Blueberry and yoghurt ice cream pops / Gelados de mirtilo e iogurte.



It's June and today it's international children day so, nothing better than ice cream pops to celebrate it and officially open the ice cream season here on the blog.
And to start it of, I chose these delicious and healthy Linda Lomelino blueberry and Greek yoghurt ice cream pops.
Lomelino's recipe is for 4 to 6 ice cream pops but because I wanted to fill all the holes in my mould, I adapted the quantities in order to make 10.
Happy international children day and lots of happiness for all the children in the world and specially for those that are daily deprived from their basic rights!

ingredients (makes 10):
255g blueberries
5 tbsp granulated sugar
3 tbsp lemon juice
500g Greek yoghurt
3 tbsp runny honey



method:
Combine the blueberries, sugar and lemon juice in a pan.
Heat up the mixture and then simmer for 5 minutes.
Let the mixture cool and then process it in a blender until you have a puree.
Mix the yoghurt and honey together in a bowl.
Layer the yoghurt mixture and the blueberry puree in the ice ream pop moulds.
Freeze for about 1 hour and then insert the ice ream sticks and freeze another 3 to 4 hours or until firm.

E porque estamos em Junho e porque hoje se comemora o Dia Internacional da Criança, nada melhor que uns gelados para o celebrar e para, oficialmente, iniciar a época dos gelados aqui no blogue e como tal, aqui estão eles!
Para começar a época, escolhi esta receita da Linda Lomelino que, além de fácil, é saudável e deliciosa e se as crianças pedem gelados, há que dar-lhes gelados e se forem saudáveis, melhor ainda.
Muita fruta e iogurte grego, são os ingredientes base destes gelados que de açúcar pouco levam.
As quantidades foram adaptadas, pois a receita da Linda dá pra 4 a 6 gelados e como eu queria encher as 10 formas, adaptei as quantidades e são essas que aqui vos deixo.
Feliz Dia da criança a todas as crianças do mundo e, em especial, áquelas a quem diariamente são negados os direitos mais básicos.

ingredientes (para 10 gelados):
255g mirtilos
5 colheres sopa de açúcar granulado branco
3 colheres sopa de sumo de limão
500g iogurte grego
3 colheres sopa de mel


preparação:
Num tacho, combinar os mirtilos, o açúcar e o sumo do limão.
Aquecer a mistura e cozinhar por 5 minutos.
Deixar a mistura arrefecer e de pois de fria, reduzir a puré no copo de um robot de cozinha.
Numa taça, misturar o iogurte e o mel.
Nas formas onde vão fazer os gelados, colocar arbitrariamente, camadas da mistura de iogurte e camadas do puré de mirtilo.
Levar as formas ao congelador por cerca de 1 hora.
Passado esse tempo, inserir os paus nas formas e voltar a congelar por mais 3 a 4 horas, ou até os gelados terem solidificado.
