Chocolate canelés / Canelés de chocolate.



From what I've been posting this week and what I'll be posting next week, we can say that these are two very sweet weeks here on the blog.
And the reason for that is that I have a few sweet recipes waiting to be posted and I want to share them with you while the weather is not too hot.
After trying this canelé recipe, and loving it so much, I had to keep on trying different ones.
I tried this one that I'm leaving you here today, which is a Donna Hay chocolaty version and very soon I'll publish the Rachel Khoo version.
It is impressive how recipes are different, specially concerning the resting time for the batter.
This chocolate ones, although they are very good, I still prefer the original ones. That version is perfect for chocolate lovers.
The texture inside is very similar to a brownie texture.
ingredients (makes 16):
560ml milk
1 vanilla bean, split and seeds scraped
50g unsalted butter, chopped
200g dark chocolate, chopped
2 eggs
2 egg yolks
240g icing sugar, sifted twice
100g plain flour, sifted twice
160ml butterscotch schnapps (I used Grand Marnier)
method:
Grease 16 canelé tins with cooking oil spray or butter. Place the tins up side down on a cooling rack over a baking tray and refrigerate until needed.
Place the milk, vanilla seeds, butter and chocolate in a saucepan over medium heat and bring to the boil.
Remove from the heat, stir to combine and allow to cool completely.
Place the eggs, yolks and sugar in a bowl and stir gently to combine.
Add the flour and stir gently to combine.
Add the cooled milk mixture and stir to combine.
Pass the mixture through a sieve and allow to stand at room temperature for 2 hours.
Preheat the oven to 220ºC.
Skim the foam from the surface of the canelé batter, add the butterscotch and stir gently to combine.
Place the tins on a baking tray and fill each 3/4 full with the canelé mixture.
Bake for 10 minutes, reduce the oven temperature to 180ºC and bake for a further 50 to 55 minutes or until golden and soft in the centre.
Remove the canelés from the tins immediately and place on a wire rack. Allow to cool at room temperature.

Bom, pelo que tenho publicado esta semana e pelo que será publicado na próxima semana, podemos concluir que estas são duas semanas bem docinhas aqui no blogue, o que não é hábito meu, pois tento distribuir as receitas por forma a publicar diferentes opções semanais.
A razão pela qual estas duas semanas serão diferentes, é que tenho algumas receitas de doces acumuladas e quero partilhá-las convosco antes que o tempo comece a aquecer. Bom, pelo menos por aqui, porque em certas zonas do globo, incluindo Portugal, já começou a aquecer e bem certo?
Vamos então à receita de hoje!
Depois de me ter estreado na arte de fazer e comer canelés com esta receita da Mimi, outras experiências se seguiram e esta versão da Donna Hay foi a que testei de seguida.
Brevemente será aqui publicada a versão da Rachel Khoo.
É impressionante como as receitas variam, nomeadamente, no que diz respeito ao tempo de repouso da massa.
Estes canelés de chocolate da Donna, com um interior com a textura do brownie, são perfeitos para os amantes do chocolate e embora deliciosos, eu ainda prefiro a versão original, ou seja, sem chocolate.
ingredientes (para 16 canelés):
560ml leite
1 vagem de baunilha, aberta ao meio e sementes raspadas.
50g manteiga sem sal, cortada em cubos
200g chocolate preto (70%), grosseiramente picado
2 ovos
2 gemas
240g açúcar em pó, peneirado 2 vezes
100g farinha de trigo branca, peneirada 2 vezes
160ml butterscotch schnapps (licor à base de açúcar mascavado, manteiga e outras bebidas espirituosas) - eu usei Grand Marnier
preparação:
Com óleo em spray ou manteiga, untar 16 formas para canelé. Colocar as formas viradas para baixo, em cima de uma grelha colocada em cima de um tabuleiro e refrigerá-las no frigorífico até serem necessárias.
Num tacho, colocar o leite, as sementes da baunilha, o chocolate e a manteiga. Deixar levantar fervura, retirar do lume, mexer bem para combinar e deixar arrefecer completamente.
Colocar os ovos inteiros e as gemas numa taça, juntamente com o açúcar e misturar tudo delicadamente sem bater.
Adicionar a farinha e voltar a incorporar, mexendo delicadamente.
Adicionar a mistura do leite fria, voltar a mexer, sempre delicadamente e passar a mistura por um coador.
Deixar a massa repousar por cerca de 2 horas à temperatura ambiente.
Aquecer o forno a 220ºC.
Com uma colgar, retirar a espuma que se tenha formado na superfície da massa.
Adicionar o licor e incorporar delicadamente.
Colocar as formas em cima de um tabuleiro de ir ao forno e enchê-las com a massa, até 3/4 da sua capacidade.
Levar ao forno por 10 minutos. Baixar a temperatura do forno para os 180ºC e cozer os canelés por mais 50 a 55 minutos, ou até estarem douradinhos por fora e macios no interior.
Retirar os canelés do forno e desenformar imediatamente sobre uma grelha, até estes arrefecerem completamente.
