Braised squid in tomato / Lulas guisadas com tomate.


Fish and seafood in general is something that we love and eat a lot in Portugal and squid is a favourite of almost everybody.
We eat them braised, stuffed or mixed in fish stews and rice dishes.
This recipe is very delicious and easy to put together and it is fabulous served with boiled rice or just with bread to mop up the juices.


ingredients (serves 4):
8 tbsp extra virgin olive oil
6 anchovy fillets
10g capers
2 garlic cloves, finely sliced
1 small red chilli, finely chopped
1kg squid, cleaned and chopped into quarters
salt
50ml white whine
250g cherry tomatoes, halved
a handful of parsley, roughly chopped
method:
Heat the oil in a saucepan.
Add the anchovy fillets and capers and cook over a medium heat, stirring, until the anchovies dissolve.
Add the garlic and chilli, stir and continue cooking for a couple of minutes.
Add the squid and a pinch of salt and cook for a further couple of minutes.
Add the whine and boil until it evaporates.
Add the tomatoes and most of the parsley, reduce the heat to low and cook, covered for 45 minutes.
Remove from the heat and serve topped with fresh parsley, with the side of your choice.

Uma receita que adoro, com lulas que amo de paixão e que, estufadas com os tomates e acompanhadas de pão para molhar no delicioso molhinho, fizeram as delícias de uma refeição de família.
ingredientes (para 4 pessoas):
8 colheres sopa de azeite extra virgem
6 anchovas
10g alcaparras
2 dentes de alho, finamente fatiados
1 malagueta vermelha, finamente picada
1kg lulas, limpas e cortadas em rodelas
sal
50ml vinho branco
250g tomates cereja, cortados ao meio
um punhado de salsa, picada
preparação:
Aquecer o azeite num tacho.
Adicionar as anchovas e as alcaparras e, sobre lume médio e mexendo sempre, cozinhar até as anchovas se desfazerem.
Adicionar o alho e a malagueta e cozinhar, mexendo, por mais um minuto ou dois.
Adicionar as lulas e uma pitada de sal e cozinhar por mais uns minutos.
Adicionar o vinho branco e deixar ferver, a fim de que o álcool evapore.
Adicionar os tomates e a maior parte da salsa, baixar o lume e cozinhar, tapando o tacho, por cerca de 45 minutos, ou até as lulas estarem tenras.
Retirar o tacho do lume, polvilhar com o resto da salsa picada e servir com o acompanhamento escolhido.
