6 folhas de couve kale, picadas grosseiramente
3 colheres sopa de chalotas crocantes (caso não queiram comprar, cortem chalotas em rodelas super finas, fritem na fritadeira e escorram sobre papel absorvente, foi o que eu fiz).
45g coentros frescos, picados grosseiramente


preparação:
Aquecer o forno a 180ºC. Forrar com papel vegetal um tabuleiro de ir ao forno.
Colocar a abóbora no tabuleiro, regar com 2 das colheres de sopa do óleo e temperar de sal e pimenta.
Entretanto, num tacho de fundo espesso, sobre lume médio a alto, aquecer o óleo restante.
Adicionar a pasta de caril e cozinhar, mexendo sempre, por cerca de 5 minutos, ou até o óleo se separar e o molho ficar com aspecto de que talhou.
Baixar o lume para médio e adicionar o leite, o creme de coco e as folhas de lima. Cozinhar delicadamente, por cerca de 5 minutos.
Adicionar o frango, mexer tudo muito bem e cozinhar, tapando o tacho com a tampa, por cerca de 8 minutos. Atenção que este passo tem de ser delicado, pois o molho tem de cozinhar delicadamente e sem ferver, por forma a que o frango fique cozido, mas macio e suculento.
Adicionar o fish sauce, o açúcar, o sal e o sumo da lima. Mexer bem e rectificar os temperos, se necessário.
Adicionar a abóbora assada, os tomates e a couve e cozinhar por mais 5 minutos.
Servir o caril polvilhado com as chalotas crocantes e os coentros picados e acompanhado dos quartos de lima e de arroz cozido.

Vegetable curry and naan bread / Caril de legumes e pão naan.


Finally I got the time to write down this delicious recipe.
A fabulous and simple vegetable curry, that was published by the gorgeous and kind Filipa Gomes, here, on instagram and that I made the same week she posted it.
For some odd reason, it was not published here straightway, which is unforgibale as it was so tasty and delicious, but now, here it is.
The naan bread recipe is already here and I have to say that, until I find a better one, this one is my favourite recipe so far.


ingredients (serves 4):
2 tbsp olive oil
1 onion, finely chopped
250g white mushrooms, thickly sliced
2 garlic cloves, finely chopped
1 tbsp curry powder
1 tbsp turmeric
1 tsp ground cumin
1/4 tsp ground cinnamon
salt and freshly ground black pepper, to taste
1 cauliflower, cut into florets (I used 1/2 cauliflower and 1/2 broccoli)
1 large carrot, cut into matchsticks
1 x can (240ml) coconut milk
roasted peanuts (Filipa used caju nuts)
1 handful of coriander, chopped + extra to garnish
toasted coconut flakes, to sprinkle
method:
Heat the oil in a saucepan.
Cook the onion for 10 minutes or until soft, then add the sliced mushrooms and cook until golden brown, stirring frequently.
Add the garlic and cook until fragrant.
Add all the spices, stir to combine and cook for 1 minute more.
Add the cauliflower, broccoli and carrot and stir to combine.
When the vegetables are cooked but still al dente, add the coconut milk.
Bring to the boil and allow the mixture to thicken slightly.
Add the chopped coriander and season with salt and pepper to taste.
Serve scattered with the extra chopped coriander, the peanuts, the coconut flakes and with your choice of Indian bread.

Deixo-vos hoje com esta sugestão vegetariana que a nossa querida e muito, muito simpática Filipa Gomes, publicou há umas semanas atrás no instagram.
Embora tenha feito a receita, na mesma semana que a Filipa a publicou, por alguma razão estranha, ainda não a tinha aqui publicado. Facto inaceitável, pois é super deliciosa e foi muito apreciada cá em casa, mesmo pelos menos vegetarianos, como é o caso do meu filho.
Fiz algumas alterações à receita original e o resultado final ficou estupendo.
Têm o link do instagram onde está a receita, caso queiram seguir à risca a sugestão da Filipa.
Aqui, deixo-vo-la descrita da forma como a preparei.
Servi com pão naan, cuja receita já aqui publiquei e que, aqui em casa, enquanto não aparecer outra receita de pão naan que a supere, esta é a escolhida e a mais apreciada!


ingredientes (para 4 pessoas):
2 colheres sopa de azeite
1cebola, picada
250g cogumelos brancos, cortados em fatias grossas
2 dentes de alho, bem picados
1 colher sopa de pó de caril
1 colher sopa de curcuma em pó (açafrão das Índias)
1colher chá de cominhos em pó
1/4 colher chá de canela em pó
sal e pimenta preta moída na altura, a gosto
1 couve flor, separada em floretes (eu usei 1/2 cabeça de couve flor e 1/2 cabeça de brócolos)
1 cenoura grande, descascada e cortada em palitos
1 lata pequena de leite de coco (240ml)
amendoins torrados (a Filipa usou caju)
coentros picados + extra para polvilhar
flocos de coco tostados, para polvilhar
preparação:
Aquecer o azeite num tacho.
Adicionar a cebola e cozinhar por 10 minutos, ou até esta estar macia.
Adicionar os cogumelos e cozinhar até estes perderem toda a água e estarem douradinhos, mexendo com frequência.
Adicionar o alho picado e cozinhar até este estar aromático.
Adicionar as especiarias, mexer e cozinhar por mais 1 minuto.
Adicionar a couve flor, os brócolos e a cenoura e cozinhar, mexendo de vez em quando, até estes estarem macios, mas al dente.
Adicionar o leite de coco e envolver tudo muito bem. Deixar levantar fervura e cozinhar, mexendo de vez em quando, até o molho estar ligeiramente espesso.
Desligar o lume, adicionar os coentros picados e temperar de sal e pimenta preta a gosto.
Polvilhar o caril com os coentros extra picados, os amendoins e os flocos de coco.
Servir acompanhado do pão naan, ou outro pão indiano da sua preferência.

Pistachio and yoghurt chicken curry with Naan bread / Caril de frango com iogurte e pistachios e pão Naan.


Cold and rainy days, call for a cozy and warm blanket and a comforting bowl of food and this rich and creamy curry couldn't be more comforting and delicious.
The Naan bread, is the most delicious one I ever tried and it is so easy to make and the perfect accompaniment for the creamy sauce of the curry.
ingredients (serves 4):
100g unsalted pistachios, plus extra to serve
5cm ginger, peeled and roughly chopped
4 cloves of garlic, roughly chopped
3 tbsp rapeseed oil (I used olive oil)
2 large onions, sliced into fine rings
2 large ripe tomatoes, roughly chopped
1/4 tsp ground black pepper
1 tsp garam masala
1/2 tsp chilli powder
1 tbsp coriander seeds, crushed
1/2 tsp ground cardamom
4cm cinnamon stick or 1 tsp ground cinnamon
1 tsp salt or to taste
800g skinless, boneless chicken thighs, chopped into 2cm cubes
250ml hot chicken stock
4 tbsp Greek yoghurt, plus extra to serve
juice of 1/2 a lemon
method:
In a food processor or spice grinder, grind the pistachios to a fine powder and set aside.
Bash up the ginger and garlic in a pestle and mortar to a coarse paste and set aside.
Put the oil in a wide-bottomed, lidded frying pan on a medium heat and, when it's hot, add the onions.
Fry the onions until they are caramelised, which should take around 20 minutes.
Add the garlic and ginger paste and stir fry for 3 to 4 minutes, before adding the tomatoes.
Put the lid on the pan and leave to cook for around 5 minutes, or until the tomatoes start to break down.
Add the black pepper, garam masala, chilli powder, coriander, cardamom, cinnamon and salt.
Stir everything together and then add the chicken. Turn the chicken so that it seals on all sides.
Add the ground pistachios and stir fry for 1 minute and then pour in the chicken stock.
Stir the yoghurt with a fork and then add it into the pan, string everything together.
Pop the lid on the pan and leave to cook for around 15 minutes.
Taste the curry and adjust the seasoning if needed.
If you want, you can add a little water in order to achieve a more saucy consistency.
Serve the curry with the Naan bread and/or Basmati rice and top it with a dollop of yoghurt, a scatter of chopped pistachios and a squeeze of the lemon juice.


ingredients for the Naan bread (makes 12):
500g plain flour + extra to dust the dough
rapeseed oil (I used olive oil)
4 tbsp whole-milk yoghurt
7g dried yeast
2 tsp sugar
2 tsp salt
1 level tsp baking powder
275ml whole milk, hand hot
method:
Put the flour into a large mixing bowl. Make a well in the middle and add 2 tbsp of oil, the yoghurt, yeast, sugar, salt and baking powder.
Mix through with your fingers until the ingredients resemble breadcrumbs. Add the warm milk, little by little, and mix again until it comes into a dough.
Put the dough on to a clean and well floured surface and knead for about 5 minutes.
Transfer the dough to a bowl, cover and leave it in a warm place for at least 1 hour, or until doubled in size.
When the dough has doubled in size, divide it into 12 pieces.
Take one piece, roll it into a ball and flatten it between your palms. Coat it in fresh flour and roll it out to around 12cm x 20cm.
Put a frying pan on a medium heat and, when hot, place the naan in it.
When the naan starts to bubble (that can take about 20 to 30 seconds), flip it over, using a spatula, and cook on the other side, for the same amount of time. Be careful to not burn it.
Flip over again and quickly press it gently all over with a spatula, for 10 to 15 seconds.
Turn the naan over again for another 10 to 15 seconds and if cooked perfectly (without uncooked doughy bits), take it off the pan.
Cook the remaining naans in the same way, keeping the cooked ones warm by stacking them on top of each other and wrapping them in foil.

Dias frios e chuvosos só pedem comidinha de conforto e acreditem, eu sei que aqui é a terra da chuva, mas estas duas últimas semanas tem sido demais.
Já me questiono onde é que há tanta água para deitar abaixo..., e isto para não falar nos ventos fortíssimos e nas temperaturas baixas que acompanham as tempestades de chuva que têm caído incessantemente.
Enfim, lamúrias à parte, pois eu não sou de me lamentar e sim de aceitar o que a vida e a Natureza têm para me oferecer, deixo-vos hoje com este caril de frango maravilhoso e com o que, acreditem, é o melhor pão Naan que já comi até hoje (e isto não quer dizer que seja o melhor do mundo, pois muitos haverá para experimentar...).
Comidinha de conforto que nestes dias é o que sabe melhor, pois aquece o corpo e a alma.


ingredientes (para 4 pessoas):
100g pistachios sem sal + extra para servir
5cm gengibre fresco, descascado e picado grosseiramente
4 dentes de alho, descascados e picados grosseiramente
3 colheres sopa de óleo de colza ou canola (eu usei azeite, pois não gosto do óleo de canola)
2 cebolas grandes, cortadas em rodelas finas
2 tomates grandes e maduros, picados grosseiramente
1/4 colher chá de pimenta preta moída na altura
1 colher chá de garam masala
1/2 colher chá de malagueta em pó
1 colher sopa de sementes de coentros, esmagadas
1/2 colher chá de cardamomo em pó
1 pau de 4cm de canela, ou 1 colher chá de canela em pó
1 colher chá de sal, ou a gosto
800g sobre coxas de frango, sem pele e sem osso e cortadas em cubos de cerca de 2cm
250ml caldo de galinha quente
4 colheres sopa de iogurte grego + extra para servir
sumo de 1/2 limão
preparação:
No copo do robot de cozinha ou num moinho de especiarias, reduzir os pistachios a farinha e reservar. 
No almofariz, esmagar os alhos e o gengibre, até obter uma pasta grosseira. Reservar.
Colocar o óleo numa frigideira de fundo largo que tenha tampa e aquecer sobre lume médio.
Quando o óleo estiver quente, adicionar as cebolas e fritar até estas estarem caramelizadas, o que poderá demorar cerca de 20 minutos.
Adicionar a pasta de alho e gengibre e fritar, mexendo sempre, por cerca de 3 a 4 minutos.
Adicionar os tomates, tapar a frigideira e cozinhar por cerca de 5 minutos, ou até os tomates começarem a desfazer.
Adicionar a pimenta preta, a garam masala, a malagueta em pó, as sementes de coentros, o cardamomo, a canela e o sal e mexer tudo muito bem.
Adicionar o frango e mexer, por forma a selar todos os lados do mesmo.
Adicionar os pistachios em pó e mexer por cerca de 1 minuto, antes de adicionar o caldo de galinha.
Mexer bem o iogurte com um garfo e adicioná-lo à mistura anterior, mexendo tudo muito bem.
Tapara a frigideira e deixar cozinhar por cerca de 15 minutos.
Provar o caril e rectificar os temperos a gosto.
Caso queiram e achem necessário, podem adicionar um bocadinho de água, por forma a obter um molho mais cremoso.
Servir o caril decorado com uma colherada de iogurte, pistachios picados e regar com um bocadinho do sumo de limão.
Acompanhar com/ou arroz Basmati e o pão Naan.


ingredientes para o pão Naan (para 12):
500g farinha de trigo branca + extra para polvilhar a bancada e o pão
óleo de canola ou colza (eu usei azeite)
4 colheres sopa de iogurte natural gordo
7g fermento biológico seco
2 colheres chá de açúcar
2 colheres chá de sal fino
1 colher chá (nivelada) de fermento em pó
275ml leite gordo, morno


preparação:
Colocar a farinha numa taça larga. Fazer um buraco no meio e adicionar 2 colheres de sopa do óleo ou azeite, o iogurte, o açúcar, o fermento de padeiro seco, o sal e o fermento em pó.
Misturar tudo muito bem com as pontas dos dedos, até obter uma mistura areada.
Adicionar o leite morno, um bocadinho de cada vez, até a mistura formar uma massa.
Colocar a massa sobre uma superfície limpa e bem enfarinhada e amassar por cerca de 5 minutos.
Transferir a massa para uma taça, cobrir com película aderente e deixar levedar em local aquecido, por cerca de 1 hora, ou até ter duplicado de tamanho.
Quando a massa tiver duplicado de tamanho, dividi-la em 12 pedaços iguais. Formar uma bola com um pedaço da massa e depois, espalmá-la entre as palmas das mãos.
Polvilhar a massa com farinha e estender com o rolo, por forma a obter um rectângulo com cerca de 12 x 20cm. Repetir para os restantes pedaços de massa.
Colocar uma frigideira sobre lume médio e, quando bem quente, colocar um naan na frigideira.
Quando a parte de cima do pão formar bolhas, o que demorará cerca de 20 a 30 segundos, virá-lo com a ajuda de uma espátula e cozinhar do outro lado por mais 20 a 30 segundos, tendo cuidado para não deixar queimar.
Voltar a virar o pão e, com a ajuda da espátula, pressionar delicadamente, a superfície do mesmo por cerca de 10 a 15 segundos.
Voltar a virar e cozinhar por mais 10 a 15 segundos, verificando se não há bocados de massa crua.
Retirar o pão da frigideira e repetir o processo para os restantes pães.
Enquanto se cozinham os pães restantes, manter os que já estão cozinhados quentes, simplesmente colocando-os uns em cima dos outros e embrulhando-os em folha de alumínio.
