Carrot Tarte Tatin / Tarte Tatin de Cenoura.


Looking for recipes featuring carrots for this month's "Marta and her Ingredient of the Month", I found this fabulous Tarte Tatin where the carrots are the star of the show!
I have to tell you that this tatin was a very, very pleasant surprise as it's so, so flavoursome and delicious that we all loved it to bits.
Of course, homemade pastry helps a lot too and that's the one I used but, saying that, be my guest if you want to use shop bought puff pastry.
The recipe is from Rachel Khoo "Little French Kitchen" book and let me tell you that, it was the first time I made it but, it will not be the last one for sure!!

ingredients (serves 4 to 6 as a starter):
8 to 10 medium carrots (or 5 large, halved lengthways)
2 knobs of butter
3 sprigs of fresh thyme
a good pinch of salt
1/2 tbsp runny honey
1 tbsp red wine vinegar
250g puff pastry (I always make this recipe)
method:
Preheat the oven to 180°C.
Peel the carrots if they have a thick skin, otherwise just wash them well and pat dry.
Melt the butter in a large frying pan over a low heat. When the butter begins to sizzle, add the carrots and thyme. Cook for about 15 minutes, turning the carrots so they brown all over.
Remove from the heat, sprinkle with salt and stir in the honey and vinegar so that the carrots are well coated.
Arrange them in the bottom of an 18cm round tart tin.
Roll out the pastry between 2 sheets of baking paper until it is 5mm thick and cut out a disc that is a just a little bigger than the tart tin.
Place on top of the carrots and tuck in the edges.
Cut a small cross in the middle (to let the steam from the carrots escape during cooking).
Bake in the preheated oven for 30 to 35 minutes, or until the pastry is puffy and golden.
Place a large serving plate on top of the tin and carefully flip the tart tatin on to the plate.
Serve while still warm with a green salad.

Andava eu à procura de receitas onde as cenouras fossem as "vedetas" e eis que dou de caras com esta tarte tatin salgada.
Claro que não resisiti a levar esta sugestão à mesa de Maio da Marta e do seu mês das Cenouras!!
Se vos disser que esta tarte foi uma absoluta surpresa (pela positiva, claro...), poderão achar que estou a exagerar, mas juro-vos que não!! 
É tão deliciosa, tão deliciosa, que só se ouviam "hummms" de satisfação durante a sua degustação. Além de que, vocês sabem, receitas que a mim não me convencem, não vêm para este blogue e não são aqui publicadas!
Claro que massa folhada caseira, contribui e muito para o sucesso de todas as receitas que a pedem, incluindo esta mas, caso não se queiram dar ao trabalho de a fazer, usem de compra, de boa qualidade, claro!! e não deixem de testar esta maravilha.

ingredientes (para 4 a 6 pessoas, como entrada):
8 a 10 cenouras médias ou 5 cenouras grandes, cortadas ao meio longitudinalmente
2 nozes de manteiga
3 hastes de tomilho fresco
uma boa pitada de sal
1/2 colher sopa de mel líquido
1 colher sopa de vinagre de vinho tinto
250g massa folhada (eu faço sempre esta rceita)
preparação:
Aquecer o forno a 180°C.
Descascar as cenouras se estas foram de pele rija caso contrário, não descascar e lavar só e secar muito bem.
Numa frigideira sobre lume brando, derreter a manteiga e quando esta começar a fritar, adicionar as cenouras e as hastes do tomilho.
Cozinhar as cenouras por cerca de 15 minutos, virando, ou até estas estarem bem douradinhas de ambos os lados.
Retirar a frigideira do lume, adicionar o mel e o vinagre e envolver muito bem as cenouras na mistura.
Colocar as cenouras numa forma redonda com cerca de 18cm de diâmetro.
Estender a massa folhada entre duas folhas de papelvegetal, até esta estar com uma espessura de cerca de 5mm e tiver obtido um disco um bocadinho maior que o diâmetro da forma.
Colocar o disco de massa folhada sobre as cenouras, entalando as extremidades para debaixo das mesmas.
Com uma faca afiada, cortar uma cruz no centro da massa folhada, por forma a que o vapor possa escapar quando a mesma for ao forno.
Levar ao forno por 30 a 35 minutos, ou até a massa folhada estar cozida, crescida e bem douradinha.
Colocar um prato largo sobre a forma e desenformar a tarte sobre o prato.
Servir quente ou morna, acompanhada de uma salada.
