Pearl barley, roasted cauliflower and cranberry salad / Salada de cevadinha, couve flor assada e arandos.


Another delicious, vegetarian salad that, was absolutely divine and has to be shared.
The humble and underrated cauliflower, after being rubbed with aromatic spices and roasted, just gets incredibly delicious and elevated to a total new level, either in texture and flavour.
The recipe, is from Simmone Logue beautiful book "In the Kitchen", from which, I already posted this amazing and delicious Victoria Sponge.
ingredients (serves 4):
200g pearl barley
1 small cauliflower, cut into chunky pieces
2 tsp ground turmeric
1 tbsp ground sumac
2 tbsp olive oil
2 tbsp chopped dill
4 tbsp chopped mint
150g parsley, chopped
30g walnuts, toasted and chopped
75g pistachio nuts, toasted and chopped
75g dried cranberries
1 pomegranate, seeded
100g feta cheese, crumbled
for the dressing:
zest and juice of 1 lemon
3 tbsp pomegranate molasses
3 tbsp olive oil
1/4 garlic clove, crushed
method:
Cook the pearl barley over medium heat, for 40 minutes in 500ml water, until the water has been absorbed. set aside yo cool.
Preheat the oven to 180ºC.
Line a baking tray with baking paper.
In a bowl, combine the cauliflower, turmeric, sumac and the olive oil.
Spread the cauliflower over the baking tray and roast for 15 to 20 minutes, or until the cauliflower is a little caramelised.
Remove from the oven and leave to cool.
Place the cooled cauliflower and the barley in a serving dish.
Add the herbs, nuts and cranberries.
Mix all the dressing ingredients together and season to taste with sea salt.
Toss the salad with enough dressing to moisten it.
Scatter with the feta cheese and the pomegranate seeds just before serving.

Embora cá em casa ninguém seja vegetariano, gostamos (só pelo prazer de testar e saborear diversidade), de fazer refeições vegetarianas, sempre que nos apetece e foi o caso, quando decidi fazer esta salada, toda ela recheada de texturas, cor e variedade.
A couve flor, normalmente renegada e desvalorizada, é aqui elevada a um nível completamente superior, quando envolvida em aromáticas especiarias e assada no forno.
A receita, do livro lindo da Simmone Logue, o "In the Kitchen", do qual já aqui publiquei este maravilhoso Victoria Sponge, foi mais uma, testada, saboreada e muito apreciada.


ingredientes (para 4 pessoas):
200g cevadinha
1 couve flor pequena, separada em floretes
2 colher chá de curcuma (açafrão das Índias)
1 colher sopa de sumagre
2 colheres sopa de azeite
2 colheres sopa de aneto fresco picado
4colheres sopa de hortelã fresca, picada
150g salsa, picada
30g nozes, tostadas e picadas
75g pistachios, tostados e picados
75g arandos secos
sementes de 1 romã
100g queijo feta, esfarelado
para o molho:
raspa e sumo de 1 limão
3 colheres sopa de melaço de romã
3 colheres sopa de azeite
1/4 de dente de alho, esmagado
preparação:
Num tacho sobre lume médio, cozer a cevada em 500ml de água, por cerca de 40 minutos,  ou até a cevada estar cozida mas al dente e a água ter evaporado toda. Reservar e deixar arrefecer.
Aquecer o forno a 180ºC e forrar um tabuleiro com papel vegetal.
Numa taça, misturar bem a couve flor, juntamente com a curcuma, o sumagre e o azeite.
Espalhar a couve flor no tabuleiro e levar ao forno por 15 a 20 minutos, ou até esta estar ligeiramente caramelizada.
Retirar o tabuleiro do forno e deixar arrefecer.
Entretanto, misturar bem todos os ingredientes do molho e temperar a gosto, com flor ou flocos de sal.
Colocar a couve flor e a cevada num prato de serviço.
Adicionar os frutos secos, ar ervas aromáticas frescas e os arandos e envolver tudo muito bem, com cerca de metade do molho.
Polvilhar com as sementes de romã e com o queijo feta esfarelado e servir.

Cauliflower bolognese / Bolonhesa de Couve flor.


Another vegetarian meal that I made roughly two weeks ago and that was a blast!
Both, either in flavour and/or texture, this recipe, from the fabulous Emilie Raffa "The Clever Cookbook", was a delight.
I already told you, many times before, how much I love this Emilie book and each recipe I cook form it, is a stunner.
ingredients (serves 4 to 6):
1 small head of cauliflower
2 tbsp unsalted butter
160g diced onions
1 garlic clove, grated
794g can(s) of whole plum tomatoes
96g red lentils
sea salt and freshly ground black pepper
454g spaghetti (I used wholewheat)
drizzle of olive oil
1 handful of fresh basil leaves
parmesan cheese, for grating
method:
Slice the cauliflower in half, removing the thick center core and cut into large chunks.
Put the cauliflower florets into a food processor (in batches) and pulse 1 or 2 times.
Dump the roughly chopped cauliflower into a large bowl and repeat with the remaining cauliflower.
Warm the butter in a large saucepan over low heat. Add the onions and sauté for 3 to 5 minutes, or until soft.
Add the cauliflower, increase the heat to medium and continue cooking, stirring occasionally, until the cauliflower begins to lose its shape and takes on a light golden colour (about 5 to 6 minutes).
Add the garlic and cook until fragrant (about 30 seconds).
Pour in the tomatoes and the red lentils and mix everything to combine.
Place the lid on top and bring the sauce to a gentle boil.
Reduce the heat to low and simmer (covered), for about 30 minutes.
Remove the lid and cook for an extra 15 minutes, or until the cauliflower is tender and the lentils are broken down. The sauce should look thickened.
Season with salt and pepper to taste.
Cook the pasta according to the packet instructions. When the pasta is cooked, drain and return to the pot. Drizzle with olive oil to coat.
Put the pasta onto a serving dish and top it with the cauliflower bolognese.
Scatter with the basil leaves and the grated parmesan cheese. Serve straightaway.

Deixo-vos mais um prato vegetariano e tão delicioso, que ninguém sentirá falta de carne ou peixe.
Já fiz a receita há, mais ou menos, 2 semanas, mas, mais uma vez, demorou a ser publicada...
Uma verdadeira delícia, quer em sabor, quer em textura.
A receita é, mais uma vez, do livro lindo da Emilie Raffa, de que já vos falei várias vezes, o "The Clever Cookbook".
Já vos disse também o quanto adoro este livro e não me vou repetir.
Adoro-o, pelo simples facto de, todas as receitas, serem de fácil execução, sem que com isso, comprometam em qualidade ou sabor.


ingredientes (para 4 a 6 pessoas):
1 couve flor pequena
2 colheres sopa de manteiga sem sal
160g cebola, picada
1 dente de alho, ralado
2 latas pequenas de tomate pelado
96g lentilhas vermelhas
sal e pimenta preta moída na altura
454g (1 pacote) de esparguete (eu usei esparguete integral)
azeite, para regar a massa
1 punhado de folhas de manjericão freso
queijo parmesão ralado, para polvilhar


preparação:
Cortar a couve flor ao meio, descartando o centro e depois, cortá-la em pedaços.
Colocar os pedaços de couve flor no robot de cozinha (em várias vezes) e pulsar, 1 ou 2 vezes, por forma a que obtenham pedaços maiores e outros mais pequenos.
Colocar a couve flor numa taça e repetir o processo com a couve flor restante.
Aquecer a manteiga num tacho sobre lume brando. Adicionar a cebola picada e saltear por 3 a 5 minutos, ou até esta estar macia.
Adicionar a couve flor, aumentar o lume para médio e cozinhar  mexendo de vez em quando,por cerca de 5 a 6 minutos, ou até a couve flor começar a ganhar cor.
Adicionar o alho e cozinhar por 30 segundos, ou até este libertar o seu aroma.
Adicionar as latas do tomate e as lentilhas e mexer tudo muito bem.
Tapar o tacho e quando a mistura começar a ferver, baixar o lume e cozinhar por cerca de 30 minutos (tacho sempre tapado).
Findo esse tempo, destapar o tacho e cozinhar por mais 15 minutos, ou até a couve flor e as lentilhas estarem macias. O molho deverá ficar espesso.
Temperar de sal e pimenta a gosto.
Entretanto, cozer a massa de acordo com as instruções do pacote.
Quando cozida a gosto, escorrer a massa e voltar a colocá-la na panela. Regar com um fio de azeite e envolver tudo muito bem.
Transferir a massa para um prato de serviço, cobri-la com a bolonhesa de couve flor e servir de imediato, polvilhada com as folhas de manjericão e o queijo ralado.

Roasted cauliflower soup / Sopa de couve flor assada.



Actually, I was meant to make roasted cauliflower soup a few weeks ago, but because of this or that, it didn't happened so, I blended the cauliflower that I had in the fridge into cauliflower couscous and I made a beautiful salad with it.
As I'm a soup lover, as soon I saw this roasted cauliflower soup, I thought that it would be some kind of a delicious soup and it reinforced that feeling that I had before, which was: Making roasted cauliflower soup!!
The original recipe is here but, Mª João, inspired by this roasted cauliflower soup, decided to substitute the potatoes for courgettes.
I saw Mª João soup recipe and I saw the original soup recipe and, as the day I decided to make this soup I have bought some beautiful Pink Lady apples that were red, bright and gorgeous, instead of adding all the amount of the potatoes that were suggested in the original recipe, I decided to had half of the potato weight and 3 of my beautiful Pink Lady apples to the roasting tin.
The result couldn't be more delightful and, in case you decide to make this fabulous soup, you have now 3 options: The original one, Mª João option with the addition of the courgettes and my option with the addition of the apples.
ingredients for the soup:
1 medium cauliflower, trimmed and chopped into florets
250g potatoes, scrubbed and cut into small dice
3 Pink Lady apples, cored and diced
2 large onions, peeled and diced
1 sprig of fresh rosemary leaves, finely chopped
2 tbsp oil
salt and pepper
2 tsp of freshly squeezed lemon juice
5 to 6 cups of vegetable stock
toppings (optional):
flavourful oil (truffle, extra virgin olive, walnut etc)
croutons
nuts, toasted and chopped
herbs, chopped
balsamic reduction
squeezes of lemon
sea salt flakes and/or freshly ground black pepper
method:
Preheat the oven to 200ºC.
Put the cauliflower florets, potatoes, onion and apple in a large roasting tin.
Add the chopped rosemary leaves, the olive oil and season with salt and freshly ground black pepper and toss everything together until evenly coated.
Roast the vegetables in the oven for about 1 hour, tossing and flipping them with a spatula, from time to time.
When the vegetables are tender, add the lemon juice and toss well.
Transfer the roasted vegetables into a large saucepan, add the stock and blend everything until you have a smooth purée.
Bring the soup to a boil and add more stock or water in order to thin the soup out if necessary.
Taste the soup and adjust the seasoning.
Serve hot with the chosen garnishes.


Note: For my toppings I used croutons, salad cress, a fabulous white truffle infused balsamic reduction that was a gift from a very kind blogger and a sprinkle of crispy bacon crumbs.

Para ser honesta, andava há semanas para fazer sopa de couve flor assada e até tinha comprado uma couve flor que, não tendo feito a sopa, acabei por transformer em couscous e utilizei numa belíssima salada.
Ora, quando vi esta sopa no blogue da Mª João, claro que a minha vontade de fazer a tal sopa de couve flor assada redobrou e lá fui comprar mais couve flor.
A Mª João viu a receita original aqui, neste blogue e fez-lhe uma alteração, pois em vez das batatas sugeridas na receita original, usou courgettes.
No dia que decidi fazer esta sopa, tinha comprado umas maçãs Pink Lady lindas, vermelhinhas e apetitosas e então pensei substituir metade do peso das batatas sugeridas na receita original, por 3 maçãs Pink Lady.
O resultado não podia ser mais delicioso e para ser honesta, são estas coisas que acho fantásticas na blogosfera, ou seja, uma sopa de couve flor assada que começou aqui, foi alterada aqui com a substituição das batatas por courgette e foi agora, por mim, novamente alterada, com a adição das maçãs e a isto eu chamo inspiração e partilha!
Caso queiram experimentar esta sopa que, entusiasticamente recomendo, têm agora 3 opções: A sopa original com batatas, a da Mª João com a substituição das batatas por courgettes e a minha, com a substituição de metade do peso das batatas por maçãs.


ingredientes para a sopa:
1 couve flor média, arranjada e raminhos separados
250g batatas, lavadas, limpas e cortadas em cubos pequenos
3 maçãs Pink Lady, sem caroço e cortadas em cubos
2 cebolas grandes, descascadas e picadas grosseiramente
folhas de 1 haste grande de alecrim, bem picadinhas
2 colheres sopa de azeite
sal e pimenta preta moída na altura
2 colheres chá de sumo de limão
5 a 6 chávenas de caldo de legumes
toppings (opcionais):
azeite ou óleo de trufa, óleo de noz ou outro
croutons
frutos secos, tostados e picados
ervas aromáticas (a gosto), picadas
redução balsâmica
sumo de limão
flocos ou flor de sal e/ou pimenta preta moída na altura
preparação:
Aquecer o forno a 200ºC.
Colocar a couve flor, as batatas, as maçãs e as cebolas num tabuleiro de ir ao forno.
Adicionar as folhas de alecrim picadas, o azeite, sal e pimenta e misturar tudo muito bem, por forma a que todos os legumes fiquem embebidos no azeite.
Levar o tabuleiro ao forno e assar os legumes por cerca de 1 hora, mexendo de vez em quando, ou até estarem macios.
Quando os legumes estiverem assados e macios, adicionar o sumo do limão e misturar tudo muito bem.
Transferir os legumes para uma panela, adicionar o caldo de legumes e reduzir a sopa a puré.
Levar a sopa ao lume até levantar fervura e adicionar mais caldo de legumes ou água, até obter a consistência desejada.
Provar a sopa e rectificar os temperos.
Servir a sopa quente, decorada com os toppings escolhidos.


Nota: Eu decorei a minha sopa com croutons, micro ervas e pedaçinhos de bacon crocante e reguei com uma redução balsâmica de trufa branca maravilhosa, que me foi oferecida por uma blogger super simpática.

Poached eggs, cauliflower toasts, kale and dukkah / Ovos escalfados com tostas de couve flor, couve e dukkah.


My friend Rogério keeps on bringing me foodie goodies each time he comes to visit.
One of the delights he brought me, along with some gorgeous yellow courgettes, were these gorgeous colourful cauliflowers.
They are so beautiful that I decided to use them on this specific recipe in order to make them shine.
ingredients ( serves 2):
1 whole cauliflower, cut across into 4 slices, 2cm thick
3 tbsp olive oil
2 tbsp dukkah
2 tbsp olive oil
1 tbsp butter
2 garlic cloves, thinly sliced
1/2 medium red chilli, finely sliced (optional)
6 to 8 large kale or cavolo nero leaves, centre stalks removed and chopped
4 organic eggs
salt
to serve:
olive oil
juice of 1/2 lemon
a few twists of pepper


method:
Preheat the oven to 200ºC and line a baking tray with baking paper.
Put the cauliflower slices on the tray, drizzle with some olive oil and sprinkle with the dukkah.
Place the tray in the oven and bake for 30 minutes, or until they start to turn golden.
Melt the oil and butter in a pan over a medium heat.
Add the garlic and chilli and stir for 30 seconds.
Add the kale, a few spoons of water and a pinch of salt. Cover the pan with the lid and braise for 10 minutes, stirring occasionally and checking if it has enough liquid.
Put a wide casserole over a high heat and fill it with boiling water. Bring the water into a light simmer and add a pinch of salt.
Crack the eggs into the water and cook them to your liking (2 minutes for soft and 4 minutes for soft to firm).
When everything is ready, divide the cauliflower slices between 2 plates, top with the eggs and place the kale alongside.
Sprinkle over a little extra dukkah and drizzle the kale with olive oil, lemon juice and a few twists of pepper.

O meu amigo Rogério passa a vida a trazer-me presentes de foodie, pois sabe à partida, que vou adorar e dar gritinhos de felicidade.
Uma das últimas vezes que cá veio, trouxe-me umas lindas courgettes amarelas (que vão aparecer numa outra receita) e estas lindas couves flor (verde e amarelas).
Esta foi a receita que escolhi para a utilização das couves flor, até porque queria que brilhassem e não queria dar-lhes uma utilização menos... graciosa!!
ingredientes ( para 2 pessoas):
1 couve flor inteira, cortada em 4 fatias verticais, com cerca de 2cm de espessura cada
3 colheres sopa de azeite
2 colheres sopa de dukkah
2 colheres sopa de azeite
1 colher sopa de manteiga
2 dentes de alho, finamente fatiados
1/2 malagueta vermelha, finamente fatiada (opcional)
6 a 8 folhas grandes de couve portuguesa ou frisada, ou cavolo nero (uma couve italiana e que foi a que usei nesta receita, talos removidos e folhas picadas grosseiramente.
4 ovos, de preferência biológicos
sal
para servir:
azeite
sumo de meio limão
pimenta preta moída na altura


preparação:
Aquecer o forno a 200ºC e forrar um tabuleiro de ir ao forno com papel vegetal.
Colocar as fatias de couve flor no tabuleiro, regar com azeite e salpicar com a dukkah.
Levar o tabuleiro ao forno durante 30 minutos, ou até a couve flor estar macia e douradinha.
Entretanto, derreter a manteiga e o azeite num tacho.
Adicionar o alho e a malagueta e cozinhar por 30 segundos.
Adicionar a couve, umas colheres de sopa de água e uma pitada de sal, cobrir o tacho com a tampa e cozinhar por 10 minutos, mexendo de vez em quando e verificando se tem líquido suficiente.
Colocar um tacho largo ao lume com água a ferver e uma pitada de sal. Baixar o lume para que a água não esteja em ebulição e partir os ovos para dentro da água.
Escalfar os ovos de acordo com o gosto pessoal (2 minutos para mal cozidos e 4 minutos para médio a bem cozidos).
Quando tudo estiver pronto, dividir as fatias de couve flor por 2 pratos. Colocar um ou dois ovos escalfados em cada prato e salpicar com mais uma pitada de dukkah. Colocar a couve no prato, ao lado da couve flor.
Regar a couve com azeite, o sumo do limão e salpicar com uma pitada de pimenta preta.

Cauliflower & roasted garlic soup / Sopa de couve flor e alho assado.


As I wrote somewhere before, I love soups, not just ordinary soups but, specially, soups like this one, which is ordinary but with a touch that makes it special.
A fabulous flavoursome and very easy comforting soup that nourishes body and soul.
ingredients (serves 4):
1 large garlic bulb, halved horizontally
3 tbsp extra virgin olive oil, plus extra for drizzling
1 onion, chopped
1 large cauliflower, cut into florets
1.5l vegetable stock
fresh rosemary leaves, chopped


method:
Preheat the oven to 180ºC.
Wrap the garlic and 1 tbsp of live oil in a sheet of foil and roast for 30 minutes.
Fry the onion in the remaining oil for 5 minutes or until soft.
Add the cauliflower and cook for 2 minutes.
Pour in the stock, bring to the boil and simmer for 30 minutes.
Squeeze the garlic into the soup and blitz with a food processor until smooth. Add a little water if necessary.
Serve the soup drizzled of olive oil and top with chopped rosemary and black pepper, and bread.

Tal como já escrevi algures por aqui, adoro sopa!
Não só aquelas sopas que fazemos diariamente com o que há no frigorífico, mas em especial sopas diferentes. Sopas que não deixam de ser simples, mas que têm um toque de requinte e algo que as eleva de normal a especial.
Sopas como esta, fáceis de fazer, com ingredientes simples e que alimentam e aconchegam.
ingredientes (para 4 pessoas):
1 cabeça de alhos grande, cortada ao meio horizontalmente
3 colheres sopa de azeite extra virgem + extra para regar
1 cebola, picada
1 couve flor grande, cortada em pedaços
1.5l de caldo de legumes
folhas frescas de alecrim, picadas, para polvilhar


preparação:
Aquecer o forno a 180ºC.
Embrulhar o alho em papel de alumínio, juntamente com 1 colher sopa de azeite e levar ao forno por 30 minutos.
Num tacho, aquecer o restante azeite e fritar a cebola por 5 minutos, ou até estar macia.
Adicionar a couve flor e cozinhar por mais 2 minutos.
Acrescentar o caldo de legumes e quando levantar fervura, baixar o lume e cozinhar por cerca de 30 minutos, ou até a couve flor estar cozida.
Espremer os dentes de alho, a fim de os soltar da casca e juntá-los à sopa.
Com a ajuda da varinha mágica ou do robot de cozinha, reduzir a sopa a puré. Se necessário, juntar um bocadinho de água até obter a consistência desejada.
Servir a sopa acompanhada por um pedaço de pão, regada com um fio de azeite e salpicada com o alecrim picado e pimenta preta moída na altura.
