Blackberry, Orange and Orange Blossom Clafoutis / Clafoutis de Amoras, Laranja e Extracto de Flor de Laranjeira.


You know I can't resist anything "citrus" right?
As soon as Marta announced that this month's "ingredient of the month" are Oranges, I knew I'd be making a few orangy recipes for Marta and this one is just the first one.
A fabulous Clafoutis, very orangy and with blackberries, another of my favourite ingredients in the world!
Now, as a "citrus lover", how could I ever resist a book called "Citrus"? No way right?
I've got this book long time ago and, although I've already made lots of recipes from it, this one is the first one I'm sharing with you all and a very appropriate one for Marta's challenge.
The book, Citrus - from Catherine Phipps, is a delight book.
Full of great (savoury and sweet) recipes and very helpful information about citrus, the book includes descriptions of varieties and how to slice, dry, freeze, and properly handle different kinds of citrus. A must have, I'd say!
This specific recipe calls for dried orange zest and there's a recipe for it in the book but, it happened that, the day I was going to make this Clafoutis, I got a surprise gift in my mail box.

Although the dried orange and rosemary mix is suggested to serve in starters, salads or with cheese, I thought that it would work perfectly with this Clafoutis and G!!! I was so right!! It worked perfectly and the hint of the rosemary just made this Clafoutis even better!
Give it a go and be impressed!

ingredients (serves 4 to 6):
for the baking dish:
30g butter, softened
2 tsp dried orange zest, ground to a powder
2 tbsp demerara sugar
method:
Spread the butter over the base of a shallow ovenproof dish between 21cm and 23cm.
Mix the dried orange zest with the demerara sugar together and sprinkle this over the butter. Make sure the dish is evenly covered. Reserve.


for the blackberries:
300g blackberries
2 tbsp caster sugar
2 tbsp Crème de mûre (I used my homemade Crème de cassis)
method:
Put the blackberries in a bowl and sprinkle over the sugar, and the crème de mûre. Leave to stand for 1 hour.
for the batter:
50g plain flour
50g caster sugar
pinch of salt
200ml whole milk
50ml single cream (I used double cream)
30g butter, melted
1 tsp finely grated orange zest
juice of 1/2 orange
1 tsp orange blossom water
2 tsp Grand Marnier or Mandarine Napoléon (optional)
2 eggs
method:
Preheat the oven to 180ºC.
Put the flour in a mixing bowl with the caster sugar and the salt. Give it a quick whisk.
In a separate bowl, mix together the milk, cream, melted butter, orange zest and orange juice, orange blossom water and liqueur (if using).
Make a well in the middle of the flour mixture, then break in the eggs. Using a whisk, work in the flour, incorporating from the edge of the well, until you have a thick paste, then gradually incorporate the wet ingredients.
If you prefer, you can put everything in a food processor and blend.
Spoon the blackberries into the prepared baking dish, straining them a little as you go, and making sure they are evenly spread.
Pour over the batter and bake in the oven for around 25 to 30 minutes until slightly puffed up and light golden brown (it should be slightly wobbly in the middle).


to serve:
1 tbsp icing sugar
1 tsp dried orange zest, ground to a powder
pouring cream
to finish:
Mix the icing sugar and orange zest together.
Let the Clafoutis cool a little, then sprinkle over the sugar and zest mixture.
Serve with pouring cream.

Como não é novidade para ninguém, Citrinos são dos meus ingredientes preferidos e não resisto a nada que leve citrinos, sejam eles a espécie ou variedade que forem!
Assim que a Marta anunciou a Laranja como sendo o "ingrediente do mês de Janeiro", claro, fiquei logo super entusiasmada, especialmente depois de ter falhado ao mês de Dezembro e da amêndoa da Marta (imperdoável eu sei, mas este mês compenso com muitas laranjas...).
Esta é a primeira receita que trago ao mês da laranja da Marta e não será a única acreditem!
Como "citrus lover" assumida que sou, não poderia deixar de ter um livro cujo título é Citrinos certo?
Já tenho este livro há imenso tempo e já cozinhei dele várias vezes. Esta no entanto, é a primeira receita que aqui partilho e devo dizer que não podia ter escolhido uma receita mais perfeita para dar início ao mês das laranjas da Marta.
O livro, "Citrus", cuja autora é a Catherine Phipps, é um livro magnífico e super recheado de receitas onde os citrinos reinam. Receitas salgadas e doces, a única dificuldade encontrada é mesmo, a escolha da receita a fazer primeiro.
Além das receitas magníficas, o livro ainda fornece montes de informação útil sobre citrinos, desde descrições de variedades, como cortar, secar, congelar e manusear correctamente cada citrino ou variedade do mesmo. Um livro 5 estrelas para os amantes de citrinos!
Um dos ingredientes pedidos nesta receita que vos deixo, é casca de laranja seca e claro, o livro contempla uma receita de como a preparar.
Acontece que, no dia que decidi fazer esta receita, eis que me chega cá a casa, um presente surpresa, magnífico e super português. Lindo de morrer!!
Não só o produto é magnífico, mas tenho também de salientar o cuidado nas embalagens e na forma como o produto é apresentado. Um MUST de lindo e um cuidado que faz com que tenhamos cada vez mais orgulho no que é Português!
Isto tudo para dizer que, um dos tubos que vinha na embalagem, era precisamente um tubo com laranja seca e alecrim. Embora na embalagem este produto seja sugerido para servir em entradas, saladas ou com queijos, nem sequer duvidei que ficaria fabuloso neste Clafoutis e foi o que usei!
Só vos posso dizer que o resultado final foi magnífico e o toque do alecrim, elevou ainda mais o sabor deste Clafoutis!
Experimentem e digam-me se não é absolutamente fantástico!!


ingredientes (para 4 a 6 pessoas:
para a forma:
30g manteiga, amolecida
2 colheres chá de casca de laranja seca, reduzida a pó
2 colheres sopa de açúcar demerara
preparação:
Espalhar a manteiga na base de um recipiente refractário (ou outro que possa ir ao forno), com cerca de 21 a 23cm de diâmetro.
Misturar muito bem a laranja em pó com o açúcar demerara e espalhar sobre a manteiga, tendo atenção para que a mesma fique bem coberta com a mistura da laranja e do açúcar. Reservar.


para as amoras:
300g amoras frescas
2 colheres sopa de açúcar refinado branco
2 colheres sopa de Crème de mûre (eu usei o meu Crème de cassis caseiro)
preparação:
Numa taça, misturar muito bem as amoras com o açúcar e o crème de mûre ou cassis e deixar marinar 1 hora.
para o Clafoutis:
50g farinha de trigo branca sem fermento
50g açúcar refinado branco
uma pitada de sal
200ml leite gordo
50ml natas para culinária
30g manteiga, derretida
1 colher chá raspa de laranja
sumo de meia laranja
1 colher chá de água ou extracto de flor de laranjeira
2 colheres chá de Grand Marnier ou Mandarine Napoléon (opcional)
2 ovos (L)
preparação:
Aquecer o forno a 180ºC (sem ventoinha).
Numa taça, colocar a farinha, o açúcar e o sal e mexer tudo com uma vara de arames.
Numa taça à parte, misturar o leite, as natas, a manteiga derretida, a raspa e o sumo da laranja, a água de flor de laranjeira e, caso usem, o licor.
Fazer o buraco no meio da mistura da farinha e colocar os ovos no buraco.
Com a vara de arames, misturar bem os ovos com a mistura da farinha, até obter uma pasta cremosa e homogénea.
Gradualmente, adicionar a mistura do leite à mistura anterior, batendo bem, por forma a que todos os ingredientes fiquem bem incorporados.
Caso prefiram, podem colocar todos os ingredientes no copo do robot de cozinha e processar até obter uma mistura cremosa e macia.
Escorrer as amoras maceradas, descartando o líquido de maceração, e espalhá-las sobre a base da forma preparada.
Sobre as amoras, espalhar a mistura do Clafoutis e levar ao forno por cerca de 25 a 30 minutos, ou até o Clafoutis estar cozido e bem douradinho.
Atenção que o centro do Clafoutis, deverá ainda estar ligeiramente mole quando pronto. Não deixem cozer em demasia.


para servir:
1 colher sopa de açúcar em pó
1 colher chá de casca de laranja seca, reduzida a pó
natas líquidas, opcional
para terminar:
Numa taça, misturar o açúcar em pó com a casca de laranja em pó
Deixar arrefecer ligeiramente o Clafoutis e polvilhá-lo de seguida com a mistura do açúcar em pó e da laranja.
Servir o Clafoutis acompanhado com natas líquidas (opcional claro).
