Chocolate and Chilli Bread / Pão com Chocolate e Malagueta.


As soon as I read the theme, I knew straightaway the bread I was going to bake and it's this one that I'm leaving you today!
I was dying to try this Lakeland Magazine chocolate and chilli bread since the day I got the magazine but, for one reason or the other, it never happened so, this time was the time! I had no doubts whatsoever, that this would be the bread to bake this month.
I had to adapt the recipe because the original one is for a bread maker machine. Although I have a bread maker which I use sometimes for more hard work kneading processes, I don't like to make bread in the bread maker so, the method I writing down is the one I used. Saying that, if you want to use a bread maker, go ahead and just follow the machine manufacturer's instructions.
Here it is, for Ana and for this monthly challenge that I truly adore, a Chocolate and Chilli Bread!

Strawberry salad / Salada com morangos.


After an uninterrupted succession of sweet posts, a few weeks ago, the blog is now back to its routine, which means, meatless Mondays, sweet Wednesdays and meaty Fridays so, according to that, here it is, a delicious salad from Lakeland magazine, that is very easy to put together, totally delicious and that is very colourful and appetising.
ingredients for the salad (serves 4):
6 to 8 strawberries, quartered
200g baby spinach leaves, washed and drained
1/2 cucumber, thinly sliced lengthways
150g goat's cheese from a log, cut into rounds
handful of mint leaves
for the dressing:
90ml extra virgin olive oil
30ml balsamic vinegar
10ml runny honey
salt and pepper, to taste
method:
Mix all the dressing ingredients together in a screw top jar and shake well to combine. Taste for salt and pepper and add more if necessary.
Divide the salad ingredients equally between 4 plates and drizzle with the dressing.

Depois de há umas semanas atrás, este blogue ter andado bem "docinho", o mesmo volta lentamente à sua rotina e a rotina para este blogue é (ou tenta-se o mais possível que assim seja), Segundas-feiras sem carne, doces Quartas-feiras e Sextas-feiras com carne.
Seguindo esta lógica, deixo-vos hoje com esta saladinha colorida e linda, super fácil de preparar e que, em termos de texturas e contrastes de sabor, é absolutamente divina!
ingredientes para a salada (para 4 pessoas):
6 a 8 morangos, cortados em quartos
200g folhas de espinafre bebé, lavados e escorridos
1/2 pepino, cortado em lâminas longitudinais
150g queijo de cabra, em rodelas
um punhado de folhas de menta
para o molho:
90ml azeite, de preferência extra virgem
30ml vinagre balsâmico
10ml mel líquido
sal e pimenta preta moída na altura, a gosto
preparação:
Para o molho, colocar todos os ingredientes dentro de um frasco com tampa de enroscar. Fechar o frasco e abanar bem para que os ingredientes fiquem bem combinados. Provar e rectificar de sal e pimenta a gosto.
Distribuir os ingredientes para a salada pelos 4 pratos, regar com o molho e servir.

Elderflower, cucumber and lime cooler / Bebida refrescante de flor de sabugueiro, lima e pepino.


If until a while ago I was posting a drink once in a while or not posting drinks at all, now I'm getting addicted to it and here is another brilliant Summer drink.
ingredientes (makes approx. 1.5l):
3 cucumbers
juice of 3 limes
400ml elderflower cordial
200ml water
crushed ice, to serve
method:
Cut a few slices from the cucumber to use as a garnish and reserve.
Roughly chop the cucumbers and place in a food processor and blend to a pulp.
Set a fine sieve over a bowl, pour in the cucumber pulp and press with a wooden spoon to release the juice into a bowl. You should have approx. 800ml of juice. Discard the pulp.
Add the lime juice, cordial and water and stir well.
Serve over crushed ice and decorated with the sliced cucumber.

Se até há poucos dias quase não publicava bebidas, agora parece que estou a ficar viciada e assim sendo, aqui fica mais uma fabulosa bebida para o Verão.
ingredientes (para 1.5l aprox.):
3 pepinos
sumo de 3 limas
400ml concentrado de flor de sabugueiro
200ml água
gelo partido, para servir
preparação:
Cortar algumas rodelas de pepino para usar como decoração e reservar.
Picar grosseiramente os pepinos restantes, colocá-los no copo do robot de cozinha e reduzir a puré.
Colocar um coador de malha fina sobre uma taça e coar o puré do pepino, espremendo bem com as costas de uma colher de pau, a fim de extrair o máximo de sumo possível. É suposto extrair-se aproximadamente 800ml de sumo de pepino. Descartar a polpa.
Ao sumo do pepino extraído, juntar o sumo das limas, o concentrado de flor de sabugueiro e a água e mexer bem.
Colocar gelo partido nos copos e servir a bebida decorada com as rodelas de pepino reservadas.

Lavender lemonade / Limonada de alfazema.


A while ago, I realised that I almost never post drinks here on the blog and actually it's time to start filling that gap and therefore, here is a very refreshing and delicious lemonade.
ingredients (makes approx. 1.2l):
2 tsp dried lavender buds
875ml still water
100g sugar
juice of 4 lemons
ice cubes, to serve
a few small lavender springs, to garnish (optional)
method:
Place the lavender buds into a heatproof bowl.
Boil 300ml of the water in a pan and pour over the lavender.
Leave to infuse for 10 minutes, then strain the liquid back into the pan, discarding the lavender.
Add the remaining water and the sugar, bring to the boil and simmer for 1 minute or 2.
Transfer to a large jug, add the lemon juice and stir. Allow to cool.
Once cool, chill in the fridge until needed.
Serve over ice cubes and garnish with lavender springs.

Há uns tempos atrás, conclui que raramente publico bebidas aqui no blogue. Não me perguntem porquê, pois não sei...
Bom, de qualquer modo, está na altura de começar a preencher esse vazio e deixo-vos então com esta limonada de alfazema que é uma verdadeira e muito agradável surpresa.
ingredientes (para 1.2l aprox.):
2 colheres chá de flores secas de alfazema
875ml água
100g açúcar refinado branco
sumo de 4 limões
pedras de gelo, para servir
pequenas hastes de alfazema, para servir (opcional)
preparação:
Colocar a alfazema numa taça resistente ao calor.
Ferver 300ml da água e deitar sobre a alfazema. Deixar em infusão por 10 minutos.
Coar a água de volta para o tacho e descartar a alfazema.
Juntar a água restante e o açúcar e quando levantar fervura, deixar ferver por 1 ou 2 minutos.
Colocar a mistura num jarro ou garrafa, adicionar o sumo do limão, mexer e deixar arrefecer.
Depois de frio, refrigerar até ao momento de servir.
Servir com cubos de gelo e decorado com raminhos de alfazema.
