Spring Pea Soup with Roasted Radishes and Sweet and Salty Cashews / Sopa de Ervilhas com Rabanetes assados e Cajus agri-doces.


Around Christmas time, Kyle Books threw a "Advent Cookbook Quiz" on Instagram and I was the lucky winner.
I had to choose 3, from 7 available books and one of the books I chose was Rita Serano's "Vegan in 7".
A delightful book, full of delicious vegan recipes and very straightforward and unpretentious.
Recipes using only 7 or less ingredients, beautiful gorgeous photos and simple, but delightful, recipe introductions.
You all know I'm not vegan or even vegetarian, but you all also know that I love to have and make vegan and vegetarian meals whenever I want and that's one of the reasons I chose this book as one of the 3 books I had to choose from.
Honestly, I have a handful of vegan and vegetarian books but this one, is truly adorable and my favourite so far!
If you want to know more and win one copy of this gorgeous book, have a look at Kimberly's, The Little Plantation blog as, she is not just offering a copy of the book but, she's also sharing another delightful recipe from the book.
I've marked down several recipes to cook and share from the book but, as a soup lover, this soup had to be the first recipe to cook and share.

Note: Rita suggests to serve the soup with an optional swirl of Cashew Cream, but I opted for a scatter of the sweet and salty cashews, for crunchiness.

Penne with Spinach, Peas and Gruyère / Penne com Espinafres, Ervilhas e queijo Gruyère.


Another fabulous Melissa Clark "Dinner: Changing the Game" book recipe!
This vegetarian pasta dish was our dinner a few weeks ago and, of course,  because it's so delicious and easy and quick to put together, I had to share the recipe with you all.
The original recipe calls for wholemeal or regular penne but as I had this absolutely fabulous red lentil penne here at home, that's the one I decided to use.

Spinach soup with flowers / Sopa de espinafres com flores.


This fabulous and delicious soup is very easy to make and a real showstopper when it hits the table.

The recipe was adapted from the "Nettle soup with flowers" which is one of the magnificent soups from Nicole Pisani and Kate Adams, "Magic Soup"book". A book that you all know I very much adore and from which you can find the recipes I already tested under the labels "Soups" and/or "Magic Soup book".

My Vegetarian stuffed Focaccia / A minha Focaccia Vegetariana recheada.



I make this stuffed focaccia very often and it is so delicious that, this time I took the time to share the recipe with you all.
It is a meal on itself and perfect for picnics, lazy summer lunches or even to eat while you're at the beach.
The filling combinations are endless and although I always make this vegetarian combination, you can use cured meats combined with grilled or roasted veggies or whatever you fancy. The filling quantities are also variable. You can use as much or as less filling as you want.

Coconut curried chickpeas with wilted spinach / Caril de Grão de bico com leite de coco e espinafres.


A perfect meal for a "meatless Monday"!!
I made this curry for Saturday lunch and I don't have to tell you how simple an delicious it is!!
As I told you already a thousand times, I love cooking from Emilie Raffa "The Clever Cookbook" and, I promise, I'm not going to repeat myself.
Just check here, all the recipes that I already cooked from this book and it will be easy for you to conclude by yourselves, how fabulous and easy to make, Emilie's suggestions are.
As I wrote above, this was our lunch last Saturday and although the poached egg was not part of Emilie's recipe, I decided to serve the curry with a poached egg on top as, I think, an egg, specially if it's perfectly poached, makes everything better...

Forest Moss Cake / Bolo Forest Moss.


Apparently the Forest Moss Cake is a Polish cake. Although I never heard of it, I found it while flicking (for the second time), through Paul Hollywood new cookbook, "The Weekend Baker".
In the book, Paul says he found it in a café and loved it so, he had to share the recipe.
I confess that, the first time I was flicking through the book, this cake didn't catch my eye but the second time, when I read the recipe properly and noticed the secret "healthy" ingredient, I got very excited about it.
SPINACH!
Yes! Spinach is the secret ingredient and, because Marta invited us to cook with spinach this month and... just in time for Marta's round up (because she kindly allowed), I invite Marta to take this cake and share it at her table because it really is divine!

The breakfast bowl / Uma taça de pequeno almoço.


In their book "Good + Simple", The Hemsley sisters call this suggestion "The breakfast bowl".
As you already know, breakfast food, for me, means lunch food and this bowl of goodness made such a delicious lunch that I'm sure I'll be making it lots of times (actually, I already did).
As Marta invited us to cook with spinach this month, I invite Marta to take this bowl of pleasure to her table.
Although the spinach are not the star ingredient in this suggestion, they surely play an important role in the whole combination.

Smoked mackerel, mascarpone and spinach roulade / Torta de espinafres, com cavala fumada a quente e mascarpone.


I love spinach I have to say and saying that, cooking with spinach, is a real pleasure and a delight. 
I started developing this roulade a while ago. 
To be truthful, I tried the recipe twice before but, the ratios were not right so, those two times, it didn't came out as I wanted it to be. 
When I saw that Marta's chosen ingredient for June were spinach, I gave the recipe a few tweaks and adjustments and, finally, I got it right, just as I wanted it and in time, to be my first suggestion for Marta's "Spinach month". 
That's why it's here now. Because it is perfect and delicious!!

Wet rice with chorizo, kale and spinach / Arroz Robusto.


When something is truly delicious, you don't mind having it often right?
Well, that's exactly what happened with this dish.
When I got the gorgeous Mónica Pinto "Pratos e Travessas" cookbook last week, after marking down - almost all the recipes - this one, was the one that I decided that would be the first one to be tested.
The day I got the book, I was in doubt about what to make for dinner and as soon I saw this recipe and read the ingredients, I made it that same day.
The result couldn't be more spectacular but, as it was very late, I didn't take photos. This week, as everybody at home was asking me to make it again (that's how delicious it is), I took my time to take the pictures so I could share the recipe with you all.
I have to say that, in my opinion, is the most beautiful and complete Portuguese Food blog and there's no portuguese food blog that can be compared to hers.
Everything, starting with the recipes, photos, landscape images and the way Mónica writes, is absolutely fascinating.
I still remember the first time I came across Pratos e Travessas. I was so astonished, that it took me some time to realise that it was a portuguese blog and since then, I read the blog and every post, every time Mónica updates it. The recipes, usually, are fabulous and Mónica writes both in portuguese and english and for the photos, I confess, I spend hours, admiring them!!
Saying that, here it is, the first recipe from the absolutely AMAZING, Mónica's debut cookbook, "Pratos e Travessas"!
"Arroz Robusto" is the name of the recipe, which is, nothing but a very delicious, comforting and well balanced wet rice dish with all the trimmings that will be named below.


ingredients (serves 4):
3 tbsp olive oil
1 medium onion, finely chopped
2 garlic loves, finely chopped
1 bay leaf
125g chorizo, cut into 1cm rounds
1 medium carrot, thinly sliced
1 big and very ripe tomato, skinless and seedless, chopped
50g baby spinach leaves
100g curly kale, finely shredded
1 x 400g can red kidney beans, drained and rinsed
3 cups chicken or vegetable stock
1/2 cup long grain rice
sea salt flakes and freshly ground black pepper, to taste
method:
Heat the olive oil in a heavy based saucepan.
Add the onion, bay leaf and garlic and cook over a medium heat until the onion is softened and lightly golden brown.
Add the carrot and chorizo and cook for 3 to 4 minutes, stirring occasionally.
Stir in the tomato and cook for 1 minute.
Add the spinach, kale, beans and stock. Stir and bring to the boil.
Add the rice and when it comes back to the boil, reduce the heat to low, cover the pan and simmer until the rice is al dente (about 10 to 12 minutes), stirring from time to time, to release the starch form the rice. When cooked, but al dente, the rice should be very wet. If needed, add more boiling stock or water.
Season with sea salt flakes and freshly ground pepper to taste.
Turn off the heat and allow the rice to rest, covered, for 5 minutes.
Serve immediately.

Começo por vos dizer que, há anos atrás, quando me deparei pela primeira vez com o blogue Pratos e Travessas, da Mónica Pinto, nem queria acreditar que era um blogue Português.
Não desmerecendo ninguém, claro, acho que o Pratos e Travessas está muito para além,  de todos, e qualquer um, dos blogues de culinária portugueses.
O Pratos e Travessas é, na minha humilde opinião, claro, um blogue completo e que abrange todos os "parâmetros" requeridos para um blogue de culinária de sucesso e não é à toa que é um blogue reconhecido internacionalmente.
Quando me deparei com o Pratos e Travessas pela primeira vez, o que me fascinou à partida, foram as fotos espectaculares e o rustico e "dark mood" das fotos da Mónica que, confesso, amo de paixão (mais que o "light mood").
As receitas, nada deixam a desejar e tenho muitas delas em fila de espera para serem testadas, senão, experimentem a receita da Francesinha da Mónica e digam-me se não é das melhores que já comeram (eu já a fiz cá em casa).
O blogue, por si, "clean" e com estilo e escrito em duas línguas, foi o culminar do meu deslumbre e, desde o dia que conheci o blogue da Mónica que, embora nem sempre (ou quase nunca) comente, acompanho todos os seus "updates" pois é, repito, o blogue de culinária português mais lindo de sempre!
Quando a Mónica anunciou que estava a escrever um livro, fiquei deveras entusiasmada, pois se há livro de blogger portuguesa que eu haveria de encomendar sem hesitar, seria um livro da Mónica Pinto e, assim foi!
Assim que o livro foi publicado, lá arranjei meios de o encomendar, pois distância nunca será impeditivo, desde que se queira muito!
Esta foi a primeira receita a ser testada e, confesso, é a segunda vez que faço este prato cá em casa!
Quando algo é absolutamente delicioso e simples de fazer e a família pede "bis", não é difícil repetir certo?
Pois bem, foi o que aconteceu com esta receita! Recebi o livro - LINDO - da Mónica Pinto, o "Pratos e Travessas", a semana passada. Nesse dia, ainda nem tinha decidido, nem sabia bem o que iria ser o jantar e ao folhear o livro da Mónica, deparei-me com esta receita.
Li os ingredientes, comuns cá em casa, e nem me preocupei mais, pois o jantar estava decidido: Seria o "Arroz robusto" da Mónica.
Foi o jantar desse mesmo dia mas, como já era de noite quando o finalizei e nem fotos tirei, decidi, a pedido dos comensais cá e casa, repeti-lo, pois é tão maravilhoso, simples e com sabores tão tipicamente portugueses que, para nós que estamos fora do País, soube a "céu", como podem imaginar e repetir, não foi de todo um sacrifício, antes pelo contrário!!
Fica então a sugestão para quem quiser experimentar!


ingredientes (para 4 pessoas):
3 colheres sopa de azeite
1 cebola média, picada
2 dentes de alho, picados
1 folha de louro
1 cenoura média, descascada e cortada em rodelas
8 rodelas de chouriço
1 tomate grande, maduro, sem pele nem sementes, cortado em pedaços
50g folhas de espinafres
3 folhas de couve portuguesa (eu usei kale), cortada em pedaços
150g feijão encarnado, cozido (eu usei uma lata pequena, feijão escorrido e passado por água limpa)
sal e pimenta preta moída na altura, a gosto
5 chávenas de café de arroz agulha (eu usei só 1/2 chávena "cup")
o triplo do volume do arroz em caldo de galinha de boa qualidade (eu usei 3 "cups" de caldo de legumes).


preparação:
Aquecer o azeite num tacho.
Adicionar a cebola, o louro e o alho e refogar sobre lume médio, até a cebola estar douradinha.
Adicionar todos os restantes ingredientes, excepto o arroz e deixar ferver por 10 minutos, com o tacho "meio" tapado.
Adicionar o arroz, temperar de sal e pimenta e mexer com um garfo.
Assim que levantar fervura, mexa de novo, baixe o lume para o mínimo e cozinhe, com tampa, por cerca de 12 minutos, mexendo 1 ou 2 vezes durante este período, a fim de libertar a goma do arroz.
Atenção que o arroz deve ficar bem malandro e, caso seja necessário, adicione mais caldo a ferver e rectifique os temperos.
Sirva de imediato.

Strawberry and spinach wrap / Wrap de morangos e espinafres.


Before May ends, I leave this very simple but delicious suggestion for Marta and for her "May - The Strawberry month".
I don't call this a recipe because it's not! It's just a suggestion.
A recipe, for me, is something that involves cooking and/or some kind of cooking technique.
This is an assembling of ingredients and therefore, I don't call it a recipe.
The suggestion is adapted from Erin Gleeson book "The Forest Feast".
for 1 wrap:
Spread 2 tbsp of soft goat cheese (I used Philadelphia cream cheese) on a wholewheat flour tortilla.
Lay out about 5 sliced strawberries and then top those with 1/4 cup of rocket (I used baby spinach leaves).
Drizzle with olive oil and balsamic vinegar and sprinkle with sea salt flakes and freshly ground black pepper and then roll it up.

Savoury spinach, chorizo and haloumi waffles / Waffles salgadas de espinafres, chouriço e queijo haloumi.


The last issue of Donna Hay magazine is really special for me.
Not just because (as always) is full of delicious and great recipes but also because it features the picture of this pavlova that I posted on instagram.
Being Donna Hay one of my favourite Food Stylists and food idols, I think it's not difficult for you to guess how proud and bursting with joy I was first, when the Donna Hay magazine team asked me permission on instagram to feature it and second, when I saw it published in the amazing and worldwide very well known Donna Hay magazine.
Along with fabulous S'more suggestions and lots of fantastic baked Doughnuts recipes, this issue also features lots of amazing savoury waffle recipes.
As you can imagine, I intend to try them all (waffles, doughnuts and S'mores) as each one looks even more delicious then the previous one.
The first recipe chosen, tested and approved from this issue was these waffles as I have a waffle machine that I only used once, to test this Jamie Oliver recipe.
The final result couldn't be more delicious. We had them for lunch and my kids simply adored them and asked me to make them again.


ingredients for the waffles (serves 2):
225g plain flour, sifted
35g cornflour, sifted
1 tsp baking powder, sifted
1 tsp sea salt flakes
375ml buttermilk
60ml vegetable oil
2 eggs, separated
280g dried chorizo, skin removed and shiny sliced
75g shredded spinach leaves
125g grated haloumi
2 tbsp chopped chives
to finish:
2 tsp extra virgin olive oil
2 eggs
sea salt and cracked black pepper
method:
Place the flour, cornflour, baking powder and salt in a large bowl and mix to combine.
Add the buttermilk, oil and egg yolks and whisk until smooth. Set aside.
In another bowl, whisk the egg whites until stiff peaks form.
Add the egg whites to the flour mixture and gently fold to combine.
Add the chorizo, haloumi, spinach and chives to the batter and fold to combine.
Preheat a lightly greased waffle machine according to the manufacturer instructions.
Cook 1 cup of the waffle batter for 6 to 7 minutes or until golden brown and crisp.
Repeat with the remaining batter to make 4 waffles. Set aside and keep warm.
Heat the oil in a frying pan over high heat.
Add the eggs and cook for 1 to 2 minutes or until just cooked.
Divide half of the waffles between 2 serving plates and top each with an egg.
Sprinkle with salt and pepper and sandwich with the remaining waffles to serve.

Como já todos sabem e tendo em conta a quantidade de receitas da Donna Hay que já publiquei aqui no blogue, adoro cozinhar, não só dos livros desta autora (já se contam 11 e 1 que vem a caminho...), como também da sua revista bimensal, da qual tenho a assinatura anual.
Este último número da citada revista é muito especial para mim, pois não só e como sempre, vem recheado de receitas fabulosas, mas também porque vem lá publicada a foto desta minha pavlova que, na altura que a fiz, publiquei no instagram.
Ora, sendo a Donna Hay uma das minhas autoras favoritas quer em termos de receitas, quer em Food Styling, não será difícil imaginarem o quão orgulhosa e inchada de felicidade fiquei quando, primeiro, a equipa da revista da Donna Hay me pediu permissão no instagram para publicar a foto na revista e, segundo, quando vi a minha foto, ao vivo e a cores, publicada numa das revistas mais lindas e mundialmente conhecidas certo?
Esta edição vem, não só recheada de fabulosas receitas de doughnuts no forno e S'mores de diferentes feitios, como também traz imensas receitas de waffles salgadas e claro, eu tenciono testá-las todas!!
Tenho uma máquina de waffles que ainda só tinha utilizado uma vez (para fazer esta receita do Jamie Oliver) e agora, pela segunda vez, para testar a primeira receita escolhida desta edição da revista. Estas waffles maravilhosas que serviram de almoço cá em casa e que foram tão apreciadas, que os miúdos pediram logo para lhas fazer de novo.
Experimentem e deliciem-se, pois não se arrependerão!


ingredientes para as waffles (para 2 pessoas):
225g farinha de trigo branca, peneirada
35g Maizena, peneirada
1 colher chá de fermento em pó, peneirado
1 colher chá de flocos ou flor de sal
375ml buttermilk
60ml óleo vegetal
2 ovos, separados
280g chouriço, sem pele e cortado em rodelas muito fininhas
75g folhas de espinafres, picadas grosseiramente
125g queijo haloumi, ralado
2 colheres sopa de cebolinho, picado
para terminar:
2 colheres chá de azeite extra virgem
2 ovos
sal e pimenta preta moída na altura
preparação:
Numa taça, colocar a farinha, a Maizena, o fermento e o sal e combinar tudo muito bem.
Adicionar o buttermilk, o óleo e as gemas de ovo e mexer tudo muito bem até a mistura estar macia. Reservar.
Numa taça à parte, bater as claras em castelo firme.
Adicionar as claras ao preparado anterior e envolver tudo muito delicadamente.
Adicionar o chouriço, os espinafres, o cebolinho e o queijo e envolver delicadamente até tudo estar bem incorporado.
Pincelar ligeiramente a máquina das waffles com óleo e aquecer de acordo com as instruções do fabricante.
Colocar 1 chávena (cup) da mistura, em cada um dos compartimentos da máquina (a minha tem dois compartimentos, por isso dá para fazer 2 waffles de cada vez) e cozinhar por cerca de 6 a 7 minutos, ou até estas estarem bem douradinhas e crocantes.
Reservar as waffles cozinhadas em local quente, enquanto se procede da mesma forma para a restante mistura, por forma a fazer 4 waffles.
Entretanto, aquecer o azeite numa frigideira sobre lume alto e estrelar os ovos a gosto.
Colocar uma waffle em cada prato e colocar um ovo estrelado em cima de cada uma delas.
Temperar o ovo com sal e pimenta e cobrir com as waffles restantes, por forma a obter uma sandes de ovo estrelado.
Servir imediatamente.

Spring tortellini minestrone / Minestrone primaveril com tortellini.


Another fabulous recipe from Emilie Raffia (The Clever Carrot) gorgeous cookbook that I told you about in this post and a delightful, easy and very colourful meal.
That's the kind of meals that I love to make during the week and specially, when they're like that, simple to make, but a feast for the palate.
Honestly, I told you already and I can't help saying the same again:
I love this book!!
ingredients (serves 6):
1 tbsp olive oil
1 tbsp unsalted butter
80g onions, diced
65g carrots, diced
50g celery, diced
sea salt and freshly ground black pepper
1 clove garlic, grated
1 tbsp tomato paste
397g can of chopped tomatoes
1l chicken stock, preferably homemade
255g cheese tortellini (I used fresh pasta cheese tortellini)
135g fresh or frozen peas (I didn't have any so I used frozen and peeled baby broad beans)
2 to 3 large handfuls of baby spinach leaves, kale or other spring greens
1/4 cup fresh basil leaves, cut into ribbons
shaved parmesan cheese, to serve
method:
Heat the oil and butter over medium heat in a large pot or saucepan.
Add the onion, celery and carrots, and  sauté until soft and lightly golden (5 to 7 minutes).
Season with salt and pepper to taste, then add the garlic and tomato paste.
Stir well until the tomato paste is fully dissolved and the garlic is fragrant.
Pour in the chopped tomatoes and chicken stock.
Place the lid on top of the pan and bring to a gentle boil.
Reduce the heat to low and simmer (lid on) for about 10 minutes or until the vegetables are soft, stirring occasionally.
Increase the heat and bring the soup back to a gentle boil.
Add the tortellini, peas and greens.
Simmer uncovered for 3 minutes and then remove from the heat.
Ladle the soup into bowls and sprinkle with shaved parmesan cheese and the basil.

Mais uma receita super deliciosa do livro lindo da Emilie Raffia (The Clever Carrot), do qual já vos falei  neste post.
Este é o tipo de refeição que, durante a semana, além de ser super simples e rápida de preparar, é super deliciosa e agrada a todos.
O bom destas receitas é que, não é pelo facto de serem fáceis ou simples, que comprometem em termos de sabor, pois esse, está lá todo e super concentrado.
Já disse e não me canso de repetir: ADORO este livro!!


ingredientes (para 6 pessoas):
1 colher sopa de azeite
1 colher sopa de manteiga sem sal
80g cebola, picada
65g cenoura, cortada em cubos
50g aipo, cortado em cubos
sal e pimenta preta moída na altura, a gosto
1 dente de alho, ralado
1 colher sopa de concentrado de tomate
1 lata de 397g de tomate pelado e picado
1l caldo de galinha, de preferência caseiro
1 pacote de 255g de tortellini de queijo (eu usei tortellini de queijo de massa fresca)
135g ervilhas, frescas ou congeladas (eu não tinha na altura e usei favas bebé, congeladas e sem pele).
2 a 3 punhados de folhas de espinafres frescos, kale ou outro verde da estação
1/4 chávena de folhas de manjericão frescas, cortadas em tirinhas ou esfarripadas
lâminas de queijo Parmesão, para decorar


preparação:
Num tacho largo sobre lume médio, aquecer o azeite e a manteiga.
Adicionar a cebola, as cenouras e o aipo e cozinhar por cerca de 5 a 7 minutos, ou até os legumes estarem macios e ligeiramente corados.
Temperar de sal e pimenta preta moída na altura a gosto e adicionar o concentrado do tomate e o alho.
Mexer bem até o concentrado de tomate estar completamente dissolvido e o alho estar aromático.
Adicionar o caldo de galinha e o tomate picado.
Tapar o tacho e deixar levantar fervura.
Assim que levantar fervura, baixar o lume e cozinhar, coberto com a tampa, por cerca de 10 minutos, até que os legumes estejam completamente cozidos, mexendo de vez em quando.
Quando os legumes estiverem macios, aumentar o lume e deixar que levante fervura novamente.
Adicionar o tortellini, os espinafres e as ervilhas e cozinhar por cerca de 3 minutos (atenção que eu usei massa fresca).
Retirar o tacho do lume e servir a sopa em tigelas, polvilhada com as laminas de queijo Parmesão e as folhas de manjericão.

Cream of spinach soup with flaked salmon / Creme de espinafres com lascas de salmão.


My suggestion today is this creamy and fabulous soup.
The recipe is from a very well known Portuguese Chef - Henrique Sá Pessoa - and it's the first recipe that I made from his last and amazing book called "A viagem do Salmão" - The salmon journey.
I got this book as a gift at Christmas time and I'm totally delighted and in love with it.
It is one of those books that you don't choose one, two or three recipes to test. You choose ALL of them. Truly incredible book!
ingredients (Serves 4):
200g salmon, cooked and flaked (skinless and boneless)
100g onion, chopped
150g leek, thinly sliced
250g baby spinach leaves
20ml olive oil
120g potatoes, cut into small cubes
4 tbsp crème fraîche
salt flakes and freshly ground black pepper, to taste
fresh watercress leaves drizzled with with oil, to serve
method:
Heat the oil in a pan over medium heat.
Add the onion and leek and cook for about 4 to 5 minutes, or until soft.
Add the potato, salt and pepper to taste and cover with water (just enough water, in order to come up to about 2 fingers over the vegetables).
Allow it to boil, reduce the heat and cook for 8 to 10 minutes, or until the potato is soft.
Add the spinach and cook for 1 minute.
Take the soup off the heat, blend until smooth and check the seasoning.
Serve the soup warm, topped with the salmon flakes, a few dollops of crème fraîche and watercress leaves.

A minha sugestão de hoje e para começar bem a semana, é esta sopa maravilhosa e cremosa do Chef Henrique Sá Pessoa.
A receita vem no seu último livro "A viagem do salmão".
Um livro absolutamente magnífico e pelo qual estou completamente in love!
Recebi-o de prenda no Natal e confesso que é daqueles livros que me surpreendeu e muito e só pela positiva.

Pois não é o caso deste!! Para vos ser sincera, não há uma única receita neste livro que eu não tenha marcado para fazer. Bom, talvez haja uma...

Salmão é um peixe que amo de paixão e as sugestões apresentadas no livro são TODAS elas absolutamente magníficas e não consegui ficar indiferente.
Assim sendo, vamos lá à primeira receita testada. Esta sopa dos céus!!
ingredientes (para 4 pessoas):
200g salmão, cozido e desfeito em lascas (sem pele nem espinhas)
100g cebola, picada
150g alho francês, em juliana
250g espinafres bebé
20ml azeite
120g batata, cortada em cubos pequenos
4 colheres sopa de crème fraîche
flor de sal e pimenta preta moída na altura, a gosto
folhas de agrião, temperadas com azeite, para decorar
preparação:
Aquecer o azeite num tacho.
Adicionar a cebola e o alho francês e cozinhar por 4 a 5 minutos, ou até ambos estarem macios.
Adicionar a batata, sal e pimenta a gosto e cobrir com água (até dois dedos de altura acima dos vegetais).
Deixar levantar fervura, abrandar o lume e cozinhar por cerca de 8 a 10 minutos, ou até a batata estar macia.
Adicionar os espinafres e cozinhar por mais 1 minuto.
Reduzir a sopa a puré com a varinha mágica, ou no liquidificador e rectificar os temperos.
Servir a sopa quente, decorada com as lascas do salmão, o crème fraîche e as folhas de agrião temperadas.
